Youth Succeed at Ohio State Fair Market Beef Show

The Ohio State Fair is the summers highlight for many youth livestock
exhibitors and this summer was no exception for two of Ohios youth who
won top honors at the Ohio State Fair Market Beef Show held August 8.
Tyler Clark of Covington led the Grand Champion Market Beef Animal
with his Division III Crossbred Champion. He is the son of Scott and
Shannon Clark.
Oliver McGuire, Urbana, exhibited the Reserve Champion Market Beef
Animal with his Division IV Crossbred Champion. He is the son of Michael
and Tonya McGuire.
The top two market beef were auctioned at the Ohio State Fair Sale of
Champions on August 9 at the Celeste Center. Kroger was the highest bidder, purchasing the Grand Champion Market Beef Animal for $50,000.

The Reserve Champion Market Beef Animal was purchased for $22,000
by Martin D. Yoder/Woodruff Enterprises. McGuire will receive $11,000,

PANCAKE PIZZA
3 cups pancake batter
1 dozen eggs, scrambled
1 cup shredded cheese
6 cups sausage gravy

1 lb. bacon
Heat oven to 400 degrees. Pour batter into 9x13 greased and floured
cake pan. Bake 15 minutes or until done. Remove from oven.
While pancake is baking, scramble eggs in large skillet and fry them
(I like to season them with seasoning salt).
Layer eggs and cheese on top of baked pancake. Make a sausage
gravy and put on top of eggs and cheese. Fry and crumble bacon.
Sprinkle bacon on top of gravy.
Serve with or without maple syrup. You can also just sprinkle with
bacon bits.

4 cups chicken breast, cooked & diced
2 cans cream of chicken (or 1 cream
of mushroom & 1 cream of chicken)
8 oz. sour cream

3 cups Ritz crackers, crumbled
1/2 lb. butter, melted
Mix soup and sour cream and place on top of chicken in a 9x13
pan. Mix butter with crackers and put on top. Bake at 350 degrees
for 40 minutes. This is a tasty treat for holidays or good and easy
for everyday. We all love it!

SQUARES
1/2 cup butter
or margarine, softened
1/2 cup brown sugar
1 cup flour
1/2 cup rolled oats
2 eggs
3/4 cup white sugar
15 oz. can pumpkin

12 oz. can evaporated milk
1/2 tsp. salt
1 tsp. cinnamon
1/2 tsp. ginger
1/4 tsp. cloves
1/4 tsp. nutmeg
Pre-heat oven to 350 degrees.

For the Crust:
In a medium bowl, cream together
butter and brown sugar, then mix in
flour. Now add the oats to make
crust to press inside a 9x13 baking
dish. Bake for 15 minutes.
For the Filling:
While the crust is baking, make the
pie filling to add to the crust. In a
large bowl, beat eggs and mix in white sugar. Beat in
pumpkin and evaporated milk. Mix in salt, cinnamon,
ginger, and cloves.
Pour filling over baked crust. Return to the oven and
bake for 20 minutes, until set.
Let cool before cutting into squares.

In Best of the Buckeye
Program at 2015 Ohio State Fair
The Ohio Cattlemens Association (OCA) hosted the Best of the
Buckeye shows at the Ohio State Fair July 29 August 9. The Best of the
Buckeye program is coordinated by OCA and held in conjunction with the
Ohio Beef Expo and Ohio State Fair. The Ohio State Fair had a strong show
with more than 200 head of cattle nominated by youth and breeders, adding
more registered animals to the show.
The program recognizes top Ohio bred, born, and registered calves,
along with the breeder and exhibitor, in each breed division at the two
shows. Best of the Buckeye provides Ohio seedstock breeders with an
enhanced marketing opportunity for Ohio bred, born, and registered steers
and heifers, creates a source of more moderately priced show steers and
heifers by providing a program with awards and prestige, and attracts new
participants interested in showing at the Ohio Beef Expo and/or the Ohio
State Fair.
