Introduction
Hi, there! My names Damian Luong! This is my MYP project .
I am currently a grade 10 student, enrolled in Hugh Boyd Secondary.
I chose to create my own cookbook, because of the deep connection, I have
with cooking. Why cooking you ask? Cooking has always been my one true
passion, and hobby, besides teaching, and what better way to cook and teach
at the same time, by making a cookbook, and sharing my recipes and views
to share with everyone. Cooking helps me escape life and makes me believe
that can take on the world, with a spatula, and a pan
In these pages, you'll nd these bizarre recipes, that you would think to taste
gross, right? WRONG. The purpose of my cookbook is to create weird, cool,
fusion meals that you would think just wouldn't go together, my job is to
make them taste as though, you've been missing out on food, for millennia. I
also want to share some of the foods that my family has been making for
generations and adding a cool modern twist to it, I also included some of my
favourite recipes that I learned from some other chefs, including recipes I
learned in foods class, or recipes I found on the internet.
Some may ask what is MYP? MYP is an abbreviation for the Middle Years
Program, which is a requirement at my school, Hugh Boyd Secondary,
throughout grades: 8-10. In grade 10, which currently I am enrolled in, to
graduate the MYP program you must create a personal project, something
that has a signicant meaning to you, it could be a hobby, an investigation, or
maybe even a fund raiser, it could be anything you are interested in. My
interest is Cooking, therefore I decided to create my very own cookbook, that
expresses my individuality and personality in the kitchen

Achieving Perfection
As a young, aspiring chef, I believe great cooking can be achieved by using great ingredients and great techniques.
To create my cookbook I applied my knowledge of basic conventions, and basic techniques to achieve, and I am
going to share some techniques I learned.

Using Spices and Herbs I used to have a friend who only ate foods that were seasoned with soy sauce, I

remember trying to cook, and only saw different types of soy sauce! "NOPE WE ARE GOING TO GET YOU SOME
SPICES!" and I remember seeing her try foods with taste, she was abbergasted by the taste of real food. I
strongly suggest getting spices and herbs that can help spice up your cooking life.
These are some simple techniques and steps that I follow for a beginner in the kitchen!

DIRECTIONS
1. In a medium bowl mix together all the pizza ingredients (pepperoni,
mozzarella, tomato sauce, pizza spice{oregano, basil, garlic powder, salt, sugar,
pepper) and cream cheese)
2. On a cutting board lay out wonton wraps and ll each with about 5ml of pizza
lling. Dampen the outer sides of the wrap with water, using your ngertips.
Fold the squares into triangles pressing down to clamp the sides to form
wontons, you can now form it to the shape you please.
3. Heat oil in a deep fryer, or a large pan until oil reaches about 375F.
4. Carefully add the wontons in batches and cook until golden brown and puffy.
Garnish with sweet and sour sauce, or marinara sauce! Set on a plate and enjoy!
*This Recipe was a bit difficult to cook, but the end product is so worth
it, because it's all you would expect for a delicious deep fried wonton,
but the yummy pizza inside that leaves begging for more. The sweet and
sour chili sauce balances the saltiness in the wonton and is a great
combo! Give it a TRY! * -DL :)

1. In a large pot heat butter on medium heat and fry onions until
translucent. Add broccoli and cauliower to pot and cook until tender. Add
canned crab with juices and parsley.
2. Reduce the heat to medium high and add chicken broth, our and milk

3. Add cheddar cheese right before serving and garnish with chopped

* This is one of my favourite recipes my mom makes for me, during the
cold winter days. It just helps you feel warm and cozy and is delicious
with crackers, or my favourite pretzel chips. It's creamy, nutritious and
yummy. WHATS NOT TO LIKE?! * -DL :)

2. In a medium mixing bowl mash the avocado until mushy, fold in chopped
tomato cilantro, onion, green onions, sesame oil, lemon, and salt and pepper,
until well combined set in a small bowl or ramekin and serve with a dollop of
sour cream. Set aside
3. In an oven safe dish set out tortilla chips in the dish and top with half (don't
bother measuring just eye ball it doesn't really matter!) pickles, olives,
peppers, sweet peppers, onion, bacon, and lastly cheddar cheese. Add
another layer of tortilla and repeat with the other half.

4. Place dish into the preheated oven and cook for about 5-10 minutes until
cheese is well melted and oozing. Serve with Guacamole and Enjoy!
*This is my absolute favourite thing to eat when I'm chillin' with the fam'
watching any movie on Netflix. Its a perfect combo and it's fully loaded.
I like making layers because I find when you eat other nachos
everything good is on the top but how about the sad chips on the
bottom? This effective method ensures every chip has some friends. I
also like adding sesame oil to my guac because it adds a roasted nutty
flavour to it and I enjoy it a lot! TRY IT!* DL

DIRECTIONS
1. Cut all fruits and vegetables ( lettuce, strawberries, nectarine, tomato, cucumber) into
bite-sized pieces (3 inches)
2. Place ingredients into a large tossing bowl and top with remaining ingredients (
raspberries, blueberries, Parmesan cheese, feta cheese, cilantro, pecans, cooked
prawns) and lightly toss so everything is evenly spread.
3. In a small bowl, mix balsamic vinegar, black currant concentrate, and salt and pepper
together and olive oil.
4. Serve on a plate and drizzle over vinaigrette dressing, or favourite dressing and enjoy.
* One of my moms famous dishes that she always has to make during family
gatherings, because of all the delicious flavours of the fruit. I didn't want to
include quantities in how much ingredients you want because its all about how
much you feel should have in the salad. Its a great healthy favour filled salad!

Teriyaki Meatballs

DIRECTIONS
1. In a large mixing bowl place ground chicken, bread crumbs, egg, chives, garlic, salt
and pepper and sugar in a bowl and mix well until well combined, and a little gooey.
2, Form meat into small balls about 2 inch balls. and place on a parchment paper
lined cookie rack.
3. In a small bowl mix the teriyaki sauce ingredients (soy sauce, water, mirin, brown
sugar, sugar, grated ginger and garlic, and sesame oil and seeds. set aside
4. Cook meatballs on frying pan on medium heat, until golden brown and cooked
through. Place cooked meatballs aside.
5. In the same pan place the teriyaki sauce on the sauce pan, and set to medium-high
heat. Cook sauce until thickened about 5-10 min. Place cooked meatballs into the
sauce to get a glaze of the teriyaki sauce and serve with toothpicks!
*If you don't know me you don't know I love adding Asian flavours to dishes
that you would think it doesn't go well, and it turns out wonderfully, that's the
case here, the meatballs complement well with the sauce, the sauce is a bit
salty so I would suggest making plain meatballs. ENJOY!!*- DL :)

INGREDIENTS
BAKED TOFU
1 MEDIUM- FIRM TOFU
DIRECTIONS
1. Drain water tofu by wrapping in a paper towel, and placing a light weight
over it (frying pan) Let drain for about 20-30 minutes.
2. Cut tofu into 1 inch slices. Place in a plastic bag. Add soy sauce, sesame oil,
lemon juice, brown sugar, garlic, ginger, and chili paste into the plastic bag.
Seal and lightly mix through the bag. Set in refrigerator for about an hour.
4. Take out tofu of refrigerator. Take out tofu of bag (SAVE MARINADE!) and
lightly pat dry with paper towel.Dust tofu lightly with corn starch. Place tofu
on a parchment paper lined cookie sheet. Bake in an oven for about 40
minutes.
5. Cut Vegetables (onion, celery, zucchini, bell pepper) into thinly sliced pieces.
6. On a frying pan heat oil and saute onions until translucent. Add celery and
zucchini until tender. Add leftover marinade and simmer until sauce thickens.
Then add bell peppers and mix. Turn off heat and set aside.
7. Take out tofu when ready, should be lightly crisp and golden brown. Set on
a plate and place stir fry on top and enjoy with sesame seeds!

DIRECTIONS
1. Preheat oven to 350F
2. Cook noodles in a large pot of boiling water, seasoned with salt and oil. Cook
until just tender (El dante) Drain with a colander and set aside.

3. In a frying pan cook bacon on medium heat, until golden and cooked through.
Then add onion and garlic, cook until onion is translucent, add celery and chicken
cook till tender. Set aside.

4. In the same pot, you boiled your noodles heat butter, and our until formed a
thick paste. Stir in cold milk and mix until no chunks. Simmer until thickened
about 5-10 min. Stirring constantly add cheese, cream cheese, and chicken
mixture. Season with salt, pepper, oregano, basil, and cayenne pepper.

DIRECTIONS
1. In a small saucepan, heat water and oil until warm to the touch.
2. In a large bowl, combine 200ml our, yeast sugar, and salt. With a wooden spoon,
gradually stir in water mixture. Slowly add more our until a dough forms,
3. Turn dough onto a lightly oured surface. Knead for about 5 minutes until smooth
and elastic.
4. Place in a lightly greased bowl, turns dough to grease all over. cover in plastic wrap
and store in the fridge for one day.
5.PREHEAT OVEN TO 400F
6. Roll dough into a circle approximately 1cm thick.
7. Bake dough for about 10-15 minutes until crust golden brown
8. Mix cream cheese and seasonings into a small bowl and spread evenly over dough.
Mix balsamic vinegar, black currant concentrate, olive oil and pepper in a small bowl.
9. Spread salmon, dill, capers, and onions evenly, spoon vinaigrette on top and enjoy!!
* I'M IN LOVE WITH SALMON! not the biggest fan of pizza, but this is the best
pizza i ever had in my life. Its a true delicacy and is just so scrumptious*-DL :)

DIRECTIONS
1. In a large boiling pot, place noodles and cook through about 10-20 minutes. Drain
wth colander and run through cool water and set aside.
2. In a small mixing bowl add vinegar, sh sauce, sugar, shaved carrot, garlic, and
chilies, mix well and set aside for 10 minutes.
3. On a chopping board slice the pork into thin slices and place into a medium mixing
bowl. Add lemon grass, sh sauce, pepper, oil, and stir evenly. Heat a frying pan on
medium-high and fry pork until fully cooked, set aside on a plate.
4.(OPTIONAL) On the same frying pan now cook pork patties until fully cooked and
set aside. Once the patties are cool cut into bite-sized pieces with scissors.
5. Add warm water into dipping sauce and stir to combine.
6. Cut all vegetables into nicely presentable bite-sized pieces.
7. Plate noodles, and add ingredients. Top with cilantro and dipping sauce and
ENJOY!
* Truly a delicious family recipe, thats great for warm summer days. Its
yummy and relaxing and all the fresh cool vegies give such a refreshing

4 WIENERS
1. On a cutting board lightly score your wieners on both sides, and wrap with a
strip of bacon.

2. Cook wieners on frying pan on medium-high heat until golden on the outside
set on the separate plate. Combine soy sauce, water, mirin, brown sugar, sugar,
ginger, garlic, sesame oil, and sesame seeds on the pan. Reduce heat to
medium-low and cook sauce until thickened.
3. Place wieners back onto pan and coat the teriyaki sauce over the wieners.
4. Set aside. Cut cucumbers and bell peppers into small thin match-like strips,
place cucumber in a small bowl and set aside peppers. Add sugar salt and
vinegar into cucumbers and lightly massage with your hands leave cucumbers
to sit for 10 minutes.

1. On a cutting board nely dice tomato, and cucumber, place into a small bowl.
Add olive oil, garlic, balsamic vinegar, and season to salt and pepper, mint leaves,
mix well and set aside.
2. Lightly spread olive oil and crushed garlic over all pieces of toast front and
back. Heat a griddle on medium-high heat, and toast the bread until golden on
both sides. Remove and place on a plate.
3. On the same pan fry turkey ham on both sides until golden brown. Place over
top toast. Add salsa over top of turkey.
4. Heat a frying pan on medium high and lightly add a little oil. Add and cook
eggs on heated pan, sunny side up. Place eggs over top salsa and garnish with
avocado. ENJOY!
* This is my favourite healthy dish I've ever created. ITS SO GOOD, my
picky older brother even enjoys it, he hates VEGETABLES! It's so good,
and healthy it's a great way to kick off your morning! YOU HAVE TO

1. In a small mixing bowl, season chicken breast with oregano, basil, cayenne,
salt, and pepper and oil. Heat skillet over medium heat and cook chicken until
cooked through. Set aside and wait for it to cool.
2. In a medium bowl, mix chopped lettuce, Parmesan, lemon, pepper, and
caesar dressing until well combined.
3. Chop cooled chicken into slices.
4. Heat Panini iron.
5. Arrange sandwich with Caesar salad and chicken. Grill Sandwich into panini
machine until golden brown and grill marks are visible.
6. Garnish with more caesar sauce and ENJOY!
* Really fun, and easy dish to make. A really yummy mid night munchy

1. In a pot cook udon noodles until fully cooked through. Strain in a colander, and set
aside.
2. In another pot heat broth and add miso paste, hot pepper paste, and sesame oil
heat broth until simmering. Add tofu, green onion, and enokitake mushrooms
(separated) Set aside.
3. In a medium mixing bowl add pork, hot pepper paste, sugar, salt, pepper, soy
sauce, sesame oil, and mix until well coated.

4. Heat a frying pan on medium-high. Cook pork slices until golden brown. Set
aside.
6. Serve noodles, with pork, egg, and soup in a bowl. Garnish with chopped cilantro,
and green onions. ENJOY!!
*This was my first dish I ever made, it started with instant noodles, and it
progressed to fanciness. I fused two Asian cuisines (Korean, & Japanese)

3. In a large mixing bowl mix together crushed garlic, red wine, salt, pepper,
margarine, marmalade, oregano, and basil. Add pork tenderloin, vegetables,
and pears into the bowl and coat evenly.
4. Place vegetables and pears onto the bottom of the roasting pan, and
place the loins on top. Bake for 35-50 minutes in the oven.
5. Let loin rest for 10 minutes and slice meat into evenly sliced portions.
Drizzle juice on top and enjoy!

3. In a small bowl beat egg whites in a small bowl until stiff peaks
4 Mix together the egg yolk, milk, and oil in a medium bowl.
5. Add to dry ingredients and mix well
8. Add about 50mL to the pan and cook until golden brown and cooked
through. (about 10-20 min)
9. Cut chicken into 3.5cm pieces
10. Add ginger, garlic, soy sauce, sake, and sugar into a large bowl, and whisk
to combine. Add chicken and coat evenly. Cover with plastic wrap and
refrigerate for at least 30 min
11. Add oil to a pot(about 1/3) and heat until oil reaches 360F. In a wire rack
with sheets of paper towel. Add potato starch into a medium sized bowl
12. Add chicken to potato starch, one at a time to coat evenly.
13. Fry the chicken in batches until golden brown, and is cooked through.
Transfer the chicken onto the cooling rack
14. In a small bowl whisk together maple syrup, soy sauce, lemon juice,
sesame oil, chopped green onion, chopped cilantro, grated garlic, chili sauce,
sh sauce.
15. Plate wafes, and chicken and spoon over with dipping sauce and
ENJOY!

2. In a large bowl cream together cream cheese, butter, vanilla, and sugar.

4. Roll out dough with a wooden rolling pin into a rectangle (45cm x
40cm) spread butter, and sprinkle over evenly cinnamon sugar (brown
sugar and cinnamon powder mixed in a bowl) Roll hot dog way (longer
log) into a log shape. Refrigerate for another hour.
5. Cut the log into about 2 cm pieces and place on a cookie sheet and
bake in the oven for about 8-10 minute. Take out and place onto a wire
rack to cool and pipe on using a plastic bag with the corner snipped off,
lled with cream cheese glaze (cream cheese, powdered sugar, vanilla,
milk beat into a bowl) and ENJOY!
*Super cool and easy way, using a couple of ingredients to make a
much faster version of your favourite cinnamon bun recipe. It's
really soft and creamy. GIVE It A TRY! ENJOY!*-DL :)

DIRECTIONS
1.Slice the strawberries and toss them with sugar. Set aside.
2.Preheat oven to 425 F. Grease and our one 8 inch round cake pan.
3.In a medium bowl combine the our, baking powder, sugar and the salt.
With a pastry blender cut in the shortening until the mixture resembles peas.
Make a well in the center and add the beaten egg and milk. Stir until just
combined.
4.Spread the batter into the prepared pan. Bake at 425F for 20 to 30 minutes
or until golden brown. Let cool partially in pan on wire rack.
5. Whip together cream, and vanilla until stiff peaks. Add yogurt and fold until
well incorporated, set aside.
5.Cut prepared cake sized according to your container. Fill the container with
cake then with strawberries, then with whipped yogurt mixture, continue
procedure until full. Top with almonds and ENJOY!
* Really yummy on the go breakfast that has all the flavours of your
favourite dessert. It's really yummy and taste amazing GIVE IT A TRY!

1. In a medium bowl mix together graham cracker crumbs, and melted butter
until incorporated.
2. Place mixture into a casserole dish. Spread evenly, and atten with a fork.
3. In a large bowl melt hot water, and gelatin, mix until gelatin is dissolved.
4. Add cream cheese, sugar, and vanilla into gelatin mixture until cream cheese
is smooth. Pour cream mixture into casserole dish and spread evenly.
5. Arrange berries in rows into cream cheese mixture, lightly press down. Set
casserole dish into the fridge for 1 hour.
6. In a medium bowl mix together Jello powder with hot water, mix until
dissolved, then mix in cold water. Pour Jello mixture into casserole dish. Make
sure there's an even amount of Jello. Rest cheesecake in the fridge for 4-8
hours.
7. Cut into squares and enjoy!

2. In a Popsicle mold add the fruits into the bottom. If you don't have Popsicle
molds you can use Dixie cups and Popsicle sticks, when they freeze tear the Dixie
cup and you'll have a Popsicle!

DIRECTIONS
1. Preheat oven to 375. Prepare ramekins, coat ramekins with butter and
dusted evenly with sugar.
2. In a small bowl mix together our, butter, and salt with your hands until it
forms a dough.
3. In a medium saucepan heat milk and sugar. Lightly simmer on medium-low
heat. Reduce heat to low and add dough mixture. Cook for about 5 minutes
and cook until it reaches a gooey texture. Add chocolate and mix until well
incorporated. Add egg yolks and mix until well combined.
4. Reserve chocolate mixture to the side in a large bowl (the chocolate mixture
can be stored in the fridge for up to a week. In another large bowl, beat egg
whites until it reaches a foamy texture. Slowly add sugar in the whites, and
beat until it reaches the stiff peak stage (turn your bowl over and if it stays it
should be good) When you lift your whisk it should have stiff peaks.
5. Lightly fold in the egg whites into the chocolate mixture in batches, not over
mixing to release the air. Pour into ramekins and level the top with a life for a
smooth nish. Bake for 20-30 minutes and serve with raspberries, powdered
sugar and mint. ENJOY!
