This thesis examines Chinese food in Salvador, Brazil through an anthropological lens. It explores the history of food in China, the Chinese diaspora including migration to Brazil, and the formation of Chinese cuisine in Salvador. The author conducted research in Chinese restaurants in Salvador's city center and with their immigrant Chinese owners. For the owners, the food sold in restaurants is distinct from what they cook and eat at home, representing both continuity and adaptation to their new environment.
