The weathers warming up, just in time to
head outside for a fun-filled Fathers Day.

hey picked us up from countless sporting and social
events as a child, watched all our school plays, taught
us to drive, manned the barbie at numerous family
events, tickled us until we cried, gave plenty of sage advice
over the years, scolded us, championed us and comforted

1 Place potatoes into a saucepan. Cover with cold water


and bring to the boil over high heat. Simmer for 20 minutes
or until tender. Drain. Transfer to a bowl and mash. Cool.
2 Finely dice salmon and add to potato with egg, lemon
rind, 2 tbs juice, cup rice flour, capers and half the dill.
Season with salt and pepper. Stir until combined. Shape
cup portions of mixture into cakes. Transfer to a plate.
3 Lightly coat fishcakes in remaining flour. Heat a non-stick

1 Preheat oven to 180C. Grease a 30 x 20cm
