which came into force on 30th September 1961, the Organisation for Economic Co-
operation and Development (OECD) shall promote policies designed :
To achieve the highest sustainable economic growth and employment and a rising
standard of living in member countries, while maintaining financial stability, and thus
to contribute to the development of the world economy ;

FOREWORD
Within the framework of the activities of the Scheme for the Application of
International Standards for Fruit and Vegetables* set up by OECD in 1962, explanatory
brochures comprising comments and illustrations are published to facilitate the
common interpretation of standards in force by both the Controlling Authorities and
professional bodies responsible for the application of standards or interested in the
international trade in these products.
The Scheme for the Application of International Standards for Fruit and
Vegetables shall be open to States being Member countries of the United Nations
Organization or its specialised agencies or the World Trade Organisation desiring to
participate therein in accordance with the procedure for participation set out in the
Decision C(99)10/FINAL of the OECD Council dated 8 April 1999.
This brochure is published in English and French under the responsibility of the
Secretary-General of the OECD who declares it in line with the standard for Avocados**.
The translation in Spanish has been done by the services of the Spanish Ministry of
Economy and is recognized by the OECD Scheme for the Application of International

I. DEFINITION OF PRODUCE
This standard applies to avocados of varieties (cultivars) grown from Persea americana
Mill. to be supplied fresh to the consumer, parthenocarpic fruit and avocados for
industrial processing being excluded. photos 1 to 3

The purpose of the standard is to define the quality requirements of avocados at the
export control stage, after preparation and packaging.
A. Minimum requirements
In all classes, subject to the special provisions for each class and the tolerances
allowed, the avocados must be :
intact
Intact means not having any mutilation or injury spoiling the integrity of the
fruit, such as cuts or punctures or other significant physical damage sustained
during harvesting or post harvest handling.

a) Bruising: the result of impact or compression damages the flesh and causes soft
patches and a greyish discolouration of the flesh. photo 7
b) Sunburn: mild symptoms are yellowing of fruit surface facing the sun. More
severe symptoms are darkening of affected areas with a sunken appearance.

clean, practically free of any visible foreign matter
Avocados must be practically free of visible soil, dust, chemical residue or other
visible foreign matter. photos 12 to 13
Avocados must be practically free from insects or other pests. The presence of pests
can detract from the commercial presentation and acceptance of the avocados.

However, its absence is not considered a defect on condition that the place of the
stalk attachment is dry and intact
This provision applies to excessive moisture, for example, free water lying inside
the package but does not include condensation on produce following release from
cool storage or refrigerated vehicle.

This refers particularly to avocados which have been stored on badly kept premises
or have travelled in a badly maintained vehicle, especially avocados which have
acquired a strong smell from other produce stored on the same premises or travelling
in the same vehicle.
It does not refer to any smell emanating from products used in conformity with
the regulations for their use to improve keeping properties.
The fruit must be picked at a proper physiological stage to ensure the completion of the
ripening process by becoming soft and ready for consumption without having a bitter
taste and/or rubbery texture.
Avocados should be firm at the point of dispatch. The degree of softening which makes the
fruit ready for consumption should occur only at the retail or consumer level.
The development and condition of the avocados must be such as to enable them :

B. Maturity requirements
The development of the avocados should have reached a physiological stage which will
ensure a continuation of the ripening process to completion.
The fruit should have a minimum dry matter content, to be measured by drying to
constant weight :

C. Classification
i) Extra Class
Avocados in this class must be of superior quality. In shape and colouring they must
be characteristic of the variety. photo 22
There is a natural variation in shape for each variety according to the growing area.
Nevertheless, the shape must be regular with no distortions or malformations. photo 23
The colour of ripe fruit may be dark green, pale green or black. Black varieties such
as Hass may still be green when picked at proper physiological stage, and attain their
typical black colour during the softening process. photos 24 to 25
They must be free from defects, with the exception of very slight superficial defects of the
skin provided these do not affect the general appearance of the produce, the quality, the
keeping quality and presentation in the package. If present, the stalk must be intact.
Very slight superficial defects may appear during cultivation, harvest, storage, packaging

ii) Class I
Avocados in this class must be of good quality and show the typical colour and shape
of the variety.
Although the Class I quality requirements are less strict than for Extra Class, Class I
avocados must, nevertheless, be carefully selected and presented.
The following slight defects, however, may be allowed provided these do not affect the
general appearance of the produce, the quality, the keeping quality and presentation in
the package :
slight skin defects (corkiness, healed lenticels) and sunburn ; the maximum total

Any unhealed scars, cuts or defects that may affect the fruit flesh are not acceptable.

iii) Class II
This class includes avocados which do not qualify for inclusion in the higher classes but
satisfy the minimum requirements specified above.
Avocados in this class must be of marketable quality, suitably presented and suitable for
human consumption.
The following defects may be allowed provided the avocados retain their essential cha-
racteristics as regards the quality, the keeping quality and presentation :
skin defects (corkiness, healed lenticels) and sunburn : the maximum total area

Tolerances in respect of quality and size shall be allowed in each package for produce
not satisfying the requirements for the class indicated.
Tolerances are provided to allow for human error during the grading and packing
process. During grading and sizing it is not permitted to deliberately include out of
grade produce, i.e. to exploit the tolerances deliberately.
The tolerances are determined after examining each sample package and taking the
average of all samples examined. The tolerances are stated in terms of percentage, by
number or weight of fruit in the total sample not conforming to the class (or to the
size) indicated on the package.
A. Quality tolerances
i) Extra Class
5 % by number or weight of avocados not satisfying the requirements of the class but
meeting those of Class I or, exceptionally, coming within the tolerances of that class.
ii) Class I
10 % by number or weight of avocados not satisfying the requirements of the class but
meeting those of Class II or, exceptionally, coming within the tolerances of that class.
iii) Class II
Under no circumstances shall these tolerances apply to fruit affected by rotting, severely
damaged fruit, fruit too soft to eat, or any other deterioration rendering it unfit for
consumption.

B. Size tolerances
For all classes : 10 % by number or weight of avocados conforming to the size range
immediately below and/or above that mentioned in the marking.
A deviation of 2 % from the indicated weight of the range is permitted for some of the
fruit in the package.

A. Uniformity
The contents of each package must be uniform and contain only avocados of the same
origin, variety, quality, colouring3 and size. photos 37 to 39
The visible part of the contents of the package must be representative of the entire contents.
A special effort should be made to suppress camouflage, i.e. concealing in the lower
layers of the package produce inferior in quality and size to that displayed and marked.
B. Packaging
The avocados must be packed in such a way as to protect the produce properly.
Packages must be of a quality, strength and characteristics to protect the produce during
transport and handling.
The materials used inside the package must be new, clean and of a quality such as to avoid
causing any external or internal damage to the fruit. The use of materials, particularly
of paper or stamps bearing trade specifications is allowed provided the printing or
labelling has been done with non-toxic ink or glue.
Stickers individually affixed on the produce shall be such that, when removed, neither leave
visible traces of glue, nor lead to skin defects.
A visible lack of cleanliness in several packages could result in the goods being rejected.

VI. PROVISIONS CONCERNING MARKING
Each package4 must bear the following particulars, in letters grouped on the same side,
legibly and indelibly marked, and visible from the outside :
In the case of packed produce, all particulars must be grouped on the same side of the
package, either on a label attached to or printed on the package with waterinsoluble

In the case of reused packages, all previous labels must be carefully removed and
previous indications deleted.

For inspection purposes, the packer is the person or firm responsible for the packaging
of the produce (this does not mean the staff who actually carry out the work, who
are responsible only to their employer). The code mark is not a trademark, but an
official control system enabling the person or firm responsible for packaging to be
readily identified. The shipper may, however, voluntarily or compulsorily, assume sole
responsibility for inspection purposes, in which case identification of the packer as
defined above is no longer necessary.
To prevent indistinctness in the case where a code mark is used, the reference packer,
dispatcher and/or exporter (or equivalent abbreviations, i. e. pack., exp.) has
to be indicated in close connection with the code mark.
4 Package units of produce prepacked for direct sale to the consumer shall not be subject to these marking
provisions but shall conform to the national requirements. However, the markings referred to shall in any
event be shown on the transport packaging containing such package units.
5 The national legislation of a number of countries requires the explicit declaration of the name and address.
However, in the case where a code mark is used, the reference packer and/or dispatcher (or equivalent
abbreviations) has to be indicated in close connection with the code mark.

B. Nature of produce
The name of the produce need only be stated on closed packages, whose contents
are not visible from the outside.
C. Origin of produce
Marking must include the country of origin, i.e. the country in which the avocados
were grown (e.g. Israel, Australia.). Optionally, district of origin in national,
regional or local terms may also be shown.
D. Commercial specifications
Class
Code number of the size scale and number of fruits when it is different from
code number or, optionally, code number of the size scale and the net weight
of the package.
Stating the size range is compulsory. Additionally the code number of the size scale
and the number of fruits when this is different from the code number must be stated
on the package, or optionally, the code number and net weight of the package.

ANNEX
METHOD OF DETERMINATION OF THE DRY EXTRACT IN AVOCADO USING
DESICCATION PROCESS IN A MICROWAVE OVEN
In order to determine the maturity index of Mexican and Guatemalan varieties of avocados
and their hybrids, the oil or fat content appears to be the determining factor.
In California, the Hallowax method was developed and was applied for a certain number
of years to determine the oil content.
The research conducted in California concluded that the total of the fat content and
of the moisture, of the oil and water, is a constant for each variety so that to each
minimum oil content required to obtain the appropriate organoleptic characteristics for
consumption corresponds a maximum moisture content.
The moisture being the difference between 100 and the dry matter content and vice
versa, it was thought preferable to set a minimum dry matter content for each variety,
thus enabling to guarantee a post-harvest development of the avocado satisfactory for
consumption.
Therefore the Hallowax method was replaced by the determination of the content of dry
matter. In various producing and exporting countries of avocados the determination in
a microwave oven is used, a method which has its merits due to its speed, simplicity,
low cost, and repeatability.

1. Application
This method allows to determine the loss of mass during the process of
desiccation of the avocado.
2.5. Slicer
3. Procedure
Each time that samples are weighed, they must be controlled until the nearest
centigram.
3.1. Weigh each glass slide and take note of the weight (P0)
3.2. Cut the fruit longitudinally in two parts, eliminating the seed and the
seminal tegument.
3.3. From one of the parts of the fruit, four 1.5 mm-thick slices must be cut
with the help of the slicer.

3.4. Slices must be divided into four portions, cutting the diameters from
largest to smallest. Then, deposit the four portions of the 4 slices without
overlap, on four numbered glass-slides, according to the following schema
of the slices divided in four and the number of the glass-slide where you
are setting each quarter :

3.5. Weigh each glass-slide which contains the sample and record the weight (P1).
3.6. Put the glass-slides into the microwave oven. It must be checked
beforehand, for this thickness of the sample slice, that the desiccation
is constant and that no brown coloration due to burning will appear.
Establish a power of 800 W and after 4 minutes, weigh the sample
directly, without allowing it to cool in the desiccator. Return the sample
into the microwave for 1 minute and weigh it again. Repeat the process
until the weight is constant or the difference of the mass between two
consecutive weighings is not greater than 0.5 mg. The total time of
desiccation ranges between 4 and 7 minutes. The final weight will be P2.

du contrle lexportation aprs conditionnement et emballage.
A. Caractristiques minimales
Dans toutes les catgories, compte tenu des dispositions particulires prvues pour

Des tolrances sont destines tenir compte de lerreur humaine dans les oprations
de classement qualitatif et de conditionnement. Lors du classement qualitatif et du
calibrage, il nest pas admis dinclure dessein les produits non conformes la qualit
requise, cest--dire dexploiter dlibrment les tolrances.
Les tolrances sont dtermines aprs examen de chaque colis chantillon et par la

Les matriaux utiliss lintrieur du colis doivent tre neufs, propres et de matire telle
quils ne puissent causer aux produits daltrations externes ou internes. Lemploi de
matriaux et notamment de papier ou timbres comportant des indications commerciales
est autoris, sous rserve que limpression ou ltiquetage soient raliss laide dune
encre ou dune colle non toxiques.
Les tiquettes apposes individuellement sur les produits doivent tre telles que, lorsquelles
sont retires, cela nentrane ni traces visibles de colle, ni dfauts de lpiderme.
Le manque de propret manifeste constat dans plusieurs colis peut entraner un refou-
lement de la marchandise.

Los daos causados por las heladas antes de la recoleccin o por el fro debido
a una temperatura de almacenamiento baja se caracterizan exteriormente por un
oscurecimiento de la epidermis, e interiormente por una modificacin de la textura
de la pulpa, que aparece de color gris y por una modificacin del color de los haces
vasculares que aparecen marrn oscuro. fotos 16 a 19
con un pednculo de una longitud inferior a 10 mm cuyo corte debe ser neto. No
obstante, la falta de pednculo no se considerar como un defecto cuando el punto

Los frutos deben ser recolectados con un estado de desarrollo fisiolgico adecuado
para asegurar la totalidad del proceso de maduracin de modo que adquieran una
consistencia blanda y estn dispuestos a ser consumidos sin tener un sabor amargo y/o
una textura elstica.
Los aguacates deben ser firmes en el momento de la expedicin. Deben presentar una
pulpa blanda caracterstica de los frutos listos para ser consumidos nicamente al nivel
de la venta minorista o del consumo.
El desarrollo y condicin de los aguacates debern ser tales que les permitan :

C. Clasificacin
Los aguacates son objeto de una clasificacin en tres categoras definidas a continuacin :
i) Categora Extra
Los aguacates clasificados en esta categora debern ser de calidad superior y presentar
la forma y la coloracin caractersticas de la variedad. foto 22
La forma de cada variedad vara naturalmente segn la zona de produccin. Sin embargo,
la forma debe ser regular, sin deformaciones o malformaciones. foto 23
El color de los frutos maduros puede ser verde oscuro, verde claro o negro. Las variedades
de epidermis negra, como la Hass, pueden presentar an un color verde cuando son
recolectadas con un grado fisiolgico adecuado y desarrollan su coloracin negra tpica

ii) Categora I
Los aguacates clasificados en esta categora debern ser de buena calidad y presentar
la forma y la coloracin caractersticas de la variedad.
Aunque las exigencias de calidad sean menos estrictas para la categora I que para la
categora Extra, los frutos de la categora I deben ser, en todo caso, cuidadosamente
seleccionados y presentados.
No obstante, podrn presentar los ligeros defectos siguientes, siempre y cuando no afec-
ten al aspecto general del producto, a su calidad, a su conservacin ni a su presentacin
en el envase :
Quedan excluidos las heridas, cortes o defectos no cicatrizados que puedan afectar a la pulpa
de los frutos.

Para los aguacates no conformes con las exigencias de categora y calibre indicados, se
admiten en cada envase las tolerancias siguientes :
Las tolerancias sirven para tener en cuenta los errores humanos en las operaciones
de clasificacin de calidad y acondicionamiento. Durante la clasificacin de calidad
y el calibrado, no se admite incluir a propsito productos no conformes a la calidad
requerida, es decir aprovecharse deliberadamente de las tolerancias.

A. Homogeneidad
La parte visible del contenido del envase deber ser representativa del conjunto.
Se tendr un especial cuidado para impedir el encarado, es decir la ocultacin en las capas
inferiores del envase de productos de inferior calidad y calibre que los mostrados y marcados.
B. Acondicionamiento
El acondicionamiento de los aguacates deber ser tal que garantice una proteccin
conveniente del producto.
La calidad, la solidez y el diseo de los envases deben permitirles proteger a los productos
durante el transporte y las manipulaciones.
Los materiales utilizados en el interior del paquete debern ser nuevos, limpios y de
una composicin que no pueda causar alteraciones externas o internas a los productos.
Est autorizado el empleo de materiales y, en particular, de papeles o sellos en los que
figuren indicaciones comerciales, siempre que la impresin o el etiquetado se realicen
con tinta o cola que no sean txicas.
Las etiquetas adheridas individualmente sobre los productos deben, al ser retiradas, no
dejar rastro visible de cola ni defectos de la epidermis.
