English Sensory evaluation showed that the flat noodle production with 5 percent
Abstract level of supplementation had the most comparable quality to the control on
unsupplemented one, in terms of odor, texture and flavor. The 5 percent
malunggay leaves substituted pasta (MSP) also got the highest
acceptability score among the substituted products followed by the flat
noodle substituted at 10 percent level. Addition of sauce, sauteing and
cooking in soup of flat noodles generally improved the sensory attributes
and acceptability of all the treatments. The flat noodle was preferred to be
(1) light green in color, (2) odorless, (3) with a characteristic bland or flat
flavor and (4) chewy and firm in texture. The test revealed that each level of
malunggay leaves substitution affected the odor, color, texture, flavor, over-
all quality and acceptability of the flat noodle products. Chemical analyses
indicated an increase in nutrients of flat noodles, among others. Calcium,
iron, and Beta carotene content increased as the level of substitution was
increased from 5 percent to 15 percent. Crude protein level was likewise
significantly increased from 10.33 percent for the control to 11.18 percent
for the flat noodle at 15 percent level of substitution. Calcium was almost
doubled (15.0 mg) at 5 percent msp and a significant increase of about 10
mg at 10 percent and 15 percent levels of substitution respectively, was
observed. The significant increase in iron content of flat noodles was
observed at 10 percent and 15 percent MSP. The beta carotene increased
significantly as malunggay leaves substitution increased. Nutritional
contribution of 5 percent and 10 percent substituted flat noodles for protein,
iron and Vitamin A, which was completed as percent RDA [recommended
daily allowance], was found to be significant

The seeds of malunggay, Moringa oleifera were extracted with distilled
ethanol and concentrated under reduced pressure at 40 deg C. The
resulting extract was partitioned between hexane, ethylacetate, butanol and
water. The solvent fractions were likewise concentrated under reduced
pressure. The crude ethanol extract of dried seeds inhibited the
carrageenan-induced inflammation in the hind paw of mice by 85 percent at
a dosage of 3 mg/g body weight while the mature green seeds by 77
percent. The hexane fraction of the crude ethanol extract of the dried seeds
English also inhibited inflammation by 77 percent at the same dosage while both
Abstract butanol and water fractions inhibited inflammation by only 34 percent.
These results indicate the strong anti-inflammatory activities of the crude
ethanol extract and the hexane fraction. On the other hand, the ethylacetate
fraction caused a 267 percent increase in inflammation and exhibited
toxicity. The mice died after oral administration of the fraction. The crude
ethanol extract also inhibited the formation of Epstein-Barr virus-early
antigen (EBV-EA) induced by 12-0 tetradecanoylphorbol-13-acetate (TPA).
At a dosage of 100 (ug/ml) the extract inhibited EBV-EA formation by 100
percent suggesting its antitumor-promoting activity

The authors determined the effect of three drying methods (sun-drying, air-
drying under a roof, and oven drying) on feed composition and digestibility
of leaf meals in the project "Performance evaluation of dairy goats fed
protein-rich fodder." Leaves and browsable twigs of rensonii (Desmodium
rensonii), flemingia (Flemingia macrophylla), Kakawate (Gliricidia sepium),
ipil-ipil (Leuceana leucocephala), malunggay (Moringa oliefera), acacia
(Samanea saman), and stylo (Stylosanthes guianensis CIAT 184) were
used. The project aimed to determine the most suitable drying method for
smallholder farms to enhance utilization of fodder trees/shrubs as ruminant
feeds. Findings showed that malunggay leaf meal ranked highest in CP
English content (28.80%), followed by leaf meals from ipil-ipil (24.22%), rensonii
Abstract (23.60%), acacia (22.62%), flemingia (21.85%), kakawate (21.36%), and
stylo (16.80%). CP contents of the leaf meals were not significantly affected
by the drying methods, but oven and air-drying under a roof increased the
cell wall contents significantly; thereby decreasing their IVDMD and in vitro
organic matter digestibility (IVOMD). IVDMD and IVOMD values ranged
from 32.38 to 67.62% and 24.93 to 60.15%, respectively. Rensonii leaf
meal had the highest nitrogen (N) solubility value (41.27%), followed by leaf
meals from stylo (36.69%), malunggay (26.29%), ipil-ipil (20.05%),
kakawate (16.74%), acacia (14.89%), and flemingia (12.24%). Oven drying
effectively increased the N solubility of the leaf meals from 23.27% (sun-
drying) and 23.81% (air-drying) to 24.99%

English Moringa oleifera Lam. (malunggay) leaf extract has been shown to exhibit
Abstract anti-mutagenic properties. To determine if the leaf extract also possesses
any anti-teratogenic property, crude methanol leaf extract and a teratogen
retinoic acid were given to adult Radix quadrasi and the development of
the embryo was compared to those given only retinoic acid (the positive
control) or plant extract alone. Results show that there was no significant
difference in the gross morphology of the embryo in all treated groups as
compared with the untreated group. The same conclusion was attained in
terms of the length of egg masses deposited in all set ups. In general
however, retinoic acid favored oviposition of more egg such that when
applied alone, 21.4 egg masses were deposited against the 7.6 egg
masses of the negative control. Histological and histochemical studies
should be done to establish more conclusive results regarding the
possible anti-teratogenic effects of Moringa oleifera Lam. in pulmonate
gastropod Radix quadrasi
