HLTH 1020 Signature Assignment

Learning Outcomes:
(make sure to include these in your ePortfolio!)

1. Demonstrate knowledge of human nutritional needs and the role of nutrition in improving
individual health and the societal economic impact of food choices.
 From this course I have gained a great amount of knowledge on the importance
of good nutrition. I realized that eating healthy is more than just eating protein
and avoiding carbs. It involves making sure you meet you daily vitamin intake,
making sure you burning as much as you are consuming, etc…
2. Relate technological advancements in medicine and food production to the advancement
of the science of human nutrition.
 Technology today makes it so much easier to know what you should and
shouldn’t eat. By simply monitoring what you eat and being semi active, you can
avoid obesity. I’d say 70% of getting fit and in shape is based off of your
nutritional intake.
3. Explain the impact that the food industry has on human food choices and the subsequent
relationship to health and disease at the individual, societal, and environmental level.
 It’s sad and unfortunate but specifically the fast food industry is the leading
cause of obesity in America and around the world. Our generation is so
impatient, thus, the reasoning as to why so many people today choose to eat
out rather than prepare healthy meals from produce ingredients.
4. Provide examples of past and present nutrient and diet trends in modern society and the
positive and/or negative implications on human health and the earth’s resources.
 I’d say the biggest change in my diet has been consuming more vegetables and
by taking a daily multivitamin pill. I’ve felt a difference by doing so, I not only
have more energy but I just feel healthier.
5. Provide examples of positive and negative interactions of humankind with microorganisms
regarding sickness, health and food production.
 After reading an article about how a McDonalds hamburger didn’t decompose
or grow mold after years of sitting there, I realized just how many chemicals are
put into processed foods. Another thing that shocked me was how important
keeping your foods either refrigerated or making sure your foods are fully
cooked before eating them are. It is very easy to get some form of food
poisoning.
6. Address diet and nutrient issues and concerns for weight control, disease prevention,
physical activity, food availability, and biotechnology.
 If you want to be healthy, then it starts with eating healthy. As I mentioned
before, eating healthy is the MOST important thing to do for any individuals
hoping to get fit and avoid risks of diseases. Use the resources that are out there.
In Super-size me it took him 30 days to gain 30 pounds, and almost a year to
finally lose it all. It’s not worth it. It’s easier to prevent it than it is to lose it.
Reflection:

 As I compare this course to the other health course I took last semester, I gained a lot
more knowledge from this one. I actually learned the science behind living a healthy
lifestyle. It wasn’t just keeping a record of how much I worked out. I learned how to eat
healthy and why it’s important. It went more into depth which was extremely
beneficial.
 I thought I knew a lot about nutrition before this course and then I realized just how
much of a meat head I really was. I realized how by over eating certain foods it was
actually almost as unhealthy as consuming nothing but carbs. I realized that there is a
balance to everything. One of my favorite activities was probably the $10 activity. It’s
unfortunate but it’s crazy how much more expensive healthy food are compared to
process, pre made foods.
