two friends reconnected, they decided to make the wine that was
waiting for them all along: Alta Maria Vineyards.
The artwork for Alta Maria Vineyards features hand-hewn iron
nails used by homesteaders in Santa Maria before the Industrial
Revolution introduced mass-produced, machine-cut nails. Despite
its lowly function, each nail is unique from the next according to the
conditions in which it was made and the expertise of the craftsman.

Opened in the mid-1980s and recently acquired by Vintner Bill Foley in 2010, Eos has been
building a stunning reputation for its complex whites, bold reds and succulent dessert wines
that are fruit forward, balanced and both readily delicious and approachable.
Eos is named for the Greek goddess of dawn. The myth concludes with Aphrodite cursing
Eos for having an affair with Ares and her punishment was an insatiable appetite for young
men. At the winery, Eos has an “insatiable appetite” for great wines, but unlike the myth, one
can hardly call this passion a punishment.
The Eos Winery Hospitality Center is conveniently located right off Highway 46 East and
Airport Road and is appreciated for its accessibility, expansive tasting room and charming gift
shop of unique gifts and scrumptious snacks. The casual yet educational environment coupled
with picturesque views of the Estate Cabernet Sauvignon vineyards and rolling hillside makes
Eos one of the most enjoyable stops for wine lovers in Paso Robles.

For more than 50 years, the Paso Robles Inn Steakhouse has been
a favorite meeting place for guests and locals alike. The items served
in the steakhouse reflect the culinary influences of the Paso Robles
area. The restaurant serves Certified Angus Beef Steak, features

local wineries. Some of the local products found in the steakhouse

Steakhouse visitors can choose to sit in the indoor dining area or eat

Another way to enjoy the dining pleasures Paso Robles Inn has to

rooms. As they walk around the Paso Robles downtown area, guides
give participants an overview of the local wine scene.
The Paso Robles Inn is also home to the Central Coast Food Tour’s
haunted dinning experience. It is just the thing for history buffs or
those interested in the paranormal. Tour guests dine in the Paso Inn
Steakhouse, and then take a tour of the hotel grounds, stopping at
areas said to be haunted. A tour guide takes them through the
location’s transformation from a busy stagecoach stop in 1864 to the
Inn’s current incarnation. They view scrapbooks, photo albums and

WILD HORSE WINERY

Wild Horse Winery has long been one of the most dominate and innovative wineries
on California’s Central Coast and though they have grown to be a major force in the
production of California wine - producing nearly 200,000 cases each year - they have
continued to be steadfast in terms of their quality control. Wild Horse Winery has a long
and impressive heritage starting in the early 1980s before wine became fashionable and
areas like Paso Robles were virtually unknown. Originally it was designed to be a winery
that would focus on wine from various and diverse growing areas, or appellations, around
California. And today they source fruit from 12 different federally recognized American
Viticultural Areas in California.
Few wineries in the Golden State source fruit from such a broad spectrum of vineyards
representing such a wide assortment of grapes, weather patterns and soil types, and this
strategy has allowed Wild Horse to select grapes from the specific areas they feel best
showcase a particular wine. For example, they can produce a Pinot Noir from three
separate growing regions in Santa Barbara, San Luis Obispo and Monterey counties to
blend together thereby creating a powerhouse wine.
Located in Templeton, just south of Paso Robles, the 65-acre property is located about
two miles off Highway 101 on a gently curving and undulating road. A small wisteria clad
arbor covers the walkway, the small blossoms cascading down to the grass. The tasting

strawberry and rosewater mingled with hints of alpine earth, and
sweet French oak.
And Wild Horse Winery continues its innovative farming
techniques with what they call their “four-legged weed abatement
program” which includes llamas who protect the weed-eating sheep
herd. Owl boxes are home to the owls, which naturally deter rodents
from destroying the vines and their roots. They also sustainably farm
about 40 acres as well.
But it is up to Director of Winemaking Chrissy Whittmann, who
actually never intended to have a career in the wine industry, to
oversee the Wild Horse brand. “When I was younger, I hated the
idea of spending my life sitting behind a desk all day,” she says. She
wanted a life outside of where she grew up in Burbank, which is
nowhere near a wine growing region. “I wanted to be where things
were happening and to have an opportunity to be outside and I
wanted to be challenged every day. And I’ve got all that here.”
Coming up May 16 -18, is one of the most popular public events in
all of Paso Robles, the 32nd annual Paso Robles Wine Festival where
Wild Horse will be pouring with other great wineries of the region,
so mark your calendars.
Tasting fees are $5 for five samples and they usually have about
15 wines open from their everyday drinkers to their high-end

Laetitia Vineyard & Winery is located directly off Highway 101 surrounded by the
scenic views of Arroyo Grande and over 600 acres of Estate Vineyards. In 1982, French
viticulturists discovered that Arroyo Grande had ideal growing conditions to produce
sparkling wines with similar characteristics as those found in their homeland of Epernay,

Those who choose the Artisanal Food and Wine Pairing

tasting option is only $23 and is offered on Friday through
Sundays.
All of Tolosa wines are SIP (Sustainability In Practice)
Certified, with a special focus on Pinot Noir and Chardonnay,
and recently three of the Reserve Pinot Noirs and one Reserve
Syrah were awarded 90+ points by Stephen Tanzer. A couple
new releases that should not be missed include the 2013
Sauvignon Blanc and the 2011 Marley Anne, both of which
received 91 points from Stephen Tanzer. In addition to the
various tasting options, there is also a self-guided tour of the
production area.

SAUTEED PORK CHOPS WITH SWEET POTATO AND APPLES


Recipe adapted from One Pan, Two Plates by Carla Snyder

½ cup apple cider or juice (plus more if needed)


¼ tsp ground cinnamon
2 boneless center-cut loin pork chops, about ¾ inch thick
2 Tbsp olive oil
Freshly ground black pepper
Salt
1 Talley Farms Fresh harvest medium sweet potato, peeled and very thinly sliced
1 Talley Farms Fresh harvest sweet tart apple, cored and thinly sliced

1 shallot, minced
1 tsp Dijon mustard, smooth or whole-grain
2 tsp minced fresh flat-leaf parsley
DIRECTIONS
1. Combine the cider, cinnamon and ¼ tsp salt in a cup. Set aside.
2. Pat the pork chops dry and sprinkle generously with salt and pepper.
3. heat a 12-in skillet over medium-high heat and add the olive oil. When the oil shimmers, add the seasoned pork
chops to the pan and cook until lightly browned on the first side, about 3 minutes. Turn and cook until browned on
the second side about 2 minutes longer. Transfer the pork chops to a plate (they won’t be cooked through at this
point).
4. Add the sweet potato, apple, shallot, cider mixture and a grind or two of pepper to the hot pan. Bring it all to a
simmer, cover and reduce the heat - the pan should bubble, but not too aggressively. Cook the potato mixture until a
fork easily pierces the partially cooked potato but there is still some resistance, about 10 minutes.
5. Return the pork chops to the pan (along with any juices accumulated on the plate) and nestle them into the potatoes
and apples. Cover and cook until the meat is cooked through and the potatoes are tender, about 8 minutes longer.

Even if you don’t have time to take a trip to the
Hawaiian Islands, you can get a taste of paradise by
trying select wines produced by Costa de Oro.
Winemaker Gary Burk makes regular trips to Hawaii to
collaborate on private labels and unique blends for
restaurants and hotels in the area. If you are part of Costa
de Oro’s wine club, you have a chance to try one of more
of these distinctive wines.
Burk said that he has worked with several famous
restauranteurs and sommeliers in Hawaii, including
James Beard chef Roy Yamaguchi. Costa de Oro has
created a Pinot Noir to accommodate Yamaguchi’s vision.
It produces a house wine for Roy’s restaurants in Hawaii
which “is delicate, layered and focused”, Burk said. The
Pinot Noir is designed to complement the Pan Asian
cuisine served at Roy’s.
Costa de Oro also produces a Chardonnay served in
the Halekulani Hotel’s restaurant in Waikiki. “It is
elegant, lean and has a high acid content,” he said. The
Chardonnay Costa de Oro produces is designed to
complement the climate. “ It’s warm so we want the wine
to be brighter, more refreshing and elegant,” he added.
If you belong to the Costa de Oro wine club, you
might find a Pinot Noir that was crafted to complement
the food at Roy’s restaurant in Hawaii or a Chardonnay
served at the Halekulani Hotel.
You don’t have to take a trip to Kauai to taste another
Costa de Oro blend served at one of Yamaguchi’s
restaurants. In their tasting room, you’ll find the same

Oro has their Wine Down, a weekly event that features
food prepared by Chef Rick, music, and, of course, wine.

Do not be intimidated for any reason. That is rule number one
(and there are very few real rules after that). For the most part, going
wine tasting is about the easiest thing in the world, especially here in
California where wineries and tasting rooms abound. You can find
wineries specializing in red wines of all types, those that are famous
for their white wines and others who pour sparkling wine. It is a
matter of doing a little research and planning your day. Most tasting
rooms open around 10 a.m. and close between 4:30 and 6 p.m.
Before you start off pack a few essentials: Water (plenty of
water) and something to snack on – crackers or a baguette. Many
wineries have picnic areas and there are plenty of delis and bakeries
that can make up a lunch for you, or make your own. Which brings
us to eating and drinking, the kind that doesn’t directly involve wine.

for lunch. Two tips: drink at least twice as much water as you do

winemaking talent found throughout the region. From their first
winemaker Ken Brown to current winemaker Eric Mohseni, there is
a lineage of talent that has built Zaca Mesa up to what it is today.
Zaca Mesa GM Paul Pease explains, “We’ve been fortunate to have
talented winemakers like Daniel Gehrs, who made our 1993 Estate
Syrah, which broke into Wine Spectators Top 100 at #6 in 1995.
Past winemaker Clay Brock hit another home run with the 2006
Estate Syrah at #29 in Wine Spectator’s Top 100 in 2010 and this
year winemaker Eric Mohseni and associate winemaker Kristin
Bryden had 12 wines that scored 90 points or above. Each and
every winemaker has left their mark at Zaca Mesa and gone on to
do some pretty big things for Santa Barbara County’s wine
industry.” Other notable names include Jim Clendenen (Au Bon
Climat), Bob Lindquist (Qupe), Lane Tanner (Sierra Madre
Vineyard), Adam Tolmach (The Ojai Vineyard), and Benjamin Silver
(Silver Wines).
While the Santa Barbara wine country landscape has certainly
changed, many things still remain the same – Zaca Mesa’s
dedication to its wines, customers, employees, and community. The
winery celebrated the momentous occasion back in May, hosting a
memorable party for over 400 loyal customers and past employees.

Farming Biodynamically
The new planting of any vineyard is fraught with choices. Just ask
Louisa Sawyer Lindquist who, along with her husband, the legendary
Bob Lindquist, secured a new parcel for their Qupe and Verdad
labels. “So many decisions about grape varieties, rootstock, how
would the rows be sited and how to farm the land?” say Louisa
Sawyer Lindquist. “Do we go organic, sustainable, biodyanmic?
There are big decisions and a big commitment.” Ultimately the
couple decided to farm biodynamically, a process that is still
misunderstood.
Biodynamic isn’t synonymous with organic. Where organic doesn’t
use pesticides and reduces the
