GENERAL INFORMATION
1)Manipular el paquete con cuidado. Desembalarlo y

comprobar que el contenido coincide con lo
indicado en el apartado de la Lista de embalaje.

DESCRIPCIN DEL EQUIPO

El equipo Alcodest es un destilador indicado para
la determinacin de algunos parmetros
enolgicos, tales como el Grado Alcohlico, la
Acidez voltil, el cido Srbico, ...
Es un destilador de muestras por arrastre de vapor.
Est equipado con un generador de vapor a nivel
constante y que por su diseo est totalmente
protegido contra sobrepresiones.

Built in with a constant level steam generator and is
completely protected against overpressures.
INSTALACIN
INSTALLATION
1- Colocar el destilador sobre una superficie horizontal, plana y nivelada.
1-Place the unit on a flat, horizontal level surface.
2- Dejar en la parte posterior espacio suficiente

para poder abrir la puerta trasera con el fin de
acceder mejor al generador de vapor.
2-Leave a space at the back of the apparatus which

permits the opening of the back door for easy
access to the steam generator.
3- Llenar el depsito con 10 litros de agua

desmineralizada o descalcificada. Este
recipiente se emplear para el circuito
cerrado de alimentacin del generador de
vapor.
3-Fill the tank with 10 litres of decalcified or

demineralized water. This tank will be used for
the closed circuit of the steam generator.
Es importante que este recipiente se instale a

un nivel inferior que el destilador, y que ningn
tubo de conexin sufra obstruccin alguna.
4- En la parte posterior del destilador hay unos
juegos de rcors que hay que conectar adecuadamente.
Para las conexiones, utilizar los tubos con rcor
incorporado que se adjuntan. Antes de apretar el
rcor de manguera, observar que en su interior
est la junta de goma.

It is important that this tank be placed at a lower

level than the still and that no connection tube has
any obstruction.
4-There are 5 connectors at the back of the apparatus. To connect these use the tubes supplied in the
apparatus provided with connectors for said purpose.
Before pressing the hose connector, make sure that
the rubber gasket tube is inside.
The indentification of the back connectors from left
to right is as follows:

A. Entrada de agua al refrigerante. Unir mediante el

tubo adecuado dicho rcor a un grifo de agua.
B. Salida de agua del refrigerante. Conducirlo
mediante una mangera a un deage.
E. Aspiracin del agua del circuito cerrado de
vapor. Unir al depsito de agua desmineralizada.
A. Inlet cooler water. Join the connector to a water

tap by means of the suitable tube.
B. Outlet cooler water. Lead it by means of a tube
to a drainage.
E. Water intake of the closed circuit. Join a tube
to the water tank of the closed circuit.
F. Retorno de agua del circuito cerrado. Unir

mediante un tubo al recipiente de agua
desmineralizada

Tighten the hose connectors by hand. Do not
use any tool.
Los rcords de manguera apretarlos simplemente con la mano. No utilizar ninguna herramienta.
5-
Adjust the consumption of the cooling water to a

flow of 80/100 litres/hour. For this, measure the
water outlet through the terminal B with a test tube.
6-
Mains connection: Before connecting the apparatus to the mains, be sure that the voltage shown on
the characteristic plate at the back of apparatus is
the same as the mains power. For your safety, do
not switch on the still unless it is earthed.
5- Ajustar el consumo de agua del refrigerante a un

caudal de 80/100 litros hora. Para ello, medir
con una probeta a la salida del agua por el tubo
del terminal B.
6- Conexin a la red elctrica: Antes de conectar el
aparato a la red, asegrese de que la tensin
que figura en la placa de caractersticas situada
en la parte posterior corresponde a la tensin de
suministro de red. Para su seguridad, no ponga
en marcha el aparato si no est conectado a una
buena toma de tierra.

PREPARACIN DEL GENERADOR DE

VAPOR
PREPARATION OF STEAM GENERATOR
1.- Conectar el destilador a la red elctrica.

2.- Abrir el grifo de agua de la red y ajustar el caudal
entre 80/100 litros hora.
3.- Accionar el interruptor "POWER" (1).
4.- Abrir la tapa protectora (9).
5.- Introducir un tubo de muestra vaco en el soporte
(11) ajustando el tubo al tapn (8).
6.- Cerrar la tapa protectore (9), asegurarse que el
tetn de cierre se introduzca en su totalidad al
alojamiento.
7.- Accionar el interruptor "STEAM" (2).
8.- Una vez se hayan recogido 100ml. de destilado
en el colector (14) para el vapor accionando (2).
9.- Abrir la tapa (9) y retirar el tubo muestra.
10.-El destilador queda as preparado para el servicio.
1-Connect the unit to the mains.

2-Open the water cock and Adjust the water consumption of cooler to a flow of 80/100 litres/hour.
3-Switch on the main switch "POWER" (1).
4-Open the protector lid (9).
5-Place an empty sample tube on the support (11)
adjusting the tube to the stopper (8).
6-Close the protector lid (9), make sure that the nipple
fits into its housing completely.
7-Switch on the "STEAM" switch (2).
8-Once you get 100 ml of distillate in the collector
(14), stop the steam by switching off the switch
"STEAM" (2).
9-Open the lid (9) and take out the sample tube.
10-The apparatus is ready to work.
Observaciones importantes durante el funcionamiento:

1.- Al accionar el interruptor "POWER" (1) se pone
automticamente en marcha la bomba de
alimentacin de agua del generador de vapor; si
transcurridos unos segundos no se ha alcanzado en nivel correcto de agua en el generador se
ilumina el piloto (4), esto podr suceder cuando:

Important observations during use:

1.- On pressing the "POWER" switch (1) the water
pump to feed the steam generator starts up automatically; if the correct water level is not reached in
the generator after a few seconds, the indicator
lamp (4) comes on, this may happen when:

A. Al poner la mquina en marcha por primera vez.
A.On starting up for the first time.
B. Estando la mquina generando vapor y se quede

sin agua el bidn de suministro.
B.The unit is generating steam and the feed water

tank is empty.
C. Por estar flojo el racord de la tuberia de alimentacin de agua del bidn al destilador.
C.The feed tube connector from the water tank is

loose..
D. Por estar obstruido el tubo de alimentacin.
D.The feed tube connector is obstructed.
Subsanados estos apartados anteriormente se

apaga el piloto indicador.
Once these problems are solved, the indicator lamp

goes out.
2.- Durante el proceso de destilacin (generador de

vapor en marcha):
2.During the distilling process (steam generator

working):
A. Se ilumina el piloto indicador (4) de falta de

agua, se para automticamente la resistencia y
el piloto indicador (3).
B. Si no se cierra correctamente la puerta no se
pone en marcha la resistencia, no se ilumina el
piloto indicador (3).
C. Si se abre la puerta estando en marcha se para
la resistencia.
D. Si se ilumina el piloto indicador (5) del termostato de seguridad, se para automticamente la
resistencia y esto es debido a un exceso de
temperatura en el generador de vapor. El destilador queda bloqueado.
Para subsanar esta anomala hay que rearmar el
termostato de seguridad, transcurridos 5 minutos, situado en la pared lateral derecha del
aparato.
A.The indicator lamp (4) lights up -if water is lackingthe heating element stops automatically and its
indicator lamp (3) goes out.
B.If the door is not properly shut, the heating element
does not start up, the indicator lamp (3) does not
come on.
C.If the door is opened while in use, the heating
element stops.
D.If the indicator lamp (5) of the safety thermostat
lights up, the heating element stops automatically
and this is due to excess temperature in the steam
generator. The still is blocked.
DESTILACIN
DISTILLATION
1.- Una vez est el destilador preparado para el

servicio, introducir el tubo con la muestra en el
soporte (4) del destilador.
2.- Accionar el interruptor "STEAM" (2).
3.- El volumen a recoger de destilado, ser exactamente el mismo volumen de lquido de muestra
que se haya puesto en el tubo.
Ejemplo: Si se colocan 200 ml en el tubo de
muestra, hay que recoger exactamente 200 ml.
de destilado.Si el lquido a destilar es de elevado
grado alcohlico (ms de 40), diluir la muestra
en agua destilada. El valor obtenido en el destilado, habr que multiplicarlo segn la relacin de
la disolucin.
4.- Una vez se haya recogido a cantidad exacta,
primero retirar el frasco colector y a continuacin
parar el destilador.
5.- Cerrar el interruptor "STEAM" (2).
6.- Sacar el tubo de muestra ya destilado.
7.- Accionar el interruptor "POWER" (1).

To correct this anomaly, the safety thermostat,

which is on the wall, on the right of the apparatus,
must be reset 5 minutes later.
1-Once the unit is ready to work, put the tube sample

on the support (4) of unit.
2-Switch on the steam switch (2) "STEAM".
3-The volume of distillate to be collected, will be
exactly the same volume of the sample liquid which
has been placed in the tube.
Example: If you put 200 ml. into the sample tube,
you must collect exactly 200 ml. of distillate. If the
liquid to be distilled has a high alcohol grade (more
than 40), dilute the sample in distilled water. The
value obtained in the distillate will have to be
multiplied according to the relation of the solution.
4-When exact quantity of distillate has been obtained,
first take out the collect flask and then stop the
unit.
5-Switch off the steam switch (2) "STEAM".
6-Take out the sample tube ,already distilled.
7-Press the main switch POWER (1).

NOTA: Si se para el vapor antes de sacar el

erlenmeyer, se producir una succin del destilado
por el tubo (5). Por dicho motivo e imprescindible
sacar el erlenmeyer antes de parar el vapor.

NOTE: If steam is stopped before taking out the

Erlenmeyer flask, there will be a suction of distillate
through the tube (5). For this reason, it is indispensable to take out the Erlenmeyer flask before
stopping the steam.
MAINTENANCE
Diariamente destilar durante 15 minutos una

muestra de agua destilada.
Una o dos veces al ao limpiar el calderin del
generador de vapor para eliminar posible
deposiciones de cal. Revisar el estado de las
mangueras de silicona.
Antes de quitar la tapa de la placa para manipular en su interior desconecte la toma de red.
La manipulacin del interior del equipo por
personal no autorizado puede provocar daos
de difcil reparacin. Asegrese de llevar el
equipo a uno de los servicios tcnicos autorizados por J.P. SELECTA, s.a.
It is advisable to clean the rubber stopper of

adjustment of sample tube with a wet rag each
time after using distiller, in order to avoid
excessive drying by the effect of NaOH.
Before removing the cover disconnect the
apparatus from the mains.
The manipulation of the internal electronic
circuits of the apparatus by unauthorized
personnel can cause irreparable damage. Take it
to one of the J.P.SELECTA authorized technical
services.

Determinacin del grado alcohlico.
1- Determining alcohol degree.
Principio:
Principle:
El grado alcohlico volumtrico (GAV) es igual al

nmero de litros de etanol contenido en 100l de
vino, medidos ambos volmenes a la temperatura
de 20C. Su smbolo es "% vol".
El procedimiento consiste en la destilacin del vino

The alcoholic degree (VAD) is equal to the number of

litres of ethanol contained in 100l of wine, both
volumes measured at 20C temperature. It symbol
is "% vol".
NOTA: El etanol, sus homlogos y los teres de

ambos estn comprendidos en el grado alcohlico,
por encontrarse en el destilado.
The procedure consists of the distilling of wine by a

suspension of calcium hydroxide and the later
determination of the degree of alcohol in the
distillate.
NOTE: Ethanol, its homologues and their esters are
included in the degree of alcohol, because of their
presence in the distillate.
Estategia del ensayo:

Test strategy:
La determinacin del GAV se divide en dos partes:
La destilacin.
La medida del GAV del destilado.

La destilacin realizada con el equipo ALCODEST es
mucho ms rpida que con el montaje clsico
indicado en las normas de ensayos oficiales.
Es recomendable realizar una validacin de la destilacin para comprobar el equipo es capaz de
extraer el 99.9% del alcohol de la muestra. Para
ello se prepara una solucin hidroalcohlica con un
% de etanol y agua destilada similar a la muestra.
Se destila y se mide el GAV. La recuperacin debe
ser superior al 99.9%.
Para obtener resultados fiables en la medida del
GAV, esta operacin debe ser realizada por
personal con experiencia. Para obtener resultados
con una exactitud dentro del margen 0.15 es
casi indispensable tener un recinto climatizado a
una temperatura ambiente de 20 3C.
The VAD determination have two diferenciated steps:
Distilation step.
VAD meassure on distilated.

Th distilatin step using ALCODEST unit is faster than
classical method found in official literature.
It is a good practice validate the distilation unit the
check that is is capable to recover the 99.9% from
tha alcohol found on sample. To do it prepare a
hidroalcoholic solution with a % of Etanhol and
distilated water similar to the typical sample
analized. After distilation and VAD meassuring the
recover must be up to 99.9%.
To get confidence results on VAD meassuring thies
step must carried on by trainned operator. To get
result with an accuracy inside the 0.15 interval it
is almost mandatory run the test and
meassurements ina climatized room at 203 C of
ambient temperature.

Refractmetro de Abbe. No tan exacto pero muy

Obtencin del destilado

- Matraz aforado de 200ml.

Preparacin de la muestra
En los vinos jovenes o espumosos es necesario
extraer el CO2 antes de la destilacin. Para ello
agitar unos 300 ml de vino durante 15 o 20 minutos
o someterlo a la accin de un bao de ultrasnico
durante un tiempo de 20 minutos.
Preparation of the sample:

In young or sparkling wines, the contens of carbon
dioxide must be previously eliminated by means of
stirring arround 300 ml of wine with the help of the
magnetic stirrer or with an ultrasonic bath during 1520 minutes.
Procedimiento:
Antes de iniciar una serie de destilaciones es
conveniente que el destilador este pre-calentado.
Para destilar durante 15 minutos una muestra de
unos 200ml de agua destilada.
Procedure:
Before start a destilation batch it is good practice
run a pre-heating. To do it destilate arround 200ml
of water for a 15 minutes.
Utilizar preferentemente el tubo de 52 mm para

destilar 200 - 250ml de muestra o el de 42 mm
para destilar muestras de 100ml.
Use the 52 mm sample tube to destilate samples of

200 - 250ml and the 42 mm for 100ml samples.

1. Medir con el matraz aforado 200ml de vino. Trabajar con precisin en la volumetra.

2. Trasvasar el contenido al tubo muestra de 52

mm. Para asegurar que toda la muestra a pasado
al tubo limpiar 2 o 3 veces el matraz con 10 ml de
agua destilada y verterlo al tubo muestra.

order to assure tha all sample has ggoen to the
sample tube clean 2 or 3 times the flask with 10ml
of water and put on the sample tube.
3. Aadir 10 ml de la solucin de hidrxido de calcio.

4. Insertar el tubo muestra en el destilador. Colocar el

mismo matraz aforado utilizado para medir la
muestra para recoger el destilado a la salida del
destilador.

6. Cuando se han recogido unos 180 ml de destilado
parar la destilacin. Nunca permitir que el destilado
recogido supere la marca de 200ml del matraz
aforado.
7.Completar hasta 200ml con agua destilada.
Antes de medir el GAV. Agitar para homogeneizar
la mezcla hidroalcohlica.
Nota:
En la destilacin de muestras con gran contenido
de alcohlico, (Licores, orujos, ron, etc...) puede
ser necesario refrigerar con hielo o agua fria el
exterior del matraz aforado que recoge el destilado.
Esto evita perdidas de etanol.

Principio:
La acidez voltil es el conjunto de cidos de la
serie actico que se encuentran en el vino, licores,
etc. No se incluyen en este ndice, el cido lctico,
Srbico y otros ni el dioxido de azufre ni el dioxido
de carbono. Algunos de estos compuestos no son
separados en la destilacin y por tanto interfieren
en la determinacin cuantitativa. Para determinaciones que se requieran con precisin es necesario
determinar el contenido de los compuestos interferencia para descontarlos.
Principle:
The volatile acidity is the set of acetic series acids
witch are found in wine and other alcoholic drinks.
Due to destilation dragg other products as acids
Sorbic, Lactic, and CO2, SO2 Its quantities must
sustract from the final result as interference.
Reactivos necesarios:
- Acido tartrico.

- Phenolphthalein solution in neutral alcohol of 96%.

Aadir 2 3 gotas de fenoltalena y valorar con

la solucin de NaOH 0.1M. El punto de viraje es
a la primera coloracin rosa persistente.

The end point is at the first pink persistent colour.
Paralelamente analizar muestras en blanco,

destilando 10ml de agua destilada en lugar de
vino. En la valoracin del blanco. El consumo de
NaOH es debido a la presencia de CO2.

(Method of determination by spectrophotometry of

ultraviolet absorption).
Principio:
Principle:
El cido Srbico separado por destilacin con

arrastre de vapor de agua se determina en el
destilado mediante espectrofotometra de absorcin
en el ultravioleta. La sustancias que interfieren en
la medida de la absorcin en el ultravioleta se
eliminan por evaporacin a sequedad del destilado
de la muestra, ligeramente alcalinizado por una
solucin de hidrxido de calcio.
Reactivos necesarios:
Sorbic acid separated by steam dragged distilling is

determined in the distillate by spectrophotometry of
ultra violet absorption. The substances which
interfere in the measure of the absorption in the
ultra violet are eliminated by evaporation to dryness
of the distillate of the sample, slightly alkalized by a
solution of calcium hydroxide.
Necessary reagents:
- cido tartrico cristalizado.

- Solucin de hidrxido de calcio Ca(OH)2, aproximadamente 0.02M.
- Solucin de referencia de cido Srbico C6H8O2
de 20 mg por litro: Disolver 20 mg de cido
Srbico en 2 ml. aproximadamente de solucin
0.1M de hidrxido de sodio. Verter en un matraz
aforado de 1000 ml, enrasar con agua. Tambin
pueden disolverse 26.8 mg de sorbato de potasio
C6H7KO2 en agua y completar con agua hasta
1000 ml.
Material necesario:
- Crystallized tartaric acid.

- Solution of hydroxide of calcium Ca(OH)2, approximately 0.02M.
- Reference solution of sorbic acid C6H8O2 of 20
mg per litre: Dissolve 20 mg of sorbic acid in
approximately 2 ml of solution 0.1M of sodium
hydroxide. Pour into a guaged flask of 1000 ml,
level with water. 26.8 mg of potassium sorbate
C6H7KO2 can be dissolved in water and filled with
water up to 1000 ml.

5- Introducir en una cpsula de 55 mm de dimetro

5 ml de destilado, aadir 1 ml de solucin de
hidrxido de calcio y una gota de solucin de
sulfato de cobre. Evaporar hasta sequedad en un
bao de agua hirviendo.

Introduce 5 ml of distillate in a capsule of 55 mm

diameter, add 1 ml of calcium hydroxide solution
and a drop of copper sulphate solution. Evaporate to
dryness in a bath of boiling water.
6- Recoger el residuo con algunos mililitros de

agua destilada, arrastrar cuantitativamente en un
matraz aforado de 20 ml y enrasar con el agua
de lavado, medir la absorbancia a 256 nm en
comparacin con una solucin testigo obtenida
con 1 ml de solucin de hidrxido de calcio y
dilucin a 20 ml con agua.

Collect the residuum with some mililitres of

distilled water, drag quantitavely in a 20 ml gauged
flask and drag with the rinsing water, measure the
absorbance at 256 nm in comparison to witness
solution obtained with 1 ml of solution of hydroxide
of calcium and diluted at 20 ml with water.
7- Llevar el valor de la absorbancia medida a la

recta patrn y deducir la concentracin C de la
solucin en cido srbico.

subtract the C concentration of the solution in
sorbic acid.
Nota: En la prctica corriente, esta evaporacin o

sequedad puede no ser necesaria. Medir directamente la absorbancia en el destilado diluido a 1/4
frente a agua destilada.
