Dear customer,
You have just been choosing a CPRO or CPLUS from Hobart and we thank you for trusting our
company.
Your new COMBINATION Oven comes from an eco-design approach bringing you ease of use and
important savings of water and energy.
You should only rejoice this product.
Therefore, we let at your attention this complete and clear installation manual.
It will give you a full description of all functions and also to find all the advice and comments for the best
use of your COMBINATION and the perfect preparation of perfect dishes.

Please read carefully this manual before using your Hobart oven.
1.0 FOREWORD.
Hobart reserves the right to alter the design of their products without prior notice.
Whilst every effort is made to ensure this publication reflects the latest design, the Company cannot
guarantee full compliance.
Take pride in your Combi - keep it clean and in good mechanical and electrical condition.
If the machine is used other than in the prescribed manner, the operator will be responsible for his/her
own safety and for the safety of the other persons who may be involved.
The information in this manual has been prepared to assist the operator to understand, maintain, and
operate the combination oven. In order to prevent accidents, read, understand and follow all the
precautions and warnings contained in this manual before installation or operating for the first time. This
manual must be studied to obtain a clear knowledge of the combination oven and its capabilities.
Hot water, steam and electricity are dangerous and may cause injury if sufficient precautions are not
taken prior to operating or servicing the combination oven.
Before installing the unit, make sure that the power and the frequency correspond to the one given on
the technical data plate. These must correspond in order to avoid any possible damage to the machine
and/or operator. If you are uncertain, please ask to a qualified technician.
Ensure the electrical supply has been isolated and ALL pressure has been vented and water drained
before commencing work to dismantle the water/pressure system.
In certain fault finding situations it may be necessary to operate the machine full of hot liquid; in which
case extreme caution must be used. Only suitably qualified personnel must service the steam cooker.
This unit complies with the CE mark. It respects the Low Voltage norm and the Electro-Magnetic
Compatibility (EMC).
The Hobart oven complies with all relevant safety standards. However, it doesn’t eliminate any risk such
as the ones resulting from a unauthorised practices and usage of the oven. The operators should also
respect the following instructions.
Non authorised maintenance or cleaning and modifications made to the unit by non qualified technicians
may cause a definitive failure of the oven and pose risk of injury to the operator.
Please read carefully the instruction manual and ensure suitable training is undertaken for all persons
who will be using the oven.
Make sure that the installation, the maintenance and the modifications to the unit are appropriate and
made by qualified technicians.
Environnement
Do not use the unit in a toxic or explosive environment.
Do not use the oven if the temperature is below 4°C. Some components might be damaged. If
the oven has been moved from a cold place (plane hold, ware house, etc,…) to its installation
location, wait untill the oven has reached the ambient temperature before turning on the electrical
supply.
Do not store gas or flammable liquids near the oven. They would be a potential fire hazard due to
the heat generated in operating the oven.
Avoid placing the oven near equipment using hot oil (fryers etc). Water spilt or transferred onto
hot oils/greases presents a high risk of burn.
Handling
Wear suitable gloves or other protective means to remove cooking utensils (pans, trays, core
temperature probes…) from the oven cavity as it is cooking. Caution: They may be very hot.
Remove the core temperature probe from the food before removing them from the cavity.
Do not let the core temperature probe hang. Store it inside the storage compartment in the front
cabinet below the display.
When using pans containing liquids or food giving a lot of liquid while cooking, use the racks
which below 1.6M height as identified to avoid the risk of over spillage and burns.
Cooking
Do not heat up flammable products.
If you have to open the door during cooking, it is recommended to slightly open it to let steam
escape and the fully open. This would avoid potential risks of steam or heat contact which could
cause burns when a big quantity of steam escapes from the cavity.
Do not watch inside the vent pipe nor leave the hand above it. Evacuated steam/heat at the same
temperature of the cavity may be evacuated there.
Maintenance
Isolate the mains services before undertaking any service operations and before opening of the
side panel(s) or of the display board.
If you notice that one of the door glass is damaged (scratch, notch, cracks…), have it changed
immediately. It might break if you were using it.
It is very important to descale your oven to ensure optimal and secure operation
of your oven. Your water consumption will thus be even lower than the rate of
scale formation will be low.

a. transportation
Make sure the equipment hasn’t been damaged during transportation.
Move the appliance still packed with a fork lift truck or other suitable means ensuring it is not tilted.
For any handling, the appliance should be in the vertical position and care should be taken to protect the
service pipes located under the unit.
To lift the oven, don’t take it from the front but sideways.
b. Unpacking.
Before unpacking, make sure that the protective packing film is not perforated. Damage caused during
transportation must be notified to the carrier on receipt of delivery.
Using suitable tool cut and remove the steel packing bands bands. Remove the outer carton. Inspect to
ensure that the appliance is not damaged.
For any claim concerning transportation damages the carrier must be advised immediately.
c. Precautions of Installation
Do not site the oven against the wall to allow ventilation. Recommended distances must be adhered too
(see below).
Do not install with the sides close to a hot source.
The surface on which the oven stands must be flat, horizontal and must be able to support the weight of
the unit. The machine must be secured in position.
Make sure that no flammable equipment is nearby the unit.
Adjust the stand by setting its feet at the right height.
Installation Distances :

Other Precautions: 1) at least 500 mm from the side of the desk so close to heat source
2) 300 mm recommended side of the desk for easy access to the Service
Technique
Note : Distances less than recommended on the control panel side when next to heat source an
insulated side panel must be fitted to the machine. Failure to adhere to these instructions could
invalidate your warranty.
Locate the oven into the position required. Make sure that the trolley locates and fits in easily.
If there is a floor grid in front of the oven, install metal strips to allow passage for the wheels of the
trolley.
After correct and level location of the oven verified, adjust the feet in order to align it to the trolley.
Note: shims are supplied for additional alignment and adjustment to the trolley as required.
Handling of the 20 level preheating device with the door being opened :

The floor has to be absolutely flat. The oven/trolley interface works only under
that condition.
After heating up the oven, double check the oven installation for correct alignment.
The 20 level units have to be fixed to the floor (2 fixing kits provided with the oven) or fixed to the back
(parts to be purchased).

a. Water connection
Connection on cold potable water supply.
Note: An approved double check valve must be installed upstream to the appliance
Minimum permissible operating pressure 250 kPa; maximum pressure 500 kPa.
Provide suitable was approved ½” hose with R ¾’’bore BSP union nut stopcock and line strainer.
If water harness is above 5 °e Clark, a suitable non base exchange water softener for the boiler
less model should be installed. The site water quality must be checked both prior to e correct
requirements are met.
Water conductibility has to be between 10 and 200 µS/cm.
When the oven is not in use (e.g. during the night) turn off the mains stopcock.
The machine is a dual fill unit. In order to use less potable softened water, remove the dual fill manifold
and connect the softener on the connection given by the sticker on the back panel.
d. Exhaust air
Exhaust air should evacuate in the room, if possible into a canopy.
Do not cover the exhaust air opening.
Danger of injury: The exhaust air temperature can be as high as that in the cooking compartment.
f. Checking
Compare the data given on the data plate with that for the bulding’s power supply and the circuit
diagram.
Check that the fuse protection and cables are adequate for the current load.
a. First operation
Turn on the mains water supply.
Ensure the non return component of the chemical tube is connected and placed into the correct chemical
(detergent or descale as applicable).
Make sure that suction pipes for detergent and descale product are correctly
connected.
Before using the unit, heat the oven up to 250°C in convection mode. A smell and some smoke may
occur, this is considered as normal, if it persists, switch the machine off and call Hobart.
Let the oven cool down. Clean the oven (see refer to Instruction Manual).
Then, check the oven operating in steam and combi (convection and steam) modes.

20 levels unit:
Make sure the floor is horizontal under the oven.
When the oven is used with a monoblock trolley and when this one is not in place inside the oven, the
interlocked preheating plate must be in place for the oven to operate.

Oven turned off, connect the USB stick – Simultaneous long press on and .
Then, manual activation of the 10 inputs En (0 = non activated input; 1 = input activated) then activation
of the 14 outputs So and of the thyristors Th, by pressing and visualisation of the temperature of

- CPLUS oven
Switch off oven (under power, but display is blank) - Long and simultaneous press and .
Then manually prime the cleaning pump by pressing . Press to stop the pump.
A cavity rinse is automatically done every time the pump is being primed.
Anticipate 2 minutes for the rinse.
- CPRO oven
Proceed like that every time a canister of cleaning or descale product is being changed.
A cavity rinse is automatically done every time the cleaning pump is being
primed.
Anticipate 2 minutes for the rinse.
A cavity rinse and a boiler drain are automatically done every time the descale
pump is being primed.
Anticipate 3 minutes.
With the rotary switch , select the field to be set: time, day, month, year, degree, buzzer volume,
language, pump activation and software version.
Press on to activate the selected field setting. Press again on to validate the setting.
- CPRO oven
Enter the water hardness in °e (Default setting is 13) on the lower screen by using
the left and right arrows.
Then back to stand by screen.
Frost Protection
When the oven is not regularly in operation or in very cold weather or if the room is not heated,
Drain the boiler,
Disconnect or isolate the water supply,
Drain the solenoid valves in removing the non return valves.

For the non blocking codes, it is possible to have the oven running in restricted mode by validation the
failure (press OK on CPRO in the failure window which appeared on the screen and on the key
IMPORTANT NOTE: If left grease deposits can/may catch fire. It is very important to keep
clean the cooking chamber and the inserts/trolley.
If the electrical power is interrupted during a cleaning cycle, a rinse cycle is run automatically to eliminate
any detergent product trace within the cooking chamber.
Do not wash the appliance with a spray gun or a high pressure cleaning
machine. The symbol «Danger» appears near the critical information for a
good operation of the unit.
- CPLUS oven

To ensure optimum operation of the boiler and low consumption, it is important to make regularly a
Descaling of the boiler. The oven indicates you the level of scaling depending on the hardness of your
water and indicates to you when your level of scaling is more than 80%.

Maintenance
Depending of the set water hardness, the following message will be displayed when the boiler is scaled
up. To avoid perturbing the cooking, this message won’t appear as the operator is in cooking mode. It
will be displayed only when the oven is switched on, when a cleaning program is requested or after a
boiler draining.
If you were pressing NO, you would be able to operate the oven normally. However, the boiler has to be
descaled as soon as possible. If the boiler were not descaled, it might affect the warranty as the heating
elements might be damaged.
The same message would appear every time one of the same circumstances (oven being switched on,
being cleaned, or after a boiler draining) occurs. Every time this message appears, it is recorded in the
diagnostic file.

Adhering to the de scale frequencies is important to ensure the efficiency of the boiler
and its life expectancy. An electric heating element covered with 1mm scale requires
15% more power and has its life expectancy reduced by a factor of 3.

Remember to empty your steam generator before transport or before a long idle time.
Note: All appropriate safety practices and procedures must be undertaken when servicing this
equipment.
This appliance has been designed and manufactured using the latest technologies.
It is important to instigate a full maintenance program to ensure the continued operation and reliability of
the machine. It is recommended to have at least one full service per year.
Please note that the frequency of service maintenance will depend on customer usage and may vary
due to this. Contact Hobart UK to discuss and arrange your service plan.
It is strongly recommended that service works are undertaken by a suitably trained and competent
person/technician.

- Switch the oven into sleep mode (Long press on ) – The time should be displayed.
- Select the file to download: Select « DIAG » for the diagnostic files using the rotary switch.
- Press on to start the transfer. An audible beep informs you when the transfer is
finished.
- CPRO oven:
- Identical to the file "diagnostic” (see above) with selection of "STAT" with

CPLUS Oven
Copy on a USB stick the two files to up date the oven without modifying the file names or the file
extensions names.

The updating will run automatically. A window indicates that the updating is in progress.
Be careful: Do not switch the oven off during files transfer as the board wouldn’t be updating via the
USB stick.
Files transfer will last a few minutes. At the end, the windows will disappear indicating that the transfer is
finished. The oven is ready to run with the new LCD board version.
The oven is updated.
Copy on a USB stick the two files to up date the oven without modify the file names or the file extensions

- Switch off the oven

- Switch on the oven.
- The updating will run automatically. File transfer will last about 30 seconds and then the oven will
run automatically. The new software number will be displayed in the right corner of the bottom
screen.
The oven is updated.

PROPERTIES :
Formulated starting from a strong alkaline base, the surface-active specific ones of vegetable
origin, the synergy of the unit gives to the product a great grease-removing power, a very
important effect drying and déperlant to avoid the effect of drops. Leave a perfect surface
quality after rinsing to water.
