Organic farm owners prepare for season
By SHANNON CAULFIELD
The Medford Sun
Chad Muckenfuss is a third-
generation farmer in Medford,
currently running the Mill Creek
Organic Farm with his wife Kate.
The land was purchased by
Muckenfuss grandparents in the
late 1950s, and was not immedi-
ately farmed.
My mom was born and raised
in Medford, and she really em-
braced the organic movement.
She began converting the farm to
completely organic, which was
completely unknown at the time,
Muckenfuss said.
The difference between tradi-
tional farming and organic farm-
ing is the use of herbicides, pesti-
cides and unnatural, chemically-
based fertilizers.
This was used especially on
medium- to large-scale farms,
which she completely did away
with, and moved to a crop rotate
method where only one type of
crop is grown in one section per
year, then its rotated, Mucken-
fuss said.
According to Muckenfuss, the
method is useful in maintaining
soil health and replenishing nu-
trients. The family utilizes a com-
posting method, in addition to
horse and chicken manure as a
means of fertilizing the crops.
The chicken poop is very help-

Mill Creek Organic Farm owner Chad Muckenfuss feeds the chickens grass clippings, food the birds are used to in addition to all organic feed
and grains. Muckenfuss runs the farm with his wife Kate. The eggs are sold year-round, Muckenfuss said. We have roughly 200 chickens,
which equates to about eight or 10 dozen a day that we collect. In the same respect, the chicken poop is utilized as part of fertilizer on the
150 acres of vegetable and grain crops.

ful in that its very high in nitro-
gen, which is very helpful for veg-
etables and such, Muckenfuss
said.
The couple recently began the
process of tilling and planting
crops for the beginning of the sea-
son. Mill Creek is comprised of
150 acres, 25 of which are farmed
for vegetables. The remaining 125
are farmed for grains, specifically
sunflower seeds, soybeans and
sorghum. All three grains are
sold on the commercial market as
certified organic seeds.
When you plant the sunflower,
you get the blossom with the
seeds. You get about 500 to 1,000
seeds per flower, then that is har-
vested and the seeds are dried
and cooked, Muckenfuss said.
The seeds are then sold in the
supermarket or converted into
sunflower seed oil.
The same idea for the
sorghum, it grows like corn as far
as its a stalk. The stalk gets a
head on it and thats whats har-
vested, Muckenfuss said.
The soybean yield is used for
any soybean-based product, in-
cluding soy sauce and flour.
The farm was a team decision
for the pair.
It started really for us with the
asparagus, Kate said. We had
too much for our family to eat by
ourselves, and we thought, why
not sell it? From there, we got our
stand in the summer.
Both Chad and Kate work full-
time on top of the responsibilities

of the farm and have two chil-
dren. Kate is a nurse and Chad
works in IT and telecommunica-
tions in Moorestown.
Time is the biggest challenge
for the couple.
You can plant all the stuff and
have all the hopes in the world,
but youre relying on nature to
provide what happens, Mucken-
fuss said.
The spring season starts with
asparagus, lettuce, peas and
spinach. Summer will yield
strawberries, the only fruit they
produce, radishes, summer
squash, peppers, hot peppers,
heirloom tomatoes, silver queen
sweet white corn, green beans,
wax beans, red skin, Kennebec
and Yukon gold potatoes. In the
fall, the farm produces squash
and pumpkins.
This time of year is fairly
easy. Its a lot of tractor work so
youre tilling up the soil, Muck-
enfuss said. The tedious part is
planting. Mid-summer and sum-
mer is taking care of the crops
and weeding, which gets fairly te-
dious.
In addition to the crops, the
family owns chickens and two
horses.
The eggs are sold year-
round, Muckenfuss said. We
have roughly 200 chickens, which
equates to about eight or 10 dozen
a day that we collect.
The couple doesnt hatch the
eggs and raise chicks. Chickens
are adopted and are raised free
range at Mill Creek.
The chickens are provided
with all organic feed, including
grains, grass clippings and any
plants they wish to eat.
The differences between the
white eggs at the store and multi-
colored eggs from the farm can be
attributed to three major factors

the breed of chicken, how its
raised and the freshness of the
egg, Muckenfuss said.
According to Muckenfuss,
store-bought eggs tend to be at
least two weeks old by the time
they arrive to the store. The
chickens are typically raised in a
one by one foot square cage and
only lay eggs.
We have happy chickens,
Kate said.
Theyre outside and running
around. They know they get fed a
couple times a day, and eat bugs if
they want to. They know theyre
taken care of, Chad said.
The farm stand is open daily,
and the couple sends emails to let
patrons know whats available
week-to-week.
Were able to service the com-
munity, Muckenfuss said.
When we started five or six
years ago, it started with 25 or so
customers who would stop in and
buy asparagus. Now were up to
360 or so people. Its a real grass-
roots operation. We know people
have to make the effort to get
here.
Mill Creek vegetables are also
sold at the Kirbys Mill farm mar-
ket and at Whole Foods farm
market on Tuesdays in the sum-
mer in Marlton.
The couple receives emails
from all over the country about
the operations, and is willing to
teach local couples the basics of
organic farming.
They wanted organic dirt, we
gave them some and helped get
them started, Muckenfuss said.
Its enjoyable to help people out
and get them excited about the
kind of stuff theyre eating and
where it comes from.

I
ts that time of the year. That time
when public school Boards of Edu-
cation are finalizing budgets and
announcing to their respective con-
stituents how much more they will pay
in school taxes next year.
We say more because its hardly
ever less.
Homeowners in New Jersey expect
to pay high property taxes, fueled in
large part by taxes from our local pub-
lic school districts. Its a way of life
that, while were not happy with, we
accept.
It seems each year that more and
more families are moving out of New
Jersey because of these high property
taxes, but those people usually dont
move away until after their kids gradu-
ate high school.
Overall, our states public schools
are exceptional its one of the main
reasons that so many families contin-
ue to raise their kids here.
So it should be no surprise and
shouldnt cause too much anger to
learn that New Jersey spends more per
public school student than most of the
country.
The third annual Taypayers Guide
to Education Spending released re-
cently shows that New Jerseys public
school districts spent an average of
$18,0147 per pupil in 2011-12. That was
an increase of 4 percent over the year
before, according to the state.
Yes, that is expensive. But isnt it
worth it?
New Jersey public school students,
as a whole, have some of the best test
scores in the nation. Whats that old
saying: You get what you pay for?
If you want good schools, you need
to spend money.
Can school districts throughout the
state do a better job of spending while
ensuring the best education possible
for students? Of course they can and
they should.
But high school taxes are, unfortu-
nately, a way of life in New Jersey, and
it will continue to be that way for quite
some time.
Property tax relief may be in sight
in the near future, but expecting to pay
what other states pay is unrealistic.
Frankly, we shouldnt want to pay
what other states pay in school taxes,
because we get what we pay for some
of the top public schools in the nation,
which help churn out some of the best
public school students as well.
in our opinion
School taxes are high...
...But so are our kids test scores. Should we really be that upset?
What are your thoughts?
No one likes paying taxes, especially
when they are as expensive as they are
here in New Jersey. But are you getting
what you are paying for? Speak up and
let your voice be heard on the subject.
Reader says its hard
to ascribe guilt
Because of the poor grammar used by
Mr. Pace, Ms. Arter and Mr. Buoni, it's diffi-
cult to ascribe guilt in this library argu-
ment.
Someone seems to have misplaced hun-
dreds of thousands of dollars.
This sounds like a case for either a law
enforcement officer or an accountant.
Locate those poor, old members of the
Medford Library Association, revitalize
their interest and just do what needs to be
done.

Child explains why she loves
summer in the Medford area
I love summer because I love to swim at
the lake at Camp Ockanickon, or as the lo-
cals call it, Ocky.
I get excited on hot sunny summer days
when the air is filled with laughter, shriek-
ing and happiness coming from the camp.
I can hear them all the way here at my
house. Im thrilled with anticipation of
going. I put on my bathing suit, get my
towel and Im ready to go! When I arrive I
see my lifeguard buddies, friends and fami-
ly. I drop everything and bolt to the water.
It feels relaxing.
My mom calls it, The Lake of shinning
waters, as she makes her hands like a rip-
ple. As I lay back into the lake water the
noises are muffled, but it feels calm and
peaceful.
I hear voices, laughing, Marco.
Polo. Marco. Polo. Marco.
Polo! I got you! All of the sudden, my
cousin Naomi yells want to go to the deep
end? My relaxing time has vanished. I
race to the ladder and climb up onto the
deck.
I hold my nose and jump forward, feet
first.
The family game of tag has begun. Be-
fore anyone says that Im it. I tag them and
say, Youre it!
Time flies by, as the sun sizzles overhead,
but there is always a breeze at the lake. I
please see LETTERS, page 7
see smiles and happy faces, mine
included. This is what I have
longed for all winter.
Right away my mom yells,
Hey Kaya want to go on a
kayak? And I say, Sure. A day
is not complete without kayak-
ing.
I get out of the water, don my
life jacket and Im ready to pad-
dle.
I say, Ready Mom! mom says,
OK!
I get into the kayak and mom
pushes the kayak out into the
water.
We synchronize our paddles to
the cadence, Right, left, right,
left, right, left, until we reach the
middle of the lake. Then, we lift
our paddles out of the water and
we gently glide.
I put my hand in the water and
it feels slightly cool. Then I take
my hand out and hold my moms
hand and say, Best friends forev-
er. You cannot beat this mo-
ment. Summer means Ocky
and the memories we make. Yes, I
love summer.
It calls me Marco.

what they have been reading.
The time has come for different
mediators, from Medfords coun-
cil and from the freeholders, to
try to rationally come to an agree-
ment over what the facts are and
what the solution is.
There is too much animosity
between the present actors.
Perhaps an independent arbi-
trator is needed, but certainly we
need new contestants in this
war.
Off hand, it would seem that if
the Library Commission surplus
is so high that municipal taxes
should be lowered.
And the cogent solution sug-
gested by Mr. Love to use recre-
ation taxes for library mainte-
nance is certainly worth examin-
ing.
There are answers, but using
the media to prove whos right is
not the answer!

14 THE MEDFORD SUN APRIL 17-23, 2013
Plenty of spring events blooming in Medford
By SHANNON CAULFIELD
The Medford Sun
Winter is finally over, and its
time to cure the cabin fever from
cold weather. As temperatures
rise, so does a sense of adventure.
Let us fill your calendar with a
collection of events coming up
this spring
Woodford Cedar Run
Wildlife Refuge
Woodford offers family friendly
activities at a low cost, while
teaching guests about the ani-
mals in the area and their habitat.
The Refuge invites guests to
celebrate Earth Day on April 21,
at 1 p.m., with hands-on action to
help spruce up Woodford Cedar
Run Wildlife Refuge, benefitting
the environment.
Earth Day Work Day will be
spent removing invasive plants,
cleaning debris and clearing
trails. All are welcome, including
children as long as they are close-
ly supervised by their attending
adult.
A task list will be provided to
volunteers and each volunteer
gets to pick their assignment.
Snacks will be provided.
On Saturday, May 11, gather
the family to learn about Sounds
in the Night, to explore trails
after dark and learn where the
noises come from. The cost is $10
for adults and $5 per child. Ad-
vanced registration required.
On Saturday, May from 4 to 8
p.m. the Refuge will host its 12th
Annual Wine and Wildlife Fes-
tival.
The 2012 event brought in
record attendance, and this year
should be even bigger as guests
have the opportunity to enjoy a
wine tasting featuring more than
two dozen different wineries, a
beer sampling consisting of mi-
crobrews and a gourmet picnic
dinner.
The event is held at the Refuge
with a chance to meet animal
ambassadors, tour the wildlife
housing area and experience the
Pinelands in spring.
Additionally, there will be live
music and displayed nature-
themed artwork at the Nature
Center.
Call for reservations or for
more information at (856) 983-3329
ext.100.
The Woodford Cedar Run
Wildlife Refuge is located at 4
Sawmill Road. For more informa-
tion, visit www.cedarrun.org.
Art and Wine Festival
The Art and Wine Festival will
be returning to Main Street Sun-
day, June 2 from noon to 4 p.m.
According to Medford Business
Association Executive Director
Dave Vaughn, residents should be
advised Main Street will be closed
from 10 a.m. to 5 p.m.
The event will host eight differ-
ent wineries, more than 50
crafters and local food vendors.
Entertainment will be family
friendly with 12 or so musicians,
jugglers, balloons and face paint-
ing.
We wouldnt have these festi-
vals without Zallies Shop Rite
supporting us. Theyre tremen-
dous, Vaughn said.
About 5,000 people attended
last years event, according to the
MBAs website.
The Medford Business Associa-
tion and the Medford Arts Center,
both nonprofit organizations,
partnered to present the festival,
and profits from the event will be
divided evenly and benefit the or-
ganizations.
The events on Main Street are
important to showcase the town
and benefit from the people visit-
ing, Vaughn said. Its all about
helping the businesses. Main
Street is our focus now to get visi-
bility and exposure.
