NOVATION 4300/5300 starches are designed for cold processes, but they also have excellent heat resistance. That makes them perfect for fruit llings in bars, turnovers, and pies, where they can minimize boilout and spread during cooking, with great avor. Other applications include both heated (microwave, steam table, etc) and dry-mix gravies and sauces. For applications that require greater dispersibility without lumping in both cold and hot water, new NOVATION 5300 delivers the same key attributes of process resistance and texture improvement.
