met chef Roger Mooking.
Widely known for his globally inspired creations, Mooking
has become a force in the culinary world by taking ordinary
dishes and elevating them with different cultural twists. He
is host to the popular Cooking Channel series Man Fire Food
and Heat Seekers, and is the host and co-creator of Everyday
Exotic, a Cooking Channel show that demonstrates how to
breathe new life into everyday meals.

laughter that filled the room, Rogers enthusiastic attitude
and positive nature immediately had people gravitate

full of Roger Mooking signature recipes, featuring fresh,

Angel Sweet Frittata


Impress your guests with a brunch theyll never forget.

Serves 8

40 min

12 Eggs
1/2 C thinly sliced leeks, whites only
1/3 C diced chorizo
1 Tbsp coconut oil
1 Tbsp unsalted butter
1/4 C diced Sweet Twister peppers
1 C Angel Sweet tomatoes, chopped
Salt and ground peppercorn to taste
Sea salt to finish
1. Preheat oven to 350 F and preheat a cast iron skillet to medium-high heat
2. In a large bowl, beat eggs and set aside
3. Reduce heat to medium and add coconut oil and unsalted butter to hot skillet and melt
4. Add leeks and peppers and saut for 1 minute until they start to soften
5. Add chorizo and saut for 30 seconds
6. Season with salt and pepper then mix and spread out evenly in pan
7. Slowly pour beaten eggs into pan
8. Evenly sprinkle tomatoes over the top of the mixture
9. Carefully transfer skillet to preheated oven and bake for 25 minutes
10. Once baked, remove from oven and let it rest for 5 minutes to allow frittata to set
11. Carefully remove from skillet and cut into equal wedges using a very sharp knife
12. Finish with a sprinkling of large flaked sea salt. Serve while still hot with Sour & Sweet
Twister Pepper Sauce

Sour & Sweet Twister Pepper Sauce


2 C diced Sweet Twister peppers
1 C diced white onion
2 Tbsp olive oil
1 Tsp kosher salt
1/3 C red wine vinegar
Splash of Agnostura bitters
2 Tsp buckwheat or lavender honey
1 Tbsp julienne fresh basil leaves
1. Place large skillet over medium-high heat and add olive oil
2. Reduce heat to medium and add white onion and red pepper
3. Sweat the vegetables until soft and translucent
4. Add red wine vinegar and honey and reduce heat to low
5. Add a splash of Agnostura bitters
6. Cover and cook until the peppers are soft, about 5 minutes
7. Carefully transfer mixture to a high speed blender and puree until smooth, about 2 minutes
8. Transfer puree to a service bowl and garnish with julienne basil leaves

Tip: Allow frittata to cool and refrigerate overnight, simply reheat to serve the next day.

Serves 4

These lip smacking burgers have that sweet, savory, salty taste
that will tickle each one of your tastebuds.

2 lbs medium ground beef


1/4 C worcestershire sauce
1 Tsp ground cumin
2 Tsp ground coriander
1 Tsp cracked black peppercorn
1 Tbsp kosher salt
4 hamburger buns
4 C very loosely packed onion sprouts
1. Preheat broiler to highest setting
2. Combine ground beef, Worcestershire sauce, cumin, coriander, and black pepper
in a bowl
3. Form mixture into 1 thick patties and place onto a baking tray
4. Evenly sprinkle 1 tbsp kosher salt onto both sides of the patties
5. Broil patties for 12 minutes or until desired doneness
6. Spread balsamic mayo on tops and bottoms of warm buns
7. Add onion sprouts and broiled beefsteak tomato slice (recipe below) on top halves
of buns
8. Place burger patties on bottom halves of buns

Bruleed Broiler Beefsteak Tomato


2 beefsteak tomatoes
6 Tbsp granulated sugar
1. Preheat broiler to the highest setting
2.  Cut the tops and tails off tomatoes and slice into 1 thick slices using a
very sharp knife
3.  Line baking tray with parchment paper only big enough for tomatoes to cover,
and place the tomatoes on top
4.  Place a double layer of paper towel on top of tomatoes for 2 minutes to soak up
excess moisture
5.  Repeat with a dry paper towel
6.  Sprinkle 3 tbsp sugar onto the tomato slices being cautious not to get any
on the tray
7. Broil for 10 minutes
8.  Remove from oven, sprinkle with remaining 3 tbsp sugar and broil again for
5 minutes or until softened

Balsamic Mayo
1/2 C mayonnaise
2 Tsp balsamic vinegar
1. Mix mayonnaise and balsamic vinegar together until evenly combined

the perfect next-day meal solution from last nights turkey dinner.

Angel Sweet Tomato Olive Salsa


2 mini cucumbers, julienne (keep aside)
3/4 C sliced Angel Sweet tomatoes, 1/4 thick
3 large green olives, diced
1 tbsp finely diced red onion
2 tbsp diced Sweet Twister pepper
1 tbsp loosely packed and thinly sliced fresh basil leaves
1 tsp chopped fresh thyme
1/8 tsp kosher salt
1/8 tsp ground black pepper
2 tbsp extra virgin olive oil
1/2 tbsp white wine vinegar
1/2 lime, juiced

Taco
2 C shredded leftover turkey meat
12 x 4 tortillas
4 tsp mayonnaise
1/4 tsp chipotle in Adobo
Kosher salt to season
1. Combine and stir all the salsa ingredients except the cucumbers and
set aside for 10 minutes
2. In a separate bowl combine mayonnaise and chipotle
3. Spread mayonnaise mix inside of each tortilla. Divide turkey meat among the
tortillas, followed by julienne cucumber
4. Sprinkle kosher salt to season cucumbers and top with salsa

Tip: For best results, make salsa the day before so the flavors come together.

Dinner

Zima and Sausage Dinner


Serves 4

My 4 year old helps me with this recipe, so no excuses. Youre a couple


of quick steps away from a full flavor dinner.

2 C Zima tomatoes
4 sweet fennel sausages
2 Tbsp grapeseed oil
2 C white onion, julienned
1 Tbsp Kosher salt
1/2 C Moroccan olives
1. Preheat a medium sized cast iron pan to medium heat. Place
sausages in pan and allow to brown on one side, approximately
5 minutes
2. Flip sausages and cook for another 5 minutes, then transfer the
sausages to a clean dry tray
3. Place grapeseed oil in pan and reduce heat to low. Add onions
and sprinkle them evenly with kosher salt. Move the onions around
so they are all evenly coated with oil and salt. Cook them slowly,
tossing frequently to prevent burning, until they are deep golden
brown and have softened, approximately 20 minutes
4. In the meantime, preheat oven to 350 F
5. Once onions are caramelized, add olives and tomatoes and
stir gently
6. Add sausages and any remaining juice from the tray to the cast iron
pan. Place in oven for 10 minutes
7. Remove pan from oven and rest for 5 minutes before eating

Serving suggestion - Serve with accompanying sides of your choice


like rice, salad, yams or potatoes.

Tip: Use cast iron cookware to replace all your nonstick pan needs. Not only will
these pans become seasoned with flavor and repel stickiness over time, they
will also survive generations.

Campari Tomato Galette


Rustic and elegant, this Campari galette is a Roger Mooking classic.

Serves 4

1hr & 40min

1 1/2 C unbleached all purpose flour


1/2 tsp ground black peppercorn
1/2 tsp kosher salt
1/2 tsp dried oregano
1/2 C cubed unsalted butter, room temperature
3/4 C cold water
5 Campari tomatoes, sliced 1/4 thick
1/2 tsp finely chopped fresh rosemary
1 tsp finely chopped fresh thyme
2 Tbsp breadcrumbs
1/4 C ground parmesan
1 large egg, beaten
Basil for Garnish
1. Mix all dry ingredients so they are evenly combined
2. Combine butter into dry ingredients using your fingertips until pea-sized
crumbs form
3. Refrigerate for 10 minutes
4. Using the handle of a wooden spoon, mix cold water into the flour mixture
until it comes together
5. Gently press the dough into a disc
6. Refrigerate dough for 10-15 minutes
7. In a separate bowl, combine rosemary and thyme
8. Lightly dust a clean surface with all purpose flour and roll out dough to a 10
circle, thinning the outer 1 of the circle for a thin border
9. Carefully transfer circle to a parchment lined baking tray
10. Refrigerate for 10 minutes
11. Preheat oven to 375 F
12. Spread the breadcrumbs over the dough, leaving the 1 border uncovered
13. Sprinkle half of the Parmesan on top of the breadcrumbs
14. Starting from the centre, place the tomato slices in a circular pattern,
overlapping each slice by half, up to the edge of the Parmesan-breadcrumb
mixture
15. Sprinkle a pinch of ground black peppercorn, the mixed herbs and remaining
Parmesan over the top of the tomatoes
16. Lift the edges of the dough and fold them inward over the filling, pleating
as you go
17. Brush edge of galette with beaten egg
18. Bake in preheated oven for 35-40 minutes or until edges are browned,
rotating pan halfway through
19. Garnish with fresh basil and serve with crme fraiche

Kumato and Chicken Sandwich


Serves 4

2hr & 12 min

Make this sandwich an hour before you hit the gym, then another
after your workout- its that good!

4 Kumato tomatoes, sliced


2 C loosely packed fresh basil
2 C loosely packed fresh flat leaf parsley
2 cloves fresh garlic
1/2 C extra virgin olive oil
1/4 tsp Kosher salt
1/8 tsp ground black peppercorn
4 chicken breasts, cut in half horizontally
8 slices dark rye bread
2 Tbsp mayonnaise
2 C fresh arugula
1. Place basil, parsley, garlic, olive oil, salt and pepper in a food processor and
puree until well chopped but not completely smooth
2. Transfer to a stainless steel bowl
3. Add chicken breasts to bowl and toss until coated evenly
4. Cover with plastic wrap and refrigerate for 2 hours
5. Preheat a skillet to high heat and place chicken in pan
6. Reduce heat to medium-high and sear the breasts to a rich brown color,
approximately 3 minutes
7. Flip breasts, reduce heat to medium, and cook for another 3 to 5 minutes
until chicken is fully cooked
8. Place bread in toaster until desired doneness
9. Construct sandwich in this order: mayo, arugula, chicken, and sliced

Wild Wonders Quinoa Salad


Serves 4

15 min

Light and fresh, this dish is full of flavor and super healthy for you!
You wont feel guilty going back for seconds.

2 C quinoa
4 C water
1/2 C finely diced red onion
1/2 C crumbled feta
1/2 C julienne flat leaf parsley
1 1/2 C Wild Wonders tomatoes, quartered
1/4 C extra virgin olive oil
Kosher salt for seasoning
Freshly ground black peppercorn for seasoning
1. Place quinoa in a pot with water and bring to a boil
2. Cover the pot and reduce heat to low
3. Cook until all of the water is nearly fully absorbed,
approximately 10 minutes
4. Transfer quinoa to a serving platter
5. Sprinkle remaining ingredients evenly over the quinoa in the
order listed above and season with salt and pepper to taste

Tip: Before cooking quinoa, give it a quick rinse under water. This removes quinoas
natural coating, called saponin, which can make it taste bitter or soapy

Wood Chipped One Sweet Peppers and Tomatoes


WARNING: If you dont like the flavor of smoke then we cant be friends.

Serves 4

25 min

2 C Oak wood chips


8 One Sweet peppers, assorted colors
20 One Sweet tomatoes
1 tsp ground fennel seeds
1 Tbsp olive oil
Kosher salt for seasoning
Freshly ground black peppercorn for seasoning
1 Tbsp chopped chives
1. Preheat barbecue to high heat
2. Make a wood chip packet roughly 16 x 12 using a double layer of foil,
making sure all edges are folded tightly (See below)
3. Place wood chip packet over direct flame and using a fork, poke a dozen
holes on the top foil layer, until it begins to smoke
4. In a bowl, toss together all remaining ingredients, except for chives.
Place in a single layer on top of the punctured foil
5. The smoke will infuse the veggies with distinct flavor while the foil will
serve as a temporary flat top griddle to char and cook the vegetables
6. Close the barbecue lid and allow veggies to cook on each side for about
5 to 7 minutes
7. Transfer to a serving tray and garnish with chopped chives

Serving suggestion - Serve with main course and other accompanying side
dishes of your choice

Tip: to make aluminum packet, cut 4 x 18 lengths of foil, place two pieces of foil on
top of one another, sprinkle wood chips in the middle, place the remaining two
pieces on top, and fold each side twice over creating a 1 folded foil border

Phyllo & Berries


Serves 3

Tell everyone how hard you worked to make this dessert, then chuckle to
yourself because it was dead easy.

4 C WOW Berries, sliced 1/2 thick


4 tsp blond coconut sugar
4 tsp lemon juice
1/2 tsp vanilla extract
1 package frozen phyllo pastry
1/2 C melted butter
1/2 C shelled pistachios, finely chopped
Icing sugar for dusting
1. Thaw phyllo pastry to overnight in the refrigerator
2. Preheat oven to 350 F
3. In a bowl, combine WOW berries, sugar, lemon juice and vanilla
4. Toss gently and refrigerate, covered, for 20 minutes
5. Lay single sheet of phyllo onto parchment lined baking tray
6. Using a pastry brush, gently brush the entire sheet with melted butter
7. Repeat until 3 layers are complete
8. Sprinkle top layer with s of the pistachios
9. Repeat another 3 layers of phyllo and butter
10. Sprinkle remaining pistachios on the top layer
11. Using a pizza cutter cut the sheet into 6 equal sized rectangles
12. Bake for 13 minutes or until golden brown
13. Remove from oven and cool to room temperature on the tray

Chantilly Cream
1 C 35% whipping cream
1/2 tsp vanilla extract
3 tsp white sugar
1. Place a stainless steel bowl in the refrigerator for 5 minutes
2. Add cream and vanilla to cold bowl and whisk until soft peaks form
3. Sprinkle sugar over all the cream and whip to stiff peaks

Serving suggestion - Layer whipped cream, phyllo and strawberry mixture on


serving plate and finish with dusting of icing sugar

Y.E.L.O. Tomato Honey Jam


A classic with a twist. These biscuits and jam are so easy, flavorful, and delicious that
you may want to start jarring in bulk.

Serves 4

27 min

16 Y.E.L.O. tomatoes, quartered


3/4 C water
1/4 C buckwheat or lavender honey
2 Tbsp white balsamic vinegar
1 piece star anise
1/4 C granulated sugar
1/2 tsp unflavored gelatin powder
1 tsp lemon juice
1. In a small pot, combine tomatoes, water, honey, star anise and granulated sugar
2. Boil until reduced by half, about 35 minutes
3. Press jam through a fine strainer into a clean bowl, extracting as much liquid and
pulp as possible
4. Add lemon juice and stir
5. Sprinkle gelatin powder evenly on top of the strained jam
6. Wait 2 minutes before stirring well to dissolve powder
7. Once cooled to room temperature, transfer jam to an airtight jar, cover and refrigerate
overnight to allow jam to set

Best Buttermilk Biscuits


2 C unbleached all purpose flour, plus more for dusting
1/4 tsp baking soda
1 Tbsp baking powder
1 tsp kosher salt
6 Tbsp cubed unsalted butter, very cold
1/2 C buttermilk
1/2 C whole milk
2 Tbsp lemon juice
1. Combine all dry ingredients in a bowl, Mix well
2. Combine butter into dry ingredients using your fingertips until pea-sized crumbs form
3. Add wet ingredients and mix using the handle of a wooden spoon until combined
4. Form dough into a ball and refrigerate for 15 minutes
5. Preheat oven to 450 F
6. Turn out the dough on a clean, moderately floured surface and form a rectangle using
the palms of your hands, approximately 9 x 6
7. Fold right third of the dough over the middle and fold the left third over the rest so there
are three layers
8. Flip the dough and form another rectangle about 9 x 6
9. Repeat the process four times total
10. Transfer the dough to a parchment lined baking tray and refrigerate for 15 minutes
11. Cut chilled dough into 6 evenly sized biscuits and readjust the squares so that they are
evenly spaced on the baking tray
12. Bake for 12 to 15 minutes or until the tops are golden brown
13. Serve warm with honey Y.E.L.O. jam and Asiago cheese
