Chicken Tikka Recipe 5 lbs.

boneless chicken breast, cubed 1 box Shan brand Chicken Tandoori Masala Mix box Shan brand Seekh Kabab Masala Mix box Shan brand Lamb Chops Masala Mix chopped onion 5 pods of fresh garlic [Use and add the green pepper + onion juice (taken out from the chicken kofta recipe) into this chicken tikka recipe.] Mix contents well, marinate, and charcoal grill it.

Mix all contents really well. Constantly wash/dip your hands in hot water while making these skewers on the sticks so that the meat does not stick to your hands. Charcoal grill it.

Blend the onions and fresh garlic in a blender. Mix contents well, marinate, and charcoal grill it.

Mix contents well, marinate, and charcoal grill it. Korma Sauce Ingredients

* 1 med. Yellow Onion * 3 cups Water * 16 ounce can Tomato Sauce * 1 tsp Salt * 1 1/2 tsp Coriander

* 1 tbl Corn Oil * 1/4 tsp Black Pepper

Directions Slice yellow onion very thin and boil it in water for about 15min. or until the onion becomes tender. Next, strain the water and put the onion in a blender with corn oil, tomato sauce, salt, black pepper, and freshly ground coriander. Blend this mix well and then put the sauce into a saucepan and bring to a boil. Aftre it comes to a boil, turn the heat down to low and let the sauce simmer until it thickens.

Kabab Marinade This can be used as a marinade with any meat or fish dish Ingredients

* 2 md Onions, peeled * 2 c [nonfat] plain yoghurt * Dash of Lemon juice or vinegar * Pepper to taste * 2 tb Ground cumin seeds * 2 tb Ground coriander seeds * 1/2 - 3/4 tsp cayenne pepper * 2 tsp Fresh ground ginger and Garlic paste * Chopped cilantro to taste 1/2 tsp Turmeric

Directions Liquify in blender. Marinade meat overnight in mixture.

Meat Sauce

Ingredients

* 1 Yellow Onion * 1 lb Ground Beef * 1 tsp Black Pepper * 16 ounce can Tomato Sauce * 1 tsp Crushed Garlic * 1 tsp Coriander * 1 tsp Salt * 1 1/2 cups Water

Directions Grind yellow onion, and one-half of a cup of water in a blender. Pour this mix into a frying pan with ground beef, and cook until the meat is browned. Add one more cup of water, crushed garlic, salt, freshly ground coriander, black pepper, and tomato sauce to the meat and cook over a medium-low heat for 20-25 minutes.

Lamb Kabab Ingredients

* 2 pounds boneless lamb steak cut into 1-in cubes * 3 medium onions, quartered * 1 teaspoon salt * 1 teaspoon ground cumin * 1/4 teaspoon pepper * cup yogurt

Directions

1. Mix everything together & marinate for 1 to 1-1/2 hrs. This distributes flavors & tenderizes meat.

2. Put 4 pieces of lamb alternating w/onion quarters on each metal skewers. Grill over charcoal, traditional method, for 10 mins, or to taste: rare, medium, or welldone. Serve warm w/other Afghan foods.

Mourgh (Chicken)

Yield: 6 servings Ingredients

* 2 lg Cloves garlic * 1/2 ts Salt * 2 c Plain, whole-milk yogurt * Juice and pulp of 1 large lemon, 3 to 4 tablespoons * 1/2 ts Cracked black pepper * 2 lg Whole chicken breasts, about 2 pounds

Directions

Long, slow marinating in garlicky yogurt tenderizes, moistens and adds deep flavor, so you end up with skinless grilled chicken that's as delicious as it is nutritionally correct. Serve with soft pita or Arab flatbread and fresh yogurt.

Put the salt in a wide, shallow non-reactive bowl with the garlic and mash them together until you have paste. Add yogurt, lemon and pepper.

Skin the chicken breasts, remove all visible fat and separate the halves. Bend each backward to break the bones so the pieces win lie flat. Add to the yogurt and turn so all surfaces are well-coated. Cover the bowl tightly and refrigerate. Allow to marinate at least overnight, up to a day and a half. Turn when you think of it. To cook, remove breasts from marinade and wipe off all but a thin film. Broil or grill about 6 inches from the heat for 6 to 8 minutes a side, or until thoroughly cooked. Meat will brown somewhat but should not char. Serve at once.
