PEACHES & CREAM COFFEE CAKE

1 egg
1/2 cup milk
3 Tbsps. melted butter
2/3 cup flour

1 tsp. baking powder
1/2 tsp. salt
GRANOLA BITES
3/4 cup Mrs. Butterworths
1 large can sliced peaches or 2-1/2 cups sweetened fresh peaches

TOPPING:
1 Tbsp. sugar
1/2 tsp. cinnamon
CREAM FILLING:
8 oz. cream cheese
1/2 cup sugar
3 Tbsps. peach juice
Mix flour, baking powder, and salt. Add egg, milk, and butter
and beat. Pour into a well-greased 8-inch round pan. Drain
peaches, reserving juice. Arrange peaches over batter. Cream
together filling and spoon over peaches. Sprinkle sugar
mixture on top. Bake for 30-35 minutes at 350 degrees.

Original Syrup
1/4 cup light brown sugar
1/4 cup canola oil
3 cups oats
1/4 cup chocolate chips
1) Pre-heat oven to 350 degrees

2) Lay oats on a baking sheet and toast 10-15 minutes
3) Add syrup, sugar, and oil to a small saucepan
HOT ZUCCHINI DIP

1 cup milk
2 Tbsps. flour
1 Tbsp. butter
2 slices American cheese singles
1/2 cup shredded cheddar cheese
1/2 tsp. seasoned salt

2 cups shredded zucchini
(yellow or green)
2 Tbsps. chopped onion
Cook together the zucchini and onion in microwave for 2

minutes. Drain. Make a white sauce of butter, flour, and milk.
Cook until thickened and add cheese until melted. Add
and bring to a boil over medium heat

4) In a bowl, mix heated syrup mixture and oats until
well combined
5) Let cool slightly (10-15 minutes) before adding
chocolate chips to the mixture
6) Spread oat mixture evenly in 8x8 pan and place
in refrigerator to cool for 20-25 minutes
7) Once cool, cut into bite-size squares
seasonings. Stir in the zucchini and onion. Cook a little

longer. Serve with multi-grain Tostito scoops.

Snapshot of the Month Entries Sought

Our readers tell us one of their favorite pages is the Snapshot of the
Month. Winners who are always pleasantly surprised to find their picture
published say they enjoy the reaction of friends, neighbors, and family
members.
All you need to do is send an interesting color picture (original photos preferred, or if emailing, use either a jpeg or tiff format) of good quality,
along with some background information. Farm-related photos are best suited for country living. When taking your pictures, make sure the lighting
is sufficient, and that your subjects are centered in the viewfinder. Stand
back far enough so that heads arent cut off. If need be, we can crop photos
to eliminate any unnecessary background.
Dont forget to include your actual mailing address if you email your
picture and information to us, so your prize can be mailed out to you.
