My Fave Recipe
Machboos
Salma Abdullah of UAE shares her
fave recipe with us this month:

“Machboos is a traditional
Arabian chicken and rice dish
which is very popular in the
Middle East and eaten in most
Emirati homes. When I was
young, I helped my mother in
making it and now that I have
a family of my own, I make this
dish for them. My sons like it very
much.”

Ingredients:
2 cups rice
A Whole Chicken
Onions, tomatoes and potatoes
Spices (black & red pepper, turmeric,
cinnamon, and cloves) 4. Add chicken pieces into the cooked tomato
Chicken stock cube and onion puree.
Dried lemon 5. Mix the spices and add them to the pan
4 cups water along with chicken stock cubes.
Salt (to taste) 6. Keep stirring to allow the spices to be

As a long term resident of Abu Dhabi, I’ve lived in a few more unpleasant smells. This is wonderful news. It’s

months, but what really gets on my nerves is when people who have just arrived at the bus
stop hail a cab which has stopped for me. I have had my fair share of squabbles with complete
strangers because of such behavior. However things really get out of hand when a female is
involved. Men can’t argue with them nor make them see reason. Courtesy dictates for men to act
like gentlemen but it sounds like asking for too much. Especially when we are late for meetings
or interview appointments! Recently, I took a stand on the matter and refused to give up my
cab to a lady younger than myself. She made
