Daniel was presented with
his award by Minister for
Agriculture, Peter Walsh, at
a ceremony last Thursday
night and said it was a fantastic honour to be selected
for the scholarship.
Speaking at the event Rural
Finance General Manager
Agribusiness and Victoria,
Andrew Smith, said the
program had benefits far beyond those of the immediate
recipient.

agriculture
exports approximately $30
billion worth of product
annually, and supports 1.6
million Australian jobs, Mr
Smith said.
With an industry as important as agriculture, it is
paramount that both the
public and private sector get
behind our emerging talent.

innovation and intellectual
capital so we can capitalise
on the opportunities that

The Plough
Mark Mills, chef/owner of The Plough in Myrniong and Trentham shares his love of the art of dry-aging beef. Dry-aged beef is
currently the rage on the food scene. It is much sought-after by discerning beef and steak lovers who are willing to seek out the dish.
Mark understands what makes dry-aged beef a cut above the rest. He learned the art of dry-aging beef by spending time with the
owner of Westside Meats, Bacchus Marsh. Mark explains, Joe shared his knowledge of dry-aging beef with me. He was integral in
helping with the design of my dry-aging room, as well as being the supplier of my black angus beef. Mark says he was inspired to
go into dry-aging beef after he experienced the flavours of dry-aged beef. I decided to invest in my own dry-aging room to ensure
that I could offer this quality product throughout my restaurants, says Mark. Mark explains how the dry-aging process changes the
beef through evaporation of moisture from the muscle, while creating greater concentration of the beefy flavour and taste. The
beefs natural enzymes also break down connective tissues in the muscle, resulting in more tender beef. The Plough offers various
cuts of beef that have been dry-aged for 49 days. The Plough @ Myrniong offers Scotch, Porterhouse and Eye Fillet while The Plough
@ Trentham offers Rump. Mark invites you to taste the difference you will not be disappointed.

Moorabool Shire Council is
sharing the love or two environmental health officers,
at least.
The two staff members of
Moorabool Shire Council
will help out Hepburn Shire
Council by working at Hepburn temporarily.
The job sharing arrangement has been put in place
for three months to help
cover a resignation in the
Environmental Health Unit
at Hepburn.
Moorabools CEO Rob Croxford said he was pleased
Moorabool was able to respond to Hepburns call for
assistance, and able to provide them access to two of
Moorabools Environmental
Health Officers for a couple
of days a week.
Hepburn Shire Council will
fund the days the officers
work in their Shire.
We are always looking at
ways to share resources, ideas and services with neighbouring councils where
appropriate and where opportunities arise.

Saturday with the first of
a two day match in cracking weather against Golden
Point.
Zac Ticehurst had a faultless
130 in the 2nd XI batting at
number 3. At just 17 years
of age this prodigy already
has six 1st eleven caps, and
numerous
representative
honours under his belt.
The 1st Eleven are 1/13
chasing 225 with reigning dual Cleary Medallist
Matthew Cape 3/28 and returning great Ryan Ali 3/44
leading the way with the
ball. A 132 run third wicket
partnership looked to put
the game out of reach, but
a steady flow of wickets following has Darley in a commanding position.

and boom English recruit
Oliver Smith settled at the
crease and ready to fire this
Saturday, with only one
wicket down.
The 2nd Eleven finished at
5/315 with Zac Ticehurst 130,
Ben Longhurst 47*, Rohan

contributing to what is massive score. Ticehurst joined
Hall at the crease with Darley at 1/2 combining for 81
runs. After Hall was dismissed Ticehurst was joined
by Parag for a 113 run stint,
and then by Longhurst for

A very handy bowling attack will make this a difficult match for Golden Point
to win or Darley to lose.
