Happy New Year! Without sounding grumpy, Im not really a big fan of January. After the excesses of Christmas, I resent the changes, feeling guilty for not instantly switching from mulled wine to cranberry juice, or pyjamas to gym kit. Taking the tree down is always a bitter moment (was that corner always that bare? Do we really have to take it down?). Everything looks plainer, and dark nights without fairy lights are all the longer. But, on the positive side, we have a fantastic January issue packed full of lovely food that just happens to be healthier. Flavoursome, satisfying and easy on the eye, our warm salads on page 37 promise to be healthier but not too goody two shoes! Weve also chosen the nations favourite meals and created lower-calorie and lower-fat versions (page 29). I make the turkey burgers at least once a week but have to admit that mine comes with a dollop of low-fat crme frache at the very least and a cheeky glass of wine. You only live once!

To make fresh egg noodles, all the ingredients are combined to make a crumbly mixture, which is rolled into a sheet, passed through rollers, and cut into noodles. Theyre dropped into a continuous cooking system, which cooks the noodles then cools them to less than 5C. Finally, theyre packed into bags and put into crates which are destined for Asda stores. Asdas free-range egg noodles are produced by Kanes Foods in Worcestershire. The unique thing about these noodles is theyre made fresh in our factory every single day of the year apart from Christmas Day, says Production Director, Mark Harris (left). This means theyre much better quality than dried egg noodles, which are manufactured, dried and rehydrated when cooked.

To make these noodles, we use an authentic recipe of our, free-range eggs, water, salt and turmeric, says Mark. Each week, Kanes Foods supplies Asda with 86,000 bags (42 tonnes) of fresh egg noodles. Theyre super quick to prepare and you can create delicious Asian dishes, including stir-fries, soups and cold salads.

My favourite way to eat these noodles is to stir-fry fresh prawns with an Asda Hot & Spicy Stir-fry vegetable pack, add a handful of fresh egg noodles and nish off with some Asda Sweet Chilli Sauce, says Mark. There are many types of noodles available (see panel, above), but Kanes Foods focuses on fresh egg noodles, as well as dehydrated rice noodles.

BLUEBERRIES
Not only delicious as a healthy snack, blueberries are also great in a variety of dishes, from crumbles and cakes to smoothies, salads and sauces.

Blueberry, granola and yogurt layer


Toast a handful of oats in the oven or a frying pan, taking care they dont burn. Mix together 6tbsp Greek yogurt with 1tbsp honey. Put a layer of the yogurt in a tall glass and add a layer of the oats. Repeat with a layer of yogurt and some blueberries, nishing with a layer of oats. Top with more blueberries and extra chopped dried or fresh fruit. Serve chilled.

All Asdas tender spring greens are grown in the UK, and theyre one of our best-selling cabbages at this time of year. To make sure they are as fresh as they can be, we get them from the eld to the store in 24-48 hours. Not bad, eh?
SPRING GREENS
This versatile cabbage arrives early in the year and its bright green leaves are sweet, tender and packed with avour. Spring greens are easy to prepare: simply remove and wash the leaves, then slice or chop. You can use them in stir-fries and soups or, for a tasty side dish, lightly steam the leaves and toss with a little butter and black pepper.

Potato cakes with spring greens


Peel and dice 400g Maris Piper potatoes. Put in a pan, cover with water and bring to the boil. Simmer for 10-13 minutes until tender. Drain the potatoes and return to the pan with a knob of butter. Season and mash. Lightly steam 150g sliced spring greens for 2-3 minutes. Drain and add to the potatoes, with 1 sliced spring onion and some chopped parsley. Mix well and leave to cool. Shape into 4 cakes. Dust in a little flour and put in the fridge for 15 minutes. Fry the cakes in a little oil over a medium heat for 2-3 minutes on each side until golden. Serve with smoked salmon or streaky bacon and a poached egg. Serves 2

MUSHROOMS
Use as the star ingredient in dishes such as casseroles, risottos, salads, sauces and pies. Mushrooms are also great for bulking out meals, so you can use less meat but still get a tasty, lling result. To prepare, wipe mushrooms gently with kitchen paper and slice, chop or leave whole, as required. Store fresh mushrooms in a paper bag in the fridge, where they will keep for 3-4 days.

Whether its the traditional curly kind or the stronger avoured at-leaf variety, parsley is the most widely used of all the herbs. Finely chopped fresh parsley leaves are great in soups, stews and dressings; the stalks can be added to stock; or use a sprig of parsley for a classic attractive garnish.

HOW TO PERFECTLY SEGMENT

Grapefruit

1 Slice off the top and bottom of the grapefruit with a sharp paring knife.

2 Cut away the peel and pith from top to bottom, following the contours of the fruit.

3 Carefully slice down either side of the membranes to release segments one by one.

Pork llet with pineapple salsa


You can use chicken or turkey instead of the pork as they also pair well with the zingy marinade
100ml pineapple juice 2 level tbsp soft brown sugar 2tbsp cider vinegar 3tbsp lime juice 2tbsp Asda Mild And Light Olive Oil 600g pork llet, trimmed and cut into 2cm thick medallions 300g fresh pineapple (weighed without skin and core), cut into small pieces 1 red chilli, deseeded and nely chopped 3 spring onions, white and tender green leaves only, chopped 2tbsp fresh coriander, chopped Sweet potato mash and green beans, to serve Put the pineapple juice, sugar, vinegar, 1tbsp of the lime juice and 1tbsp of the oil in a freezer bag. Add the pork medallions and toss to coat. Leave in the fridge to marinate for 2-3 hours, gently shaking the bag occasionally. Mix the pineapple, chilli, spring onions, 2tbsp lime juice and the coriander to make a salsa. Cover and refrigerate. Preheat a griddle or grill. Remove the pork from the marinade and lightly brush both sides with oil. Cook for 4 minutes on each side or until cooked through. Serve with the salsa, sweet potato mash and green beans.

400ml can reduced-fat coconut milk 4 chicken breast llets 1 stem lemongrass 2 red or green chillies, deseeded Zest of 1 lime, plus 5tbsp lime juice 2tbsp Blue Dragon Thai Fish Sauce 2 level tsp caster sugar, plus 1 level tbsp for the dressing 1tbsp groundnut oil 1tbsp Amoy Reduced Fat Soy Sauce Romaine lettuce leaves cucumber, deseeded and cut into thin, long strips 1 small fresh pineapple (skin and core removed), cut into thin slices 2 carrots, cut into thin batons 4 spring onions, trimmed and sliced nely lengthways 25g roasted salted peanuts, roughly chopped Lime wedges and fresh coriander, to serve Put the coconut milk in a pan with the chicken breasts. Remove the tough outer leaves from the lemongrass and bash it with a rolling pin or the base of a heavy pan. Halve one of the chillies and add to the pan with the lemongrass, lime zest, 2tbsp of the lime juice, 1tbsp of the sh sauce, 2 level tsp caster sugar and 100ml water. Bring to the boil, cover the pan and poach very gently for 25 minutes. Leave to cool, then remove the chicken llets and shred or cut into small pieces. To make the dressing, whisk together the oil and soy sauce with the rest of the sh sauce and lime juice, plus 1 level tbsp caster sugar. Finely chop the remaining chilli and add to the dressing. Put the lettuce leaves on plates with the chicken, cucumber, pineapple slices, carrot batons and spring onions. Sprinkle with the chopped peanuts. Drizzle on the dressing and serve with lime wedges and sprigs of fresh coriander.

Carrot, pineapple & hazelnut slaw


75g hazelnuts 50g pumpkin seeds 4tbsp Asda Light Olive Oil 2tbsp cider vinegar 2tbsp Amoy Reduced Salt Soy Sauce 25g caster sugar 250g fresh pineapple (weighed without skin and core), cut into small pieces 250g carrots, coarsely grated 2 spring onions, trimmed and nely sliced Iceberg or romaine lettuce leaves, torn Preheat the oven to 190C/ 170C Fan/Gas 5. Put the hazelnuts on one baking tray and the pumpkin seeds on another and bake for 6-8 minutes until lightly toasted.

With its wonderful sweet-and-sour taste, this crunchy slaw makes a great side dish for meat or sh
Rub the hazelnuts with kitchen paper to remove the skins, then roughly chop. Leave the nuts and seeds to cool. Put the oil, vinegar, soy sauce and sugar in a pan and heat until it comes to the boil. Remove from the heat, whisk to combine and leave to cool. Mix the pineapple, carrots, spring onions, hazelnuts and seeds with the dressing. Put the lettuce leaves on plates and serve the slaw on top.

Preparing the ingredients in advance means you can stir-fry the veg quickly to keep it fresh and crunchy

Add 50ml water and set aside. Heat 1tbsp of the oil in a wok and stir-fry the chicken for 4 minutes or until just cooked through. Remove from the pan and set aside. Pineapple meringue pie


Everyone will love this yummy tropical version of the classic dessert
1 level tbsp icing sugar 200g plain our, plus extra for rolling out 125g cold unsalted butter, plus 25g for the lling 3 large free-range eggs, separated, plus 1 extra yolk 450g fresh pineapple, weighed without skin and core Finely grated zest of unwaxed lemon 2tbsp lemon juice 25g cornour 200g caster sugar Preheat the oven to 200C/ 180C Fan/Gas 6. Stir the icing sugar and a pinch of salt into the our. Cut 125g cold butter into cubes and rub into the our mixture. Add 1 egg yolk and 1tbsp cold water and mix with a round-bladed knife to make a stiff dough you may need a little more water. Roll out on a oured surface and use to line a 22cm an tin. Chill for 20 minutes. Prick the base with a fork. Line the pastry case with foil and weigh it down with baking beans or rice. Bake for 10 minutes. Remove the foil and beans or rice and cook the case for another 5 minutes to lightly brown the pastry. Reduce the oven to 160C/ 140C Fan/Gas 3. Whizz the pineapple in a processor or with a hand-held blender to make a rough pure. Put 3tbsp of this in a bowl and the rest in a pan. Add the lemon zest to the pan. Mix the pure in the bowl with the lemon juice, cornour and 25g of the caster sugar until smooth. Add this mixture to the pan and heat, stirring all the time, until the mixture comes to the boil and thickens slightly. Tip into a bowl and leave for 10 minutes to cool slightly. Stir in 25g butter and 3 egg yolks. Tip into the an case and bake for 15 minutes. Whisk the egg whites in a large clean bowl until they form stiff peaks. Add the rest of the caster sugar, a heaped tablespoon at a time, whisking until stiff after each addition. Put the meringue on top of the pineapple mixture, making sure it covers it completely. Bake for 25-30 minutes. Leave to cool for at least 15 minutes or serve at room temperature. Best served the same day.

550g Maris Piper potatoes (peeled weight), cut into thick chips 1tbsp mild olive oil, plus 2tsp 75g fresh breadcrumbs 2 level tsp sesame seeds 25g pack Asda Ready Salted Crisps, crushed to crumbs Zest of unwaxed lemon, nely grated Good pinch of paprika 2 medium eggs 15g Flora Original, melted 500g cod loin, cut into 4 350g Asda Frozen Peas 2-3 mint leaves 4tbsp reduced-fat crme frache 1 lemon, sliced, to serve Preheat the oven to 200C/ 180C Fan/Gas 6. Line a baking tray with baking paper and put a wire rack on another. Toss the potatoes with 1tbsp oil and put on the paper-lined tray. Bake for 25 minutes. Meanwhile, mix together the breadcrumbs, sesame seeds, crisps, zest and paprika. Lightly beat the eggs with 2tsp of the oil and the butter. Coat the sh in the egg and then the crumbs, patting rmly in place. Put on the rack over a tray and bake for 15-20 minutes until the coating is crisp and the sh akes easily. Boil the peas with the mint for 5 minutes. Drain and whizz in a blender to a rough pure. Stir in the crme frache and season. Return to the pan and reheat. Serve the peas with the sh, chips and lemon.

Steak & mushroom pie


Deliciously crisp lo pastry is lower in fat than puff or shortcrust pastry traditionally used for meat pies
465g pack Asda Butchers Selection Diced Casserole Beef 2 pinches dry mustard powder 1 level tbsp cornour 1 small onion, nely chopped Sprig of thyme 1 Knorr Reduced Salt Beef Stock Cube 1 level tbsp tomato pure 250g chestnut mushrooms, halved 4 sheets chilled lo pastry (the rest of the pack can be frozen ) 1tbsp mild olive oil Preheat the oven to 160C/ 140C Fan /Gas 3. Put the beef in a casserole dish. Mix the mustard with the cornour and season with pepper. Sprinkle onto the meat and toss until evenly coated. Add the onion and thyme. Dissolve the stock cube and tomato pure in 250ml hot water and add to the dish. Cover with a lid and cook in the oven for 2 hours 30 minutes. If the lid of the dish doesnt t tightly cover the dish with a piece of foil and then put the lid on top. Add the mushrooms to the dish. Cover again and return to the oven for another 30 minutes. Transfer to a pie dish. Increase the oven temperature to 220C/ 200C Fan/Gas 7. Lay the sheets of lo pastry on a work surface and brush lightly with oil. Scrunch up the pastry loosely and put on the meat, to cover it. Bake for another 15 minutes, without the lid, until crisp and golden.

500g sweet potatoes, scrubbed and cut in wedges 1tbsp sunower oil, plus 1tsp - level tsp Asda Cajun Seasoning 340g pack Asda Butchers Selection Turkey Breast Mince 1 spring onion, trimmed and nely chopped 1tbsp chopped at-leaf parsley 2tsp Amoy Reduced Salt Soy Sauce 2tsp Asda Sweet Chilli Sauce 25g fresh white breadcrumbs Lettuce leaves, to serve 1 large tomato, sliced 1 red onion, nely sliced 4tbsp tomato ketchup Preheat the oven to 200C/ 180C Fan/Gas 6. Line a baking tray with baking paper. Put the potatoes in a pan, cover with cold water and bring to the boil. Simmer for 3 minutes, drain and pat dry with kitchen paper. Combine 1tbsp of the oil with the Cajun seasoning in a large bowl, add the potatoes and toss to coat. Put on the tray and bake for 30 minutes. In another bowl, mix the mince, spring onion, parsley, soy sauce, chilli sauce and breadcrumbs. Season with pepper. Shape into 4 burgers and brush with 1tsp oil. Heat a griddle pan or dry frying pan. Cook the burgers for 4 minutes each side or until cooked through. Serve on lettuce and tomato, with onion, ketchup and the wedges.

Chicken tikka masala


Weve replaced the traditional ghee and cream in this recipe with low-fat yogurt and reduced-fat coconut milk, but it still has all the wonderful spicy avours of a classic takeaway tikka masala
4 Asda Chicken Breast Fillets, cut in bite-sized pieces 4 level tbsp Asda Tandoori Spice Blend 4tbsp Asda Low Fat Natural Yogurt 1tbsp fresh lime juice 1tbsp sunower oil 1 cinnamon stick 6 cardamom pods, lightly crushed 2 garlic cloves, crushed 2tsp freshly grated ginger 1 large onion, chopped 3 level tbsp tomato paste 200ml reduced-fat coconut milk 4 vine-ripened tomatoes 2 level tsp garam masala Fresh coriander and basmati rice, to serve 4 Asda Chosen by you Poppadums (optional) Mix the chicken with the Tandoori spice blend, yogurt and lime juice in a large, non-metallic dish. Cover and leave to marinate in the fridge for at least 3 hours or overnight, stirring occasionally. Preheat the oven to 220C/ 200C Fan/Gas 7. Line a baking tray with nonstick baking parchment and put the chicken on it, wiping off excess marinade with a brush (reserve leftover marinade). Bake for 10 minutes. Meanwhile, heat the oil in a large pan, add the cinnamon and cardamom, and cook for 1 minute. Add the garlic, ginger and onion and cook for 10 minutes, stirring. Stir in the saved marinade, tomato paste, coconut milk and 100ml water. Halve the tomatoes, and scoop out and discard the seeds. Chop, add to the pan and bring to the boil. Stir in the garam masala and the chicken. Bring to the boil, cover and simmer gently for 10 minutes. Serve with coriander, rice and poppadums (optional).

Cheats lasagne
This clever slim-line version of the family classic has layers of leeks as well as pasta. Weve also used oil-free sauce and half-fat Cheddar cheese in this recipe, too
2 leeks, trimmed 500g Asda Butchers Selection Lean Beef Mince 75g carrots, diced 75g celery, diced 150g mushrooms, chopped 1 level tbsp plain our 1 Knorr Reduced Salt Beef Stock Cube x 142g can tomato pure 1 level tsp dried oregano 400g can Asda Green Lentils, drained and rinsed 2 sheets Asda Fresh Lasagne 3 level tbsp cornour 425ml skimmed milk level tsp English mustard 50g Asda Mature Half Fat Cheddar, grated 2 tomatoes, sliced Basil and salad, to serve Preheat the oven to 190C/ 170C Fan/Gas 5. Slice along the length of the leeks to the middle so you can open them out. Reserve 8 outer leaves and cut into 8cm lengths. Finely slice the inner leaves. Add the outer leaves of the leeks to a pan of boiling water and simmer for 5 minutes until really tender. Drain and rinse under cold running water. Pat dry with kitchen paper. Put the mince, carrots and celery in a large pan and cook over a medium heat until the meat has browned. Add the mushrooms and nely sliced leeks and cook for 5 minutes, stirring often. Remove from the heat and stir in the our. Dissolve the stock cube in 300ml hot water. Add to the meat sauce with the tomato pure and oregano. Simmer for 15 minutes, stirring often. Stir in the lentils. Put a third of the sauce in a 26cm ovenproof dish. Lay a third of the leek leaves and half the lasagne sheets on top. Cover with another third of the meat and the rest of the sheets. Add a last layer of meat and cover with the rest of the leek leaves. Mix the cornour with a little milk to make a paste. Put in a pan with the rest of the milk and the mustard. Heat until simmering, whisking with a wire whisk all the time, to make a smooth sauce. Remove from the heat and stir in the grated cheese. Season with pepper. Pour over the lasagne and lay tomato slices on top. Bake for 30 minutes. Garnish with basil and serve with salad.

400g can Asda Chopped Tomatoes with Garlic 1 level tsp dried oregano tsp sugar 1 small yellow pepper, deseeded and sliced 1 small courgette, sliced 1 small red onion, chopped 2tsp olive oil 200g Asda Wholemeal Bread Mix 125g pack Asda Lighter Mozzarella, drained and sliced 40g Asda Prosciutto, sliced Black olives, stoned 1 pack rocket, to serve Basil leaves, to garnish Preheat the oven to 220C/ 200C Fan/Gas 7. Line two baking trays with baking paper. Put the tomatoes, oregano and sugar in a pan and simmer, uncovered, until thick, stirring often. Set aside. Put the pepper, courgette, onion and oil in a bowl and toss until the vegetables are coated. Heat a griddle pan or dry frying pan and cook the vegetables until lightly cooked, turning occasionally. Put on a plate and set aside. Mix the bread mix with 140ml tepid water to make a dough. Knead on a lightly oured surface for 5 minutes. Put in a bowl, cover with clinglm and leave in a warm place until doubled in size. Roll out the dough to two thin 23cm rounds and cut an 8cm hole out of the middle of each. Put the bases on the baking trays. Top with the tomato sauce, mozzarella, vegetable mixture, prosciutto and olives. Cover loosely with clinglm and leave in a warm place for 20 minutes or until the dough has puffed up a bit. You could use the dough cut out of the middles to make mini pizzas for the children. Bake the pizzas for 20 minutes or until the bases are cooked. Serve with the rocket arranged in the centre, then garnish with basil leaves.

150g ciabatta or white bread, 2 or 3 days old 1tbsp olive oil, plus 1tsp for coating 4 chicken breast llets 2 small or 1 large heart of romaine lettuce 8tbsp Asda Caesar Dressing 4 medium free-range eggs, poached 50g Parmesan, grated or shaved with a peeler Preheat the oven to 200C/ 180C Fan/Gas 6. To make croutons, tear the bread into chunks and put on a baking tray. Drizzle with 1tbsp oil, then toss to coat. Bake for 8-10 minutes until golden. Turn halfway through to cook evenly. Set aside. Cut each chicken breast into 3 smaller pieces. Put in a bowl with 1tsp oil and toss to coat. Heat a griddle pan or nonstick frying pan and cook the chicken for 3 minutes on each side or until cooked through. Set aside for 10 minutes. Tear the lettuce, put onto 4 plates, drizzle on the dressing and scatter on the croutons. Fill a large pan of water and add a pinch of salt and heat until simmering. Using the handle of a slotted spoon, make a whirlpool in the water and break an egg into the centre. Cook for about 2 minutes until the white is set but the yolk is runny. Lift out with the slotted spoon. Repeat with the remaining eggs. Top each salad with warm chicken, an egg and Parmesan, then serve.

Grill the peppers, skinside-up, until the skin starts to blacken. Put in a bowl, cover with clinglm and leave for 10 minutes. Remove the skin and cut into bite-size pieces. Meanwhile, toss the onions and courgettes in 1tbsp of the oil until coated. Spread out in a roasting tin and bake for 25-35 minutes. Add the tomatoes and cook for another 5 minutes. Put the almonds on a baking tray and bake for 5 minutes to lightly toast. Meanwhile, heat 1tbsp of the oil in a pan, add the cumin and coriander and stir over a low heat for 1 minute. Remove from the heat, add the bulgar wheat and cover with boiling

water. Cover the pan and leave for 15 minutes. Drain off any excess water. Add the peppers, roasted veg, tomatoes, chickpeas and almonds to the bulgar wheat. Whisk the remaining oil with the lemon juice and coriander and stir into the rest of the salad.

Beetroot, sweet potato & feta cheese salad

A healthier alternative to steak and chips
2 baking potatoes 4tbsp olive oil 16 vine-ripened cherry tomatoes 2 large onions, halved and sliced 2 level tsp soft brown sugar 2tsp balsamic vinegar 2 Asda Extra Special Beef Fillet Steaks, about 275g each 1tbsp cider vinegar 1 level tsp Asda Coarse Grain Mustard level tsp clear honey 90g bag mixed salad leaves Preheat the oven to 220C/ 200C Fan/Gas 7. Line a baking tray with baking paper. Cut the potatoes into 1.5cm cubes, pat dry with kitchen paper, put in a bowl with 1tbsp of the oil and toss until coated. Spread on the tray and cook for 35-40 minutes until crisp and golden. Put the tomatoes on a tray and bake with the potatoes for the last 5-10 minutes until the skins burst. Meanwhile, fry the onions in 1tbsp of the oil over a low heat for 20 minutes, stirring often, until soft and golden. Add the sugar and balsamic vinegar and cook for 5-10 minutes until caramelised. Griddle or grill the steaks for 2 minutes on each side or until medium. Leave to rest for 5 minutes, then slice thickly. Whisk the rest of the oil with the cider vinegar, mustard and honey. Season and toss with the leaves. Put on a serving plate with the steak and vegetables. Serve immediately.

Salmon & spinach salad


Roast potatoes make this salad more substantial, while pomegranate seeds add ashes of ruby pink
350g new potatoes, halved or quartered depending on size 4tbsp olive oil, plus extra for the salmon 220g pack Asda Salmon Fillets 2tbsp red wine vinegar tsp clear honey 100g pack pomegranate seeds /3 cucumber 160g bag washed baby spinach leaves 3 spring onions, trimmed and sliced Preheat the oven to 200C/ 180C Fan/Gas 6. Put the potatoes in a pan and add enough boiling water to just cover. Bring back to the boil and simmer for 5 minutes. Drain and put in a roasting tin with 2tsp of the oil. Toss to coat and bake for 25-30 minutes until golden on the outside. Cut each salmon llet into 2 pieces and rub a little oil on both sides. Heat a griddle pan or frying pan and cook the sh for 4 minutes on each side. Whisk together the rest of the oil, the wine vinegar and honey. Stir in the pomegranate seeds and season. Halve the cucumber lengthways, scoop out the seeds with a teaspoon and slice. Put in a bowl with the spinach and spring onions and toss with the dressing. Break the salmon into large akes, add to the salad with the potatoes and serve.

Homemade soda bread tastes delicious and has a gorgeous crust thats so satisfying. The secret to making this yeast-free loaf is to handle the dough as little as possible the exact opposite of making ordinary bread and bake it as soon as its made. Plain our is used instead of breadmaking our and the raising agent is bicarbonate of soda combined with a slightly acidic liquid. Traditionally, buttermilk is used as an aid to rising the dough, but here weve combined natural yogurt with milk to get the same result.

Preheat the oven to 220C/200C Fan/Gas 7. Line a baking tray with baking paper. Sift the our, bicarbonate of soda, salt and caster sugar into a large bowl. Sifting ensures the bicarbonate of soda is distributed well in the our, which means the loaf will rise evenly.

Mix the yogurt with 150ml of the milk. Add to the our mixture in the bowl and mix with a large spoon until the mixture comes together you may need to add a little more milk to make a soft but not sticky dough.

Flour your hands and bring the mixture together. The bicarbonate of soda starts to work as soon as it mixes with the liquid, so you need to work quickly and handle the dough as little as possible. Gather the dough into a ball and put on a oured work surface. Shape into a round loaf about 20-22cm across.

Transfer to the baking tray and, using a sharp knife, cut a deep cross in the top. Bake in the oven for 30 minutes. If the loaf starts to brown too much, cover the top with a loose piece of foil shiny side up for the last 5 minutes. To test if the loaf is cooked, tap the bottom if it sounds hollow, its ready.

How to make it
Asdas Fish Pie Mix, 3.20 (325g), features succulent pieces of haddock, Scottish salmon and smoked haddock and all these delicious avours together make one great pie the family will enjoy!
Preheat the oven to 190C/ 170C Fan/Gas 5. Put the potatoes in a pan, cover with cold water and bring to the boil. Simmer for about 15-20 minutes until tender. Drain and return to the pan. Stand over a very low heat for a minute to drive off excess moisture. Mash the potatoes with 25g butter and 4tbsp milk. Season well, cover and set aside. Meanwhile, put all the sh in a large, wide-based pan. Add the shallot, bay leaf and 300ml milk. Cover and heat gently until the milk is just simmering. Simmer gently for 10 minutes or until the sh akes easily. Strain off the milk and discard the bay leaf and shallot. Break the sh into large akes and put in a fairly shallow, oven-proof dish. Set aside. Melt the rest of the butter in a pan. Remove from the heat and stir in the our. Stir over a low heat for a minute. Gradually whisk in the milk, using a wire whisk, and then bring to the boil, whisking all the time until the sauce is creamy. Stir in the parsley. Season to taste you may not need salt because the smoked haddock will be salty. Pour over the sh and mix gently. Cover the sh with the mash the easiest way is to put large spoonfuls over the top, then gently spread and level with the spoon. Sprinkle over the cheese and bake for 25-30 minutes. Alternatively, allow the nished pie to cool at the end of step 6 and freeze. You can also chill the pie for up to 24 hours. It will take about 40 minutes to cook straight from the fridge. If frozen, defrost in the fridge for 8 hours and then cook for 40 minutes.

Try the ideas below to help keep it fresher and tastier for longer.

Storage tips
Bread
Store bread in a cupboard. Once opened, fold the wrapper under the loaf or re-tie to keep it air-tight.

Potatoes
Remove from their plastic bag as this tends to make them sweat. And store them in a cool, dark place.

Tomatoes
For optimum taste, tomatoes should be stored and served at room temperature rather than the fridge.

Fruit
Ripe fruit will last longer in the fridge, except bananas and pineapples keep them in the fruit bowl.

Meat and sh
Cooked meat and sh will keep in the fridge for up to three days (cool and leave no longer than 90 minutes, then wrap it well). Raw and cooked meat should be kept separate at all times. Store raw meat in a sealed container on the bottom shelf of the fridge so it cant touch or drip onto other food.

The big freeze

Bread winners
You can blitz crusts and slices into breadcrumbs and freeze to use in stufngs or to make a crispy coating for strips of chicken or sh dip in beaten egg, breadcrumbs, then bake or fry. Alternatively, you can use breadcrumbs for home-made meatballs or burgers they act as a good binder for meat. Theyre also great for adding to the top of lasagne and cauliower cheese. And its always handy to keep a sliced loaf in the freezer. Pop a frozen slice into the toaster it just takes a little longer to toast.

Using your freezer more can help save time, money and effort. Just think of it as a colder cupboard. As well as freezing leftovers, use it to store reduced items or multi-buy offers on bread, meat, sh and fruit.

Make chicken stock


This is a real family favourite. When youve used the meat, simmer the carcass in water with some celery, carrots, onion and herbs for 2-3 hours to make a stock. Measure into pint portions and freeze so youll have a tasty base for soups, risottos and stews. If you dont have time to make the stock immediately, freeze the bones so you can do it later.

Buying larger quantities of meat and sh can often work out cheaper. Simply divide up the packs into smaller portions and freeze. If you defrost raw meat and cook it thoroughly, you can freeze it again. Always defrost meat properly before cooking. Honey, lemon & mustard trout


Delicious and tangy, the dressing in this recipe also goes well with salmon llets
4 Asda Rainbow Trout Fillets 2tbsp lemon juice 1tbsp clear honey 2 level tsp coarse-grain mustard 250g vine-ripened cherry tomatoes 550g new potatoes Green beans, trimmed 15g butter 2tbsp aked almonds 1 lemon, cut into wedges, to serve Preheat the oven to 190C/ 170C Fan/Gas 5. Line a baking tray with foil it will need a slight lip to stop the juices escaping. Put the trout on top, skin side down. Mix together the lemon juice, honey and mustard, then drizzle over the trout. Set aside for 5 minutes, then bake in the oven for 15 minutes. Put the cherry tomatoes on another baking tray and bake for the last 5 minutes or until the skins burst. Meanwhile, boil the potatoes and the green beans. Drain. Melt the butter in a small frying pan, add the almonds and cook for 1-2 minutes until golden watch them carefully as they burn easily. Immediately add the cooked beans and toss. Serve the trout with the tomatoes, potatoes, green beans and lemon wedges.

Moroccan-style chick pea soup V


This hearty soup makes a good winter lunch or supper dish, plus its a cheap family option
2tbsp olive oil 1 red onion, chopped 2tsp fresh root ginger, grated 1 level tsp ground coriander 1 level tsp ground cumin level tsp ground cinnamon 250g sweet potato (peeled weight), cut into small cubes 150g carrots, cubed 400g can chopped tomatoes 700ml vegetable stock 400g can chick peas, drained and rinsed 4 pitta breads, toasted Heat the oil in a pan and cook the onion until soft. Add the ginger and spices and cook for another 1-2 minutes. Add the sweet potato, carrots, tomatoes and stock. Heat until simmering. Cover and simmer for 20 minutes. Remove a third of the vegetables with half of the cooking liquid and pure using a hand-held blender or processor. Return to the pan with the chick peas. Heat through and serve with the pitta bread.

Preheat the oven to 190C/ 170C Fan/Gas 5. Line a baking tray with baking paper. Deseed and slice 1 red pepper and 1 yellow pepper and toss in 1tbsp sunower oil and tsp each of garlic powder, cayenne pepper, smoked paprika and oregano. Put on the baking tray, skin side up. Roast in the oven

Let the kids dive in and have fun building these tasty home-made tacos. Theyre also a great way to encourage them to eat and enjoy their veggies
for 25 minutes. Remove skins, put in a bowl and set aside. Halve, stone and peel 2 ripe avocados and cut into small cubes. Mix with 1 deseeded and nely chopped red chilli and 1tbsp lime juice. Put in another serving bowl. Mix 200g quartered cherry tomatoes with nely chopped small red onion and 2tbsp chopped fresh coriander and put in a bowl. Arrange a 156g pack of Old El Paso Taco Shells on a baking tray and heat in the oven for 5 minutes. Cut the top off a 435g pouch of Old El Paso Refried Beans. Microwave it on high for 1 minutes or heat in a pan with 3tbsp water, stirring often. Place in another serving bowl.
Put the bowls of peppers, avocados, tomatoes and refried beans on the table with the warm taco shells, a 150ml pot Asda Reduced Fat Soured Cream and wedges of lime. Then let everyone help themselves to create their own tacos.

1tbsp sunower oil, plus 1tsp for frying the sausages 454g pack Asda Butchers Selection 30% Reduced Fat Pork Sausages 2 large onions, chopped 175g carrots, sliced 1 stick celery, sliced 1tsp mixed dried herbs 400g can chopped tomatoes with garlic 2tsp Worcestershire sauce 3tbsp Asda Tomato Ketchup reduced salt stock cube, dissolved in 300ml hot water 400g can red kidney beans, drained and rinsed 2 level tsp cornour mixed with 2tbsp water 500g potatoes (peeled weight) 100ml skimmed milk 1 level tbsp coarse-grain mustard Heat 1tsp oil in a nonstick frying pan and cook the sausages for 10 minutes or until lightly browned all over. Meanwhile, heat 1tbsp oil in a pan and cook the onion until soft. Add the carrots and celery and cook, stirring often, for 5 minutes. Add the sausages, herbs, tomatoes, Worcestershire sauce, ketchup and stock. Bring to the boil, cover and simmer for 15 minutes. Add the beans and simmer for 10 minutes. Add the cornour and simmer for 2 minutes. Meanwhile, boil the potatoes until tender. Drain and mash with the milk and mustard. Serve with the stew.

Time-saving turkey stroganoff


Tender turkey breast cooks quickly, so its ideal for speedy weekday meals
2tbsp olive oil 1 onion, halved and nely sliced 1 leek, trimmed of tough green leaves, nely sliced 350g mushrooms, sliced 1 level tsp paprika 300ml chicken stock made with 1 Knorr Reduced Salt Stock Cube 535g pack turkey breast steaks, cut into strips 2 level tsp cornour 150g pot Asda Reduced Fat Soured Cream 1 level tbsp coarse-grain mustard Rice and mangetout, to serve Set aside 2tsp of the oil. Heat the rest in a large frying pan and cook the onion and leek over a low heat, stirring often, for 5 minutes or until soft. Add the mushrooms and cook for 5 minutes, stirring often. Stir in the paprika, then add the chicken stock and simmer fast, uncovered, until the liquid has reduced by two-thirds. Tip into a bowl and set aside. Wipe out the pan and add 1tsp of the reserved oil. Stir-fry half the turkey over a high heat for 3-4 minutes or until cooked through. Add to the vegetables. Wipe out the pan again and repeat with the rest of the oil and turkey. Return the vegetables and turkey plus cooking juices to the pan and heat through. Mix the cornour with 1tbsp water. Stir into the pan with the soured cream and mustard and heat until simmering. Serve with rice and mangetout.

2tbsp olive oil 1 level tsp Asda Onion Granules 1 level tsp mustard powder 400g can Asda Chopped Tomatoes with Garlic 2 level tsp soft brown sugar 5 level tbsp tomato pure 2 level tsp dried mixed herbs 2 x 300g cans haricot beans in water or cannellini beans in water, drained and rinsed 4 basil leaves 4 thick slices of bread, toasted, to serve With help from an adult, heat the oil and gently fry the onion granules and mustard powder for 1 minute, stirring. Add the tomatoes, sugar, tomato pure and herbs. Heat to a simmer and cook gently, uncovered, for 4 minutes. Take off the heat and add contents to a bowl. Allow to cool slightly. With help from an adult, blitz the tomato sauce with a handheld blender until smooth. Return the sauce to the pan and add the haricot beans. Simmer over a medium heat for 3-4 minutes. Tear the basil leaves into pieces and stir into the sauce. Serve on toasted bread. TOP TIP Add a dash of sweet chilli sauce for a bit of warmth or BBQ sauce for a smoky avour.

We all need some fat in our diet to enable our bodies to function, but some fats are healthier than others. Heres our guide to the good, the bad and the ugly...
Thirty-three per cent of us avoid foods that contain fat* but its about knowing the difference between the good and bad types. Good fat helps our bodies absorb certain nutrients its a source of energy and essential fatty acids, and is crucial for a healthy metabolism and cell renewal. DIFFERENT TYPES OF FAT There are two main types of fat: saturated and unsaturated. Although both contain the same amount of calories, only unsaturated fats are considered better for you. EFFECTS OF SATURATED FAT The liver turns saturated fat into cholesterol too much can increase your risk of heart disease and raise your blood pressure. Asda nutrionist Hayley Marson says, In the UK, the problem is that, on average, we already eat more than the recommended dietary amount for saturated fats. To help decrease cardiovascular disease the leading cause of death in the UK we should reduce bad fats in our diet. If youre worried about cholesterol or blood pressure, visit your doctor or Asda Pharmacy.

WHAT DOES REDUCED FAT LABELLING MEAN? If a food is described as reduced fat, it doesnt necessarily mean its low in fat just that the food is at least 30 per cent lower in fat than the standard equivalent. So if the food is high in fat in the rst place, the reduced-fat version may still be high in fat. For example, a reduced-fat mayonnaise could still have an amber trafc light. Also bear in mind that food marked as reduced fat can often be high in calories, because the fat is replaced with sugar. So check your labels to get savvy on the fat and calorie content.

MONOUNSATURATED FATS can also help lower cholesterol. They are a signicant component of the Mediterranean diet, primarily in the form of olive oil, says Hayley. Other sources include olives, avocados and certain nuts and seeds. Monounsaturated fats have been credited with lowering levels of heart disease. Both polyunsaturated and monounsaturated fats are good for the heart and circulation. SATURATED FATS are found in animal-derived sources, such as meat, high-fat dairy items and eggs so limit your intake of butter, cheese, cakes, biscuits and pastries. Saturated fats can also be found in some vegetable fats such as palm and coconut oils.

TRANS FATS fall into two types: the naturally occurring type, pe, found in small amounts in dairy products and meat; and d the t kind that is created when liquid oils are hardened into partially artially y hydrogenated y g fats. Its this articial type that is of greater concern in the UK diet, although Asda has removed hydrogenated vegetable oil from its own-brand goods.

HOW TO CUT DOWN ON SATURATED FAT


Try these simple changes to your diet:
Choose lean cuts of meat, trim excess fat and remove poultry skin. Opt for semi-skimmed, skimmed or low-fat dairy products rather than full-fat versions. Swap butter, ghee and lard with unsaturated fats, such as olive or sunower oils and spreads. Grill, bake, poach or steam food instead of frying or roasting. Try light and reduced-fat salad dressings or replace with vinegar, mustard and lemon juice.

You dont need to keep all your paperwork forever. Cash machine slips and credit/debit card receipts can be shredded once theyve appeared on your statement, and payslips can go once youve checked them against your P60. Bills and statements more than two years old can be shredded unless youre self-employed, in which case you need to hang on to them for at least six years. For the rest of your ling, 10 folders should be enough, with labels such as Family, Medical, Property, Household Bills, Car, Work, Statements, Warranties, and Receipts, Tax, and Miscellaneous. Then take the in-and-out approach when a new policy goes in, the old one goes out. But if you really want to cut down on the ling and help the environment, too, you could always go paperless and get all your utility bills and bank statements online.
