Serves 8 to 10
Follow the yogurt cheese instructions (page 32) using 1 quart raw kefir or yogurt.
Combine with:
Sea salt and pepper
Big drizzle of olive oil

Note: If you want something less involved, lamb chops are quick and easy. Just rub them
with a little sea salt, pepper, garlic, ghee, and herbs of your choice. If you have time, let them sit
and marinate for about 30 minutes; then throw them onto a hot grill or heavy-bottomed skillet
for 3 to 4 minutes per side. Transfer to a 200F oven for 10 to 15 minutes, depending on the
thickness (for medium rare). Allow to rest for an additional 5 minutes. They are delicious and
easy for kids to pick up and eat!
