Welcoming the summer holiday, The Westin Resort Nusa
Dua has prepared a Family Sushi Making Class at their
Hamabe Japanese Restaurant. Families who participate
in the activity will learn how to make three dishes
including California rolls, hand rolls, and the participants
own creative roll. This activity will be held every Thursday
at 10.30 a.m., starting with a cup of green tea as a
welcome drink. After that, the staff will hand an apron
and a hat to each participant as the instructor gives
the basic steps of making sushi. Each participant will
go to their own station and start practicing their sushimaking skills, which include rolling, cutting the rolls,
and creatively arranging the sushi on a plate. When
completed, every participant will get a bento box and
green tea for lunch, and the best sushi maker will get

Head west to the Tanah Lot Temple in Tabanan that stands on a big
rock formation. An old belief says that this Hindu temple is guarded by
a venomous snake under the rocks that is believed to protect the island
from evil. After visiting Tanah Lot, go a bit farther to the Alila Villas
Soori and stay at their Mountain Pool Villa, or at least experience the
Alila Spa where organic nutrition plays the main role in their Asian

Now lets head to Batur and make our way


to the Trunyan Village, a Bali Aga village
where the descendants of Hindu Majapahit
live they are also believed to be the original
Balinese people. This village is situated at
the edge of Lake Batur, so you need to cross
the lake with a traditional boat to get there.
Here you will also nd the Trunyan cemetery,
where dead bodies are not buried nor burned
but are wrapped in white fabric with their
heads still exposed and placed in a bamboo
cage. You can also learn about the villages
culture and traditions, like why they restrict
women from going to the burial ceremony.

While still in the highlands, it is time to learn about Balinese


coffee in Kintamani, an area famous for its coffee plantations
and agro-tourism that focuses on local coffee. The Luwak Civet
Coffee Farm in Desa Sekardadi is one of the stars in this area.
Upon arrival you will be greeted by the staff that offers samples
of Balinese coffee and tea, and for a small cost you can taste a
cup of kopi luwak (civet coffee). Here you can also see the coffee
farm and meet the civets (luwak) civets only select the best
coffee beans, and the beans they have digested somehow have
more characteristics that makes civet coffee the most valuable
coffee in the world. While youre here, get ready to fall for the

regency before you head back down South. This region

BB: After 20 years of making music, do you think
Navicula has contributed enough to Bali?
N: To judge ourselves is quite difcult. But we think
Naviculas achievement has contributed a lot to the
creative industry in Bali. By playing some gigs around
Europe, Australia, Canada, Asia, and also recording
in the USA, we believe we have brought Bali and
Indonesia to the world. We are also proud to have won
the International Rock Competition against about 500
other rock bands from all over the world, and because of
that we got to record our album in the legendary Record
Plant Studio in Hollywood. In 2007 we were appointed
as the Environmental Ambassador of Bali by the local
government. We also made a regular tour to support
funding Yayasan Bumi Sehat, a foundation that focuses
on helping mothers give birth.
BB: Any new projects to celebrate the 20th anniversary
of Navicula?
N: We are having a celebration for sure! Its our 20th
anniversary, so we will publish a new album this year,
but it is still in the making. This album is more poetic. And
we have a few singles that are ready to release, but we
are still waiting for the right moment. There will be a live
acoustic DVD as well without any audio manipulation. So
its original Navicula without any touch-up.

Year in 2014, Charles Joly (CJ) has brought the cocktail
world up to another level. This Chicago-based bartender
came to Bali for a sunset cocktail session at Ku De Ta and
snuck a little time to chat with Bali & Beyond (BB).
BB:What made you decide to become a professional
bartender?
CJ: It was when I realized that I had the opportunity to
combine two sides of my persona: the operations side,
which includes developing, building and running bars
and restaurants, and my creativity in hospitality and the
freeform style of creating cocktails.
BB: Describe your life as one of the best bartenders in the
world in three words.
CJ: Always chasing emails.
BB: Whats your ultimate comfort drink?
CJ: Old rum on ice.
BB: Whats the most difcult drink youve ever made?
CJ: Making cocktails for a guest that had lost their sense
of smell. You have to get very creative in order to make a
drink that is still appealing to this altered sense of taste.

FALL IN LOVE ALL OVER AGAIN WITH THE
MAJESTIC MOUNT BATUR

he rst time I met her was


back in 1995. It was 2
a.m. and everything was
still pitch black. She was
gracious and majestic with

Batur and shes the second highest
volcano in Bali after the great Mount
Agung. But then ve years after my
rst hike she erupted, spewing hot
lava and sand ashes but fortunately
not causing any casualties. Maybe
she wanted to blow off some steam,
who knows? Maybe.
The second time I paid her a visit
was the same week we as our planet
celebrated the so-called Earth Day
this year. She was standing as proud
as before at 1,777 meters above the
sea level in the Kintamani Regency,
part of the Bangli area. The ground
under her feet got denser, but the
lush greenery makes her even
prettier. Mount Batur is home to 15
villages, with Songan, Kedisan, Toya
Bungkah and Trunyan as the main
ones.
My mission that day was the

ARMA Museum with the theme Embracing Uniqueness and
