TOM’S TASTING TIPS

BUY It has been an incredibly dry few months, with the occasional cold snap here and there, and just as well,
for one of my guilty pleasures is to sit at night with a block of dark chocolate and a glass fortified wine.
Fortified wines can be broken down into four main categories: Muscat, Tokay, Port and Sherry, or as we
now call them in Australia, Muscat, Topaque, Tawny and Apera.
Muscat is made from Muscat Blanc á Petits Grains, more commonly known as Red or Brown Muscat.

Some characteristics that you will typically find in Muscat include raisins, candied orange, fruitcake,
$ 99 $ 99 toffee, date and sometimes rancio.
Tokay/Topaque is made from Muscadelle grapes. It has a similar lusciousness to Muscat, only with more
VARIETIES caramel, toffee and nut flavours. Topaques tend to finish a little drier than Muscat.
Port/Tawny is typically made from Grenache, Shiraz, Mourvèdre and Touriga. Its flavour profile can
change from chocolatey and fruity, to a lighter feel, packed with caramel, toffee, vanilla and orange
peel. It often reveals a slightly nutty character that is acquired through oxidation in the barrel.
Sherry/Apera styles range from being very dry or ‘fino’ to sweet and creamy. Fino Sherry is often very
light in colour, with light, almond-like aromas. Cream Sherry or Pedro Ximènez can be rich mahogany
in colour and velvety smooth in texture. Its flavour profiles tend to lean towards the toffee, fig, date and
molasses side of the vine.
The method for making these wines is essentially the same. The winemaker does not harvest the grapes
until very late in the season when they have started to shrivel like raisins on the vine. These shrivelled
grapes are then picked and crushed to create a thick, syrupy juice. Yeast is then added for fermentation.
To stop fermentation, a neutral grape spirit or brandy is added to the liquid and it is stored in old oak
barrels for ageing.
Ageing in barrels results in a five per cent loss of liquid through evaporation each year, this is known as
the ‘angel’s share’, and causes a concentration of the liquid. The final process is the blending, whereby
the winemaker draws the liquid from many barrels, sometimes as little as three per cent per barrel, to
produce the desired style they want for their wine.

Blanc temperature, they can also be chilled during the warmer months of the year. Surprisingly, they make a
great accompaniment for foods like pâté, terrine, soups and stews as well as spicy Asian cuisine and
sauced meats.
I can think of no better way to finish the day than with a small glass of a fortified wine. With so many

DINNER AT HUXTON'S
Popular Bronte café, Huxton’s, has expanded
its offerings and its hours, to cater to the
weekend dinner crowd. I found the dinner
experience to be quite different from lunch,

so much so that I felt like I was in a different
room. Knowing how good Huxton’s is during
the day, I was excited to try out their “Italiano

Nights”, which is held on Thursdays, Fridays,


and Saturdays.
Huxton’s let you bring your own wine, so you
can focus all your attention on the fabulous
food. While the menu is not large, it is still hard
to make a decision on what to order. Head
chef Lilly Fasan (ex-The Grounds of Alexandria)
looks after the daytime menu, while Jason
Roberts (ex-Bistro Moncur) takes over the pans Weidmann German Beer 24*330ml
when the sun goes down. They both do a
brilliant job of making the food appealing to
the eye and stomach.
I started the meal off with some sourdough,

olive oil and balsamic vinegar. Everyone


knows how central bread is to Italian cuisine,
and Huxton’s offering did not disappoint.
Blackened around the edges, the bread was
crunchy and smoky, a perfect complement
to the olive oil and bitter sweet balsamic.
The Caprese salad was just as delightful. It
may be a simple dish, but when done well,
it can be a real joy to eat. Huxton’s version is
made from juicy oxheart tomatoes paired with Peroni Nastro Azzurro 24*330ml
creamy slabs of buffalo mozzarella.
From the secondi menu, I tried a risotto studded with peas, fresh mint and ricotta, freshened with a

squeeze of lemon, and the linguine vongole, made with local clams and strips of zucchini. $

Last but not least, I tried the fish in a bag, which was cooked to perfection. The dish consisted of
mussels, green lentils and Tuscan cabbage, baked ‘al cartoccio’, an Italian cooking technique
which helps to seal in the flavours.
Service was also a standout and I appreciated the wait staff checking on me throughout the
evening. Warm touches, like the thoughtful heaters and blankets for the outdoor tables, ensure you
feel well looked after.
Owner Justin Bull said that they are toying with the idea on whether or not to keep the theme
Italiano Nights for the summer. Many people have said that they love Italiano Nights because it
has such a homely, family feel to it. They want to know what you think. Call and book a table for Tooheys New 30*375ml
dinner one night and let them know what theme would be cool to try.
This wasn’t my first visit, and it certainly won’t be my last.

PUMPKIN AND CHESTNUT SOUP


WITH PARMESAN CROUTONS
Chestnuts add a nutty twist to traditional
pumpkin soup recipe. Serve with loads of
ciabatta and parmesan to make it extra-hearty.

• 1/2 cup (125ml) extra virgin olive oil,
plus extra to drizzle

• 2 eschalots, thinly sliced
• 1 garlic clove, finely chopped
• 1 celery stalk, thinly sliced
• 3 thyme sprigs, plus extra leaves
to serve
• 250g butternut pumpkin, peeled,
cut into 3cm pieces

1. Preheat oven to 220°C. Heat ¼ cup (60ml) oil in a large saucepan over medium heat. Add
pancetta and cook, turning, for 2-3 minutes until crisp and golden.
2. Add the eschalots, garlic, celery and thyme, and cook, stirring, for 1-2 minutes until fragrant. Add
pumpkin and chestnuts and cook for 2-3 minutes until caramelised.
3. Add parmesan rind and stock, topping up with a little extra water to cover vegetables. Reduce

heat to low and cook for 15-20 minutes until chestnuts and pumpkin are tender and liquid is slightly
reduced. Season, then remove from heat and keep warm.
4. For croutons, toss bread with remaining ¼ cup (60ml) oil in a bowl and season well. Place bread on a
baking paper-lined baking tray and sprinkle with grated parmesan. Bake for 2-3 minutes until golden.
5. Remove pancetta, thyme sprigs and parmesan rind from soup and discard. Transfer soup to a
blender and whiz until smooth, then season with salt and pepper. Divide among serving bowls and
top with croutons and thyme leaves. Drizzle with oil to serve.
