RINGKASAN
Edible film merupakan alternatif bahan pengemas makanan yang ramah
lingkungan karena bersifat biodegradable, bahkan dapat dimakan oleh manusia. Namun, saat ini edible film belum dapat mengantikan fungsi pengemas sintetis secara penuh, oleh karena itu perlu dilakukan pengembangan terus-menerus untuk memperbaiki sifat fisik maupun mekanik dari film yang sudah ada. Edible film dapat dibuat dari tapioka, namun edible film yang dihasilkan masih memiliki tekstur yang mudah patah dan transmisi uap airnya cukup tinggi. Untuk memperbaikinya diperlukan penambahan plasticizer untuk memberikan sifat elastisitas, salah satunya yaitu sorbitol. Sorbitol merupakan golongan poliol yang mampu menstabilisasi kelembaban dan meningkatkan elastisitas pada film yang dihasilkan. Tujuan dari penelitian ini adalah untuk mengetahui konsentrasi penambahan sorbitol yang tepat sehingga dapat meningkatkan sifat fisik dan mekanik edible film dari tapioka, dan untuk mengetahui biaya proses produksi berserta HPP edible film tapioka. Manfaat penelitian adalah memberikan informasi pembuatan edible film dari tapioka dengan sifat fisik dan mekanik yang baik, mengurangi dampak pemakaian plastik yang berbahaya bagi lingkungan dan kesehatan, memberikan informasi biaya proses produksi berserta HPP edible film tapioka, serta membuka peluang terciptanya industri baru bahan pengemas yang ramah lingungan berbasiskan bahan alami. Metode penelitian dengan eksperimental modifikasi metode Purwitasari (2001) dengan menggunakan RAK faktor tunggal, terdiri dari 4 perlakuan kombinasi konsentrasi tapioka (T=3% (b/v)) dengan konsentrasi sorbitol (S0= 0 %; S1= 0,1 %; S2= 0,2 % S3= 0,3 % (v/v)). Edible film terbaik diperoleh pada konsentrasi tapioka 3% dan konsentrasi sorbitol 0,2% dengan nilai transmisi uap air 0,067 g.mm/m2.24 jam; perpanjangan 77,66%; kuat tarik 10,87 N/cm2; ketebalan 0,095 mm; kecerahan 71,20 dan kadar air 12,21%. Total biaya produksi dari 6.400 lembar edible film selama satu bulan sebesar Rp Rp 1.504.287,49 dan HPP per kemasan Rp 9.401,79. Tiap kemasan berisi 40 lembar dengan ukuran 30 x 25 cm.

SUMMARY
Edible film is considered as alternative food packaging material which is
friendly towards environment because it is biodegradable, even it can be eaten by human. Yet in this time edible film has not replaced the function of synthetic packaging fully yet, therefore it require to be conducted by continuous development to repair the physical and mechanical characteristic of film that has been existed. Edible film can be made of tapioca, but yielded edible film still have breakable tekstur and its high water vapour transmission rate. To repair it needed by addition of plasticizer to give the character of elasticity, one of them that is sorbitol. Sorbitol represent faction of poliol which able to stabilize dampness and improve the elasticity of yielded film. The intention of this research is to know the proper concentration addition of sorbitol so that can uncrease the physical and mechanical characteristic of edible film of tapioca, and to know the expense of production process and also based production price of edible film of tapioca. The significance of this research as to give information about how to make edible film from tapioca with good physical and mechanical characteristic, lessening the impact of dangerous plastic usage for health and environment, giving information about the expense of production process and also based production price edible film of tapioca. Also open opportunity for creation of new packaging material industry which is friendly towards environment and having natural materials bases. Research method with eksperimental modify method of Purwitasari ( 2001) by using group random device single factor, consist of 4 treatment of concentration combination of tapioca ( T=3% ( b / v)) with concentration of sorbitol ( S0= 0 %; S1= 0,1 %; S2= 0,2 % S3= 0,3 % ( v / v)). The best edible film obtained by concentration of tapioca 3% and concentration of sorbitol 0,2% with water vapour transmission rate 0,067 g.mm / m2.24 hour; elongasi 77,66%; tensile strength 10,87 N / cm2; thick 0,095 mm; brightness 71,20 (L*) and moisture 12,21%. Total cost production from 6.400 sheets of edible film during one month is equal to Rp 1.504.287,49 and cost of goods manufactured is based production price equal to Rp 9.401,79 per pack. Every pack contain of 40 sheets of edible film with size 30 x 25 cm.
