General Description
Biofine FD is a purified isinglass finings agent consisting of collagen produced from the traditional source, fish swim
bladders. Biofine FD is supplied in an easily dispersible (rapidly soluble) powder form.

Application
Biofine FD is used as a processing aid to flocculate yeast and protein in the manufacture of beer and wine.
Beer
Dose rate will be the region 15 -35 ppm of beer

Wine
Biofine FD is primarily used in white wine fining, as colour loss may be associated with treatment of red wine.
Dose rate will be the region 5 -10 ppm of wine

Appearance : Light cream coloured powder

Salmonella absent in 25g

*It is recommended that a fining trial is performed to determine optimum dose rate. (Method of optimisation is

USA
Isinglass is listed as Generally Recognised as Safe (GRAS) by the Food and Drug Administration (FDA) under 27
CFR 24.
Isinglass is recognised for use in beer as referred to in the Adjunct Reference Manual dated 30/06/1989.
Isinglass is approved to clarify wine GRAS as per FDA advisory opinion dated 25/02/1985

UK
Isinglass is approved as a processing aid in beer under FAC/REP/26 1978, based on a typical solution (range 0.05 -
2.0%) as applied in beer treatment.
Local food regulations should always be consulted with respect to specific applications and necessary declarations.
Legislation may vary from country to country.

Storage
In unopened original Kerry Bio-Science packaging, Biofine FD has a shelf-life of 24 months from date of manufacture.
Store in cool, dry conditions (5oC - 20oC).

Product stored longer than recommended shelf-life should be retested before use, to confirm quality. Kerry will be
happy to perform this function and/or send details of the assay procedure to be used.
