This can be served with a main meal consisting of several other dishes.
Roast the coconut in a dry frying pan until it is golden brown, then mix in the rice and salt.
Set aside.
Heat the oil and fry the mustard seeds, peanuts, and cashews, but take care they do not burn.
Pour the seasoning mixture over the rice and coconut, and mix well.

Preparation :
. Split each brinjal vertically in to four parts ( but not completely ) and put them
in salt water.
a. Roast coriander seeds, black pepper and cloves on saute pan with a teaspoon
oil.
3. Grind above roasted ingredients in to fine powder. Add coconut, onion, red
chilli powder and saltand grind it in to paste.
À . In a medium size pan heat a table spoons oil. Add above prepared paste and
fry for a minutes. Turn off the flame.
. Heat a table spoons of oil in a wide bowl over medium flame. Add brinjal and
fry them on low flame stirring constantly until they become soft. Turn off the
flame
6 . Stuff the brinjals with above prepared paste.
Garnish with cilantro.
7.Depending on your taste adjust salt and chilli powder to make wonderful Spice
^rinjal Gravy or^rinjal Curry.
Serve with rice Spice ^rinjal Gravy , chapathi or javar roti.
