Barbecued Chuck Roast


4 pound Chuck roast 1/4 cup of red wine vinegar 1 cup of sliced onions 2 tablespoons of shortening 2 minced garlic cloves 1/2 cup of catsup 1/2 cup of water 2 tablespoons of Worcestershire sauce 1 teaspoon of rosemary 1 teaspoon of salt Melt the shortening in a heavy pan and brown the roast on all sides in hot shortening. dd onion and garlic. Cook until onion is soft. Combine catsup! water! vinegar! Worcestershire sauce! rosemary and salt. "our over meat. Cover and cook slowly until meat is fork tender! about 2#1/2 hours. May be cooked in crock pot! but allow longer cooking time.

Mountain Fried Rabbit


2 young rabbits! washed and dressed 2 beaten egg yokes $ cups of milk 1 1/4 cups of flour 1 teaspoon of salt 1/2 cup of shortening %ry the rabbits and cut into several pieces. Combine the egg yolks and 1 cup of milk and gradually add 1 cup of the flour! then add the salt and beat until smooth. %ip rabbit pieces into the batter and fry in hot fat until brown! or about 1& minutes. 'educe the heat and continue cooking until tender! about $( to 4( minutes! turning fre)uently. *o make gravy add the remaining flour to fat in pan! gradually add the remaining milk and stirring constantly! heat to boiling and season to taste with salt and black pepper. Western North Carolina Style Barbecue Roast Chicken


1 frying chicken cut in pieces 2 teaspoons of sugar 1/4 cup of butter 1/+ teaspoon of red pepper flakes 1 teaspoon of salt 1 teaspoon of black pepper $/4 tablespoon of dry mustard 1 teaspoon of chili powder 2 tablespoons of vinegar 1/2 teaspoon of *abasco sauce 1 teaspoon of Worcestershire sauce 1 cup of water 1 tablespoon of chopped onion 1 clove of garlic! minced ,alt the chicken! brown in butter and put in a roasting pan. Mi- the rest of the ingredients together in a pot and cook over medium heat for 4 to & minutes. "our over the chicken and bake! basting often in a $2& degree oven for 1 1/2 hours.

Garlic Fried Chicken


2! 2 1/2 pound frying chickens cut in pieces 2 tablespoon of lemon .uice 1 cup of sour cream 1 clove of garlic! grated 1/4 teaspoon of Worcestershire sauce 1/2 teaspoon of salt 1/4 teaspoon of black pepper 1/4 teaspoon of celery salt Wipe the chicken pieces with a damp cloth and store in container with tight fitting lid. Mi- all ingredients together! pour over chicken! and let marinate in the refrigerator overnight. When ready to fry! drain the li)uid from the chicken pieces and dredge them in flour! heat some vegetable oil in a large skillet over medium heat and brown the chicken pieces on all sides. /ower the heat and cover skillet and cook for $&#4( minutes.

Mom's Pan Fried Fish


0rowing up near the ,outh *oe river in the mountains of 1orth Carolina! my brother and 2 would make fishing poles out of sticks with line made of string and straight pins bent into hooks. We would spend hours fishing! so we could have mom3s fried fish for supper. ,he would clean the fish and roll them in e)ual amounts of flour and cornmeal mi-ed with salt and pepper! and pan fry them in hot oil until golden brown.

Blue Ridge Mountain Pot Roast

"ut meat and vegetables onto a hot platter and sprinkle with parsley. "our off drippings and thicken with enough flour to make gravy.

Southern Style Pork Roast


$/4 teaspoon of salt! divided 1/2 teaspoon of black pepper! divided 2 1/2 pounds of pork loin roast 1/2 cup of flour 1/4 cup of melted butter 2 tablespoons of oil 1 medium onion! chipped 4 carrots cut into short pieces 4 medium potatoes! peeled and cut in half 'ub 1/2 teaspoon of the salt and 1/4 teaspoon of the black pepper on the roast and dredge the roast in the flour. 5rown the roast on all sides in butter and oil in a deep! large cast iron skillet. 'emove the roast from the skillet and drain. Cook the onion in the skillet with the drippings until tender and place the roast over the onions. dd the carrots and potatoes and sprinkle the remaining salt and pepper over the vegetables. Cover the skillet and bake at $&( degrees for about 1 1/2 hours. "lace the roast on a serving dish and place the vegetables around it. ,lice and serve.

Pork Loin nd Gra!y


"ork loin sliced into 1/46 to 1/26 thick slices 7lour Milk ,alt and 5lack "epper %ip the slices of pork loin in flour coating until covered. 8eat lard or oil in a cast iron skillet until hot. "lace the pork slices in the skillet and brown both sides. When both sides are browned! cover the skillet and cook slowly until the pork is tender and .uicy. 'emove the meat from the skillet and place on a serving dish. 1e-t! add two rounded spoons of flour to the drippings in the skillet and mi- thoroughly. dd the milk and the salt and black pepper to taste. Cook slowly! stirring constantly until the gravy is smooth. 9ou can then pour the gravy over the pork loin in the serving dish or into a bowl to be eaten with 6cat head biscuits6 and mashed potatoes.

1 Whole chicken ,alt and 5lack "epper Cut the chicken up into )uarters and place in a pot and cover with water. ,immer the chicken until tender. When the chicken is tender! add the salt and black pepper to taste. 9ou can leave the bones in or take the meat off the bone: it3s entirely up to you. *o make the dumplings4 2ngredients4 2 cups of flour $ tablespoons of baking powder 1 teaspoon of salt $ tablespoons of lard or shortening 1 egg! beaten well 1 cup of whole milk ,ift together the flour! baking powder! and the salt. Cut in the lard or shortening and mi- in the egg and milk. %rop the dumplings by spoonfuls into the pot of chicken and broth and cook for 1& minutes or until the dumplings are done.

2 pounds of ground beef 2 cups of cornbread crumbs $/4 cup of minced onion 1/4 cup of chopped green pepper 2 eggs 2 tablespoons of horseradish 1 tablespoon of salt 1/4 cup of milk 1/4 cup of catsup or thick tomato pulp 1 teaspoon of dried mustard Mi- all of the ingredients together and form into a loaf. ,pread additional catsup on top and bake at 4(( degrees for $& minutes.

1#1/2 pounds of ground beef 1 onion chopped 1 egg 1/2 cup of fresh breadcrumbs 1 teaspoon salt 2#+o;. cans of tomato sauce 1/4 teaspoon of black pepper 1/2 cup of water $ tablespoons of vinegar $ tablespoons of brown sugar 2 tablespoons of mustard 2 teaspoons of Worcestershire sauce $ strips of bacon "armesan cheese Mi- the beef! breadcrumbs! onion! egg! salt! pepper and 1 can of the tomato sauce. 7orm into a loaf and put in a shallow pan. Combine the remaining tomato sauce and all of the other ingredients e-cept bacon and "armesan cheese and pour over meat loaf. ,prinkle with the "armesan cheese. "lace the bacon on top of the meatloaf and bake at $&( degrees for 1 hour and 1& minutes. 5asting occasionally.

< cups of chopped! cooked chicken 1/4 tablespoon of butter 1 tablespoon of chopped onion 1/$ cup of flour 2 cups of milk 2 teaspoons of salt 1/4 teaspoon of black pepper 5rown the onion in butter and stir in the flour! salt! and pepper. "our in the milk and cook until kind of bubbly. 'emove from heat and mi- with the chopped chicken in a shallow bowl. Cover and put in refrigerator over night. 'emove from the refrigerator and shape into patties. 5eat $ eggs and dip patties in the eggs. Chill for 1& minutes and fry in hot oil until golden brown.

Country Baked Chicken


2 cut up broilers or frying chickens < medium potatoes! peeled and cubed 1/2 pound of sliced bacon 2 large onions! peeled and chopped < large carrots! scraped and cubed 5rown the chicken parts on all sides in a large heavy pot. /ayer the potatoes! carrots! and the chopped onions on top of the chicken and lay the bacon strips close together on top of the vegetables. Cover pot and bake at $&( degrees for 1 hour and 1& minutes. 'emove the lid from the pot and bake to an additional 1& minutes or until the bacon is browned.

Country Fried Steak


2 pounds of cube steak 1 1/2 teaspoons salt 1/2 teaspoon of black pepper 2 cups water 1 can of Cream =f Chicken ,oup >egetable oil ,alt! pepper the cube stake and roll in the flour. 8eat the vegetable oil in a skillet and brown the steak pieces on both sides. 'emove the steak and place in crockpot. dd water and the cream of chicken soup and simmer until tender! about 2 hours. Did You Know? ,prinkling salt on your cabinet shelves helps to keep ants away.
