well-grounded writer deliver her youthful yet profound insights to our readers every
month. A graduate of Ryerson University, Lara worked as an Operations Manager for
a few years and is now pursuing her writing and humanity passion full force. She is
currently a senior committee member of Viet Wake Up Toronto, a movement group
that aims to educate the youth about the art of mindfulness and meditation based
on Zen Master Thich Nhat Hanhs teachings.
She enjoys meditation, creative writing, a good book, vintage fashion, and having
pretty flowers in her space. She believes in kindness, as compassion helps us let go
of our ego and allows us to radiate fromwithin. She lives life based on her favourite
quote by Audrey Hepburn: For beautiful eyes, look for the good in others; for
beautiful lips, speak only words of kindness; and for poise, walk with the knowledge
that you are never alone.

WRAP IT UP
Hair wraps or cloth hair bands are huge this
summer and there are so many styles and options
to choose from. You can wear hair wraps like a
bandana and tied to one side for a more girly look.
You can also wear themboth like a head band or tie
it around your low ponytail. Another great way to
amalgamate two hot summer looks into one is to
grab a cloth hair band or ribbon and incorporate it
into a side braid.
Howto Style:
1. Tie one end of the cloth hair band or ribbon to
one of the three sections you will be braiding and
then braid your hair as you normally would. Ideally
the length of the cloth hair band or ribbon should
be a few inches longer than the length of your hair.
2. Secure with an elastic band or if the cloth or
ribbon is long enough, wrap the remaining portion
of the cloth or ribbon and tie it around the end of
the braid.
SIDE BRAID WITH WRAP
Howto style:
1. Pull all your hair to whatever side you prefer
while leaving a very small section either at
the back or the front of your hair to do the
wrapping part of this hairstyle.
2. Start braiding your hair all the way down to
the tip and then start to tug and pull at small
sections of the braid to give it a messy look,
non uniformappearance. Secure with an elastic
band.
3. Then take the small section you didnt use
and keep wrapping that around the start of the
braid and secure it with pin.
4. If you have bangs, twist theminto your braid
and secure with pins. If they are too short, leave
themhanging out for a romantic look.

1. If you already have a side part, keep the deep
side part on the same side.
2. Use a comb to get a nice clean part.
3. If you find that your hair is a bit stubborn,
all you need to do is blow dry your hair in the
direction that you want it to go.
4. Add some hairspray or styling products to
keep it in place.

Howto Style:
1. Comb your hair and tie a ponytail at the
base with an elastic band.
2. You can conceal the hair tie by using the
wrap around method we mentioned earlier
in the side braid section.
3. For a sophisticated look just leave it as is.
For a more day-time fun look, wrap a cloth
or ribbon around the elastic band.

1. After you wash your hair, add mousse and
blow dry your hair until its quite dry or most of
the dampness is done.
2. Braid random sections of your hair tightly
and all the way to the tip, then secure with hair
bands. The smaller the section, the tighter the
waves will be.
3. Give your braids a spritz of flexible hold
hairspray and let the hairspray dry.
4. In the meantime, do your makeup, have a
cup of tea or watch an episode of your favourite
T.V. show.
5. After 20 minutes or so, you can remove the
hair bands andgive your hair a little tousle at the
roots and add another final spritz of hairspray.

Naturopathy
I
n my practice, I have observed that many chronic ailments
or symptoms stemfrominadequate water intake and as a
rule of thumb, I encourage all of my patients to follow the
simple equation (optimal water intake = body weight in kg
x 30 ml per body weight in kg) to ensure optimal hydration. So
for a person who weighs approximately 120 pounds, that works
out to be approximately 1.65 litres, or about 6.5 glasses of water
a day.
With hydration being so important, it is unfortunate that over the
past several decades, thepurityof our water has been an increased
concern. According to the Environmental Working Group, there
are hundreds of pollutants found in tap water that have never
been seen before. At the current levels of contamination, they
pose health risks that are unprecedented. In fact, I have seen
many health complaints (e.g., fatigue, dry skin, eczema, dry hair,
thinning hair, lung afflictions such as asthma and bronchitis,
among others) resolve or become reduced significantly when
patients purify their water to minimize exposure.
Whenever possible, I recommend an investment in one of the
following:
Reverse Osmosis Water Filtration
Considered the gold standard, the filtration technology uses
household pressure to pass water through a semi-permeable
membrane. It can removeawiderangeof contaminants, including
heavy metals (it is the only system certified to remove arsenic),
dissolved solids, bacteria, cysts, volatile organic compounds,
minerals (including the desirable ones). As a matter of fact, many
bottle water companies use this technology to produce their
water. This water filtration system is the most expensive and
has two options: an under the sink reverse osmosis costing up
to $500 or a whole house systemcosting between $4000-$6000.
Activated Carbon-Ion Exchange Water Filtration
Most people are familiar with this filtration technology as it
is used by the ubiquitous Brita brand. Essentially, water is run
through loose carbon (charcoal) granules that have a positive
charge that grabs onto impurities usually with a negative charge
such as chlorine, cadmium, copper and zinc. This quick and easy
systemcosts between $15-$60 a piece.
Binchotan Charcoal
One of the most inexpensive and convenient way to filter water,
Binchotan charcoal is made in the Kishu region of Japan and is
activated through extremely high burning temperatures, along
with a rapid cooling process. This charcoal is extremely porous
and with the same absorptive abilities as activated charcoal, it
absorbs chlorine, heavy metals and impurities. This is my go-to
method when the water Im drinking is suspected. Simply place
a piece of charcoal in a water container, then set aside and drink.
Matters
Shower Filter
A shower filter is an absolute must if there are children and
seniors in the household. Chlorinated tap water is a skin irritant
and can be associated with dry skin and hair, rashes, eczema and
hair loss. Moreover, warm showers cause chlorine to vaporize.
When chlorine vapors are inhaled, it can irritate the respiratory
system, leading to or exacerbating current lung conditions.
Shower filters are designed to remove chlorine, heavy metals,
and organic compounds, among many other contaminants. They
can be purchased at all home improvement stores for between
$30-$60 and installed as an adjunct to your existing showerhead.
In 2005, Dr Masaru Emoto published the book The Hidden
Messages In Water that profoundly transformed the way we
see water. Prior to this, water was viewed simply as a means
of survival; its significance was dependent merely on whether
or not there was enough. Using high-speed photography, Dr
Masaru discovered that crystals formed in frozen water changes
based on the purity of the water and the concentrated thoughts
directed toward them. For example, polluted water, or water
exposed to negative thoughts, form incomplete, asymmetrical
patterns with dull colour. His book, the culmination of decades
of research on water brought to light the magnificent impact of
water has to our survival and also the quality of our being. So as
you think about how to improve your health, think first about
the water you drink and the incredible role it has in keeping us
happy, beautiful and the best we can be.
The average amount of water in the human body
ranges from 50% to 75% of our total composition;
so much of our make up is tied to the quantity and
quality of the water that is in our system that it may
be one of the most important determinants of good
health.

BEER
Beer is usually made from fermented barley, hops, or yeast and
each type has a distinctive taste. Pilsner is probably the worlds
most famous beer. It originated in Pilsen, the Czech Republic and
is a pale lager with a light yellow colour. Some popular pilsners
are Amsterdam Blond, Heineken, Budweiser. Pilsner has a light
taste that is easier to acquire than other kinds of beer like stout
and ale therefore it is much favoured by Asians. To me, lager
beer is flat and flavourless.
You should try other types of beer to experience a variety of
tastes. Stout is another type of beer with an interesting taste.
Stout is made fromroasted barley or hops and is black in colour.
It has a taste that is slightly similar to Chinese herbal medicines,
and is often consumed warm, rather than cold like pilsner. In
contrast, ale is often reddish in colour and is brewed frommalted
barley. This creates a sweet and fruity taste.
Which one is better? Taste depends largely on personal
preference, not on price or label. Personally, I prefer beers that are
more fullbodied, with a distinctive taste, regardless of category.
Perhaps you might find this hard to believe but beer does have
health benefits. Pale ale contains high levels of silicon, which are
attributed to stronger bones, and high levels of antioxidants.
In addition, a recent study in Finland shows that when men
consume one bottle or one can of beer daily, the risk of
developing kidney stones decreases by 40%because ingredients
found in hops are believed to help decrease leaching of calcium
from the bones. This lost calcium can otherwise make its way
into the kidney. Beer also contains flavonoid constituents such
as xanthohumol, which helps activate proteins that decrease
the livelihood of prostate cancer cells. Nowadays, many brewers
in Germany are increasing the level of xanthohumol in beer to
market it as a healthy drink.

Today, we will discuss and compare health benefits
of two alcoholic beverages: beer and whiskey.
According to much scientific research, consuming
a moderate amount of alcohol a beer, a glass of
wine, or 1oz of spirit per day, can actually help
increase the amount of HDL (good cholesterol) in
the body.

Some of you might wonder why beer drinkers often develop pot
bellies. Its actually quite simple; they consume too many calories
when binge drinking. Only those who drink a lot, and consume
fatty food while drinking have pot bellies. Alcoholics who only
drink but dont eat tend to be skinny people.
WHISKEY
Whiskey originated from Scotland and is made from fermented,
malt grain mash, then aged in an oak barrel for at least 3 years.
The longer the fermentation process, the better the taste and
hence the higher the price. Each region in Scotland produces
a different type of whiskey, depending on the climate and
geographic location highland, lowland or island. However, I
love Japanese whiskey the most. Those who are going to Japan
soon, I would like to ask you to carry back a few Yamazaki 18
years for me (laugh). I also like Laphroaig and Highland Park 12
years. They are exquisite!
There are two types of whiskey, single malt and blended malt.
Single malt is made from one type of grain from one distillery;
blended malt on the other hand is made by mixing a few
whiskeys fromvarious distilleries. In general, single malt whiskey
has a more sophisticated taste than blended malt.
I dont gulp down whiskey like cowboys in the movies. I prefer to
drink a very small amount, and drink it slowly to truly taste the
complex flavour. Some whiskeys have an alcohol content as high
as 48, therefore, I often mix a few drops of water into the shot
glass. The whiskey will rise to the top and the flavour will be fully
released. When drinking, hold the whiskey on your tongue for
5-7 seconds. The whiskey will mix with saliva, so when you finally
swallow, it will deliver a sweet taste and when you breathe out,
the alcohol content will help clear your nasal passages (for this
effect, whiskey is often used to curb cold symptoms and clear
nasal congestion).
Regarding nutrition, whiskey has a low level of fat, cholesterol,
sodium and carbohydrate. As to health benefits, whiskey
contains a high level of ellagic acid a powerful antioxidant.
Whiskey can also help prevent blood clots. Furthermore, due to
its high alcohol content, whiskey can be used as a disinfectant to
prevent wound infections.
Personally, I think beer might have ingredients that are more
beneficial to your health. However, it also has a lot of calories
that can lead to weight gain. I often tell my patients that most
food is not harmful if consumed in moderation. I do not think
consuming a beer or a small amount of whiskey each day will
be damaging as long as you are not suffering fromliver disease,
pancreatitis, have high blood pressure or stomach ulcers. People
who are taking medications that may react with alcohol, and
pregnant women should not consume alcohol either. The rest of
you can close your eyes and enjoy the pleasure and relaxation
fromdrinking, moderately, of course (laugh).

look inside first. Getting love is like going shopping. If you go to the store
looking for something specific and they dont have what you want, you
thinkOh, darnand go to the next store. If the next store still doesnt have
what you want, you dont get upset or stop looking, you just move on. This
is the attitude you want to adopt when seeking out love and approval.
I understand the notion of shopping around for love is not common for
traditional Asian relationships. The normis yousettle with a mate andtry to
live (or sometimes put up) with himor her for the rest of your life because
a divorce in the Asian culture means a tarnished reputation. A good
reputation is no consolation to leading an unrewarded and unfulfilled life.
Besides, finding the right mate means a decreased likelihood of
separation or divorce and a better family life for all. I encourage you to
step out of your comfort zone and try to find the compromise between
cultural expectations and personal individuality and happiness. You
cannot live authentically and honestly by living out someone elses
expectations of you.
Unfortunately, many people just will not give you the love, the praise or
the approval that you desire in the way you want it or when you would
like it. They may give you love when you are busy, pre-occupied and too
distracted to really appreciate it, and not show it at other times when you
would like more. How do you solve this problem?
Simple you give it to yourself. You know yourself better than anyone.
You know just how you like to be treated. Instead of leaving this up to
others to figure out, take charge and be responsible for loving yourself.
At first, most people feel awkward about treating themselves in a truly
loving fashion. Many people have never done it before and its a new
concept. This is especially true in the family-centric Vietnamese culture,
where one is taught at an early age to care and provide for one's family
before ones self. In this culture, a persons value is measured by how one
makes his or her family happy, not how well one can make oneself joyful.
It is better to think and instead of before. For example, I will consider
my family and my wants and desires.
While its important to consider others, be caring, respectful and
empathetic, many dont do this for themselves. Its hard to give to
others what you dont give to yourself. Its similar to always making bank
withdrawals and never making a deposit. Eventually, you have little
to give. So make a regular daily deposit of self-love, self-care and self-
appreciation. The more you take care of yourself, the less likely youll be
needy of others love and attention. Its always nice to receive love, but its
more important to give it back to oneself.
Acting in a loving manner towards myself? How do I do that?
You do it almost the same way you do it for another. Lets say you are
planning to spend time alone this coming weekend. Start a few days
ahead and literally plan for a wonderful weekend. Think about spending
time with yourself in exciting ways. Treating yourself in truly caring ways
may feel awkward, clumsy or uncomfortable at first. It wouldnt be difficult
if you were thinking about spending this time with someone you were
reallyhot over. Just put you in that special place instead, and think the
same type of thoughts.
Plan. Get excited. And go through the motions mentally and
behaviourally until it becomes second nature to think and to do these
things. It only feels awkward because its new. Practice and itll feel
comfortable very soon.
Remember, a self-loving, happy, friendly, confident person is very sexy
and attractive to others. Be that person.

How to Get
T
here is a distinct difference between being alone and feeling
lonely. Most of us have felt lonely in a crowd yet at peace and
content at another time when alone. So havinganother person
around doesnt necessarily solve the problem sometimes
having someone around can make the loneliness worse. It really depends
on your feelings and less to do with the situation.
If you are looking for a partner in life lets face it, others tend to be
attracted to people who are happy and confident. In a word: self-loving
(or is that two words?). The happier and more fulfilled you are, the more
likely Mr. or Ms. Right will come into your life.
Even if you are alone, at least the default is that youre happy and fulfilled.
There is a Buddhist saying, When the student is ready, the teacher
appears. The teacher does not appear in a mystical sense; its just that
when we are ready, we see the teacher that was always there in the first
place (or perspective partner in this case).
The more complete you are, the more likely other healthy and happy
people will tend to come into your life. So if you are looking for love (along

here are a few things you should
initially look out for when figuring
out whether music is a good fit.
Firstly, what should you expect
when you sign up for music lessons,
and how to know if your child and
you are ready for lessons. Finally, what to look for in
a music school once you determine music lessons are
a good fit.
WHAT TO EXPECT IN MUSIC LESSONS
Beginner music lessons are typically half an hour
in length and happen once per week.
Tuition can vary from school to school. Typical
beginner lessons cost around $60 per hour.
Intermediate and advanced level lessons are
longer in length and cost more.
Along with the cost of tuition, other fees may
include a purchase or rental of the instrument as
well as books, includingadictation book (what the
teacher will write down for weekly homework).
The Right Choice for Your Child?

One of the first things a parent
should do in order to determine
whether music lessons are a good
fit for their child is to ask your
child whether they are interested
in learning music! Most parents,
however, feel their child may be
over-enthusiastic about numerous
extra-curricular activities and
they worry their child may not
be ready, or that putting them
into lessons too early might deter
them from fully enjoying their first
musical endeavour.
Music Lessons
Regular and consistent practice at home should
be encouraged in order for the student to get the
most benefit out of their weekly lessons.
Music is a language as much the same as teaching
your child to read, so parents should be involved
in the learning process and assist small children;
however, parents do not need to have any
knowledge of music in order to assist their child.
Parents should be prepared to speak to their
childs teacher after each weekly lesson, in order
to find out what to expect and what to listen for in
the upcoming weekly practice sessions at home.
Part of learning a musical instrument is to prepare
students for sharing their experience with an
audience each lesson should be gearing the
child towards an upcoming performance.
WHAT TO LOOK FOR IN A MUSIC SCHOOL
One that encourages regular and consistent
practice. Are there any incentive programs the
school offers for students who practice regularly?
Flexible schedule. Are they flexible with their
schedule? Do you need to commit for the entire
school year or can you opt out if your child is not
yet ready?
Does the school have a variety of different options
available for what type of instruments they teach?
Does the school offer a variety of music genres to
choose from?
Does the school have options available for
supplemental classes such as violin ensembles
for violin students, group guitar lessons, or a
childrens choir?
Does the school offer scheduling options for more
than one child at the same time?
Does the school provide an introduction to music
lessons? For example, Preschool and Toddler
Music Programs can provide benefit to very
young children who are not yet ready to tackle
weekly lessons and practice regimes. These
programs offer an introduction to music in a
fun and interactive way through stories, games
and song, and provide many benefits such as
problem-solving skills.
Does the school provide regular recitals and
performance opportunities for all students?
What is the schools track record (i.e., what does
the community say about themand how do their
current students perform in exams and music
festivals?)?

he first line of Violet Kupersmiths first collection
of stories titled Frangipani Hotel opens with
Here, con, I cut up some dudu (papaya) just
for you. It will hook the 2 year-old inside you,
then you will succumb to a fit of giggles (or at
the very least put a smile upon your face) and connect with
you, because being a Vietnamese-Canadian you appreciate
the wordplay. Reading on, her compilation of short stories
will seduce you into oblivion as you unravel the deliciously
haunting ghost stories that are overshadowed by elements of
bravery, endurance and overcoming war.
Violet Kupersmith is 24 and already a published author. Freshly
graduated fromcollege, she credits luck and great mentors to
her success. Recently, her collection of short stories debuted
in stores across the country (including on the itunes ibook
store) and already the reviews fromcritics are favourable. The
Chicago Tribune writes, They're (the short stories) ruminative
and otherworldly, fresh and original.
Her first publication is a collection of ghost stories passed on
to her from her grandmother (b ngoi) and from strangers
shes met while living in Vietnam. The ghost stories are
cleverly woven with an air of humour, which as she explains,
produces a juxtaposition making the stories even more scary
and effective. Everyone in Vietnam has a ghost story, says
Kupersmith.
In an interview with VietSun, Kupersmith shares how she came
to write about ghost stories, tips on how to pursue a career in
writing, and how her experience living in Vietnam has fueled
her creativity, giving her the ingredients she needs to start her
first novel.
Violet Kupersmith was born in rural Pennsylvania in
1989 and grew up outside of Philadelphia. Her
father is American and her mother is Vietnamese.
After graduating from Mount Holyoke College,
she received a year long Fulbright Fellowship to
teach and research in the Mekong Delta. She has
published a short story collection called Frangipani
Hotel. She is currently at work on her first novel.

VietSun (VS): In the beginning, it seems as though you
wanted to write about your grandmothers journey to
America, how did it veer towards a compilation of ghost
stories?
Violet Kupersmith (VK): Writing about my familys journey to
America seemedunnatural to me. It wasnt my story to tell. Lots
of writers try to unpack that part of history. The weird ghostly
element made it feel like a real war story to me, ironically. War
manifests the biggest ghost story of all. Its a character in the
shadow of every piece of the collection.
VS: How do you fuel your motivation in the writing process
and get your creative juices flowing?
VK: Travelling around Asia consistently stimulated my brain.
That, and having weird misadventures. Also, constant reading
helped.
VS: During your first trip to Vietnam, didyouexperience any
cultural shock?
VK: One of my huge moments of culture shock was discovering
that the Vietnamese never filter their remarks about other
people's physical appearance. They have no qualms about
telling someone to their face, "Oh! You've gained weight!" or
"Your skin is so dark!" or other things that would be pretty
offensive to say to someone in North America. It took a while,
but eventually I just developed a thick skin and got used to the
fact that these kinds of comments weren't meant to be hurtful,
they were just acceptable under this different social code.
VS: Can you explain the process in which you took to get
published?
VK: In college, I submitted my thesis to my thesis advisor who
forwarded it to her agent in New York, thinking that she would
write back with edits and words of advice. Instead she read the
short stories and set up a meeting with me to tell me that she
had went ahead and forwarded my short story to Spiegel &
Grau, a division of RandomHouse. She informed me that they
would be a great fit to distribute my stories. In other words, she
acted as a match-maker.
VS: What advice would you give to aspiring writers?
VK: Foster your relationship with your professors and network.
Rejection is hard, but keep going and write because you
love writing itself. Preserve your family stories and your own
family legends because its what we have to remember our
motherland by.
VS: Last question, you credit your grandmother for quite
a few of the stories. Youve said that she was unable to
read the book because its in English. Seeing as VietSun is
a cultural Vietnamese publication and she may have the
chance to read this article, what would you say to her?
VK: To my Grandmother, I would say thank you. Even if we
couldnt understand each other fully, I was always listening.

completed his computer degree. After settling down

HelpKidsToSchool Foundation - a non-profit charity that helps provide
food, clothing, shelter and education to poor children and child
victims of sex slavery. HelpKidsToSchool Foundation welcomes kids,
youth, adults and elderly of all races that wish to participate in charity
work.
Khoa dedicates all his free time to teaching, composing music
arrangements for his students, organizing fundraisers and

startedwritingfor VietSun this time two years ago. As I reflect on
the time that has passed, it amazes me how much can and have
changed in two years. As this issue goes to press, our closest
friends and families are flying to Paris where I will be getting
ready to ln xe bng. I am excited to start this next chapter in my
life. And it is with this benchmark that I have decided to write my last
column. I hope that you have enjoyed reading this column as much
as I have enjoyed writing it for you. Through VietSun, I have been able
to share with you the things that I love, explore your favorite celebs
beauty products and other topics of interest. I take this opportunity
to thank VietSun for allowing me this space over the past two years.
And to you, our readers, for your continued support and love. Some
have said that we live in a world where peoples worths are measured
by whether they are successful. I think we have all felt pressured in our lives at one
point or another to achieve this success. So I leave you today with one of my favorite
definitions of success. It resonated with me fromwhen I first read it and you may notice
that the topics I have written about in this column have woven tightly around this
metric for success. Again, I sincerely thank you for your love and support, whether it be

saw this on houzz.com a while back and have been wanting to
do aphoto wall for my humble abode. However, when I realized
that we would be moving (again!), I thought I would save this DIY
project for my new forever home.! One thing I love about this wall is
that the frames are not matching which means you can recycle the
frames you currently have. If you do not have enough frames, drop
by a flea market or your local secondhand store to pick up cheap
frames. You can also buy them new if you feel more comfortable - a
good place for cheap frames in bulk is Ikea. The beauty of this simple
DIY project is that you need absolutely no skills! As long as you can
hammer a nail to a wall, you are set! As you can see in the photo, the
frames are not aligned and in fact, their random placement is what
adds to the walls beauty. Another thing I love about this photo wall
is that it brings instant warmth and love to a home. I have had the
privilege of visiting some very expensive houses. I once visited the
home of the owner of a famous supermarket chain. When we visited
his 22-bedroom, 23-bathroom mansion, he was still not finished
building the house and it had already costed him$33 million dollars!
However, regardless of how expensive a house is, I truly believe that
warmth and love trump cold, bold and expensive. Dont get me wrong
- there is nothing wrong with a big, beautiful and expensive house. I
just think it is even better when the home is big, beautiful, expensive,
warmand filled with love.

INGREDIENTS
Dough:
5 lbs of self rising flour
5 cups milk
2 1/2 cups sugar
3 tbsp. olive oil
Filling:
4 lbs ground pork, lean turkey is preferred
1 onion, finely diced
3 cloves of garlic, minced
1/2 cup dried black fungus (soaked in warm
water and drained)
2 tsp. garlic salt
2 tsp. sugar
3 tbsp. oyster sauce
2 tsp. pepper
20 hard boiled quail eggs
DIRECTIONS
Mix milk and sugar together. Save 1 cup of
flour to be used for dusting later. Put flour
into a large bowl. Slowly add milk, sugar and
oil. The mixture will become very sticky. After
mixing, place a towel on the dough and let it
rest for at least 45 minutes.
Mix all the ingredients for the meat together,
except the eggs. Peel and leave the eggs aside.
When the dough is ready, dust your table with
flour, knead for maybe 5 minutes, then shape
into 2 long logs. Cut each log into 10 pieces.
Roll each piece into a round shape. You want to
make the center a little thicker than the outer
edges. Place about a 1/4 cup of meat mixture
and 1 quail egg in the middle. Bring up the
sides and pinch the dough to seal at the top.
Steam for 20 minutes on medium heat. These
buns will fluff up so you should leave about an
inch of space between them. If you want the
buns to look white, put a little bit of vinegar in
the steamer water. Good luck and bon appetit!

and super easy to make. I grew up eating these
hearty buns in Saigon. Either as a late night snack
from a vendor on the street, or a healthy breakfast
to go in the morning, they were a part of my lovely
childhood.

For the spice paste 4 dried chillies 4 green cardamompods
1 stick cinnamon 1/2 tsp. ground turmeric 4 cloves 1/2
tsp. anise
Toast the above ingredients over gentle heat, cool, and grind
to fine powder.

DIRECTION
Marinate the chicken with spice paste for at least 24 hours.
Heat oil in small pot, fry ginger, garlic to release flavours and
aromas. Empty mixture into a bowl, let cool, then add the
chickens and the remaining spice ingredients.
Bake in preheated 375F oven for 30-45 minutes or until juices
run clear.
Slather both sides of the freshly sliced sourdough with
mayonnaise, add some onion marmalade, slices of chicken
breast, a few slices of creamy avocado, and fresh crisp lettuce.

Gentle Creature had inspired many previous movies
such as the Russian version, Krotkaya in 1960 and
the French version, A Gentle Woman in 1969. The
script was chosen because the production team
wanted to bring to life the first world literary adaptation for
Vietnamese cinema through a haunting love story that seems all
but impossible.
Actor Dustin Nguyen fell in love with the script and cancelled
his role in another movie to partake in the making of Gentle. He
returns to thebigscreen in theroleof Thien, themain protagonist,
along side a newly discovered talent Nguyen Thanh Tu, in her

who possesses a good physical representation of a Southern
young woman with a solid Southern accent. Nguyen Thanh Tu,
daughter of the actress who plays the role of the aunt in the
movie, was chosen for her natural talent and flawless portrayal
of a Southern lady.
The movie promises to deliver an evocative interpretation
of how internal and spiritual stagnation, along with material
pursuits, affect ones life on many intricate levels. It is produced
by Dan Tran (Dust Of Life, House in the Alley), screen adapted and
directed by Le-Van Kiet (Dust of Life, House in the Alley), and with
the artistic direction of Director of Photography Laurent Machuel
(Chouchou, Paris Manhattan, Sex is Comedy).
The movie was filmed in Tien Giang, Long An in Happyland
Studios - the newest and largest movie studio in Vietnam.
Its scheduled to be released during the upcoming Christmas
holidays after making its debut at international film festivals in

You are right. I thought I had given you the answer about
Vietnamese classical music but upon reading your letter today,
I realized that I had written about this in my book Stage Memory
but not in Vietsun Magazine. I will fulfill my obligation with a
reply in this article.
Talking about Vietnamese classical music, Cho must first be
mentioned. Cho (or Ht Cho or Cho C) is oneof thetraditional
forms of folk stage music in the North. It is a combination of
musicals and plays in which different folk melodies or traditional
dances are displayed. In other words, Cho originated from folk
songs and common traditional dances.
Cho can be performed on stage, in a big theatre like an opera,
complete with a plot and anecdote, similar to the play Th Knh,
The Goddess of Mercy. Cho can also be performed humbly on the
front yard of the temple, with a few folk melodies and without a
lengthy plot.
No one has confirmed the origin of why this musical form is
called CHO. It had been suggested that the term is an altered
pronunciation of the word TRO, which means satire. This may
be true since in any Cho plays, there is often the fool. This
funny man is the character carrying the authors message,
aimed to reflect upon the bad and the cruelty of the royal court
in feudalism. Therefore, in a Cho play, the funny man, though
playing the role of a servant or guard, is always very smart and
knowledgeable!
Some think that the word CHO originates from the gesture
similar to rowinga boat, when the artists standto singanddance.
Both of the above opinions are merely assumptions. Now, after
thousands of years have passed, people no longer raise issues
about the origin of the word CHO. They only think about CHO
singing when someone mentions Northern folk music.
The art of singing and dancing in our country began in the
inh Dynasty. History documented: In Hi Dng Province
lived Ms. Phm Th Trn (some records had her name as Phm
Th Trm) who was recommended by a mandarin to come to the
palace to sing for King inh Tin Hong. Afterwards, the king
ordered her to stay in the palace to teach maids and guards
singing and dancing. Nowadays, Ms. PhmTh Trn is considered
as the founder of Cho.
Historic records of the Pre-Le Dynasty documented that King
L i Hnh stood up and sang a song during a reception to

must have sang all day long!
During the L Dynastys reign, there was a singer named o,
who sang very well and was often rewarded by the king. From
then on, female singers were calledo, for exampleo Bch
Tuyt. Male singers were called kp; kp Thnh c as an
example. The word kp is formed by the mispronunciation of
the word gip which means, a person who is good at singing
and dancing, and who is chosen to be the director of the musical
group.The specific termfor this position back in the old days was
qun gip.
Plots in the initial Cho plays are often taken fromVietnamese
folk stories and fairy tales. If taken from China, it would be
rewritten in a different structure, completely different from the
original Chinese version.
One important turning point was during the Trn Dynasty,
when the Nguyn troops invadedour country andwere defeated.
There was a prisoner called L Nguyn Ct who did not want to
return to China, but asked to stay in Vietnam. He was a folk opera
singer in China. He then taught his skills to our folk performers.
With innovative plots, colourful costumes and conventional
performance, L Nguyn Ct quickly attracted the attention of
actors, as well as audiences in our country. High ranking officials
such as Trn Nht Dut, Trn ch Tc, all formed a singing group
at their own premises. Since then, Chinese folk opera dominated
the royal palace for quite a long time. King Trn was so fond of
folk operas that he nearly lost the crown to the Champa Kingdom.
The story is as follows: At the end of theTrn Dynasty, CungTc
Vng Trn Dc, whose father was King Trn D Tng, watched
the folk opera calledTy Vng Mu Hin Bn o (The Queen
Making Peach Offerings), and fell in love with the main actress
of the play, though she is Dng Khungs wife and was three
month pregnant. CungTcVngaskedher to leave her husband
and come to live with him. When she gave birth to a son, Cung
Tc Vng regarded himas his own and changed the boys family
name fromDng to Trn, as in Trn Nht L.
KingTrn DTn and CungTc Vng eventually passed away.
The kings mother decided to make Trn Nht L king despite
the fact many royal court officials knew Nht L was a folk opera
performers son and not of royal blood! The kings mother, Hin
T did not listen to the advice and was determined to make Trn
Nht L king. Officials and the royal family members persuaded
the kings mother to restore the crown to the Trn Dynasty.
When the kings mother was still undecided, Nht L poisoned
her and prepared to make a declaration that the dynasty would
be changed to the Dng Dynasty from then on! Luckily, royal
family members and loyal officials of the Trn Dynasty joined
forces to defeat Nht L. It was a tragic, bloody battle and in the
end Nht L was killed. Nht Ls mother, the beautiful singer
who caused tragedy to fall upon the Trn dynasty, immediately
ran to the Champa Kingdom to seek help. Ch Bng Nga, the
most powerful king of the Champa Kingdom, took this chance to
send his troops to our country, causing quite a stir in the capital,
and killed many soldiers. Then Ch Bng Nga was betrayed by his
chef. The chef escaped to our country and informed General Trn
Kht Chn about the situation in the Champa Kingdom. Thanks
to this information, the Trn troops employed tactics to kill Ch
Bng Nga on the river, ending the conflict.
The L Dynasty succeeded the Trn Dynasty. Due to cultural
influences from China, which looked down upon singers and
dancers, and partly due to the lesson learned from Cung Tc
Vng whose fondness for singers almost lost the crown, the
King Le Thai Ton expelled all the singing groups fromthe palace.
He also stipulated strict regulations on performers; restrictions
such as, they were not allowed to go to school, or to sit in the
examinations. Also, officials marrying performers would be
beaten and removed from their duties. An example of this was
o Duy T, who was well-educated and talented, but because
his father was the leader of the singing group, so he failed the
examination although his essay was outstanding. Though the
system tried to fail him, deputy official Nguyn Hu Lim kept
his essay. When Lord Nguyn Hong from Qung Tr arrived in
Thanh Ha, the deputy official gave himo DuyTs exam. Then
Nguyn Hong himself personally asked o Duy T to join and
assist himin the South.
One important thing to note: Since Nguyn Hong moved
to the South and started his career, and many subsequent
lords later, the law was eventually loosened because the lords
needed to recruit talents, including those who had committed
a crime. Though, o Duy T was banned from partaking in
the examination, and banned from being a royal court official
in the North, he was invited to become a royal court advisor by
Lord Nguyn in the South. The preconception of looking down
upon performers in the North did not become the status quo in
the South. Furthermore, the Nguyn lords had a more modern
and advanced vision. Not only did they not look down upon
singers and dancers, they in fact employed art performances as
propaganda to motivate the people, and to highlight the virtues
of loyalty and righteousness through characters depicted in the
folk operas.
When the Man Qing dominated China, many Chinese
delegations protested against the Qing and went to the South.
They were all embraced and given lands by the Nguyn lords.
These Chinese, who were commonly referred to as Minh Hng,
contributed to the economic development in the South through
goods exchange and salt production. They gradually became
Vietnamese, and contributed talented individuals such as Trnh
Hoi c, Trn Tin Thanh, Mc Thin T, ng H to society.
Thanks to the cultural exchange between Vietnamand China,
another type of folk opera singing called Ht Bi quickly became
popular and peaked during the Nguyn Dynasty. No document
can clearly show when and during which dynasty Ht Bi began
but it is only known that from the time of Lord Nguyn Phc
Chu, Ht Bi began to advance and became popular. Since then,
intellectuals became engrossed in compiling folk operas that
carried literary as well as moral values.
These three genres of Ht Bi are often mentioned:
1. Bnh nh:
This genre was founded with the great contribution fromo
Tn, offspring of o Duy T. He was an intellectual, received his
bachelors degree, then advanced from being an official from
the district level to the provincial level. He was the author of folk
operas that were highly valued due to their quality and quantity,
and was deemed the top influential figure in entertainment
development of the South.

This kind of genre was formed thanks to the contribution of
Nguyn Hin Dnh from Qung Nam. He took the examination
and received his degree, then became an official, but he devoted
a lot more time to compiling folk operas; and, his plays were
somewhat influenced by o Tn.
3. Gia nh:
This genre was brought from the Centre by General L Vn
Duyt when he took the post of governor of Gia nh. At that
time, Gia nh was vast and included almost the entire part of
the South. It was not just a province. Due to constant exposure
with singing groups from Guang Zhou and Chiu Chow, Ht Bi
from the North gradually turned to Chinese folk opera plots.
The audience became familiar with titles; such as, Quan Cng
Escorting Two Sisters-In-Laws, Phoenix Temple, Tit Nhn Qu
Conquering the North and South, andThe Trial of Imperial Noble
Consort Bng, v.v. Thanks to the support of Governor L Vn
Duyt, Ht Bi reached its peak and spread from cities to small
villages in the country side. Not only did Governor L Vn Duyt
have his own private singing group at home, but officials under
his post also set up their own singing groups, auditioning artists
and paying salary just like other careers.
Researcher Ha Honh wrote in The Six Provinces of The South
as follows:
From the intellectuals, the wealthy, the landlords to the
humble farmers, everyone likes, if not, is addicted to Ht Bi.
Some even neglect work to attend Ht Bis performances.
Fromthat came the idiomFolk Opera (Ht Bi) torments folks.
Until the beginning of the 20th century, in the fervent
atmosphere of the French resistance, a few intellectuals from
the South spoke up and criticized Ht Bi because it was too old.
The plots and performance styles were lacking. The poetic script
was full of Chinese-Vietnamese dialects, which were difficult to
understand, and the performers styles were so conventional
that audience could immediately spot the bad and the good
characters as soon as the actors got on stage! They wanted
something newer, more Vietnamese, instead of plots that
highlightedonly the virtues of loyalty andrighteousness through
characters in Chinese plots. The new element they wanted was
ci cch or ci lng (reform) and it was the starting point for
Ci Lng a new genre of folk opera that became popular later.
Individual performers gathered into Groups Of Artists, gradually
changing to cabaret, a form of entertainment that required
artists to sing and dance at the same time. As time passed, these
small groups became Ci Lng companies, with complete
anecdotes, to escape from the routine plot of Ht Bi. The year
1910 could be considered as a milestone when these Groups Of
Artists debuted in M Tho, and 1917 was considered the birth
year of Ci Lng. The most important turning point of Ci Lng
was in 1918 when Mr. Cao Vn Lu composed the classical vng
c song D C Hoi Lang which became a fundamental for any
Ci Lng production later.
So, it can beconcludedthat in a way, Ht Bi is theantecedence
of Ci Lng. The only difference is Ci Lng composers tried
to create plots using Vietnamese history, and did not copy
Chinese plots like the period when Ht Bi dominated the
performance stage. Though sometimes, Chinese stories are still
being exploited, Ci Lngs script is milder with less reference
to Chinese-Vietnamese dialects and more folklore reference to
reflect normal daily lives. Artists used less makeup. Their faces
were no longer covered with thick powder so that no one could
recognize the performers faces. Closely related to Vietnamese
culture, Ci Lng became more popular to the people and Ht
Bi was gradually forgotten, though there are still a lot of efforts
to revive Ht Bi.
The peak of Ci Lng in the South lasted until 1975. Many
Ci Lng companies operated side by side in Saigon and other
provinces. Every night people flocked to enjoy Ci Lng. Some
plots lasted for few months. From the theatres to televisions
and radios, it could be said that Ci Lng had become a vital
part of life for people from the South. Its a pity that this glory
does not exist any more. Following the progressive trend, young
people distanced themselves fromCi Lng. Furthermore, with
the arrival of video tapes and DVDs, audiences did not want to
spend time coming to the theatre. They wait for the recordings
and buy them to watch at home! Now, the Ci Lng genre is
only a shadow of its glorious past fromlong ago. Today, in grand
musical shows, singers would sing a few lines or performa short
act from a folk opera to a nevertheless supportive audience.
However, putting on an entire show of Ci Lng frombeginning
to end, like in 1975, would be hard to attract an audience. The
glorious time is over!

host caffeine addicts, but a social hub for the
dreamers, artists, lovers, bookworms, writers,
media reporters, students and businessmen,
virtually everyone! It is a place to engage in
conversations, listen to music, read books, play board games,
do homework, keep current on the news of the day and
conduct business. It is a haven for the exchange of information
and is also known as the 'School of the Wise', where many
things are learned and gathered informally.
The style of coffee houses varies among countries. They are
businesses that have situated themselves quite well along
every corner of the block. In Vietnam, efforts are made in the
dcor, especially in ones located in the big cities. Money is well
spent maintaining the sound systemto ensure perfect quality
and the availability of constantly-updated music choices.
Spending your morning with an iced coffee from a street
vendor or sitting in a cafe is a first priority. Being late for work
or delaying an AM appointment for the enjoyment of coffee?
No problem! Better yet, bring your work or meetings to the
coffee shops!
The history of coffee carries several myths regarding its origin
dating back to the 15th century. It is thought to have come
from an Arab country in Western Asia, where the first coffee
tree appeared in the Sufi monasteries of Yemen during the
15th century. Missionaries, travellers, traders and colonists
began to carry coffee seeds to new lands. Plantations were
established in magnificent tropical forests and mountain
highlands. Some crops flourished, while others were short-
lived. Fortunes were made and profits were lost. By the end
of the 18th century, coffee had become one of the world's
most profitable export crops, making its way all across Europe,
America and all over Asia.
By the early 20th century, coffee was introduced to Vietnam
in 1857 by the French. Starting from small scale productions,
plantation systems were established to accommodate the
high demand and sustain the lucrative opportunity that would
eventually grace the country. In 1969, Coronel Coffee Plant
became the first coffee facility in Bien Hoa, Dong Nai, producing
80 tons per year. The war caused production disruption to the
capital city of Dak Lak situated in the Buon Ma Thuot region.
The city was a crossroads between the North and South and
the war limited private enterprises and production. It was only
after the revitalizing economic reforms in 1987 when privately
owned companies were permitted to operate again and growth
increased. By 2000, coffee production had risen to 900,000 tons
per year. By 2012, 1.25 million tons were produced and in 2013,
17 million to 29.5 million tons. Vietnamwas once a country that
tasted poverty more than prosperity due to the slow recovery
after the war. However, today it has earned a worldwide
reputation as one of the top exporters of coffee. Big players
like Trung Nguyn and Vinacafe are now being sold abroad,
competing with major international brand names. Vietnam
has now become the second largestexporter of coffee next to
Brasil, accounting for 14.3 percent of the world market share.
Consumption wise, the United States, Germany, Japan, Canada
and Australia are currently the largest markets.
Picture a short glass cup that wears a French press metal hat
stacking two layers. The bottomholds the grinded coffee. The
top holds the boiling water. With a simple twist, they press
against each other. Patience is a virtue for Vietnamese coffee
as drops of dense black liquid gradually fill the glass, and
drape perfectly on top of a layer of ivory condensed milk with
texture like hot fudge. The use of sweetened condensed
milk, rather than fresh milk, is due to its availability and
easy storage in a tropical climate. With a small silver
spoon, a dance and swirl is performed with some
ice for a chilled appeal. Taking the first sip, the
sweetness hits you, full and rich. Your mouth
dries up and the bitterness and acidity kick
in. Then with the second sip, everything is
just about perfect in the world. This is the
art of Vietnamese coffee!
The social aspect of coffee has created a
lifestyle that brings both introverts and
extraverts together in one place, making
both feel completely at home. Coffee houses
have become refuges for individuals and
groups to bond and escape the mundane reality
of life and work. Business is conducted, deals are
closed, fictional works are completed, essays are
finished, compositions are created, and relationships are
established every minute of the day in coffee shops across the
globe. Coffee continues to be the worlds number one social
lubricant and no matter where we are, we all seem to speak
the language and understand the culture of coffee.

uch legend was inscribed into Vietnamese minds, however the
Water Gods lesson has rarely been learned by us. And looking
around, we can see countless Water Gods, who are losing the
chance of a lifetime due to tardiness.
Vietnameserubber timeis nothing new to foreigners. Even the Canadian
governments website designed to educate people about cultural
differences between Vietnamand Canada mentioned this practice. When
making excuses for following rubber time, people often point out the
structural differences between the two cultures. Vietnamrevolves around
the micro-structure based on an agrarian system. Thus, punctuality is not
an absolute requirement, though sometimes the watering of gardens
or the harvesting of fruits must be done at a certain time before the fog
or the mist arrives, otherwise the entire harvest would be ruined due to
inclement weather.
With almost the entire length of the country adjacent to the sea, along
with many inland water courses, Vietnamese fishermen rely on the tide,
the wind, the rain, and the currents. Therefore timing is also important to
themsince they need to be able to detect flood and ebb tides, and when
schools of fish might come out to look for food.
From these observations, we can conclude that timing plays an
important role in Vietnamese daily life. Though centuries ago, farmers
and fishermen did not have digital watches, they still had to organize
their hunting, fishing, farming accordingly to proper time slots. The only
difference is that they did not have to be precise, unlike our industrial lifes

So it would be unreasonable to blame genetics for inherited traits created
by our ancestors for farming, hunting, fishing during the last thousands of
years, traits causing us to employ the contemporaryrubber timesystem.
Why then do our innumerable watches continue to rotate around the
incurablerubber time?
The plain explanation is this practice is a bad habit we have been

through the door, then, punch the time card. Fifteen minutes late means
you lose one hour of pay. And miraculously, we are always on time. That
tells us one thing: watches that readrubber time can easily be replaced
when we are forced to be on time. And its also obvious that we adopt the
use of rubber time when we are not under pressure and know we can
get away with it.
When going to a coffee shop to meet up with friends to shoot the breeze,
we often take our time. When its close to the agreed upon time, we call
and tell themthat we might be late (because of traffic, the most popular
culprit). And our friends employ no disciplinary measures.
Here are some reasons why we cling on to this bad practice, to rationalize
our persistent utilization of rubber time:
No need to be on time, just to wait for others to arrive.
Get there on time (or arrive early) to just sit and wait is self-degrading;
on the other hand, waiting is a waste of time.
VIPs often arrive fashionably late. We should be a bit late, though we
are no VIPs, so that people would view us as important. Imagine us
swaggering into the hall, all eyes are on us. Then we take our time,
counting our steps leisurely the way movie stars do on the red carpet.
So smooth, right?
Arrive very late to protest against those who are always late. I was
ready first thing in the morning, however whats the point of being
on time when everyone else is not.
On the first date, some people intentionally plan to be a bit late just to
prove to the companion I am not that desperate! We usually jump out
of bed very early, yet fully awake, and stand in line in front of a store on
Boxing Day (the store opens at eight, its five AMnow, but the quantity of
products is limited), but we are always deliberately late for occasions such
as weddings (whats the point of being early actually being on time to
sit there and starve?).
In other words, not being punctual is a bad habit that can be remedied
easily when we interact or live in Western society. To Westerners, tardiness
is a sign of arrogance, when you value your time more than others. Not
being punctual leaves a bad impression on a job interviewer; your doctor
or dentist will not have enough time to treat your illness; you will miss the
beginning of a show or a movie; you will miss the chance to taste some
delicious appetizers; and most likely you will lose the opportunity to land
your dreamjob.
Young people growing up in North America do not have the bad habit
of using rubber time. So the rubber time syndrome is not hereditary,
but a highly contagious condition (foreigners who live in Vietnam for a
while can actually contract the rubber time virus just like the locals), and
can be cured (a warning fromthe boss is a good remedy), but can relapse
quite easily.
My tips for always being punctual? Add at least thirty minutes leeway to
every appointment and never hit the snooze button.
The Vietnamese adage Dilatory buffalos will have to drink soiled water
is somewhat similar to the English idiom: The early bird catches the
worm. In North American daily grind, sometimes even soiled water is not
available for chronically late buffalos. And the Water Gods, if reborn in
North America, will never land any job other than making rain and floods.
