Chipa

A traditional Paraguayan recipe made of corn flour and tapioca starch,


usually eaten in cold days or holidays.

Ingredients:
2,25 lbs Tapioca starch
18 oz Paraguayan Cheese
6 oz Lard, butter or vegetable butter
6 oz Corn flour
5 Eggs
½ cup Milk
½ spoon Anise
1 spoon Salt

Directions:
1-Place in a bowl the lard, eggs, salt, cheese and anise and mix them.
2-Slowly add the corn flour and tapioca starch and mix it again slowly.
3- Leave the dough for 20 minutes with a cover on.
4- Now you have to make different figures with the dough, like rings, balls, ducks, or the
traditional bread figure.
5- It’s usually baked in a traditional oven called “tatakua”, but a regular oven should do the trick:
(15 to 20 min at 350° to 400° f)
