Durante la fermentacin, hay varios factores que los fabricantes de vino deben
tener en cuenta. El ms notable es el de la temperatura interna del mosto. El
propio proceso bioqumico de la fermentacin crea una gran cantidad de
residuos de calor que puede sacar el mosto del rango de la temperatura ideal
para el vino.
