RESUMEN
Se utilizaron frutas frescas de piña, banano, mango y guayaba, a las cuales se le realizaron análisis de
humedad y sólidos solubles para determinarles la aw a partir de la ecuación de Norrish. Los resultados
nos permiten predecir procesos tecnológicos para conservar fruta fresca o procesada sin cambiar sus
características fisicoquímicas y prevenir el ataque de bacterias, hongos y levaduras. Para conservar la fruta
mínimamente procesado por un periodo de vida útil mayor, se debe la controlar la aw en el alimento y la
humedad relativa del empaque o sitio de almacenamiento.
ABSTRACTS
The water is the majority component and acts like reliable of carbohydrates, its measurement occurs in
activity terms (aw); the fresh fruit in its period of poscosecha counts on one aw near 0.99; the high water
activity provides the fruit a period to him of short life, because it favors the chemical reactions, enzymatic
and microbiological. The fruits in the eatable structure contain water and carbohydrates such as glucose,
fructose and saccharose, mainly. The humidity and soluble solids are closely related aw.
We used fresh fruit pineapple, banana, mango and guava, which he analyzes humidity and soluble solids
for determinarles the aw from the equation Norrish. The results allow us to predict technological processes
to conserve fresh fruit or processed without changing their physicochemical characteristics and prevent the
attack of bacteria, fungi and yeasts. To preserve the fruit minimally processed for a period of increased life
expectancy, it should be the controlling aw in the food and the relative humidity of the packing or storage
site.

Con estos resultados y conociendo los Fig. 1 Diagrama de actividad del agua y estabilidad de
coeficientes binarios (K) definidos por Norrish los alimentos
para sustancias no electrolíticas como: glucosa (Labuza et al. 1972)
(2.25), fructosa (2.25) y sacarosa (6.47), se
calculo la aw aplicando la ecuación generalizada
de Norris (Ecuación 4).
