Caviar Collection
Definition: Bacchanology 1. 2. The study, preparation and history of drinking. A derivative of the Latin Bacchus, the ancient Greek God of wine. (Mythology)
A hint of caviar is to the host or hostess what a small but perfectly formed diamond is to the flirtatious suitor, a declaration, a suggestion, a promise of more to come.
Quote: Quote: Henry Porter, Porter, Cups and their customs, 1863
As, in this age of progress, most things are raised to the position of science, we see no reason why Bacchanology (if the term please our readers) should not hold a respectable place, and be entitled to its due mead of praise; so, by way of introduction, we have attached to drinking from the earliest periods to the present time. Would our bottles but grow deeper, Did our wine but once get cheaper, Then on earth there might unfold, The golden times-the age of gold! But not for us: we are commanded, To go with temperance even-handed, The golden age is for the dead, Weve got the paper age instead! Fo ah! Our bottles still decline, And daily dearer grows our wine, And flat and void our pockets fall, Faith! Soon therell be no times at all!

Champagne
The Anthology For three hundred years now, the ageless wines of Champagne have been bewitching successive generations. Time is a time-consuming affair; the time required for its creation and the time needed to learn how to enjoy it. How can we convince our contemporaries to turn their backs on the exhilaration of speed and start enjoying the pleasures of years past once again? Champagne can be so many things. It can be an imposing monument, or charming and airy, penetrating in its intensity, or elegant and subtly sensual. It can be sensational in its youth, yet deep and thought-provoking when properly aged, for the very best Champagnes can live as long as a human being.

1982 gave forth a symphony in a vintage, and as such, has been selected by Frederic-Chef de Cave, and Mark-Coburg Bar Manager to be the jewel in the crown of the Ruinart Signature. Frederic has, on this very rare occasion, personally disgorged the wine. Only when his instincts tell him it has rested long enough will he allow it to be released from his cellars.

Hine Vintages Thomas Hine & Co for generations have specialised in selecting and aging Grande Champagne cognacs from a single vintage. The vintage is therefore the years the grapes were harvested, the quality of the wine being closely linked to conditions of soil and climate in the Charente. These reserves are set aside in great years, and only when the cognac is truly exceptional! 1914 Hine Vintage Jarnac matured 1500.00 An exceptional year! Know as the Ladies Vintage. Aged in casks until 1958, when it reached its peak maturity, this particular parcel was then stored in glass demijohns to be bottled in 1987.
Subtle perfumes of flower and undergrowth give this a rich and aromatic bouquet. Its roundness and plenitude are remarkable.
1953 Hine Vintage Jarnac matured 70.00 One of the best vintages of the 50s. Only a few casks set aside to commemorate the coronation of H.R.H. Queen Elizabeth II.
Aromas of spice and honey. Seduces the palate with roundness, mellowness and a harmonious linger of passion fruit.
1957 Hine Vintage Jarnac matured 66.00 Slowly matured in ground floor cellars and bottled in 1987.
Tones of vanilla, lightly preserved fruit and hazelnut. A pronounced palate of mild ranio, tobacco leaf, and dry leather.
Exceptional light and incredible bouquet. Lively, supple and well balanced.
1960

Hine
A celebration through vintage
1900-1910 Hine has always highly valued its long partnership with The Connaught. As a new recruit to the company I can remember being asked to join my Father and Uncle when they visited, and having English ancestors means that the UK is very much my second home. So it was a great pleasure for me to welcome Mark, Coburg Manager, to select with him this unique collection of Hine Cognacs. It was also a delight when he invited me to sample his reawakening of timeless compounded drinks with one of our most recent additions H by Hine. 250 years of Hine Cognacs, refined by six generations have given our liquid world recognition. Eaux de vies sourced from only top Crus of Grande and Petite Champagne right from the vey heart of the Cognac region. The house of Hine stands on the banks of the River Charente, where in its dark ancient cellars our reserves gently age in mature oak casks. All these facets reflect the delicate art and skill of its creators over many centuries. Family tradition dictates that our Cognacs are aged for longer than required. Thus we find ourselves constantly striving for the highest quality and only release our Cognac when they have reached perfect maturity. In 1962, our dedication was officially recognised with the award of the Royal Warrant for the supply of Cognac to Her Majesty Queen Elizabeth II and still to this day stands alone in this honour. I hope you will enjoy a journey of discovery through Hine at The Coburg !
