CHAPTER I: INTRODUCTION

Background

Bananas as part of everyday eating habit, is usually served as raw or as an ingredient in

different kind of dessert. For an instance in banana split, bananas were included as what it is. It

can also be cut and put as additional in Philippines best dessert called Halo-halo. It may also be

the famous dried banana chips, banana cue, and turon. These are the usual use of banana and this

fact leads the researchers to innovate bananas to be used uniquely and easy to prepare. Bananas

nutritional benefits is also one of the factor that the researchers consider to make it as a spread and

jam.

Banana is a sweet and creamy fruit it will surely be loved by children. Since it is a local

and a common fruit in the Philippines, it is easy to find and very affordable. By means of that, the

common and usual raw eating banana can be turned into a spread and jam that can fill any kind of

bread or even crackers.

Statement of the Problem

The study aspired primarily, to search for alternative ways of filling the sandwiches in an

innovative way by discovering banana as a spread. Secondarily, make a different and simple

preparation of it right in ones home aside from the usual desserts and eating raw banana, which

currently dominate in the market. Lastly, to disseminate the information on how to augment a
nutritional need within in reach and friendly to the pocket. The study addressed the following

specific questions:

1) Is the product can be an alternative for kids pangbaon?

2.) How long can the end product be stored?

3.) Is it more effective to store it in a room temperature or refrigerate it?

4.) What are the benefits of considering banana as a filling?

5.) What kind and how many bananas should prepare to meet our nutritional needs?

6.) What are the nutritional values of banana spread?

7.) Can this research work possibly be pursued in the future?

Importance and Significance of the study:

Banana is known as a creamy, rich, and sweet fruit. This is a favorite food for everyone from

infants to elders. They are a good source of both vitamins and minerals, as well as fiber.

To parents, usually woke up early in the morning just to prepare food for their kids. So the

researchers come up with this study as a helpful tool for parents in preparing a resourcefully cheap

and affordable baon for their kids. It acts as an inexpensive insurance against nutritional

deficiencies.

To children, carrots may get all the glory for helping your eyes, but bananas do their share

as well. The fruits contain a small but significant amount of vitamin A, which is essential for

protecting your eyes, maintaining normal vision and improving vision at night, according to the
National Institutes of Health. Vitamin A contains compounds that preserve the membranes around

your eyes and are an element in the proteins that bring light to your corneas. Like other fruits,

bananas can help prevent macular degeneration, an incurable condition, which blurs central vision.

Bananas may not be overflowing with calcium, but they are still helpful in keeping bones strong.

And because of these ideas the researchers are really persuaded to make this product for the fact

that it will really help children to grow and can make them a healthy person.

Scope and Delimitations

The only downside with bananas is that some people may get constipated. If this is the

case, then maybe they can mix their bananas with other fruits like papaya and watermelon to loosen

bowels. Taking in lots of water also helps.

Banana, being high in starch can cause serious tooth decay if people dont maintain proper

dental hygiene. According to certain studies, bananas can be even more detrimental to oral health

as compared to chocolates, red licorice, and chewing gum. Starches dissolve slowly in the mouth

whereas sugars dissolve quickly. Therefore, when consuming foods like bananas, their particles

rest between the teeth for about two hours and thus attract more bacteria, resulting in more cavities.

So that, parents should teach their children on the proper ways of cleaning their teeth.

If people indulge in bananas that arent ripe enough, they may end up with a severe stomach

pain. They may also experience nausea along with the abdominal pain. Unripe bananas contain a

high amount of resistant starch that takes a long time for your body to digest. They may also

experience immediate vomiting or diarrhea.


Some individuals who was allergic to bananas can also experience a serious immune

response with a sudden drop in blood pressure. Their respiratory troubles inhibit blood oxygen

levels from rising, and they can experience shock. Watch out for symptoms such as increased or

reduce pulse rate, light-headedness, and faintness. A study conducted by the Journal of Medical

Case Reports reveals such extreme cases of banana allergy even in infants. The study further

suggest that while introducing solid foods to their babies, parents must be cautious and consider

banana as a potential allergen.

Definition of terms:

Allergen- a substance that causes an allergic reaction.

Spread- Spreads are added to food in order to enhance the flavor or texture of the food, which

may be considered bland without it.

Jam- Fruit preserves are preparations of fruits, vegetables and sugar, often canned or sealed for

long-term storage.

Vitamin A- is key for good vision, a healthy immune system, and cell growth.

Calcium- is required for vascular contraction and vasodilation, muscle function, nerve

transmission, intracellular signaling and hormonal secretion.

Starch-a white, tasteless, solid carbohydrate occurring in theform of minute granules in the

seeds, tubers, and other parts of plants.


Constipated- it refers to bowel movements that are infrequent or hard to pass. The stool is often

hard and dry.

Nausea- is a sensation of unease and discomfort in the upper stomach with an involuntary urge

to vomit.

Minerals- help your body grow, develop, and stay healthy. The body uses minerals to perform

many different functions - from building strong bones to transmitting nerve impulses.
CHAPTER II: REVIEW RELATED LITERATURES AND STUDIES

A. RELATED LITERATURE LOCAL

The banana industry is projecting a drop in production after the first quarter of this year
following the onslaught of the El Nio phenomenon in the country, an official said. He emphasized
that aside from drop in production, effects like bunches of fresh bananas will weigh lighter, banana
fingers will be smaller and insects and pests population will trigger, among others will also be a
challenge that El Nino will bring. (Sun Star, Ace June Rell S. Perez, February 23, 2016)

The researchers found out that even if the bananas isnt seasonal, there is still
factors that limits the availability of the bananas. Like some phenomenon that was unstoppable, it
is also considered to be a factor when you are going to do homemade banana jams and spreads.
During El Nio, you might no find some good quality bananas to do your jams and spreads. Since
el nio affects the bananas, it is not good to make some spread and jam during this seasons.

B. RELATED LITERATURE FOREIGN

If youre one of those people who generally eats bananas quickly enough not to lose them

to spoiling, youll benefit from a banana hanger (if you dont already have one). If you need your

bananas to last as long as possible, separate them and wrap each individual stem with plastic cling

wrap. Lay them on padding such as a towel. Once bananas are at the desired ripeness, you can put

them in the refrigerator. The banana skins will brown and eventually turn black in the fridge, but

bananas are fine to eat. Many people also peel bananas once they are ripe, put them in a plastic

freezer bag, and then put them in the freezer for smoothies later. (Organic Lifestyle Magazine,

One of the problems stated by the researchers is on how will they store the bananas and

how they will prolong it without spoiling it. Basically, according to this research it is said that

storing it to a colder temperature or refrigerating it will prolong its life. Another tip from the

research is that the bananas should be separated from each other to prevent spoiling. The

researchers recommend using unripe bananas or the green one to make the spread and jam prolong

its life.

Bananas are very easy to digest and rarely cause allergic reactions. Bananas are part of

the BRAT diet, a diet many physicians recommend for children recovering from gastrointestinal

problems, particularly diarrhea. (Phytojournal, K. P. Sampath Kumar, September 2012).

In contrast to the weakness of the product formulated by the researches, according to the

literature written above even though bananas may cause allergies to those children who has weak

kidneys, it is good to those children suffering from gastrointestinal problem like diarrhea. The

researchers thought that it would be easy for the parents to make their child eat bananas without

the children knowing that it was banana. The researchers innovated it to become spread and jam.

It is also good since bananas rarely cause allergies.

Bananas are a sugary fruit, which usually is not a problem for most people. Since it is
natural sugar, it does little harm, other than boosting caloric intake. However, if you overdo it, you
can experience all the usual disadvantages of eating too much sugar, including tooth decay. The
acid from too many bananas can eat away at your tooth enamel, damaging your dental health.

C. RELATED STUDIES - LOCAL
Biologists claim that the banana specie "Musa Acuminata Lakatan" or simply "Lakatan"
in the Filipino language is most common in the Philippines and is believed to be the most favorite
dessert banana among Filipinos. (Philippine Star, 2015)

In the said study, Lakatan is the most common banana here in our country. Within this fact,
the researchers conclude that the product wont give them a hard time searching for the main
ingredient because this can be bought in any wet market. The researchers believed that if they used
Lakatan Banana as their main ingredient, they will meet the satisfaction of the Filipinos when it
comes to its taste. (Philippine Star, 2015)

Whats in a banana? A small-sized, 6.5-inch banana (lakatan variety) contains the


following: weight: 100 grams; calories: 90; vitamin A: 64 IU; vitamin B (thiamine): .04 mg;
vitamin C: 10 mg; calcium: 8 mg; iron: 0.4 mg; phosphorus: 28 mg; potassium: 360 mg;
magnesium: 27 mg; zinc: 0.2 mg; carbohydrates: 23 grams; and protein: 1.2 mg. Based on these
nutritional values, we could make a case for banana as a natural multivitamin. Between banana
varieties, the lakatan type (yellowish and tastier) has a higher vitamin content compared to the
latundan (white with thinner skin) and saba variety (used for bananacue). (Philippine Star, 2015)

In the research mentioned above, it is proven that the lakatan specie of banana is the most
nutritious of them all. This is also a factor that the researchers consider in choosing their main
ingredient in this product. Since the researchers believed in todays generation who probably
dislike fruits and vegetable and given that the researchers were marketing for the taste of the
children, it is important to produce an innovative product that will make the children like its taste
and at the same time attain the nutritional benefits of the said product.

Bananas may prevent childhood asthma. A European study of 2,640 primary school
children in South London concludes that eating bananas at least once a day reduces episodes of
wheezing and asthma attacks in children (Philippine Star, 2015).
Banana is undoubtedly the most common important fruit in the province. It is the only

fruit that abounds in the market anytime of the year. This is because the fruiting of banana is non-

seasonal, hence, its fruit is available all the year-round, unlike many other fruits, which are

available only during certain time of the year. (Lakatan Banana Production, Bohol Local

This research only proved how bananas were accessible to everybody. Since bananas were

commonly found at the nearest wet markets, It is easy for them to find the main ingredients banana.

It is highly recommended to use bananas since it was famous even outside the country. Not just

because it was eaten raw but because it is nutritious that makes it compatible with the children.

The researchers idea of making the product for the children is innovative. Since it was

proven in the study that bananas were hand carry. The children can bring their bananas anywhere.

D. RELATED STUDIES FOREIGN

Consuming bananas, oranges, and orange juice in the first two years of life may reduce
the risk of developing childhood leukemia. As a good source of vitamin C, bananas can help
combat the formation of free radicals known to cause cancer. High fiber intakes from fruits and
vegetables like bananas are associated with a lowered risk of colorectal cancer.
This research also tells the researchers that the market target they choose is perfectly
matched with the health benefits that the product can give. Since our country promotes pollution,
the researchers can honestly say that asthma is inevitable. According to the study mentioned above,
Bananas can prevent and lessen the asthma attacks of the children. It is also said that it may prevent
the development of childhood leukemia. Generations today, including the children doesnt usually
love bananas or such fruits for they like to eat sweets like chocolates. The researchers came to an
idea to innovate the use of banana to make it possible for the children to eat a sandwich filled with
the banana spread or jam without making them hate its taste.

Bananas are rich in a mineral called potassium. This mineral is important as it helps
maintain fluid levels in the body and regulates the movement of nutrients and waste products in
and out of cells. Potassium also helps muscles to contract and nerve cells to respond. It keeps the
heart beating regularly and can reduce the effect of sodium on blood pressure. Potassium may
reduce the risk of kidney stones forming as people age. In turn, healthy kidneys make sure that the
right amount of potassium is kept in the body. One medium-sized banana contains 422 milligrams
of potassium.

Consuming too much potassium can be harmful for those whose kidneys are not fully
functional. If your kidneys are unable to remove excess potassium from the blood, it could be
fatal.

Some people may have an allergy to bananas. If anyone with a banana allergy eats a
banana, they may experience symptoms in the mouth and throat such as itching, hives, swelling
and wheezing. Bananas may trigger migraines in some people. People who often experience
migraine headaches are advised to eat no more than half a banana daily. Bananas also contain a lot
of fiber. Eating too much fiber can lead to bloating, gas, and stomach cramps.
These researches contain the strength and weakness of bananas. In the good side, banana
is a fruit that is known to be a fruit that provides potassium. According to the research, bananas
can be also harmful to those who have allergies in bananas so the researchers highly suggest that
do not eat their products when they have allergies or if their kidneys were not working well. If they
werent aware about their allergies, the researchers found out some symptoms that can be their
basis to know if they were allergic or not. Since bananas were said to be rich in fiber, eating too
much may cause stomach cramps.

Over 90% of the calories in bananas come from carbs. As the banana ripens, the starch in
it turns into sugar. For this reason, unripe (green) bananas are high in starch and resistant starch,
while ripe (yellow) bananas contain mostly sugar. Bananas also contain a decent amount of fiber,
and are very low in protein and fat. Many different types of bananas exist, which causes the size
and color to vary. A medium-sized (118 grams) banana contains about 105 calories. (Authority

According to this study, when the banana ripens, the starch turns into sugar so the
researchers comes to a conclusion that too much banana were not good to those who is diabetic.
The researchers highly recommend to use green bananas or the unripe ones not just to prevent it
from spoiling but also to lessen the sugar that it will may contain.
CHAPTER III: METHODOLOGIES

Overview of the Chapter

This study was conducted in order to assess the need of the household in terms of spreads
that is pricy in the market. The researchers are able to gather the necessary data; we the researchers
utilized the descriptive method, using qualitative and quantitative approaches. Herein, the chosen
responded were randomly selected on different sections of Business Administration with their
respected majors. The surveys were the research instruments used fir the data-gathering.

The students of Pamantasan ng Lungsod ng Marikina, Business Administration students,


who have been chosen in this study, accomplished a survey questionnaire to evaluate the certain
preferences for our specific target market in this survey. Relevant literatures were also used to
support the gathered findings.

The genuineness of findings and conclusions extensively depend on the eminence of the
research design, data collection, and data analysis. This will be dedicated to the description of the
methods and procedures done in order to obtain the data, how they will be analyzed, interpreted,
and how the conclusion will be met. This section is to justify the means in which the study was
obtained and will help in giving it purpose and strength as it will then be truthful and analytical.
All these will help in the processing of the data and the formulation of conclusions.
Specifically, this research will cover the following the research design and method, the respondents
or subjects to be studied, the data collection instrument and the data analysis.

Research Method

The researchers chose Surveys classified according to focus and scope. A survey that
studies a portion of the population is known as a sample survey. Seeking information from a large
group can be very expensive so the researchers use sampling techniques and use the information
they collect from the sample to make inferences about the population as a whole.

Process
Simple Procedure
1. Prepare all the materials needed.
2. Dice the bananas into small pieces and squeeze the lime juice.
3. Heat the pan then add water and sugar then stir until the sugar will dissolve.
4. Add the bananas at the pan and add a pinch of salt and stir until its sticky and golden brown
5. Put it inside the sterilized jar. And your jam is done.

Output
The researcher decided to make attention and use banana as prime ingredients because of its usual
use and affordable price in the market also the researcher use the idea of using banana as
alternative and nutritious filling to a bread and sandwiches. The result is a natural, nutritious
affordable innovative and delicious Banana Spread.

that would be created would work towards encouraging healthy eating habits and food
businesses. This may say that the researchers idea is directly affected by political aspect

Economical Factor
Consumers spending and Disposable income the Banana Spread is a cheap but healthy
filling that the people could have the opportunity either to save money or minimize its expenses
because of its cheaper cost. This also will help the economy to decease the rate of unemployment
by being engage to business and in term of business minded person, the product will able to
provide a better source of income that will be a helpful to our economic growth.
Ease of doing business- the researcher found that this study could be develop with an
easy and simple business effort that will produce an income. This business doesnt need much
requirements to be able to operate and its materials is just an environmental and commonly seen
in the market in a cheaper prices.
Social Factor
Consumers attitude and opinion- the way people think will directly affected the peoples
decisions making. The researchers found that the decision of people sometimes depend on their
usual routine. The effect of this is that people stay on their own safety zone and some business is
hard to be notice because they stay and use what there usually buy and use. The researcher make
a traditional break out by having a different and innovated product but still use those common
ingredients.
Population Growth rate and Age Profile The researchers target market are those mother
who prepare nutritious snacks and food for their kids, so there a huge rate of target market that
this study because the product is a nutritious and innovated product and it include an opportunity
for future business and to make income for the satisfaction of human needs.

Technological Factor
The researcher found that the product lifespan is limited to 1-3 days when it is in a room
temperature, while using the cooler or refrigerator will help to prolong the products life span to 1
-2 weeks, also because of technology the tool to use to create the idea and make it an actual
activity.
Internet and social media has a big contribution in spreading the knowledge about this new found
product to inform and for other people to become interested into it

into it while 5 of them want to add some salty taste and the remaining want to make it quite sour.

Chapter V: Summary, Conclusion and Recommendation

Summary

First, the researcher made a problem based on their observation in filling

sandwiches. They got some information about the procedures in making a banana spread.

The researcher thought that this research is easy to do but they found out in the end, this is

quite difficult.

Second, the researcher found some local and foreign literature about the product.

They used the information of local and foreign literature and studies to know the capacity

or availability of goods in particular period of time. They conducted a survey to know if

the respondent agreed or like the product that will serve as example product. Because of

the local studies and literature, the researcher creates data analysis to identify and to know

the benefits that will receive in our body.

Lastly, the researcher collected the information above to evaluate the result of the

survey questionnaire. The result of that will be the basis of the product adjustment if there

is mistake in comes in packaging, taste, physical appearance, and serving.

Conclusion

The researchers therefore conclude that the product is perfectly matched with the

market target. Bananas is said to be one of the best pangbaon. Banana spread can be stored
after three days to one week. If its in a room temperature it will last long one to three days

and if the banana spread or jam is in refrigerator, it will last long up to one to two weeks.

The benefits that will receive of the body when we eat banana are potassium,

magnesium, fiber, vitamin A, B and C. Based from the research conducted by the

researchers, three pieces of banana (lakatan) is needed to make banana spread so that this

banana spread will trend in the future because of the result of the survey that lakatan banana

is the most common based on the respondents. According also to the researches lakatan

to help improve eyesight and it is good for those who lack potassium. The advantage of

this product, it is made in the Philippines and this is a tropical country. The banana is very

useful in this country, because it is non-seasonal and accessible to anyone who wants to

avail. Philippines are rich in fruits and vegetables. Base on the survey that we conduct,

more than half of the correspondent choose that they will buy this product in the future

because its delicious. In addition to this the result of the survey supports the main objective

of the researchers to produce a nutritious but affordable kind of spread. Some of the

respondents failed to recognize the products as made with banana which is a good sign that

the researchers are able to produce a product that will make the children eat a sandwich

without recognizing that it is made with fruit. The mother of the children interviewed

suggested that the product is profitable in the near future. Therefore, the product only

proves that it is possible to produce a banana made spread that will provide nutrition

benefits to the children who are going to partake it.
