A rapid paper strip test has been developed to detect maltodextrin in milk. The strip turns yellow within 3 minutes if maltodextrin is present in milk at a level of 0.2% or higher. The intensity of the yellow color corresponds to the amount of maltodextrin. The test can be used to detect maltodextrin adulteration in milk and milk products like khoa and dahi. It is more sensitive than liquid-based tests and remains effective for 3 months under refrigeration. The test can be performed by non-technical users to screen for maltodextrin at various points in the dairy supply chain.

Strip based test for detection of maltodextrin in milk
Technology Details:
Maltodextrin is hydrolysed product of starch and is available in market with different DE
values. Because of better solubility of maltodextrin and ambiguity in interpretation of iodine test for maltodextrin detection, milk is frequently adulterated with maltodextrin. Maltodextrin is not a permitted additive as per FSSAI Rules. A rapid paper based strip test has been developed for the detection of maltodextrin in milk. The prepared strip is white in colour. The test involves dipping the strip in milk followed by visualization of change in colour of the strip. The colour change to yellow after about 3 minute in case of milk is adulterated with maltodextrin. The intensity of yellow colour produced in the strip is proportional to the amount of maltodextrin present in milk sample. The developed detection strip can also be used to detect the presence of maltodextrin in various milk products (Khoa, Dahi etc.) The colour change in maltodextrin detection strip also occurs in the presence of glucose or HO. Hence, the presence of maltodextrin will be confirmed only in absence of glucose or HO - which can be ascertained by glucose and HO detection strips, respectively. The test can detect presence of 0.2% level of maltodextrin in milk. The developed test is more sensitive than the existing liquid based test. The shelf-life is more than 3 months at refrigeration temperature. The test can be performed even by non- technical person. The method has been validated at a NABL accredited laboratory. The test can be used at milk collection centres, reception dock of dairy industries and also at house hold.
