When you hear mention of house style, this is one of the ways in
which it comes about. Each wines fermentation may be its own little
ship at sea, if you will, but the winemaker is the admiral of them all,
pulling together a range of varieties through subtle tweaks. The
vessel used adds to this as larger tanks make it logistically easier in
some ways as there is less to get lost or done wrong than when
working with dozens of small tanks or bins, yet the potential for heat
issues can be greater because of the size of the columnar liquid
masses; its not easy to get 10,000 gallons up to temp, and its not easy
to stop it once its going, for example.
Equally, the method employed to cause agitation, punchdown or
pumpover, as well as the number of times done daily, has an impact.
Think of your personal style of letting a teabag steep (or not you
know who you are) and you have an analogous situation as agitation
causes more mixing of liquids and solids in the fermenting must.
Even when done, there are stylistic choices: post-fermentation
contact with the gross lees or separation into barrels, casks or tanks
before fermentation is even fully done?
Intensity, of course, leads to discussions of alcohol and sugar.
Residual sugar is actually something which is easy to control if the
winemaking is detail-oriented. Fermentation is never the same twice,
but each and every one can and must be tracked for temperature,
yeast health, amounts and kinds of nutrients, Brix and alcohol, and
other leading indicators of how well and how fast the conversion of
sugars to alcohols and malic to lactic acid, if applicable, is happening.
Arresting the fermentation, pulling the emergency break, if you will,
is generally done through shutting down the temperature and adding
enough sulfites to knock out the yeast. Its more of a coast than a
dead stop, however, with attention to the numbers and experience
being the producers of desired results. This is obviously aided or
held back by the starting Brix levels, as noted above.
I like to think of fine winemaking as very much akin to fine
cooking and baking, so its no wonder the two go hand in hand in
wine country. We strive through our winegrowing, like the chef who
grows and raises her own flora and flauna, to produce fantastic
ingredients for which we have recipes developed through
education, time in others cellars and experience. The next time you
sip a red, think about what decisions were or were not made, and
consider, too, what you would have done the same or differently had
the recipe been yours to tweak. Enjoy!

Pairing wine and cheese
goes back at least 4,000 years.
Both products are made from living substances
and improve with age. Both are a product of
fermentation, the process by which yeast cells
introduce chemical changes. And, both reflect
their terroir. Terroir refers to the combination of
soil, climate and region from which the product
comes. Traditionalists suggest that the wine and
cheese be paired according to region or strength,
thus preventing one from overpowering the other.
Part of the reason is the tannin levels. Red wines,
fermented with the skins, have a higher
concentration than white wine and this affects the
pairing characteristics. Also, the protein and fat in
cheese helps coat the palate reducing the
harshness of excess tannin.

in Downtown Calistoga
Founded by the owners of Knights Bridge Winery, the Huge Bear namesake comes
from an early twentieth-century newspaper article chronicling a local bear who
repeatedly surprised an early 1900s Knights Valley Justice of the Peace, in whose
home amongst others he could often be found, raiding for food. The bear was never
actually caught, giving motivation to organizers of the Bear Flag Revolt and therefore
was acknowledged on the Bear Flag of the short-lived independent Republic of
California. Today, the winery channels this story of unbridled, unstoppable selfdirection into its releases, and gives back to the community. Currently, with each
bottle sold in the tasting room, Huge Bear will donate back $1 to support local and
national non-profits. After each tasting room purchase, customers can choose to
donate this $1 per bottle to either the Calistoga Boys & Girls Club, The Napa Vine
Trail or The Bear League.

In Sonoma County, like in much of the extended Bay Area, people pay attention to
food. People want to know where their food comes from and how it is farmed. And in
wine country, people want to know how it pairs with really good wine.
Kendall-Jackson knows this and has responded with a Farm-to-Table series of
dinners at its Russian River Valley estate winery.
The dinners, a lavish sit-down, family-style feast, occur on a monthly basis under
the stars.
Kendall-Jackson created the dinner series last fall as a response to the popularity of
its wine and seasonal food pairings and garden tours and tastings available at the
winery. (The winery aims to promote a diversity of flavor, provide education around
the wine and the food as well as on gardening.)
The first dinner in fall 2015 was such a success, Kendall-Jackson decided to offer
the event on a monthly basis during the warm season (May to October) under the
direction of its executive chef, Justin Wangler, and its culinary gardener, Tucker Taylor.
Guests come to the feasts from the Bay Area and around the world. Some come for
special events, like birthdays and anniversaries, others come for family get-togethers or
girls nights out. A Wisconsin couple got engaged during a recent dinner.
The winery will host two dinners in September, one as a commemoration of the
20th anniversary of Kendall-Jacksons Heirloom Tomato Festival. The September 23
dinner will include a silent auction in the estate gardens to benefit the nonprofit
No Kid Hungry. Each course will be prepared by a different celebrity chef, including
Top Chef Masters Douglas Keane and Sang Yoon and Williams-Sonoma Chef Partners
Joshua McFadden and Ryan Pollnow.

Upon arrival, dinner guests are greeted
with a welcome reception of wine, hors
doeuvres and live music. A dinner bell
rings to usher guests to a family-style long
table in the center of the estate garden.
As guests enjoy the gardens bounty, the
winemakers, culinary and gardening teams
mingle and discuss the meal and make
them feel right at home.
Each dinner represents the season not
just through food and wine, but through
the table dcor and ambiance.
Guests spend a total of three hours at the
estate winery, and leave filled with great
wine and food and knowledge of the origins
of that food and wine.
Each dinner is listed on the winerys
website, www.kj.com/farm-to-table, and
guests can sign up online. The cost is $125
per person or $100 for wine club members.
As the date for each dinner nears, the
winery posts the dinners menu online.
Tickets to the Heirloom Festival Charity
Dinner on September 23 are $225 per
person and can also be purchased online.

Winemaker Eric Lyman The Chameleon
Judds Hill winemaker Eric Lyman is funny, realistic and is proof
that anything is possible if you work hard enough. When Eric is not
perfecting select wines for Judds Hill Winery, he is micro-crushing and
custom-blending wines for over 100 small-lot private labels and commercial
wine brands.
Eric always knew he wanted to make wine for a living but took a circuitous route and
finally landed at Judds Hill. Born in Petaluma, California, Eric spent much of his youth in
Puerto Rico with his family before moving to Napa in the early 1980s. He left Napa and
joined the Navy for four years and then spent eighteen years in the pharmaceutical industry.
Then fate struck when the company Eric worked for was bought out. The thought of
moving to New Jersey or New Delhi with the new company was not appealing to Eric and
his wife Donna. Due to a clinical trial Eric was working on, he had two years to prepare
their lives for a drastic change in lifestyle and income. He decided to become a winemaker.
Eric would become a student and intern starting in his early 40s. He enrolled in the
winemaking program at the Napa Valley College in 2010 and interned for several harvests
before landing a full time job at Judds Hill.

Tipping
Tipping your chauffer is encouraged. Tipping 15-20% per person
is the average for wine tours. Tips at tasting rooms are not expected
individual tasting fees absorb that. However, if you feel you received
terrific service, a bonus tip is always a nice gesture.
What to Wear
Be comfortable. Wear low, appropriate walking shoes for various
terrain and dress in layers.
Many of the wines you will taste are only available exclusively at the
winery or through their wine club memberships. You will taste four
or five different wines at each stop on these tours. Definitely leave
room in your suitcase for taking home a few bottles of your favorites.

provide the exclusive wines for the Television
Academys 68th Governors Ball, the official
party following the live broadcast of the
Primetime Emmys, to be held Sunday,
September 18.
This is the first time that Sterling

It takes effort to get there, but once you drive to the north end of Dry Creek
Road at the tip of Dry Creek Valley and enter the gates of Ferrari-Carano Winery,
you may never want to leave.
The wine is reason enough to linger. The Fum Blanc has generated a large
following as Ferrari-Caranos flagship wine. Its been around since the winerys first
vintage in 1985. But the Chardonnay, Pinot Noir and Cabernet Sauvignon also
stand in high regard.
People come because they recognize the brands in the stores and markets and
want to see the origins, said Sil Coccia, manager of retail sales.
When visitors arrive, they walk through grand, manicured gardens up to the
Villa Fiore tasting room. There, they can sample a flight of wines, browse the shop
for keepsakes, and purchase a glass or a bottle of their favorite wine and enjoy it on
site.

St. Francis Winery & Vineyards Announces 30 Days of Cabernet Celebration
St. Francis Winery & Vineyards presents the 30 Days of Cabernet
a month-long celebration honoring the classic varietal. The 30 Days
of Cabernet commemorates the last 30 years of producing Cabernet
Sauvignon at the winery, and looks forward to the next 30 years.
Through September 30, visitors to the winery will enjoy a variety of
special events and offerings highlighting Cabernet Sauvignon, from
blending workshops to special tasting flights to a Cabernet-themed
Wine & Food Pairing experience.
Events for the 30 Days of Cabernet will take place throughout the
month of September and will range in price from free to $72 per
person. In addition to the on-site programming at the winery,
St. Francis fans from far and wide are encouraged to participate in the
celebration throughout the month on social media by utilizing the
#30DaysofCabernet hashtag and following the winerys social
accounts for special promotions and surprises.

119th Valley of the Moon Vintage Festival Takes Place September 23-25
The Board of Directors for the Valley of the Moon Vintage
Festival has announced the entertainment for the Opening
Night Gala, which kicks off the weekend of festivities.
The Northern California based dance act
Notorious will take the stage on Friday,
September 23, at 6:00 p.m. in the Sonoma
State Historic Park barracks and entertain
attendees as they enjoy food and wine
from local restaurants and wineries.
This band has played for corporate
clients like Cisco, Yahoo and YouTube
and are also the back up band for 80s
giants like Vince Neil of Motley Cre,
Howard Jones, Curt Smith of Tears for
Fears and Tone Loc. The act has a
repertoire that spans the full spectrum of 80s
and beyond, from disco to classic jazz.
Notorious is known for their ability to connect and
interact with an audience. This band puts on an
electrifying show, as many of their fans will attest.
We thought it was important to bring in a really dynamic
dance band this year, said Maria Toimil, president of the
festival board. They really wowed the crowd at Wine Country
Weekend last year and were expecting the same at the Gala
Tickets for the event are on sale now at the festival website,
valleyofthemoonvintagefestival.com. The Gala is the only paid
admission day of the festival, with the rest of the weekend free
and open to the public.
