But not all fried chicken in Hawaii is
the same. Mochiko chicken features
boneless, skinless thighs marinated in
soy sauce and battered with sweet rice
flour. Katsu-style chicken is coated in
crisp panko crumbs and fried. Kara-
age chicken is marinated in soy sauce or
tamari, brown sugar, sake, and lots of
ginger and garlic; coated in potato starch;
and then fried and served with a sharp
dipping sauce. The common denomina-
tor is utter deliciousness.
I made versions of each style and
gathered tasters. Each style had its fans,
but the flavorful karaage was the most
popular; we used it as a primary inspira-
tion. I found a few more recipes to test
out the nuances. Some recipes called
for marinating the chicken overnight,
making for supersalty chicken. Others
had so much potato starch that the ele-
ments were out of proportion. I wanted
the chicken to be seasoned throughout
but not too salty. And I wanted the
coating to be thin and crispy, with a

and rice, from Spanish paella to
Singaporean chicken rice. But
among the most famous, and popular,
is Latin Americanstyle arroz con pollo
(rice with chicken), with fall-off-the-
bone chicken nestled in creamy, flavorful
ricea dish you might encounter in
Miami, perhaps, or New York City.
Before starting, I spent hours on the
phone talking to professional chefs,
home cooks, and others whod grown
up with arroz con pollo and make it
regularly. They waxed enthusiastically
about Puerto Rican versions, Cuban
versions, Central American versions, and
more. I made six recipes and ordered
the dish from a few local restaurants.
What I found was that there are as many
recipes for arroz con pollo as there are
people who cook it. If you grew up
with this dish, the version served in your
house when you were young remains
the only authentic version. I set out
to make an all-purpose version that
nodded to Puerto Rican tradition.
While the common denominators are
the chicken and rice, the flavor backbone
comes from a sofrito, a stable but invigo-
rating base found in many similar dishes.
Sofritos vary by the cook but often
contain a mixture of onions, peppers,
garlic, and herbs. For my sofrito I mixed
finely chopped onion, garlic, cumin,
cilantro, and a cubanelle pepper (similar
to green bell pepper but slightly sweeter
and milder). I set the sofrito aside while
I browned mixed chicken parts in a
Dutch oven. I then removed them and
sauted onion and rice in the chicken fat
left behind. Once the rice was nice and
toasty, I stirred in chicken broth and the
sofrito, added the browned chicken back
to the pot, and covered it.

Northwest, and a slice of black-
berry pie is never far from reach.
In Oregon its known as marionberry
pie, named after the native blackberry
variety prized by pie makers. Cut into
a good example of this seasonal staple
and youll see what sets it apart from
other fruit pies: You wont get a soupy,
oozy slice. Instead, the purple filling
retains its shape.
But how? Aficionados I spoke with
claimed that there are no tricky tricks,
no added pectin or gelatin, noth-
ing stranger than a bit of starch. As
trustworthy as my sources were, I was
skeptical. Could I create a cohesive
blackberry filling with tart, clean, fresh
summertime flavor? Only one way to
find out. I grabbed a handful of exist-
ing recipes and got to baking.
Settling on a crust was the easy part.
Tasters preferred the flavor of pies with
all-butter crusts to crusts that used
shortening. After a few quick tests, I
settled on the test kitchens recipe for
all-butter pie crust, with 3 tablespoons
of sour cream added for a richer dough
that was just a bit easier to roll out.
Bonus: The acid in the sour cream
inhibited the gluten from overdevelop-
ing and becoming tough. And because
I knew Id need to leave open some
avenues for evaporation, I chose to
follow the example set by blackberry
pie pros and use a lattice top.
Now for the filling. Before tackling
the puzzle of a thick filling that would
hold its shape, I nailed down the fla-
vors. Heavily sweetened pies and added
spices confused the blackberry flavor.
After baking several pies with different
ratios of flavors, I settled on cup of
sugar, a bit of salt, and a good hit of
lemon juice for a sweet-enough filling
with clear and present blackberry flavor.
