 The Leadership Ascension Program Graduates Its 22nd Class
Leadership Ascension, a
program of the Ascension
Chamber of Commerce, was
proud to graduate its 22nd
Leadership Class at Clarion Inn
& Conference Center on
Tuesday, June 13, 2017.
There were 34 participants in
this years Leadership Class and
each member was put onto a
team with the task of
researching and implementing a
project that would positively
affect the Ascension
Community. This years projects
included Leadership Ascension
For Learning, a project that
raised over $137,000 to restore
and rebuild the Galvez Primary
Library that was destroyed in
the Great Flood of 2016;
Rockin Through the Ages, who
constructed a beautiful gazebo
complete with numerous
rocking chairs for the Ascension
Council on Aging; The ARC
Angels, who created a
comfortable space for clients of
the ARC of Ascension by
completely remodeling a social
room at their facility; and The
Traveling Samaritan who not
only rebuilt and restocked the
food pantry at Holy Rosary
Church that was devastated by
the Great Flood of 2016, but
also raised funds to purchase a
trailer to be used to deliver food
to those in need in the
Ascension community.
All projects will undoubtedly
benefit the Parish for years to
come, but Rockin Through the
Ages was chosen as this years
winner. Winning team members
included: Bethany Duplessis;

Traci Furlow, Josh Ory, Craig

Immediate annuities can be a
useful tool to protect the
spouse of a nursing home
resident who applies for
Medicaid. These types of
annuities allow the nursing
home resident to spend down
assets and give the spouse a
guaranteed income.

Medicaid is the primary source
of payment for long-term care
services in the United States.
To qualify for Medicaid, a
nursing home resident must
become impoverished under
Medicaids complicated asset
rules. In most states, this
means the applicant can have
only $2,000 in countable
assets. Virtually everything is
countable except for the home
(with some limitations) and
personal belongings. The
spouse of a nursing home
residentcalled the commu-
nity spouse is limited to
one half of the couples joint
assets up to $120,900 (in
2017) in countable assets.
An immediate annuity is a
contract with an insurance
company under which the
annuitant pays the insurance
company a sum of money in
exchange for a stream of
income. This income stream
may be payable for life or for a
specific number of years, or a
combination of both i.e.,
for life with a certain number

of years of payment guaran-
teed. In the Medicaid planning
context, most annuities are for
a specific number of years.
The spouse of a nursing home
resident may spend down his
or her excess assets by using
them to purchase an immedi-
ate annuity. But if Medicaid
applicants or their spouses
transfer assets within five years
of applying for Medicaid, the
applicants may be subject to a
period of ineligibility, also
called a transfer penalty. To
avoid the transfer penalty, the
annuity must meet the
following criteria:
The annuity must pay back
the entire investment.
The payment period must
be shorter than the owners ac-
tuarial life expectancy. For in-
stance, if the spouses life
expectancy is only four years,
the purchase of an annuity
with a five-year payback period
would be deemed a transfer of
assets.
The annuity must be
irrevocable and nontransfer-
able, meaning that the owner
may not have the option of
cashing it out and selling it to
a third party.
The annuity has to name
the state as the beneficiary if
the annuitant dies before all
the payments have been made.
Heres an example of how an
immediate annuity might
work: John and Jane live in a
state that allows the commu-
nity spouse to keep $120,900
of the couples assets. If John
moves to a nursing home and
John and Jane have $320,000
in countable assets (savings,
investments, and retirement
accounts), Jane can take
$200,000 in excess assets and
purchase an immediate annuity
for her own benefit. After
reducing their countable assets
to $120,000, John will be
eligible for Medicaid. If the
annuity pays her $3,500 a
month for five years, by the
end of that time, Jane will have
received back her investment
plus $10,000 of income. If she
accumulates these funds, at the
end of five years she will be
right back where she started
before John needed nursing
home care.
Given this planning opportu-
nity, many spouses of nursing
home residents use immediate
annuities to preserve their own
financial security. But its not a
slam-dunk for a number of
reasons, including:
Other planning options may
be preferable, such as spending
down assets in a way that pre-
serves them, transferring assets
to exempt beneficiaries or into
trust for their benefit, seeking
an increased resource
allowance, purchasing
non-countable assets, using
spousal refusal, or bringing the
nursing home spouse home
and qualifying for community
Medicaid.
The purchase of an annuity
might require the liquidation
of IRAs owned by the nursing
home spouse, causing a large
tax liability.
The non-nursing home
spouse may be ill herself,
meaning that she may need
nursing home care soon, in
which case the annuity
payments would simply go to
her nursing home.
The savings may be small
due to a high income or the
short life expectancy of the
nursing home spouse, and the
process of liquidating assets
and applying for Medicaid
might not be worth the
considerable trouble.
In short, the use of this
powerful planning strategy
depends on each couples
particular circumstances and
should be undertaken only
after consultation with a
qualified elder law attorney.
In addition, those who do
purchase immediate annuities
need to shop around to make
sure they are purchasing them
from reliable companies paying
the best return.

Mouth Sores

Mouth sores come in several
different varieties and can
have any number of causes, in-
cluding:
Infections from bacteria,
viruses or fungus
Irritation from a loose
orthodontic wire, a denture that
doesnt fit, or a sharp edge from
a broken tooth or filling
The symptom of a disease or
disorder.
Your dentist should examine
any mouth sore that lasts a
week or longer. Among the
most common mouth sores are:
Canker sores.
Small ulcers with a white or
gray base and a red border,
canker sores appear inside the
mouth. They are not conta-
gious, but can return frequently
and may be only one canker
sore or several. Their exact
cause is uncertain but some ex-
perts believe that immune sys-

tem problems, bacteria or
viruses may be involved. Canker
sores usually heal on their own
after a week or two. Over-the-
counter topical anesthetics and
antimicrobial mouthwashes may
provide temporary relief. Stay
away from hot, spicy or acidic
foods that can irritate the sore.
Antibiotics from your dentist
and some oral bandages can re-
duce secondary infection.
Cold sores (also
called fever blisters.)
Groups of fluid-filled blisters
that often erupt around the lips
and sometimes under the nose
or around the chin. Cold sores
are caused by the herpes
simplex virus type 1 and are
very contagious. The initial in-
fection (primary herpes) may be
confused with a cold or flu and
can cause painful lesions to
erupt throughout the mouth.
Once a person is infected with
primary herpes, the virus stays
in the body and causes
occasional attacks. Cold sore
blisters usually heal in a week by
themselves. Over-the-counter

topical anesthetics can
provide some relief. Your
dentist may prescribe antiviral
drugs to reduce these kinds of
viral infections.
Leukoplakia.
Thick, whitish-color patches
that form on the inside of the
cheeks, gums or tongue, these
patches are caused by excess cell
growth and are common among
tobacco users. They can result
from irritations such as an ill-fit-
ting denture or the habit of
chewing on the inside of the
cheek. Sometimes leukoplakia is
associated with oral cancer. Your
dentist may recommend a
biopsy if the patch appears
suspicious. Your dentist will ex-
amine the lesion and check the
biopsy results to help
determine how to manage the
disease. Treatment begins with
removing the factors that
contribute to the lesion:
quitting tobacco or replacing
ill-fitting dentures or bridges.

Candidiasis.
This fungal infection (also
called moniliasis or oral thrush)
occurs when the yeast Candida
albicans reproduce in large
numbers. It is common among
denture wearers. Most often it
occurs in people with weak im-
mune systemsthe very young,
elderly or those
debilitated by disease, such as
diabetes or leukemia. In
addition, people with dry
mouth syndrome are
susceptible to candidiasis. Can-
dida may also flourish after an-
tibiotic treatment, which can
decrease normal bacteria in the
mouth. Controlling candidiasis
means focusing on preventing
or controlling the condition
that causes the outbreak. Good
oral hygiene is essential. Clean
your dentures to remove Can-
dida and remove them at bed-
time. If the cause is dry mouth
saliva substitutes and prescrip-
tion medications may be helpful
when the underlying cause of
dry mouth is incurable or un-
avoidable.

Three weeks ago, completed
renovations at the Ascension
Parish Health Unit resulted in
new clinical space for the St.
Elizabeth Community Clinic.
Now, in one location, premium

ovations at the Health Unit
which resulted in four exam
rooms and one lab room for the
St. Elizabeth Community

 Balls and Strikes-
Play Ball and Strike up the Band

We can work it out, we can
work it out
The Beatles-1965.
Maybe its just my old red,
white and blue blood (that
seems to flow from cuts and
scrapes a lot more freely now
than in my younger days) and a
patriotic heart that beats to
Yankee Doodle Dandy on the
Fourth of July. But it gets my
corpuscles (the ones that have
not died in vein) boiling when I
hear words like lost cause and
hopeless case used when
talking about this country.
The Good Ole USA has
survived 241 years through
every kind of hardship imagina-
ble, so dont think a little red
state-blue state, majority-
minority, city folk-country boy
finger pointing is going to tear
it asunder now.
Since recalling history is not
in vogue these days, let me lay a
little bit on you from someone
old enough to be a waiter at the
Last Supper. In 1812-just 36
years after the astoundingly
successful Revolution, the US
had to defeat the powerful
British army and navy-again. It
took an upset equivalent of East
Ascension defeating Alabama in
a swamp in Chalmette-no
less-fueled by an unlikely
alliance of a social outcast from
Tennessee, Andrew Jackson,
and a Cajun Cannon (sorry,
Bobby Hebert) Jean Lafitte,
who turned down big bucks
from the British to assist a
country in which he was a
wanted man. But we still
pulled it off.
Then in 1861-with the
country not yet 100 years old,
Americans from the North and
South-the vast majority of
whom did not own slaves-were
sent into battle to kill one
another. No country so young
could have survived such a
bloody Civil War-but
America did.
In the years to come, the
United States would also
survive two World Wars, several
other country-dividing conflicts,
scandals among top officials-
including Presidents and
Vice-Presidents- and a 60s
revolution by young people
who no longer bought into the
Leave It to Beaver mentality
of the 50s.
And we were called hopeless
cases and lost causes back in April to the big Fourth of
then also. But we survived.
And, come on folks, weve
had our share of disagreements
over the years, but like Sir Paul
and John said at the top of this
column-We can work it out.

Ironically, my plan to unite
the country (and possibly the
world) involves two catalysts-
music (as illustrated above) and
baseball. From henceforth in
this ingenious plan, the term
baseball will apply to softball
and any other sport that
includes hitting a ball with a bat
including the Cornered Tigers
of Pakistan Cricket.
Stick with me on this one-
I realize I ramble. I was one of
the lucky kids who grew up
playing baseball at J.B. Landrys
park on the Airline Highway in
Prairieville. From Opening Day
July celebration, we played ball
every Sunday and-once the
summer started- a couple of
times during the week. This
went on from the time we were
six years olds until the time we
were 15.
Even when we graduated to
the big time league in
Gonzales, Landry recruited
some of those stars-notably the
Lavigne boys-to come play on
his weekend teams.
J.B.-or Burleson, as he was
called-also made sure there was
plenty of entertainment at the
ball park besides baseball. He
had the Shriners lead a big
parade on Opening Day and
had dignitaries like Governor
Jimmie Davis show up to
address the crowd. On July 4
there were greasy pig chases and
greasy pole climbs in- between
games-always awarding a
whopping 5-dollar prize.
And there was always music.
Whether a recording by local
artists Van and Grace Broussard
being piped in or a live talent
show featuring his son and
daughter Joe and Patsy, there
was always music between and
after baseball games. Once I
learned three chords on my
Silvertone guitar, I joined in on
a few of the live sessions doing a
passable Wabash Cannonball
that I had learned from Dizzy
Dean on the Game of the Week.
Dean was not your typical
baseball announcer as he would
often break into a country song
during a break in the action-
often at the urging of his
partner Pee Wee Reese. Even
back then I believe they realized
that there may be power in
baseball and music and their
ratings reflected it.
If my serious attempts at
music failed, I always fell back
on some Ray Stevens novelty
songs like Ahab the Arab
(Try that one today in this
politically-correct run amok
society.) since the crowd was
laughing at me anyway.
Plan B was usually the better
of the two.
The point is-in all the years I
was in that ballpark, I can
remember only a handful of
incidents where people got out
of hand and they were quickly
disposed of. Except for a bit of
the usual umpire-baiting,
everyone got along swimmingly
and I have to attribute that to
the fact that there was always
baseball on the field and music
on the bandstand. And I
believe a master showman like
Landry realized it.
But what did he get out of all
this? Concessions. He sold soft
drinks to the kids, beer to the
adults, peanuts and popcorn and
crackerjacks-oops, there I go
mixing music (Take Me Out to
the Ball Game) with baseball
again. But put a hashtag on
that concessions item for a
moment while we move into
the present.
Fast forward to the summer of
2017 where parents and grand-
parents travel great distances to
ball by you, make you look like
a fool), there was always
music in the Sweet Home
Alabama air.
Some teams took it a step
farther and had taped music
playing between innings. I
didnt witness any walk-up
songs for individual batters but
I wouldnt be surprised to see it
in the near future. And guess
how many fights and
disagreements we saw? Thats
correct-the same number that
were at Woodstock in the
summer of 69 when half a
million people got together for
a week of music (Okay, so there
wasnt any baseball at that
gathering.). Zero. All makes
and models of human beings
swapping stories and songs and
food and-maybe-a few adult
beverages and watching their
kids play ball.
Now with all this peace, love
and brotherhood going on, I
guess the only question that
remains is-why dont we have a
10-field facility- similar to the
got an early-bird tournament
pass for $35, others paid $50
and single games were $12-were
split between the host field and
the association.
But heres the kicker-the
locals got 100% of the
concessions. Do you realize Imagine
how much money that is?
Urban legend has it that Carlos
Marcello-New Orleans head of
the Dixie Mafia offered to
build the Superdome for free as
long as he got control of-drum
roll, please-concessions!
The number of games in the
World Series took the
cooperation of at least three
communities-all of which had
impressive complexes-and a
couple of high schools. I am
not proposing we jump in with
a 225-team tournament.
But with a 10-field facility-
perhaps a few with artificial
turf- you could easily host some
32-team events and maybe-with
a little help from our friends-a
64-team tournament. We could
also bring in some locals artists
to perform live music and
promote the whole deal as the
Baseball and Bands Unite
America tour. As the
aforementioned John Lennon
once so astutely stated,
Some modern-day J.B.
Landry is going to put together
this whole package one day-
probably after I have my tickets
to see the Angels play-but I
think-with the right people
behind this project-that we can
indeed work it out.
A hopeless case, you say.
A lost cause.
Hell, people, the Cubs

the pre-and post-game parties,
you could hear a variety of

country, from swamp pop to
Latino beats, from John

Louisiana
At the time I wrote this song
the phrase "coastal erosion" was
not a well publicized issue. I
could tell the signs of constant
change from my frequent visits
to certain coastal areas. Ponds
on our duck lease in Venice
were growing in size from year
to year. The land on which our
camp was constructed was
beginning to sink at a rapid rate,
until it finally went out of site.
One example of what has
happened through the years can
be viewed from the Leeville
bridge. When I was sixteen
years old you could not find a
pothole to put a duck decoy in
at that particular marsh. I know
that because I tried to do it.
The view from that bridge in
those days was solid grass from
there to Caminada Bay. Talk of
coastal restoration has been a
common conversation for
many years now.
These projects when approved
will take years to complete, but
first we need to quit talking and
actually do something about it.
The Hope Canal project, in
which water would be intro-
duced from the Mississippi
River into the Maurepas swamp
basin has been discussed for at
least fifteen years. Yes, Louisiana
is losing some of its limbs but
she's very much alive.
Just recently a friend and
co-worker of mine was telling
me that he was now spoiled
because of a fishing trip that he
had taken while in Cancun.
While he was there he had
caught several sailfish, tuna and
dolphin. I replied that you can
do that here also, but you have
to travel a little further out to
do so. Being a true Louisiana
outdoorsman he fully
understands the great resources
this state has to offer.
Just visit any marina around
Grand Isle, Venice, Cocodrie,
etc. and tell me if if there is any
other place on earth that you've
been to that has a fishery of this
nature. It ain't even close. How
about the Atchafalaya Basin and
our other neighboring swamp
lands? Can you imagine how
much life is in a ten acre patch
of swamp? When you put it all
together the amount of fish,
shellfish, invertebrates, insects,
amphibians, reptiles, birds and
mammals found there can't be
matched at any other place in
this country.
I'm fortunate to have been
born and raised here. If I would
have moved here from some-
where else, I believe I would
still feel the same as I do about
this state. It has a lot to offer
and to be honest with you I feel
it could be a nation of its own.
There's jobs, ranching, forestry,
farming, seafood, water and oil
and gas. I know there is
thousands of other good places
to live and some of my family
and friends have ventured off to
these places for different
reasons. I love em all and wish
them the best of luck, but ole
Goose ain't going nowhere. I'm
a Louisiana boy and although
she may be struggling to some
degree, I'll be with her till the
end. I love you lady....

Thank You Tootie
for your Hard
Work as staff
photographer for
Ascension Magazine!
There is nothing like family
and I want to thank one of my
most favorite relatives for his
hard work and dedication.
Jimmy Dunkley, we call him
Tootie, is a brilliant photogra-
pher and takes on jobs that are
hot and sweaty, like LSU
baseball and local high school
softball, for Ascension
Magazine. With his selfless
efforts the magazine prints and
displays some outstanding
sports photos.
This month there were so
many events to cover I felt I
didnt want to over work my
cousin, our best photographer,
so I took it upon myself to
suffer through the photography
responsibility of the photo
shoot of the Grand Opening of
Tilted Kilt.
I realize this photo is not as
high quality as Tootsie photos
but just look at it. It is in focus
and he received a deserved day
off. I felt it was my duty to
relieve his work load. You
the man Tootie, Ive always
got your back picking up the
ho- hum jobs. At least I
took a good action shot of this
unfortunate looking young lady
serving me a beer.
By the way Tootie, I have a
photo shoot at the Sorrento
dump coming up. Will you be
available next week?
Hi Tech Problems
with Low Tech
Solutions
I love my hi tech televisions.
My hi tech music system and my
computer is my life.
I make a living using my
computer and the internet keeps
me in touch with my family,
friends and my bank account.
I take it for granted the
amount of information that I
am bombardered with in the
form of information that
continously ticker tapes across
the bottom of the screen.
For the most part I like the
information. I read about
scores or news alerts.
This particular evening LSU
was playing Florida State in the
College World Series.
I am a big baseball fan and my
favorite major league team is the
Atlanta Braves. My Braves have
been doing pretty good this
year and they can hit. With that
said, I set my television to
record the Braves game each
and every chance I get.
As the Florida State vs LSU
game played, the ticker tape
across the bottom of screen
revealed the Braves score. I
covered my eyes but then LSU
got a hit so I had to peak and
saw the Braves were down 2-1
in the second.
I want to watch the LSU
game but I have trouble not
looking at the information as it
ticker tapes across. I want to
watch the recorded Braves later
and I hate watching a game
when I know the score.
In a flash I grabbed some
movie DVD disc and stacked
them in front of the television
blocking the my view of the
information. Now I can watch
LSU win while not having to

avert my eye at the right
moment.
Thats when I realized I came
up with a lo tech solution for a
high tech problem.
After taking this photo of my
brilliant redneck solution I took
a close look at the movies Id
chosen.
August Rush is a great film
but I feel they missed the
ending. Tom Hanks in Angels
& Demons is terrific like most
of his movies. Then there is
Hunt for Red October. A
classic from the past that I enjoy
each and every time I watch it.
Lately Im having a harder time
pulling it out to watch it.
I love the story line and the
entire theatrical approach it has
but then I see Alec Baldwin as
one of feature actors. He was
young and handsome then with
a bright future and had it
rolling. Then he decided he was
bigger than his britches and told
half of America that his opinion
is the only one that matters.
How many times has he
threaten to leave the country if
his political affiliate doesnt win
an election.
Well Alec, I watch the movie
from time to time but not
because of you. I do because of
the art of the film but I can
assure you I will never pay
money to watch any movies you
make these days along with
Robert De Niro, Ashley Judd
and any american actor that
thinks they are better than any
other americans.
However, with that said, I can
always use your movie to be
used as ticker tape information
bar blocking mechanism and I
can take a marker and color out
your face on the DVD cover so
I dont get flustered each time
I see your face.
 Close Encounters
with the
5 Digit Kind
I love doing art work and
claim there is nothing I cant
paint. Most of the time I say the
bigger the better. Ive painted
basketball floors. I did a mural
downtown Baton Rouge
150 x 50. Its just what I do.
During the Jambalaya Festival
I met some young ladies under
a tent cooking in the Mini Pot
Contest. While conversing and
making jokes I noticed that one
of the girls had pretty blue
painted toes. I commented that
the color matched my Jambalaya
Festival shirt. I told her all she
needed was a jambalaya pot
painted on her big toe. We
joked and laughed about it and
I mentioned I was headed home
to cool off for an hour or so. I
told her when I return I would
bring paint supplies and hook
her tootsies up with some art.
She said she was game.
I returned to the festival and
found the girls and the fun
began.
First I pulled out my trusty
plastic garbage bag full of
brushes, thinner, paint and
some baby wipes. I sat on an ice
chest in front of her and said,
Let me see them toes!
At first it felt a little awkward.
I am holding a womans foot in
my hand and I barely know her
name. My first concern was I
have to give them tooties and
little washing. I know if I had
worn flip flops to a dusty cook

off I would have toe cheese
everywhere. Surprising enough
her feet were clean as a whistle
but I wasnt going to pass up a
chance to caress and clean the
feet of this lovely woman. I
pulled out the baby wipes and
went to massaging and
scrubbing. I dont know if it
was good for her but it was
definantly good for me.
I got a little excited when I
heard her moan, that feels
good and then her girl friend
said, Crap I wish I had my toe
nails painted so I could get one

of those foot cleaning!
I pulled out my glasses, a
small paint brush and grabbed

the young lady by foot and went
to painting. In about 30
minutes I had painted jambalaya
pots on her two big toes.
We had lots of fun and a few
beers. When I left I told the
ladies, It was nice feeting you!
The next day I was back at the State-of-the-Art
festival taking photos of cooks Equipment
and told this story to a friend of
mine that was cooking. A lady Front End
spoke up asking, So youre the Alignments
guy that painted Crystals toes?

My blue tooth speaker is always
playing when I ride my 4 wheeler.
I had put it in my bucket that I
feed the birds with. One after-
noon the music started sounding
better. I dont know if the six Locally Owned & Operated by
empty beer cans that caused that
or the bass sound they enhanced Oscar and Linda Mire and sons

 Ingredients:
Cooking Gourmet at Home
with SNOS SEAFOOD & STEAKS
24 large shrimp (peeled and 2 cups cut corn frozen
deveined tail on) 1 cup sliced green onion
1 cup of diced tasso 2 tbsp chicken base/ better
4 cups stone ground yellow than bouillon
corn grits 3 tbsp olive oil
8 cups water 2 tsp kosher salt
12 cups heavy whipping cream 1 tsp ground black pepper
lb butter (cubed)
2 lbs pepper jack cheese
shredded

Instructions: For the Grits

In a medium heavy bottom sauce pot combine the water, eight cups of the
heavy cream, and the chicken base over high heat and bring to a boil. Watch pot
closely to ensure you do not boil over the cream. While waiting for the liquids to
boil in a small saute pan over medium heat roast frozen corn with a small amount
of butter. Once desired color is achieved, (should be slightly brown), turn off
heat and let sit. When liquid mixture starts to boil add corn grits while whisking,
allow to come back to a boil then turn heat down to low and allow to simmer for
five minutes, now add the roasted corn, butter cubes and the green onions while
whisking and allow to simmer for another five minutes, whisk in salt and black
pepper then taste for doneness and season. Adjust accordingly.

Grilled Shrimp & Roasted Corn Grits For the Sauce:

In a small saucepan heat the remaining four cups of heavy cream on low once
cream starts to simmer add shredded pepperjack while whisking. Whisk until
smooth and well blended. Reduce sauce until desired thickness and season with
salt and pepper to taste.
Prep: 25 minutes
For the Grilled Shrimp:
Coat shrimp with olive oil and season with salt and pepper or to kick it up a
Cook: 20 minutes notch add whatever Cajun seasoning you desire. Heat flat grill or saute pan on
high heat and cook shrimp until pink and firm.

Servings: 4 For the Plate:
On a Round plate or in a bowl start by scooping the grits into the center of the
Ben Jarreau dish, place shrimp on top and sauce to your desired tastes. Garnish with sliced
green onions and sauted tasso.
