Introduction

Suprex Instant Pasta Flour from Tekco is a special blend of pre-cooked durum wheat flour,
developed as a basic ingredient for the production of instant pasta. Suprex Instant Pasta Flour
is produced naturally by means of a special extrusion process of a blend based on premium
quality durum wheat semolina.

Suprex Instant Pasta Flour has very good functional properties, making it easy to handle in the
instant pasta production process. The use of Suprex Instant Pasta Flour has the following
benefits:
• Energy saving
• Better end product quality, both because steaming and/or boiling of the product is not
necessary
• Can be used by all producers with traditional pasta lines without the need of cooking
equipment; no investments required

Product description and characteristics of instant pasta

Instant pasta can be used in convenience food products, similar to the concept of cups or
beakers containing instant meals consisting of a dehydrated filling of pasta, sauce and
dehydrated vegetables. These products are prepared by adding boiling water giving a product
that is ready for consumption within a few minutes.

Process description of the actual instant pasta production (shaping)

In the production of traditional instant pasta the press, ingredient quantities as well as the
mixing, kneading, extrusion and cutting processes have been standardised.

After leaving the die, the shaped pasta is pre-dried to prevent the product from losing its
shape. After the pre dryer traditional instant pasta is precooked. At this point it is cooked for
several minutes, in a boiling water tank, until more than 90% of the starch, and (as a
consequence) the pasta, has been cooked. Some producers make use of a steamer instead of a
boiling water tank. In both ways of pre-cooking, the pasta absorbs a lot of water and loses
quality in terms of shape and taste of the product. The high water absorption results in a longer
drying time. As a result, longer, more expensive, dryers are required and a lot more energy is
used for drying. Compared to regular dry pasta production, additional equipment for pre-
cooking, like a steamer or a boiling water tank, is required. This equipment uses a lot of water
and energy. The remaining water used for boiling is polluted with water soluble elements from
the pasta.

Using Suprex Instant Pasta Flour, a pasta producer only needs to use the required die for the
shape of the instant pasta that he desires and a conventional pasta making process for
production. The Suprex Instant Pasta Flour is already pre-cooked, so cooking by steaming or
boiling is not required. This means there no extra equipment or handling is required, and no
extra energy is used (in the process). The loss of quality, common for other instant pasta
production processes (described above) is avoided; the product is not losing its shape and
taste by steaming or boiling. Suprex Instant Pasta Flour is very easy to handle in the instant
pasta production process as a result of production by a specially developed extrusion process.
