Guinness Recipes

GUINNESS AND MALT WHEATEN BREAD


Ingredients:
2 cups coarse whole wheat flour or
1 cup each quick-cooking oatmeal and oat bran
2 cups fine whole wheat flour 1/2 cup superfine sugar
1 teaspoon baking soda
1 teaspoon salt
8 Tablespoons butter
1 teaspoon malt extract
1 1/4 cups buttermilk
1 1/4 cups Guinness

Method:
Preheat oven to 425 F.
Grease a 9-inch loaf pan and dust with whole meal flour.
In a large mixing bowl,
combine the flours, sugar, soda, and salt.
Cut in the butter. Stir in the malt, buttermilk, and Guinness and mix well.
Pour into prepared pan and sprinkle with 1 to 2 tablespoons coarse whole wheat flour.
Bake for 30 minutes, then reduce heat to 400 F and bake 15 to 30 minutes longer.
Bread is done when a skewer inserted into the center comes out clean.
Turn off the oven and cool with the door open for 30 minutes.
Transfer to a wire rack to cool completely.

MINI GUINNESS BEER SCONES


Ingredient:
1kg Plain flour
½ kg wholemeal flour
90g Brown sugar
230g black treacle
350g Butter
¾ pt of GUINNESS® beer
1 lg. scoop of baking powder

Method:
Place plain flour, wholemeal flour, brown sugar, butter & baking powder
in a mixing bowl & mix till butter has come to a bread crumb stage.
Add the black treacle & GUINNESS® beer to the mix and fold in together.
Do not over mix.
On a floured table turn mix out and roll and cut.
Bake @ 180C for 15 – 18 mins.

Serve warm with butter and a home-made soup.

GUINNESS STEW

Ingredients:
1 kg dice beef
¼ kg dice onion
¼ kg dice celery
¼ kg dice leek
¼ kg dice carrot
2 tbsp. gravy browning
Pinch Mixed herbs
¼ LB butter
¼ LB. Flour
4 Lt Beef stock
Seasoning
½ x Pint GUINNESS® beer

Method:
Sweat all vegetables in the butter for 5-6 mins.
Add dice Beef and cook for5-6 mins.
Add herbs and then flour.
Add beef stock slowly over heat while stirring, cook for another 5-6 mins.
Add gravy browning and season sauce.
Slow cook for 1- 1/2 hours.
Finish with ½ pint of GUINNESS® beer and stir.
Season and serve with champ potato and roast carrot and parsnip.
This should give 8-10 portions.

SHEPHARD’S PIE
Ingredients:
1 1/2 Lbs. ground (minced) lamb or beef (or mixture of the two)
1 large onion peeled and finely chopped
1-2 cloves garlic, crushed
2 sticks celery, finely chopped
2-3 carrots, peeled and finely chopped or grated
2 tsp fresh oregano
2 tsp fresh rosemary
1-2 Tbsp Worcestershire sauce
1 pint of Guinness
8 oz. can of peeled, chopped tomatoes
3 Lbs. potatoes, peeled and cubed
3 Tbsp butter
2-3 Tbsp half and half or whipping cream
salt and freshly ground pepper to taste
freshly chopped parsley to garnish

Method:
Marinate lamb in Guinness overnight in the refrigerator. Next day remove meat from marinade and place in
saucepan (reserve marinade) with onion, celery, garlic and carrots. Add approximately 4 Tbsp of marinade and
cook gently for 10 minutes or so, stirring frequently until meat is well-sealed and almost cooked.

Add tomatoes, oregano, rosemary, seasonings and Worcestershire sauce and simmer for 15-20 minutes (also
add the rest of the marinade as an alternative).

Meanwhile, cook potatoes in boiling salted water. Mash potatoes until smooth or use a whip. Add butter an
fold until potatoes are creamy.

Place potatoes in a pastry bag fitted with a large star nozzle and pipe evenly over meat mixture which is now in
an oven dish; or, spread potatoes evenly with a spoon and fork. Cook in oven for 30-40 minutes at 400 degrees
until top is golden brown. Sprinkle with chopped parsley and serve.

CHOCOLATE GUINNESS BEER TERRINE


Ingredients
1pt cream
10oz chocolate
½ LB butter
3 leaves gelatine
2oz sugar
2tbsp flat granulated coffee
2tbsp honey
2 ½ floz GUINNESS® beer

Method
Melt chocolate & butter.
Dissolve coffee, sugar, honey & gelatine with Guinness® beer.
Add to melted butter & chocolate.
Semi whip the cream.
When chocolate mix is cool fold cream & add to the chocolate.
Place mix in a lined baking tin or terrine.
Leave to set over night in the fridge.
Serve with fresh raspberries & vanilla cream.

GUINNESS BROWNIES
Ingredients:
1 cup plain white flour
3/4 cup unsweetened cocoa powder
1/4 teaspoon salt
6 tablespoons butter, cut into cubes
8 ounces dark bittersweet chocolate, chopped
3/4 cup white chocolate chips
4 large eggs, at room temperature
1 cup granulated sugar
1-1/4 cups (10 ounces) Guinness Extra Stout beer
1 cup semi-sweet chocolate chips

Preparation:
Preheat the oven to 180 degrees. Line a 9 x 13-inch baking pan.
In a medium bowl, whisk together flour, cocoa powder, and salt until evenly combined. Set aside.
Melt butter, bittersweet chocolate, and white chocholate in a double-boiler over very low heat, stirring
constantly until melted. Remove from heat.
In a large mixing bowl, beat eggs and sugar on high speed until light and fluffy, about 3 minutes. Add melted
chocolate mixture, beating until combined.
Beat reserved flour mixture into melted chocolate mixture. Whisk in Guinness. The batter will seem a bit thin.
Drop semisweet chocolate chips evenly on top of batter.
Pour into prepared baking pan. Bake 25 to 30 minutes on center shelf in the oven, until a toothpick inserted in
the center comes out almost clean.
Let brownies cool, uncovered, to room temperature. Dust with confectioners' sugar before serving.
Note: The Guinness should be at room temperature. This recipe uses a little less than a standard 12-ounc
bottle of Guinness stout beer. Do not include foam in the measurement. Either spoon off the foam or let it rest
until the foam subsides.

GUINNESS ICE CREAM


Ingredients:
1 Cup (237ml) Sugar
5 Egg Yolks
1 1/8 Cups (266ml) Cream
1 1/8 Cups(266ml) Milk
500 ml Guinness
A handful of dark chocolate chips.

Yield: 6 Servings

Method:
1. Measure out 100ml of Guinness and set aside.
2. Boil the remaining 400ml Guinness until it reduces to 100ml in volume. Cool.
3. Beat the sugar and egg yolks together until thick and pale yellow.
4. Bring the milk to a simmer.
5. Beat the milk into the eggs and sugar in a slow stream.
6. Pour the mixture back into pan and place over low heat. Stir until the custard thickens slightly (around 70C). Use a
thermometer, as at 75C the eggs will scramble!
7. Allow the custard to cool.
8. Stir in both the reduced and non-reduced Guinness.
9. Whip the cream.
10. Gently fold in the custard.
11. Freeze using a domestic ice cream machine, or cover and place in the freezer.

PORTER CAKE
Ingredients:
1lb. Plain Flour 8oz Sultanas
8oz of sugar 8 oz Irish Butter
3 Eggs 4 oz Mixed Peel
1 lbs mixed dried fruit 1/2 tsp Mixed Spice
1/2 tsp Cinnamon 2oz Almonds
1/2 Pint of Guinness
1/2 teaspoon of bicarbonate of soda or Bread Soda.

Method:
Sieve Flour, Bread Soda & spices in to a bowl.
Beat butter and sugar together for 5 to 10 minutes to a cream.
Add eggs one at a time and continue to beat.
Finely Chop almonds
Fold in Flour Mixture, Sultanas, Mixed peel, Almonds and Mixed Fruit.
Add Guinness. Mix well.
Turn in to a greased and lined 8 inch tin
Bake in the center of oven ( 300°F) for 120 minutes.
Check cake at intervals after 90 minutes.
Let cake cool a little in tin then stand on a wire tray. Cover with tea towel.

Irish Car Bomb


¾ pint Guinness, ½ shot baileys, ½ Irish whiskey
Add the Bailey's and Jameson to a shot glass, layering the Bailey's on the bottom. Pour the Guinness into a pint glass or beer
mug 3/4 of the way full and let settle. Drop the shot glass into the Guinness and chug. If you don't drink it fast enough it will
curdle and increasingly taste worse.
