The Provence of Zamora is a place of opportunities where many different


successful businesses support the people, among them is Mr. Luciano Torres who
with his great effort and dedication, two great qualities that characterize him,
achieved success with his business which is one of the best in Yacuambi and
Zamora.

Mr. Luciano Torres has been producing the liquor for around 20 years. To make
this product he needed to remember techniques and methods learned in
Zaruma and Portovelo to be able to make it, although the place of manufacture
is hidden in the mountains his business is well known throughout the province,

Mr. Luciano mentioned that his sales increases on festival days in which he sells
from 20 to 40 liters, in spite of the fact that his product contains high levels of
alcohol he cares for the safety of his clients suggesting the client uses caution

Some ferment at 24 hours and others at 48 hours but the normal is 48 hours to get
a good product, the guarapo is passed to a pot to be distilled, leaving by a tap
where the alambique is also known as the snake that serves for evaporation and
subsequent condensation of liquor.

Mr. Luciano uses two flavors that are blackberry and Majorca, for the production
of Mallorca you need two Creole chickens, 4 beef legs and banana so that the
flavor is a little sweet,

for the of blackberry flavor simply add the desired fruit in this case is the
blackberry, the fruit is placed in the fermentation boxes, it must ferment for 3
months and then sift and combine it with the liquor.

Mr. Luciano goes through the same process to make the blackberry brandy as
he does the Mallorca, however for the liquor to be of good quality, it must be
distilled in small quantities and at medium heat because if it’s distilled in large
quantities in the pot with a high flame, the brandy is no longer useful.

Having everything ready the product is passed to the next stage that consists of
bottling the liquor, where he has a specific area for this process, this is where the
labels and things are stored and where the data is found like sanitary registry, the
price, date of production and of expiration, the ingredients, and telephone
numbers

to the age of 22 years he left the sierra and lived in Loja for 2 years then he moved
to Zamora, at the beginning, his business was livestock but unfortunately it didn’t
work,

then he went to harvest coffee with5 hectares in which he obtained 2 seasons of


success but again it didn’t work, then he remembered about his work that he did
in Zaruma, that's how he started planting the cane which he had no difficulty
growing, and so he began to work with the cane little by little to get ahead
together with his family having a prosperous future despite the fact that or several
falls he got up and went ahead.

In conclusion, in spite of the many difficulties that were presented at the


beginning for Mr. Luciano, he didn’t let himself become overwhelmed by the
events that were happening around his life since then he has achieved great
success and he became a very hardworking person who works day and night to
give a decent life to his wife and children,

this business that was created under pressure for a better lifestyle achieved many
successes, it is the most recognized business in the province so much so that it’s
very popular with its clients for its excellent Attention and kindness,

thanks to the years that have passed his goal to get ahead has been fulfilled, but
his business hasn’t been of much interest in his children since each one has taken
different paths leaving only two that help in the production of liquor.

Mr. Luciano Torres is a man who has dedicated half of his life to the production
of liquor, his product is considered by many to be a star product because of the
effort and sacrifice he was able to make and move forward.
