Om Swastiastu... For the month of June we are covering the theme Adventure! Rather than have the entire issue become one that is dedicated to just high-adrenaline sports or outdoor excursions and activities, we decided to discuss the theme in a broader sense. For example, our FOTOFOLIO this month features paintings by the students at the Daya Pelita Kasih Center, whose special needs make navigating our complicated world a constant adventure. This months PONDERING POINT features our contributors musings on how challenging it can be to be a pedestrian in certain parts of Bali. And in CAPITAL CORNER we discuss Chef Will Meyricks newest restaurant E&O, where he is now able to share the avors from his culinary journeys around Asia with Jakartas discerning diners. Of course, we wouldnt dare exclude outdoor sports altogether, so make sure to ip through to nd out where you can take part in an exhilarating game of outdoor paintball or have a rewarding one-hour session of Stand Up Paddling Yoga. These are a couple great alternatives for those of you looking for something different to do while soaking up the hot rays of the Bali sun. The denition of adventure varies from one person to the next; some things that we dene as exciting or challenging may seem like a cakewalk to others, and vice versa. We hope this issue not only motivates you to try something new but also helps to remind you how important sensitivity and common courtesy are, because every persons journey is different and everyone faces different challenges. The resorts Chef de Cuisine of II Ristorante, Maurizio Bombini, won the 2013 Chef Wars in Bali. It was chaos in Java by the mid 15th century. Feuds were happening everywhere and the Islamic expansion had reached almost all areas of Java. Some Javanese Hindus sought refuge in the eastern parts of Java such as Pasuruan, Blambangan, Banyuwangi, Tengger, Bromo, Kelud and Gunung Raung (Semeru). Others traveled as far as Bali, including Dang Hyang Nirartha, a famous Hindu priest who had a broad knowledge of
religions. He was a handsome and powerful yet humble priest, and not only did he understand the values of Hinduism but he was also familiar with Buddhism and Islam. Along with his wife and seven children, he made the dangerous trek to the island of the gods. When they were about to cross the sea they faced a difcult dilemma. All they had was a small leaking boat that would in no way be strong enough to hold them all. But with the help of some

He was able to synchronize his power with that of the universe and managed to cross the sea riding on a pumpkin. The priest was rst to arrive on the island and while waiting for his family to follow he built a temple called the Purancak Temple. By the time his family arrived he made a vow that he and his descendants would never again eat pumpkin (to this day most Balinese Hindu priests refuse to eat pumpkin in honor of the vow made by Dang Hyang Nirartha).

The dragon suddenly disappeared and the priest appeared with his body glistening in gold. His family was terried and ran for their lives. For days Dang Hyang Nirartha tried to
locate his family, and every single day he believed that he would be able to nd them. He nally found his wife and six of his children, but he learned his oldest daughter had died when her soul came to him asking for forgiveness for letting fear overcome her. Not long after learning about the loss of his daughter, the priest lost his wife.

In the days to follow they continued their journey to the eastern part of Bali. Along the way they came

Both his wife and daughters souls became the guardian angels of the village where they died and they are honored at the Melanting Temple. The priest and his six remaining children continued their journey to east Bali. Day after day they came across Balinese people who at that time still practiced Animism, and Dang Hyang Nirartha patiently tried to convert them. He taught them that statues should not be worshipped because there is only one great power in this universe, which is Ida Sang Hyang Widi Wasa or God. The statue itself is only a symbol of Gods will and power. To avoid any misinterpretation of Hindusim, Dang Hyang Nirartha created the concept of Padmasana, which has since become the main part of Balinese temples. Padmasana is a place where the power of God stands strong and is worshiped by Balinese Hindus. Dang Hyang Nirartha was also the one who introduced the use of re (incense), holy water, and fresh owers as part of the Balinese prayer culture. These materials (re, water and ower) were believed to be the best tools to help people to channel their souls to the greater power when performing their prayers. a beach in Kerobokan. He decided to bury his tobacco box (it is customary for Balinese Hindu priests to chew tobacco mixed with areca nut and lime, and it is believed that the tobacco boxes owned by the priests have powerful energy) and requested that the terrifying spirit who lived there guard it. Since the giant spirit guarded his tobacco box in a grim place, the priest named that place Peti tenget (grim box). Dang Hyang Nirartha then continued his journey south to a village called Pecatu, where he was nally able to reach Moksha (being freed from the karmic suffering of the world) at a location that is now known as the Uluwatu Temple. Until now, the concepts taught by the priest are still followed by Balinese Hindus. These concepts add richness to the culture of the island. To make bebek betutu, youll need the following ingredients: 1 whole duck (800 grams) 4 large banana leaves to wrap around the duck 100 ml cooking oil to be mixed with spices 250 grams of cassava leaves, boiled, squeezed, strands seperated 2 bay leaves 3 kafr lime leaves Aluminum foil As for spices, youll need: Blended Spices 6 red chillis, seeded 2 cayenne peppers 6 roasted candlenuts 11 cloves of shallots 6 cloves of garlic 1 tablespoon coriander, roasted 1 teaspoon pepper, roasted 3 cm kencur (similar to a white ginger) 2 cm galangal 3 cm turmeric 1 teaspoon of shrimp paste, fried 2 teaspoons of salt Finely Sliced/Chopped Spices 11 cloves of shallot 6 cloves garlic 2 cm ginger 5 stalks lemongrass, take the base 10 cm How to Prepare: Mix the spices with oil, stirring until blended. Spread half the seasoning over the outside and cavity of the duck evenly. Mix the remaining spices with cassava leaves that have been boiled together with the chopped spices, bay leaves, and kafr lime leaves. Then insert inside the duck. Wrap the duck in banana leaf, fasten with string, then wrap with aluminum foil tightly. Steam the duck for about 2 hours until cooked and the avors mingle. Open the aluminum wrap, then grill the duck with the banana leaves still wrapped around it for 20 minutes until its fragrant. Tear open the banana leaves and cut the duck into 4 pieces. Serve hot. This recipe can also be applied to chicken!

Upping the ante is Warung Liku. Another favorite of locals, this place is always packed during lunch hour and youll nd they will probably have run out of food if you come too late in the afternoon. This warung sits on Jalan Nakula No. 19 in Denpasar and offers one of the best Balinese betutu menus in Bali. The place itself doesnt look like much from the outside, however people come here for the food rather for the ambiance. If youre lucky enough to get a seat outside, you might be able to enjoy your meal beneath a shady tree with a cool breeze. An order of Nasi Ayam Betutu,
NASI BALI IBU DAYU

Now here comes the big one. If you ask around to see what Balis most well-known signature dish is, Nasi Bali would be the most common answer. There are many places where you can get Nasi Bali, but they will not be as good as Nasi Bali Ibu Dayu, located within the vicinity of the Kuta Market on Jalan Raya Kuta. It is really one of Balis best kept secrets, as not even all the locals know about this place despite its very strategic location. This place is a true authentic warung, where youll sit on plastic stools at makeshift wooden tables; an al fresco experience with not a single fan in sight. Its a good thing they are only open at night from 7 p.m. Place an order for Nasi Bali Komplit a plateful of rice, vegetables, and coconut waterglazed roasted pork skin served with a small bowl of hot and tasty broth. This will send you straight into street food heaven, and the entire meal will cost you only Rp. 20,000. If youre not one to eat right on the street, you can also order takeaway and devour the street food goodness from the comforts of your room. If you are able to successfully tackle this last challenge and Bali belly still has not taken hold of you, then congratulations! Next was the Finnish Wood Sauna, where I could pour as much eucalyptus water onto the rocks as I pleased. After 15 minutes in the hot sauna, I then continued to the freezing cold Ice Fountain Room. The Wellness Suite at the Mulia Spa is unlike anything on the island. It consists of an Aroma Steam Room, a Finnish Wood Sauna and an Ice Fountain Room, all by the brand Starpool. There are actually two sets

They were of all different shapes and sizes (round, at, rolling pin, etc.) and used to treat different areas of the body. The therapists hands were warm and her massage movements combined with the

Walking past the Hydro tonic pool, the outdoor meditation area, and the spa bar (offering juices and herbal infusions) on my way back to the locker room, I literally felt like I was oating on air. Lingering and chatting beneath a sky littered with stars, the dinner is a truly intimate and romantic experience to be shared with someone special. If there happens to be a Secret Dinner going on simultaneously, youll have the gorgeous view of the lit-up temple across the way a beautiful glowing beacon amidst the dark wall of jungle. At the end of the night youll have the opportunity to write your wishes down on a slip of paper and release a lantern into the sky with the wishes tied to the bottom. Watching the paper lantern get smaller and smaller as it oats farther away is a magical way to end the dinner. Afterwards youll head back to the bar for Petit Fours, coffee and tea. Out of the four desserts the highlight for us was the Mango
Panna Cotta. The texture was perfect, the avor was absolutely heavenly and the slices of fresh strawberry on top were a refreshing addition to the dessert.

This reminded us of another member of the animal kingdom that had awakened us earlier that morning. At around 6 a.m. we woke to the sound of some very energetic monkeys chasing each other on our thatched roof, creating quite a ruckus! The sounds were so loud and clear that for a moment we thought the monkeys had somehow gotten into the room and were doing laps around the canopy bed. It is exciting how close to nature you feel when you are staying at this hotel. You can also try one of their day
activities such as rafting, kayaking, or bike trails to get even more in touch with nature. Even though weeks have passed since our stay at the Ubud Hanging Gardens, we still cannot get their amazing jungle view out of our minds. IN BALI, THE ABUNDANCE OF THINGS TO SEE AND DO CAN BE AT ONCE ENCHANTING AND DISTRACTING. BUT DONT FORGET TO WATCH WHERE YOU ARE GOING ON TRICKY SIDEWALKS AND LOOK OUT FOR ROGUE MOTORISTS WHEN YOURE NAVIGATING THE ISLAND ON FOOT.
It is why I long for days off when I dont have to rush because I have no immediate obligations. However, as a pedestrian in Bali getting around on foot is sometimes not as enjoyable an experience as is the atmosphere the island provides. Sidewalks are not always available and when they are, I nd they are never wide enough for two people to walk side by side without having to stop every few minutes to give way to someone coming from the opposite direction. In some areas like in Legian Kaja, the lighting in ne of the reasons I decided to return to Bali after going abroad for a This is Bali, where the sun shines 12 hours a day. Its a place where Im able to escape without getting lost because I know Im surrounded by good people and positive vibes. Wherever I go, Im blown away by amazing architecture reecting the graceful nature of Bali. For all these reasons, I dont mind that Bali does not yet have an efcient public transport system. The thought of wearing a light outt and walking around in ip ops while breathing in the ocean air and being kissed by the sun is always on my mind. the evening is poor and I have to watch my step to avoid holes and debris on the sidewalks. I cant imagine what it would be like to be a tourist or a local walking on those sidewalks with a baby stroller or wheelchair. It is so disheartening to see parents struggle to nd ways around the holes with their strollers, and I have a friend who had to think twice about going out in Legian when he was wheelchair-bound after an accident. Ive actually been trapped in a street hole myself, and let me tell you, it is

Everything seems to be within walking distance just a short walk from where I live I can nd cafs, galleries, boutiques, the beach, and some cool night clubs. When Ive ventured a little bit further, Ive stumbled upon rice elds set alongside busy roads with nice little cafs overlooking them.

not one of my fondest memories! Fortunately, Ive noticed some recent improvements with the sidewalks here. In tourist-heavy areas there are an increasing number of sidewalks that are of much better quality. For example on Jalan Legian the road is now covered by paving stones (replacing asphalt) and the sidewalks look smoother with a bit more space to walk. It seemed quite promising for pedestrians like me until I found motorbikes and cars parked all over. Apparently these vehicle owners think the no parking signs installed
every 50 meters are nothing more than street decorations with messages that arent important enough to obey. Rules will not encourage people to change their behavior if no action is taken to reinforce them. I do believe these motorists must have been pedestrians at some point, but they seem to have forgotten how irritating it is to walk in an unsafe environment. Making our way around parked vehicles on sidewalks is inconvenient, not to mention having to step aside for motorists who decide to use the sidewalk as if its a road.
It is clear that although sidewalks should be dedicated to pedestrians only, it is not always the case. Hence it might be safer for pedestrians to walk facing trafc at all times, to wear reective clothing during evening walks, and to carry ashlights in poorly lit areas. Ladies might also consider wearing at shoes over heels. But honestly, it shouldnt have to come to this. So fellow motorists, lets make a conscious effort to give way to pedestrians for a safer and more enjoyable Bali. By Aini Zariyah

ntering the Bukit Peninsula through Jimbaran on your way to Bali Paintball Arena, youll head up the limestone hill passing
art equipment and safety gear. It is denitely the place to go for real-life war games with friends, colleagues or the family. Youll start the day with a welcome drink at the reception while waiting for the other players to arrive. Once everyone has gathered together youll gear up in camouage jumpsuits and face and eye protector masks, and then be divided into two teams. After a brieng session on the rules of the game youll be taught how to operate the semi-automatic paintball guns including handling, loading, aiming and shooting. Then youll get to do a few practice rounds prior to entering the battleeld.
THE BATTLE BEGINS

Upon entering the rst battleeld where the two teams are separated by a line of trees, drums, and big balloons to take cover behind, I learned that one of my teammates had actually been in the Norwegian army and served in Afghanistan twice. I breathed a sigh of relief, since the other members of our team, including myself, were utterly and hopelessly new to this experience. By 10 a.m. we were ready to go. I was clutching my paintball gun tightly. With my heart pounding and cold sweat dripping off my face, I could feel my legs shaking from the adrenaline rush. There was a gentle breeze from the sea but it wasnt

One by one, players from both teams were carried off the eld for they were shot and that was the end for them, at least for this game. enough to help to calm my nerves. I could hear myself breathing hard in my mask. As the instructor counted down to start the game, things got real fast. We scrambled into formation and guns were red. We ducked, rolled and maneuvered through the eld, aiming and shooting at our opponents. Bullets of paint rushed over my head and I could feel the ripples of air as they nearly grazed me. After what felt like hours of playing the horn was sounded, which meant we only had ve minutes left to annihilate the other Just as the second horn was blown our team was able to take over our opponents side. After the excitement of the rst game we were given a short break to catch our breath. Then we were led to a second battleeld that was set in a village-like scene with wooden huts, fences and bushes. At rst I thought this new terrain would be easier to deal with, but just as the second game began I was proven wrong. There were more spots to hide and avoid the blast of the colorful gelatin bullets, which made it even harder to take over our opponents area. ccording to inscriptions, Palembang was the capital of what was once the greatest
named Sriwijaya, which means glorious victory. But alas, no palace, castle, temple or records on strips of lontar palm leaves from this kingdom have survived. And though there is almost nothing left to see
from the heyday of the kingdom that once controlled the Southeast Asian waters, Palembang is nevertheless an attractive destination for anyone looking for a different kind of experience in Indonesia. In fact,

Palembang has a long history as a travelers destination, as almost all accounts of Sriwijaya come from records left by foreign visitors. Located 100 km inland near the largest river in Sumatra, its position is very strategic. The Malacca Strait was a popular alternative to the Silk Route, linking China and India to the outside world much like Singapore does today. kingdom in southern India launched a devastating raid against Sriwijaya in 1025, and afterwards it was never able to regain its former power.
Just a short stroll from Masjid Agung is the icon of Palembang, the Ampera Bridge. From a historical perspective it is a relatively new addition to the city, inaugurated in 1965. Spanning about 300 meters across the mighty Musi River, it is not particularly long but the Palembang folk are very proud of it nonetheless. It is one of the rst vertical-lift bridges in the east, and even the Japanese who built it had no such bridge in their home country at the time. Unfortunately, its verticallift mechanism no longer works these days. Most of the city dwellers travel across the Ampera Bridge on a daily basis. The bridge connects two important areas, Sebrang Ulu and

Around 16 AD, the sultanate of Palembang fell under European control, mainly the Dutch. Fort Kuto Besak, which is strategically situated on the banks of the Musi River, is a testament of that colonial era. A ne example from the sultanate era is the beautiful 350-year old Masjid Agung (Grand Mosque). Islam has a long history in this city and visitors should not miss out on seeing this mosque. The unique architecture is a mix of Malay and Chinese inuence.

FLOATING DOWNSTREAM
The Musi River is one of the longest rivers on the island, winding down about 700 km from the Bukit Barisan mountain range. To do justice to this giant snake of a river, hop on a ketek (small wooden boat) and see the stilt houses, countless small mosques perched on the bank, and oating gas stations as you make your way downstream. It is a glimpse of a river life that had been shaped for centuries; you may call it the old and forgotten life. Youll also pass the famous 16 Ilir market with its plethora of colorful boats, which will stir your imagination back to the era when Palembang was a prosperous trading land. As a melting pot of Malay, Chinese and Arab cultures, Palembang offers a variety of fascinating cuisine. From the Malay realm, there are brengkes patin tempoyak (steamed sh wrapped by banana leaf with fermented durian sauce), pindang patin (sh soup with tamarind avor) and pindang tulang iga (the ribs version of the aforementioned soup). After your river trip, duck into River Side Restaurant, a boat-turnedoating-restaurant to try these local delicacies. You can also take a seat in one of the ubiquitous Martabak HAR outlets to try this folded pan-fried bread served with curry and potato gravy. The founder, Haji Abdul Rozak, is of Indian descent and started his business in the city around the 1930s or 40s. Now this kind of martabak along with pempek is the daily staple of Palembang residents. Pempek (or empek-empek) is a sh dumpling that is sometimes also stuffed with egg and served with a bowl of spicy vinegar.

n Bali, who doesnt know about the popular restaurants Sarong and Mama San? Having recently moved from Bali, I was one of the many people in
and travels, as well as his vision and interpretation of what constitutes honest Thai and Vietnamese cuisine. The chef doesnt mind plunging headrst into markets to nd the best products, be it vegetables, spices or sea products. It is no wonder that the dishes he turns out are of such high quality. He is also concerned with the sustainability of the market and the farmers who produce his ingredients. By purchasing directly from the supplier he is able not only to choose the best and get it at a good price, but also make sure he is positively contributing to the suppliers welfare.

HEAR THAT BUZZ?

Chef Meyrick has some very devoted fans, including a colleague of mine who recently admitted to ying once a week to Bali just so he could eat at Sarong or Mama San. Chef Meyricks success caught the attention of the Loewy Group (who are behind restaurants in Jakarta such as Loewy and Union) and on March 6 the restaurant E&O opened in the Mega Kuningan area. E&O stands for Eastern & Oriental, and the restaurant offers mostly Thai and Vietnamese, which are some of Chef Meyricks specialties. Word has spread like wildre, so even though E&O is still relatively new, Jakartans are already ocking to the restaurant. a stir at Longrain and Jimmy Liks, restaurants that redened modern Thai and Asian dining in Australia. After exploring the culinary landscapes of Bali, Thailand and Hong Kong, he chose to settle in Bali and subsequently established two critically acclaimed restaurants: Sarong and Mama San. Due to his passion for discovering authentic avors, Chef Meyrick is always eager to learn about the dishes of locals and kitchen secrets that have been passed down for generations. E&Os menu is a result of the chefs adventures
EASTERN & ORIENTAL

Though the restaurant has the word Eastern in its name, you will not nd any Asian-inspired dcor at E&O. There are no kitschy elephant statues or other ethnic touches it has more of a classic and timeless interior with a bit of a hip and modern touch. Chef Meyrick mentioned that the interior at E&O is the concern of Loewy Group while his focus is the kitchen, but I was still able to nd some similarities between the atmosphere at E&O and the atmosphere at Sarong and Mama San: dim, elegant, and intimate.
HOW IT ALL BEGAN

Entering the building you will encounter a long marble bar where you can sip a cocktail while waiting for the rest of your group to arrive. You can also revisit the bar after dinner if you dont want the night to end just yet. There are a number of Asian-inspired cocktails at E&O incorporating fresh tropical fruit and local ingredients such as pomelo and lemongrass. One of their
sparkling wines, champagnes, and red wines dominated by Pinot Noir and Shiraz varietals. If you are not sure how to pair wine with Asian food, dont worry a sommelier is ready to help you choose the perfect wine to complement your selections. Chef Meyrick suggests communal eating at E&O because most of the dishes on the menu are large enough to be shared. For my starter

dishes, all of which had very generous portions, so I was able to share them with my friends. We started with the Massaman Curry a curry of slow-braised lamb shank with cardamom, shallots, pumpkin and tamarind. To be honest Im not the biggest fan of Indian curries, but the lamb shank was very tender and cooked beautifully. Next we tried the Pork Belly with Tamarillo and Tamarind Sauce served with Nam Pla Prik, a traditional Thai sauce made from chili and sh sauce. After that came the Stir-fried Mud Crab with Chili
Sauce and Steamed Buns, and last but not least was the fresh and delicious Steamed Fish with shiitake mushrooms, ginger and shallots. To end the night I tried their Durian Panna Cotta, which I must say was the highlight of my dining experience at E&O. Believe me when I say that this dessert tastes absolutely heavenly. Served with white sticky rice, it is creamy and sweet and practically melts in your mouth. But of course you must be a durian lover in order to appreciate this panna cotta. Overall, the arrival of E&O
in Jakarta is good news for me, especially being a big fan of Chef Will Meyrick and loving Sarong and Mama San. If you happen to be a fan of his also, or if you havent yet had the chance to visit any of his restaurants, then you should denitely check out E&O. Call an ambulance by dialing 118, but it is a lot more practical and quicker to hire a taxi. Most hotels have on-call doctors on standby. For Bali Belly, Lomotil and Imodium eliminate symptoms, but not gastro-related infections. A fever along with symptoms requires doctor-prescribed antibiotics. Drink as much liquid as possible. Isotonic drinks under various brand names are widely available and are known to replenish body hydration and replace uids. For discomfort, diarrhea and cramping, drink strong, hot tea; avoid fruits and spicy foods. Some day-biting mosquitoes carry dengue fever, but this is not a problem in tourist areas. Bali is non-malarial and prophylaxis is not required. Mosquito bites, cuts or abrasions easily become infected in the tropics. Treat them immediately. Drink only bottled or boiled water. Peel fruit before eating; avoid raw vegetables except at reputable restaurants. Ice in restaurants is safe. Protect yourself from the intense equatorial sun. Use high SPF sunblock and a hat. AIDS and sexually transmitted diseases are increasing in Indonesia. Local sex workers have multiple partners from around the world. They are not checked for sexually transmitted diseases. Act responsibly and use condoms, available over the counter at pharmacies.
