Tom Pemberton

Tom Pemberton (born 1969) is an English chef who


cofounded the Hereford Road restaurant off Westbourne Tom Pemberton
Grove, London. He was previously Head Chef at the
celebrated St John Bread and Wine in Spitalfields, which is
most notable for its use of offal and often neglected cuts of
meat. Most of his dishes are traditional British cuisine or
variants of such.

Celebrity chefs Anthony Bourdain and Mario Batali both


praise St John for its dishes which optimise British food
whilst also making full use of the whole animal.

Pemberton trained under Fergus Henderson at the original St


John in St John Street in Smithfields, and has also cooked at
the Chelsea Arts Club and the Anglesea Arms gastro pub in
Hammersmith.
