Bacchanology: Bacchanology : pre 1800 Present Day

Caviar Collection
Definition: Bacchanology 1. 2. The study, preparation and history of drinking. A derivative of the Latin Bacchus, the ancient Greek God of wine. (Mythology)

A hint of caviar is to the host or hostess what a small but perfectly formed diamond is to the flirtatious suitor, a declaration, a suggestion, a promise of more to come.

Quote: Quote: Henry Porter, Porter, Cups and their customs, 1863

As, in this age of progress, most things are raised to the position of science, we see no reason why Bacchanology (if the term please our readers) should not hold a respectable place, and be entitled to its due mead of praise; so, by way of introduction, we have attached to drinking from the earliest periods to the present time. Would our bottles but grow deeper, Did our wine but once get cheaper, Then on earth there might unfold, The golden times-the age of gold! But not for us: we are commanded, To go with temperance even-handed, The golden age is for the dead, Weve got the paper age instead! Fo ah! Our bottles still decline, And daily dearer grows our wine, And flat and void our pockets fall, Faith! Soon therell be no times at all!

Champagne
The Anthology For three hundred years now, the ageless wines of Champagne have been bewitching successive generations. Time is a time-consuming affair; the time required for its creation and the time needed to learn how to enjoy it. How can we convince our contemporaries to turn their backs on the exhilaration of speed and start enjoying the pleasures of years past once again? Champagne can be so many things. It can be an imposing monument, or charming and airy, penetrating in its intensity, or elegant and subtly sensual. It can be sensational in its youth, yet deep and thought-provoking when properly aged, for the very best Champagnes can live as long as a human being.

The Ruinart Signature

Since 1729, Ruinart has been creating its Champagnes in the same spirit of innovation, purity and timeless elegance It is this signature which has become a characteristic trait of the oldest Champagne house. Full bodied, supple and extremely smooth, Ruinart champagnes combine delicacy, and subtle freshness. The Ruinart taste is a radiant alliance of the distinctive flavours of the predominant Chardonnay the elegance of the grapes from the Cte de Blancs and the character and body of those from The Montagne de Reims. With the finest grapes, skilful blending, extensive ageing in its 2000 year old Roman cellars, and a uniquely shaped bottle, Ruinart defines its commitment to excellence and luxury. The Connaught, like Ruinart, is where tradition and modernity create a timeless backdrop for eloquent art de vivre. The Coburg Bar was therefore an obvious choice to showcase one Of the most extensive lists of Ruinart vintages in existence, many of which I specially hand selected or even disgorged, such as the Dom Ruinart Ros 1982 a fabulous vintage and a great year to be born in. Finally, as the current Chef de Caves of Ruinart, these vintage Champagnes convey the style and taste that characterizes the making of Champagne. These wines represent the best of the Ruinart family, crafted by the previous Chefs de Caves years ago, and we are fortunate to be able to enjoy their work today in the idyllic surroundings of The Coburg Bar. I really hope that in years to come, Ruinart will be enjoyed as Im sure it will be with this current selection. Sant !

The Pol Roger Signature

We are, we hope justifiably, proud of many things at Pol-Roger; chiefly of the quality of our Champagnes and that the House, founded in 1849 by M. Pol Roger, is still family owned thus being able to hold fast to the familys insistence on excellence. We are honoured to have been appreciated by loyal generations from Great Britain, where in 1877 Queen Victoria granted our first Royal Warrent; an honour still continued to this day. We are proud to have had the patronage of Sir Winston Churchill, returning this privilege by naming our most coveted wine Cuvee Sir Winston Churchill. We therefore take great pride in being able to continue our longstanding relationship with The Coburg. Epernay, in 1914, was on the precipice of the front line and yet Maurice Pol Roger, Mayor of the town, managed to create a cuvee unctuous, creamy with astonishing vinosity. Maurice himself commented that this wine was Harvested to the sound of guns. To be drunk to the sound of Trumpets. I hope, on behalf of the House of Pol-Roger, that you will enjoy this rare collection of our Champagnes quietly gathered from our cellars to appear on their distinguished wine list.

The Krug Signature

For many years Krug has valued its friendship with The Connaught. So when Mark informed me that The Coburg Bar was looking to create a very special Champagne list built around a few of his most prized producers we were both honoured and excited. The principle was to create a singular list of Krug to embrace the atmosphere of The Coburg, to evolve throughout the day and into the evening, a Krug for every occasion if you will. As such you may enjoy a glass of Grande Cuve as an apritif, Krug Ros for a celebratation, or just to while away the afternoon among friends, listening to vintage jazz enjoying of the wonderful vintage Krug champagnes you so wish. We have worked to with The Coburg to develop an exceptional list of Krug, with vintages dating as far back as 1947, a Krug made by my Grandfather. Further intriguing vintages of the sixties through to our latest vintage 1998, released ten years since it was harvested. Since 1843 Krug have pursued an endless and obsessive quest to produce the finest Champagne, through uncompromising attention to detail, from the careful selection of each individual vineyard, the birth of each and every wine in small oak casks, careful and skilled assemblage of each cuve, and complete and absolute respect of time. Krug is renowned for its inimitable taste an extraordinary contrast of richness and freshness, power and finesse. It is not only a personal favorite of connoisseurs, but is regarded as an ultimate expression of discernment and individuality. It is an encounter, an experience, a revelation! I hope that you will enjoy many encounters with Krug at The Coburg Bar. Sant Sant!

Hine
A celebration through vintage
1900-1910 Hine has always highly valued its long partnership with The Connaught. As a new recruit to the company I can remember being asked to join my Father and Uncle when they visited, and having English ancestors means that the UK is very much my second home. So it was a great pleasure for me to welcome Mark, Coburg Manager, to select with him this unique collection of Hine Cognacs. It was also a delight when he invited me to sample his reawakening of timeless compounded drinks with one of our most recent additions H by Hine. 250 years of Hine Cognacs, refined by six generations have given our liquid world recognition. Eaux de vies sourced from only top Crus of Grande and Petite Champagne right from the vey heart of the Cognac region. The house of Hine stands on the banks of the River Charente, where in its dark ancient cellars our reserves gently age in mature oak casks. All these facets reflect the delicate art and skill of its creators over many centuries. Family tradition dictates that our Cognacs are aged for longer than required. Thus we find ourselves constantly striving for the highest quality and only release our Cognac when they have reached perfect maturity. In 1962, our dedication was officially recognised with the award of the Royal Warrant for the supply of Cognac to Her Majesty Queen Elizabeth II and still to this day stands alone in this honour. I hope you will enjoy a journey of discovery through Hine at The Coburg !
