NOVO RESTAURANT
Located on Higuera Street with its patio sitting luxuri-
ously above San Luis Creek, Novo restaurant is fusion
cuisine with a local heart that has captivated this Central
Coast town.
The menu is a stunning blend of flavors from around
the world with a focus on Asian and South American
fusions. Chef Justin Gabbert has teamed with owner Robin
Covey to create a Tapas selection along with a few large
plate items that are a blend of local ingredients with inter-
national flare. The menu at Novo does change with the
seasons, usually summer and winter and depending on the
local farmer’s market. “I’m probably the biggest buyer at
the SLO Farmer’s Market. We spend about $40,000 a year
there,” says Covey. “The local produce here is astounding.”

“new,” is large and features a vast selection of local Central
Coast wines.
