Charlton says it took the family several years


before finally deciding to build the 168-room
Bayfront Hotel Cebu.
First, he conducted market studies and research,
then analyzed the information he had gathered.
The market studies confirmed their hunch that there
was a need for mid-range tourist accommodation
facilities in the port area. Before the Bayfront
Hotel was built, there were two hotels in the
area—the Radisson Hotel, which offers five-star accommodation,
and budget hotel Sugbutel. Confident they could
compete against these hotels, the family decided to put in a sizeable investment
in the construction of the hotel.The performance of Bayfront since it started
operations on Sept. 7, 2014 proved that the family’s decision to invest in the hotel
industry was correct.

Brief Description about the Restaurant


ANZANI is actually a family name of two heads, a husband and wife team, Marco and Kate
Dychangco-Anzani have created the brainchild of this dining destination in 2008. Perched on
the top of the Nivel Hills, the panoramic views of Cebu were translated and transformed to a
venue in which gourmet food, entertainment, comfort and style merge. Anzani is a showcase of
what Cebu has to offer sustainably home grown and global. The cuisine of the restaurant is
New Mediterranean in nature.
The business is run on a professional scale and level where hospitality and personal detail is
compounded resulting in team effort, result oriented leadership. Anzani offers Ala Carte cuisine
in the indoor dining room (seats 120). They also offer a private dining room, seats 8-10 people,
where the chef defines as the “red plate”. There is no menu. According to the chef’s creativity
and mood, he creates. In one occasion, he intrigued and bewildered guests with a bittersweet
chocolate ravioli in lamb tangine and sambucca foam reduction. Truly an experienced chef can
put flavours together to make a perfect balanced bite.

Another alternative when a guest arrives is the private underground wine cellar where guests
are welcomed to an old-world room, surrounded with 1,250 choices of wine. A Banuyo wood
table finds itself in the center of the room. Private wine tastings or food and wine pairings are
welcomed. This table is by reservation only.

Pre-dinner drinks or after-dinner drinks are also entertained in the extension deck of the
restaurant. The extension deck takes in the view of the mountains, overlooking orchid terraces.
Most expatriates linger in the deck as they breathe the fresh air of the mountains. Sundown is
best in the viewing deck. Many have chosen to use the deck for dining as well (Viewing deck
seats 40).

Anzani cuisine is NEW MEDITERRANEAN in nature. What is new Mediterranean most would
ask? The coastal Mediterranean flavor components are mainly with a base ingredient of olives,
oysters, tomatoes, goose liver, tangine’s, cheese & chocolate fondues, mezze’s, lemon rhubarb,
herbs and a combination of cheeses. In the pasta selection, Anzani has the famous black ink
fettucine with crayfish and lobster. The chef maximizes local ingredients and imports the
majority of produce all over the world.

Marco’s preparation and technique is in a different style and presentation quality. Every dish
represents a journey into a hitherto unexplored culinary terrain- from Italy to Turkey, from
Morroco to North Africa. On the 2012 Menu, he explores warm beetroot and parma ham,
introduces an ostrich carpaccio crumbled with goat cheese, showcases a cheese fondue and
while offering the comforting veal Milanese. He has introduced contemporary presentation and
showcases epicurean specialties such as alligator meat, bone marrow and calfs sweetbreads.
Anzani represents the comfort of home but to an individual but also represents a modern
representation to the more experienced palate.

A degustation journey is a more thought of process, combining flavours and pure


concentrations of flavour merged into beautiful artistry.

2016 is currently ANZANI’s year. With 8 years under their belt, ANZANI got
awarded as Restaurant of the Year 2016 by the Sun Star, and validated by Sakura
Magazine Japan. In the past, ANZANI has been titled as the must eat places for
Cebu” By Businessworld Magazine, Nominated and awarded by The International
Award for Tourist, Hotel and Restaurant Industry as the “Most Outstanding Dining
Destinations in South East Asia”. Presently, still holding a Cebu page for the
Philippine Tatler Group for the seal of excellence as the “Best of the Best in the
Philippines”.
On March 2014 Anzani has been pre-qualified and nominated as the “Best of
Cebu” on the shortlist of the Miele guide SouthEast Asia. And On September
2014, Anzani represented their brand and as the Philippine contingent in the
Hawaii Food and Wine Festival in Honululu. On November 2012, Anzani got
invited and nominated for the Hong Kong Wine show celebration. January 2013,
the Miele Guide Southeast Asia rates Anzani as “One of Southeast Asia’s best”

WITH Cebu experiencing the beginnings of a culinary renaissance, with a lot of


new and exciting restaurants and food experiences, we felt the need to give
recognition to one which is most geared to our hopes and expectations from the
food community in this landmark award for Sun Star Cebu’s Best of Cebu
Restaurant of the Year.

Since the beginning of the year, the panel has been welcoming nominations as
well as scouring the city for our personal choices. There were no particular
qualifications other than that these gave us great overall dining experiences.
Shortlists were thoroughly discussed and, with considerable deliberation, further
narrowed down to the final three for which we have tapped the expertise of an
external panel of judges who have practical experience in the kitchen, on the
restaurant floor and in the food industry at large. Care was also made to ensure
that our selections for that panel had neither affiliations nor conflicts with the
shortlisted establishments.

Since 2009, ANZANI New Mediterranean Cuisine brings culinary innovation in a


spectacular and unique dining setting in Cebu, Philippines. Five time awardee as
“best of the best”and “Cebu’s best”on the international sector for two straight

The initiative focused on improving productivity, sustainability, and
environmental management, as well as energy and habitat conservation. For

Many businesses pursue CSR activities that can best be termed pet projects, as

With philanthropy, for example, corporate donations confer the majority of
benefits on society (with potential but often questionable reputational benefits to
the business). Similarly, in what’s best referred to as propaganda, CSR activities
are focused primarily on building a company’s reputation with little real benefit to
society. Some cynics suggest that this form of CSR is at best a form of
advertising—and potentially dangerous if it exposes a gap between the
company’s words and actions.

None of these approaches realize the opportunities for significant shared value
creation that have been achieved through smart partnering. In such ventures, the
focus of the business moves beyond avoiding risks or enhancing reputation and
toward improving its core value creation ability by addressing major strategic
issues or challenges. For society, the focus shifts from maintaining minimum
standards or seeking funding to improving employment, the overall quality of life,
and living standards. The key is for each party to tap into the resources and
expertise of the other, finding creative solutions to critical social and businesses
challenges.

This segment will take guests around the side streets of the Mabolo area for a lazy
afternoon off the beaten path. We begin at Yolk for specialty coffee before having
a taste of Seoul at a nearby Korean strip. Leona’s is love for breads and baked
good personified and their award-winning Guava Cake is on our list. We move
further into the Mabolo with a visit to a popular hole-in-the wall Japanese
carinderia, Joed’s Lutong Hapon. A pit stop for the Meximama Cocina Latina’s
empanadas is next followed by the best and most-affordable fresh fruit shakes in
the city at Tropics fruit Bar, nearby. It is never a bad idea to swing by The
Chocolate Chamber every time one is in the area. Native Chocolate Truffles and
their High Tea set are highly recommended.

It has been said that the first two to three years is the most critical period that a
business must overcome because it could either break or make the business.
Managing a business is like running up against a hill, around the curve and down
the stream in all types of terrain and weather. It is physically punishing and
mentally debilitating. Luckily for Mr. Apollo Bala, the excruciating two years of
learning the innards of travel operation and waiting for brand recognition are
finally over as the wind has changed and the tide has turned for his travel agency
– True North Travel and Tours.

Mr. Bala is a retired US Navy who did everything to start and grow his travel and
tours business based in the Philippines. With Mr. Bala’s hard work, persistence,
and determination, his travel and tours company became one of the leading
agencies in Philippine soil which promotes travel packages at affordable prices.
Fellow retired US Army and Founder/Director of Virtual Retiree Activity Office
(VRAO) Cliff Lopez reached out to Mr. Bala to help in promoting his business to its
audience and follower potentially increasing his market share.

The company has been recognized as “THE BEST TRAVEL AND TOUR AGENCY” in
Caloocan City by The Best Choice Award early this year on January 29, 2016. The
said recognition was awarded to them because of their set of core values and
concepts that drive management excellence including visionary leadership and
management quality, innovative practices, market presence and product/service
quality.

The Best Choice Award seeks to promote an understanding of the requisites for
business and organizational excellence, enhancement of business performance,
practices and capabilities, and sharing of best choice for management practices

The following month, February 24, 2016, they were also chosen as the recipient of
the Philippine Awards for Customer Service Excellence 2016 because of the
excellent customer service they offer, which leads to customer and consumer

marketing industry. The Philippine Awards for Customer Service Excellence is an
annual systematic and ongoing individual and company recognition program
intended to give recognition and empower businesses to conduct extraordinary
customer service.

Recently, True North Travel and Tours has been recognized again as the Best
Travel Products and Services Provider on May 6, 2016. The citation was made as
the agency meets the standards of marketing excellence that warrant
commendation of consumers and the buying public. As a recipient of this
recognition, the travel agency has conferred the “SEAL OF EXCELLENCE” based on
consumer survey and market research, a joint project of the PCEM INC’s Market
and Data Research Group, the Global Awards for Marketing and Business
Excellence Council and the Marketing Awareness magazine.

To upend the challenging times up to the point of giving up was no easy feat, but
as Mr. Bala began to see the progression of his efforts coming to light, he can’t
help but relish the nirvana of accomplishment that he achieved thus far. It could
be a long and winding road to the top with bumps along the way, but there is no
turning back. The agency along with Mr. Bala’s vision and leadership, True North
will continue to stay on the course of progress, and VRAO will be there to
continue promoting True North. Why remain a runt if you can be a giant in the big
world of travel?
