night and then boil it. Now take 1 kg of boneless chicken cut into cubes. For qorma:
Take a cooking pan add 1 oil , heat the oil add 2 onion slices when its slightly brown
then add chicken cubes, 2 tbsp of ginger paste , 2 tbsp of garlic paste mix it well.
Now add 1 tbsp of all spice powder, 1 tsp of roasted &crushed white cumin seeds , 1
tbsp of coriander powder, tsp of nutmeg and mace, 2 tbsp of red chili powder, tsp
of turmeric powder, add to taste salt mix it well add 8-10 green chilies , 250 grams of
yogurt mix it well when all the ingredients are mixed and roasted. Now qorma is
ready. For Lentils: Take a cooking pan add water now add all the lentils , 50 grams of
soaked rice cook until its done. For Mixing: take a chopper add all the lentil mixture,
qorma and chop it. Take a big cooking pan and keep stirring continuously. Then take
it out in a serving and garnish with 1 fried onion, finely chopped ginger, bunch of
coriander , bunch mint leaves, chaat masla and lemon and serve it. Delicious
haleem is ready.

For chicken : Take kg of boneless chicken (finely sliced), cut it. take a cooking pan add as required chicken slices,
add 3-4 cloves of garlic and fry. Now add cup of yogurt, 2 tbsp of vinegar, 1 tbsp of lemon juice, add to taste salt and
2 tbsp of barbeque masala, mix it well and slightly fry then take it out in a plate and let it cool down. Now chicken is
ready. For Salad: take 1 tomato, 1 cucumber cut into thin slices. Take 3-4 lettuce leaves finely chopped it and add it
into a big bowl then add 2-3 tbsp of olive oil, add of pickled cucumber, cup of pickled chili mix it well. Now salad is
ready. For Pita Filling: take a cooking pan add 4 pit a bread and toasted slightly then open up the pockets add chicken
mixture, sauce, 1 cup of slice olives and 1 cup of salad mix it well. Now chicken shawarma is ready.

METHOD:
First boil beef meet in ginger garlic paste and boil it.
Now fry the onions in ghee until brown.
Now add the meat and salt in it.
When it the boil comes then add soaked rice and crushed black pepper and cook it and put it on simmer.
Then add carrots (sliced) and add currants, almonds, oil and sugar and cook it for 2 minutes.
Now add fried potatoes and fried peas.
Now put everything on boiled rice and turn off the stove. Mix it and dish it out.

Method
First take 50 grams of rajhistani red chilies, 50 grams of whole red chilies, 4 tbsp of coriander seeds, 2 tbsp of black
cardamom seeds, 5-6 cloves, 4-5 cinnamon sticks roasted on a fry pan. Now take 4 tbsp of cumin seeds,2 tbsp of
black cumin seeds, 2 tbsp of turmeric powder, 1 tsp of nutmeg and mace powder, mix it well to make powder. Now add
1 tbsp of tatri mix it well then masala is ready. This masala powder is stored on air tight container or jar. This masala is
about 3-4 kg of haleem.

Method
For mutton balls: Take kg of mutton mince (with 50 grams of fat), 2 onions, 2eggs, 2bread slices, 1 tbsp of chopped
garlic , 1 tbsp of red chili powder, 1 tsp of cumin powder, 1 tsp of crushed black pepper , tsp of baking powder and to
taste salt mix it well in the grinder and make the balls and deep fry it. For Rice: Take kg of sela rice wash it off and
soaked it for 2 hours. Now take a cooking pan add 1-2 sticks of cinnamon, 2-3 black cardamom , 2-3 cloves and when
its popping add 1 onion, 2 tbsp of ginger garlic paste and roasted. Now take kg of mixed vegetables, tsp of
crushed black pepper and to taste salt. Add kg of soaked sela rice and 1 jug of mutton stock cook until the ric is
done and add mutton balls then steam the rice when the steam is done. Take 1 cup of cottage cheese cubes slightly
fry in some oil and add it to the top of it take it out in a serving platter and garnish with 1 bunch of mint leaves and 4-5
green chilies and serve it.

Method
Take a cooking pan add water to boil then add packet of noodles boil it in its standard time and strain it then let it
cool down on room temperature put some oil in the noodles and set aside. Now take a cooking pan add 1 tbsp of garlic
paste and fry. Now add 300 grams of beef mince and roasted then add 2-3 tbsp of honey and take it out. Now on the
same cooking pan add 2-3 tbsp of red chili paste and roasted then add cup of slices cabbage, cup of green
beans, cup of slice carrots, 3-4 slices of green chilies, and 1 tbsp of soya sauce mix it well. now add 1 chicken cube
and as required water mix it well then add chicken mince mixture and add noodles mix it. At last take it out in a serving
platter and garnish with 2-3 strands of spring onion and serve it.

grams of chicken cut into small cube. Take a cooking pan add 2-3 tbsp of oil, 1 onion roasted for 2-3 minutes then add
200 grams of chicken cubes, 2 tbsp of garlic paste and roasted for 2-3 minutes then add 2 cups of tomato puree, 3-4
tomatoes, 1 tsp of crushed black pepper, 1 tsp of crushed red chilies, 1 capsicum , 1 tsp of oregano add to taste salt ,
1 cup of chicken stock and cook for 5-7 minutes when the sauce is thicken take it out and set aside. Chicken sauce is
ready. For White Sauce: Take another cooking pan add 6 tbsp of butter add 4 tbsp of all purpose flour roasted and
then add kg of milk add slowly slowly mix it well and cook until the sauce is thicken take it out and set aside. Now
white sauce is ready. For Chicken Lasania Layering : Take a oven bowl spread the boiled lassania sheets then add
chicken sauce, white sauce then lasania sheets ( repeat the process for 2-3 time more). At last add 1 cup of grated
mozzarella cheese, cup of olives on the top of it. now place the dish on the micro wave oven (set it into the
convention mode ) and bake for 20 minutes take it out and serve it. Deliciously lasania is ready.

For green paste: Take a blender jug add 1 bunch of coriander, 5-6 green chilies, 1 bunch of mint leaves and add to
taste salt, blend it to make a paste. Take a mixing bowl add 2-3 tbsp of garlic , 1 tsp of crushed black pepper, 2-3 tbsp
of red chili paste, 2 tbsp of oil, 3-4 tbsp of lemon juice, add to taste salt and add green paste mix it well and fry make
the batter. Take 1 whole chicken (with skin ) marinade the chicken for an hour and then steam it for 20-25 minutes
then bake it on preheated oven when its golden brown take it out. At last take it out in a serving platter and garnish
with 1 tomato , 1 cucumber, 3-4 lettuce leaves and serve it.

tawa pan and make a powder. At last add 2 tbsp of turmeric powder and mix it well. For Malay Beef: take a cooking

fry. Now add tsp of all spice powder, add to taste salt, 1/3 tsp of crushed nutmeg, tsp of fenugreek seeds, 2 tbsp
of malay powder mix it well and roasted. Now add 1 sliced onion, 2 chopped tomatoes, 3-4 potatoes, 1 chopped carrot,
and as required water cook until the beef and vegetable is tender. Then 2-3 tbsp of tamarind paste mix it well when the
gravy thick take it in a serving dish and garnish with green chilies and serve it.

Take a luke warm water add 1 -1/2 tbsp of yeast and 1 tbsp of sugar mix it well and leave it for 15 minutes. Take a

Method
Take a mixing bowl add 100 grams of cottage cheese, 100 grams of grated cabbage, 2-3 boiled and mashed potatoes,

mix it well. Now make cutlets and set aside. Then take 2-3 eggs add it to the mixing bowl and beat it. Take a fry pan

make a dough with the help of 250 grams of milk leave it and dough is ready. Now cover the bowl with plastic cling and
set aside. For Filling : take a mixing bowl add 250 grams of boneless chopped chicken add 2 tbsp of soya sauce, 1
tbsp of soya sauce, 1 tsp of giner paste, 2-3 tbsp of olive oil, 1 tbsp of oil, 1 tbsp of honey mix it well leave it for 20-25
minutes. Take a cooking pan add the rest of the oil, heat the oil add chicken mixture and fry then add finely chopped
onion fry 2-3 minutes add bunch of coriander take it out and set aside let it cool down. Filling is ready. Take a bun
dough roll it with the help of rolling pin and cut into rond shape fill the stuffing and close with egg yolks then grease it
with 3-4 tbsp of sesame seed oil and bake it for 18-20 minutes on 200C. Now bun is ready to serve.

Method
Take a cooking pan add cup of oil, heat the oil add 2-3 cinnamon sticks, 1 tsp of black cardamoms seeds, when its
popping add 1 finely chopped onion, 1 inch piece of finely chopped ginger 5-6 garlic cloves finely chopped, fry. Then
add 1kg of beef (with bone), 3-4 minutes roasted add as required water to tender the beef when the beef is almost

Method:
Marinate beef boti with black pepper, salt, papaya paste and leave it for half an hour.
In a pan, heat oil add beef and cover it , when they are tnders and removes from the stove.
