DISCUSSION

1. Justify each pH measurement in the 𝐶𝑢𝑆𝑜4 ?

The pH is acidic when the concentration of the 𝐶𝑢𝑆𝑂4 is decrease. Due to the increase
concentration of hydrogen ions. We make 5 sample for this measurement. From the C1 the
concentration is 28 g/l and the PH is 4.05. The concentration of C2 is 14 g/l and the pH is 4.35.
For the C3 the concentration is 7 g/l and the pH is 4.55. The concentration of C4 is 3.5 g/l and
the pH 4.75. The concentration for C5 is 1.75 g/l and the pH is 4.85. Starting from sample C1
until C5 based on the result the pH reading increases due to the decreases of concentration of
𝐻 + in the sample.

2. Why the pH calibration is important?

The pH calibration is important to measure the basic or acidic the solution accurately.

3. Discuss in your report why is pH determination in fruit juice industry?

The pH determination is a crucial rule to avoid the possible fouling of nutrition strata and the
loss of nutrition during sugar extracts, the purification and refining of the juices.

4. From your opinion what is best pH for our food and drinking. Explain the statement.

The suitable pH for our food and drinking is slightly alkaline or neutral. This is because of
our body pH is slightly alkaline or nearly neutral. The food that has the slight pH of alkaline
give many nutrients and benefit to our body especially our digestive system.

The pH value of a food is a direct function of the free hydrogen ions present in that food.
Acids present in foods release these hydrogen ions, which give acid foods their distinct
sour flavor. Most foods are naturally acidic, with a pH value less than 7.0. Even so, the pH
value of a particular food may have a dramatic effect on the type of processing needed to
safely preserve it. The acidity of a food may occur naturally as in citrus fruits, apples and
tomatoes or it may be produced in foods through microbial fermentation.

Consequently, food processors are interested in determining the pH of foods like fruit juice
and in maintaining pH at certain levels to control microbial growth and prevent product
deterioration and spoilage which can causing health problems to consumers. Besides that,
to meet regulatory requirements where a company must follow the regulation (regulatory
compliance). Then, to efficiently produce products at optimal cost. Lastly, to produce
products with consistent well defined properties.

It is crucial to consume at least 60% alkaline-producing foods in our diet, in order to maintain
health. We need plenty of fresh fruits and particularly vegetables (alkaline-producing) to
balance our necessary protein intake (acid-producing). The suitable pH for our food and

our body especially our digestive system.
