MAKES TWO 6-BY-2-INCH CAKES OR ONE 9-BY-4-INCH CAKE
Put the sugar in a large mixing bowl and grate the zest from the lemons into the
sugar. This captures the flavorful lemon oils. In a small saucepan over low heat,
warm the cream. Juice the lemons and set aside the 5 tsp needed to make the
syrup. Add the eggs to the lemony sugar and whisk until the mixture becomes
pale and thick. Stir in the warm cream, then sift in the flour and baking powder
and fold to incorporate. Finally, add the melted butter and stir to make a smooth,
shiny batter.
BAKING
Preheat the oven to 400F. Lightly grease and line two 6-by-2-inch or one 9-by4-inch pan(s) with parchment paper. Pour the batter into the prepared pan. Bake
for 5 minutes, then make a lengthwise incision in the top of the cake with a
sharp knife. Lower the oven temperature to 300F, then return the cake to the
oven to bake for about 35 minutes, until a knife inserted into the middle of the
cake comes out clean. Remove from the oven, turn the cakes out of the pans, and
allow to cool on a wire rack.
MAKING THE SYRUP
In a small saucepan, bring the sugar, water, and lemon juice to a boil. Remove
from the heat and allow to cool. While the cake and syrup are still warm, use a
pastry brush to moisten the cake with all of the syrup. Finish decorating the cake
by placing strips of candied lemon peel on top.

Root Upside-Down Cake and the piquant pleasures of purple potatoes with smoked
trout. Kansha: appreciation, in equal measure for natures hidden underground
treasures... and for Dianes insatiable curiosity and literary diligence that created this
