Many people prepare for the arrival of Christmas
months in advance. The frst traces of wrapping
paper and decorations arrive in stores as early as
September, transforming the holiday into a much
more secular celebration than its modest Christian
beginnings.
Despite Christmas being an important date in the
lives of today's Christians, the holiday failed to gain
prominent status until relatively recently. Research
indicates that as late as the 19th century, Christmas
was not even a legal holiday requiring a day off
from work. That's why 19th century readers of the
classic Christmas tale, "A Christmas Carol," were
not shocked at Bob Cratchit having to work on
Christmas Day. The United States Congress used
to meet on Christmas Day because it was not a
national holiday. In 1836, Alabama became the frst
state to offcially recognize Christmas, but it didn't
become a legal holiday across the country until
June 26, 1970.
Today's Christmas celebrations include traditions
from around the world. Some ascertain that it was
the Church's doing to schedule Christmas at a similar
time to the pagan festivals, such as Saturnalia, that
took place during the winter months. But many
biblical scholars argue that this was not the case.
Some pagan infuences, such as holly and mistletoe
as well as the burning of a yule log, have long been
a part of Christmas traditions.
Santa Claus is one of the more recognizable
symbols of Christmas. He is based on St. Nikolas of
Myrna, an area that is part of modern-day Turkey.
St. Nikolas is the world's most popular non-Biblical
saint and is one of the saints most portrayed by
artists. Early depictions of St. Nikolas show him as
a stern man who delivered his share of discipline.
Eventually, those depictions changed to show a
fgure more associated with generosity. Throughout
history there have been characters from around the
globe, such as the Viking deity Odin, who were
precursors to Santa Claus. Myth states that Odin
rode his eight-legged fying horse in the winter.
Odin gave out gifts to well-behaved children and
punishments to those who misbehaved. Children
would fll boots or stockings with treats for the
fying horse.
Regardless of the origins of Christmas, today it is
hard to deny that Christmas is a commercialized
success. It is a national holiday not only in the
United States but also in other areas of the world,
and it is best known for the tradition of giving
presents to others. In fact, many people head to the
stores well in advance of the Christmas holiday to
purchase all of the presents on their shopping lists.
The shopping season tradition may
be traced back to the time of World
War II, when it was necessary to
mail gifts early to the troops serving
in Europe so that they would be able
to open them in time. Merchants
realized that this concept could be
used when gifting troops as well as
private citizens, reminding shoppers
to make their holiday purchases early
so they could mail them to relatives
near or far. As a result, the advanced
shopping season was born.
Although many people feel
Christmas begins when the frst bag
of tinsel appears on a store shelf
and ends when the last present is
opened on December 25th, the
true religious holiday does not
coincide with merchant schedules.
While most people are bustling to
and from department stores and
malls, Christians are participating
in Advent, which was traditionally
a solemn season of refection and
fasting. Christians are supposed to
spend Advent preparing for the birth
of Jesus Christ and
the joy that ensues during the weeks
leading up to December 25.
Similarly, the joyous time of Christ's
birth is a day of celebration that
does not end on December 26 but
continues for 12 days until the
Epiphany, also known as Little
Christmas, when Magi were reported
to have visited the infant Christ and give him gifts.
Although the more traditional day for gift-giving
would seem to be on the Epiphany, by the time that
day arrives many people have already taken down
their Christmas decorations.
Christmas is a holiday steeped in many different
traditions, and many people have their own ways
of celebrating all through the month of December.

Perhaps no time of year is as busy as the holiday
season, when social engagements and holiday
shopping combine to dominate so much of what
is normally our free time. Additionally, holiday
travel and late nights spent at work to make up
for lost time also cut into our free time, leaving
many people in search of ways to add more hours
to the day. Though there's no way to make a day
last longer, there are ways to save some time this
holiday season.
* Go it alone. Holiday shopping can be very time
consuming, but shoppers who decide to shop
alone may find themselves more productive
and focused on the task at hand. Rather than
going from store to store and checking items
off multiple shopping lists, shoppers who shop
singularly can devote all of their attention to
their own lists.
* Shop online. Another way to save time when
shopping for the holidays is to shop online. This
saves you the time it takes to drive to and from
the mall and walk around multiple stores, all the
while saving you from the often frustrating and
time-consuming experience of finding a parking
space. In addition, you can shop online at any
time of day. So rather than just eating lunch at
your desk on your lunch hour or spending the
last hour before you go to bed for the night
idling away on the couch, you can make more
efficient use of that time by doing some holiday
shopping.
* Plan ahead. Whether shopping for holiday gifts,
taking the family to buy a Christmas
tree or organizing a holiday dinner
with friends, the more you can plan
ahead of the holiday season the
less time you will waste once the
season hits full swing. For example,
when choosing a weekend to go
Christmas tree shopping, inform
others a few weeks in advance and
let them know you want to go early
to avoid crowds. This saves you
time and might just help you land
one of the best trees on the lot.
The same principle of planning can
be applied to other aspects of the
holiday season as well. Planning a
meal early allows you to gradually
stock up on menu items, saving you
the hassle of rushing to the store at
the last minute or planning a menu in the days
before the party when you will already have
enough on your plate.
* Don't shy away from shortcuts when hosting
holiday dinners. Hosting a holiday dinner is a big
undertaking, one that often finds hosts spending
a significant amount of time in the kitchen. But
hosts can save time by taking some shortcuts
regarding the menu. For instance, when hosting
an especially large meal, don't be afraid to buy
some premade side dishes from a local grocery
store or buy a bakery cake rather than whipping
up your own homemade dessert. Guests will
understand if you cut some corners in an effort
to save some time, and the food will likely be
just as delicious.
* Stay home. Travel is a big commitment come
the holiday season, but what about staying home
this season? If the time commitment of traveling
is something you truly want to avoid this year,
invite some friends and family over to your
home instead. You might be more busy on the
day of the holiday, but you will save yourself
the travel days you usually build into the holiday
season. Parents of young children might prefer
to stay home so they can create their own unique
holiday memories, while those without children
might just appreciate some peace and quiet
during this hectic time of year.

1/2 cup plus 2 teaspoon Butter
1 1/2 cups semi-sweet chocolate chips, divided
2 tablespoons unsweetened cocoa powder
1 cup sugar
2 large eggs, slightly beaten
1 teaspoon vanilla extract
1/4 teaspoon salt
1 cup all-purpose four
1/4 cup heavy or whipping cream
Preheat oven to 350 degrees Fahrenheit. Spray 9-inch round cake pan with
nonstick cooking spray, then line bottom with waxed paper and spray again;
set aside.
Melt 1/2 cup I Can't Believe It's Not Butter! Cooking & Baking Sticks, 1
cup chocolate chips and the cocoa in 3-quart saucepan over low heat, stirring
occasionally. Remove from heat, then stir in sugar, eggs, vanilla and salt. Stir in
four just until blended. Spread into prepared pan.
Bake 25 minutes or until toothpick inserted in center comes out almost clean.
Cool 15 minutes on wire rack. Remove from pan and cool completely.
Meanwhile, bring cream just to the boiling point in 1-quart saucepan. Remove
from heat, then stir in remaining 1/2 cup chocolate chips and 2 teaspoons
Cooking & Baking Stick until melted. Let cool to thicken, stirring occasionally.
Place rack with cake on waxed paper, then spread chocolate mixture on cake.
Refrigerate until frm, about 1 hour. Garnish, if desired, with raspberries.
BUCKEYES
(These are called Buckeyes because they look like the nut of the
Buckeye tree - the Ohio state fower/tree)
1 lb. peanut butter (a generous 1 1/2 cups)
1 1/2 lbs (6 cups) powdered sugar
2 sticks (1 cup) margarine
1 bag (12 oz) chocolate chips
1/4 stick paraffn
Mix margarine and peanut butter and slowly add powdered sugar.
Mix well. Batter will be stiff. Shape into 1" balls (use a mellon-
baller to get consistent sized balls). Chill 1 - 2 hours. Melt the
chocolate and paraffn in a double boiler. Using a toothpick, dip the peanut butter ball in the chocolate until
about 2/3 of the ball is covered, and place on an ungreased cookie tray. Chill again until chocolate has hardened.
Carefully smooth over the toothpick hole.
RASPBERRY/BLACKBERRY
TRIFLE
Serves 16
Raspberry Layer
1 1/2 cups whole frozen raspberries
3 tablespoons sugar
1-2 tablespoons raspberry or other berry liqueur
1 1/2 cups fresh or whole frozen raspberries
Blackberry Layer
1 1/2 cups whole frozen blackberries
3 tablespoons sugar
1-2 tablespoons raspberry or other berry liqueur
1 1/2 cups fresh or whole frozen blackberries
Light Custard
4 1/2 cups skim milk
5 eggs
1 cup sugar
1/3 cup cornstarch
4 teaspoons clear vanilla or
2 teaspoons almond extract
1 medium size angel food cake (about 17 ounces)
2 tablespoons raspberry or other berry liqueur
Thaw one and one-half cups of raspberries, and process in
blender or food processor to make a puree. Strain through
a fne sieve to remove seeds. Stir in sugar and berry liqueur. Refrigerate for later use. This may be made several
days ahead. Follow same procedure for blackberry puree.
Using a double boiler, heat four cups milk until steam rises from the surface. In a separate bowl, combine eggs,
remaining one-half cup milk and one cup sugar. Sift in cornstarch and whisk until well blended.
Remove scalded milk from heat, and gradually whisk in egg mixture. Return pan to top of double boiler and
whisk constantly over medium heat for 10 to 15 minutes or until very thick and smooth. Remove from heat and
stir in vanilla or almond extract. Transfer to bowl, press plastic wrap onto surface and allow to cool slightly.
Cut cake into one-inch to two-inch cubes. Arrange half the cake squares on the bottom of a three-quart straight-
sided Trife Bowl, including any irregular shapes. Sprinkle with one tablespoon berry liqueur, and evenly
distribute raspberry puree and blackberries over cake layer. Spoon half the custard over berries. Repeat with
remaining cake, liqueur, blackberry puree, blackberries and any additional fruit and custard. Cover and chill
at least four hours or up to one day ahead. Garnish with additional berries and fruit in the center just before
serving.

A holiday season without baked goodies
would be like a movie without popcorn,
burgers without fries or a sundae sans
cherry: good but not quite perfect. If you
enjoy baking traditional holiday favorites,
you may also like trying new recipes.
Experimenting with new recipes is easier if
you start out with a well-stocked pantry.
While some holiday recipes might call for
unusual ingredients that require a trip to the
gourmet food store, some ingredients are
ubiquitous. Keep those ingredients in your
pantry year-round and you'll be on track to
bake up a storm this holiday season.
The baking gurus at Nielsen-Massey
Vanillas, a more than 100-year-old family-
run flavoring company, offer this checklist
of must-have items to help ensure your
pantry is well-stocked for holiday baking:
* Flour - Some type of flour is the foundation
of most baking. Your pantry should always
have a supply of all-purpose white baking
flour, but don't forget to add some other
common, useful varieties like whole wheat,
unbleached or semolina.
* Sweeteners - Refined white sugar, of
course, is a reliable stand-by for sweetening
any recipe. But many holiday recipes
may call for alternative sweeteners like
confectioner's sugar, maple syrup, brown
sugar or honey. And, if you're baking for
folks with dietary restrictions, you'll need
artificial sweeteners. Many brands of
artificial sweeteners now offer varieties
specifically designed for use in baking.
* Extracts - Holiday baking cries out for
certain flavors, like peppermint, almond,
chocolate and vanilla. You can find an extract
for virtually every flavor under the sun, but
keeping an ample supply of the staples,
like Nielsen-Massey Vanillas, will ensure
you have the perfect flavoring on hand for
a variety of dishes - from holiday baked
goods to main courses and side dishes. The
family-run company uses a proprietary cold
extraction process that slowly and gently
draws the delicate and distinctive flavor
from the vanilla beans.
* Spices - Certain spices just speak to the
holiday season, but they're also useful
throughout the year. Keep your pantry
stocked with holiday-appropriate spices like
cinnamon, allspice, ground ginger, nutmeg
and cloves.
* Fruits and nuts - While some recipes may
call for fresh fruits and nuts, others will
require dried varieties. Walnuts, almonds,
pecans, raisins, candied ginger and even
dried apricots and cranberries are all good
starting points for a well-stocked holiday
pantry.
* Grains - What would oatmeal raisin
cookies be without the oatmeal? Holiday
recipes often call for grains and cereals,
including oatmeal, cornmeal and bran.
* Leavening - Many cookies don't require a
leavening agent or stabilizer, but cakes and
breads may, so include yeast, baking soda
and baking powder in your pantry.
* Shortening - Vegetable oil, shortening
and lard are staples of baking. To lighten a
recipe without sacrificing taste, try naturally
lighter oils like canola.
* Milk - You may not use it at any other
time of year, but holiday baking often calls
for evaporated milk. Sweetened condensed
milk is also incorporated in many recipes.
A can or two of each, purchased ahead of
the holidays, will ensure you don't have to
make a special trip to the grocery store for
this less-used ingredient.
Now that your pantry is prepped for the
holidays, try this festive recipe from
Nielsen-Massey Vanillas:
Crisp Vanilla Butter Cookies
Ingredients:
1 cup (2 sticks) butter, softened
1 cup sifted confectioners' sugar
1 tablespoon Nielsen-Massey Madagascar
Bourbon
Pure Vanilla Powder
2 eggs, lightly beaten
2 cups unbleached all-purpose flour
1 teaspoon baking powder
1/4 teaspoon cinnamon
1/4 teaspoon salt
1/2 cup chocolate pieces of choice
Directions:
Cream the butter, confectioners' sugar and
vanilla powder in a mixing bowl using an
electric mixer on medium speed. Add the
eggs and beat until light and fluffy. Beat in
the flour, baking powder, cinnamon and salt
on low speed until just blended. Place the
dough on
parchment paper and shape into a 12-inch
long log. Chill for 3 to 24 hours.
Preheat the oven to 350 degrees. Coat an
insulated cookie sheet with nonstick cooking
spray. Cut the dough log into 1/4-inch-thick
slices and place on the cookie sheet. Bake
for 10 to 12 minutes or until golden brown.
Cool on a wire rack. Place the cooled
cookies on a parchment-lined cookie sheet.
Place the chocolate pieces in a microwave-
safe bowl. Heat on high for 15 seconds.
Repeat at 5-second intervals, stirring and
checking the consistency. The chocolate is
ready when it freely drips from the spoon in
a fine line. Spoon the chocolate into a large
plastic food storage bag. Twist the bag until
the chocolate is in one corner and then trim
the tip of the bag. Drizzle the chocolate over
the cookies.
Variation: Add 1/2 teaspoon of any
Nielsen-Massey Pure Flavor Extract, such
as Chocolate, Almond, Lemon, Orange
or Coffee, to the cookie dough to create a
signature cookie.
Makes 2 dozen.
