Services
Mr. Brown bakery, in addition to regular services, provides personalized services for special occasions to cater to the needs of special clients. It also fulfills catering needs of dessert menus for weddings and other occasions. In addition to this, it enables its customers to buy its products online from its website as well. Mr. Brown provides free home delivery in Lucknow. It delivers cakes only in Lucknow and rest of the products in all parts of India. Mr. Brown caters to only selected people who want something new and designer with different taste & feelings. They are the only producer of
continental desserts in the town who create the things differently. They make efforts to ensure that a customers unique celebration becomes an extraordinary memory. Also they have the infrastructure to offer fresh & pure bakery products of world class quality prepared in strict hygienic conditions. The Italian machines make it different from other bakeries in town.
LAYOUT
A layout is the physical configuration of departments ,workstation ,equipment in conversion process. Plant layout is an important decision as it represents long-term commitment. An ideal plant layout should provide the optimum relationship among output, floor area and manufacturing process. It facilitates the production process, minimizes material handling, time and cost, and allows flexibility of operations, easy production flow, makes economic use of the building, promotes effective utilization of manpower, and provides for employees convenience, safety, comfort at work, maximum exposure to natural light and ventilation. Plant layout of Mr. Brown plays a vital role in daily supply of goods as per the requirement for its products. Mr. Brown keeps an eye on the plant layout management because they do not want to dissatisfy customers as they tend to get irritated if they have to wait for long hours for delivery. Therefore they plan layout in such a manner that minimum time is required in delivering the goods and also reduces the time of production.
Quality Management
Mr. Brown is an ISO 22000:2005 certified company. ISO 22000 which was published in 2005 is an international standard to ensure safe food supply chains worldwide and first of the family on food management systems. It is aligned with ISO 9001:2000 on quality management systems which is widely used in all industrial sectors but does not specifically address to food safety. Implementation of this standard provides several benefits for the company. It ensures optimum utilization of resources and more efficient and dynamic control of food safety hazards. It is an internationally accepted standard and integrates various national and industry based certification schemes. It provides confidence that the company has the ability to identify and control food safety standards. ISO 22000 also combines the Codex Alimentarius HACCP (Hazard Analysis and Critical Control Points) HACCP is a tool to assess hazards and establish control systems that focus on prevention rather than relying mainly on end-product testing. Any HACCP system is capable of accommodating change, such as advances in equipment design, processing procedures or technological developments. HACCP ensures the safety of food.
Waste Management
Waste management is the collection, transport, processing or disposal, managing and monitoring of waste materials. The term usually relates to materials produced by human activity, and the process is generally undertaken to reduce their effect on health and the environment. Mr. Brown serves eatables to the consumer. Eatable items are perishable in nature and therefore its waste management is the top priority. These are the following steps carried out by the company: (1)They produce products according to the demand. As they know that the bakery products are used more in the months of December and January due to weddings and special occasions. So they try to produce more at that time and they maintain the production of goods in such a manner that all products are consumed. (2)Production process is carried out according to the season. In summer season they try to produce less because the cost of storage is high as the products tend to degrade early. They produce more in the winter season. We can compare it through the display items in both the seasons. (3)They try to maintain proper EOQ level. In case of wastes they dispose it off by dumping as these goods cannot be recycled.
Techniques
Mr. Brown uses MRP technique of maintaining and planning of material. MRP stands for Material Requirement Planning. It means the time phased materials requirements for production and operations. As such, it is geared towards meeting the end item requirements prescribed in the master production schedule. MPS (Master Production Schedule) is a schedule showing week by week how many of each product must be produced according to customer needs and demand forecasts. Main reasons for using MRP:(1)Inventory reduction: MRP determines how many of components are needed and when, in order to meet the master schedule .MRP enables the manager to procure the component as it is needed, thereby avoiding cost of excessive inventory. (2)Reduction in production and delivery times. (3)Increased efficiency.
Employees
No. Of Employees 60% of employees are permanent staff and 40% are on a temporary basis. They are appointed according to the needs of the department or the production capacity.
Qualification Of Employees
Employees are the foundation of any organization. Mr.Brown is a service and manufacturing firm. Coordination among employees must be there for proper running of business .As a service organization they have to interact with customer directly so they must be well educated. Qualification required for the employees are as follows: Cashier must be Graduate and having work experience. Supervisor must be graduate. Salesperson must be 10+2. Wages And Salary Wage is the most important aspect to make the employees happy and motivated to work. Mr. Brown pays salary to the permanent employees on the monthly basis. Wages are given to the temporary staff on the basis of work done. Extra payments are made for overtime.
