SANDWICH

- Tuna Sandwich
Ingredients for 8 servings

2 skinless boneless chicken breasts (about 8 oz), cut into 1-inch


pieces
1 bay leaf
8 cups fat-free, reduced sodium chicken broth
2 cups sliced celery
1-1/2 cups chopped green onions
2 cups sliced carrots
2 garlic cloves, chopped
2 cups peeled, diced potatoes or cooked noodles
1 tsp minced fresh parsley
1 tsp snipped fresh chives
1-1/2 tsp ground coriander
Freshly ground black pepper to taste

Instructions :

1) In soup pot or deep pan, combine chicken, bay leaf, broth, celery,
green onions, carrots, garlic, zucchini and potatoes (if using). Bring
to boil. Reduce heat and let simmer about 20 minutes or until
chicken and vegetables are tender.
2) Just before serving, remove bay leaf and add parsley, chives,
coriander and noodles (if using). Season with pepper to taste.

Banana Cake

Ingredients

• 2 tablespoons lemon juice


• 2/3 cup milk
• 2 large very ripe bananas, mashed
• 1 (18.25 ounce) package butter cake mix
• 1 teaspoon baking soda
• 1/2 cup butter, softened
• 3 eggs
• 1 teaspoon vanilla extract

Directions

1. Preheat oven to 350 degrees F (175 degrees C). Grease and


flour a 9x13 inch pan. Put 1 tablespoon lemon juice in a measuring
cup with 2/3 cup milk. Set aside. Mash bananas with a fork, adding
the remaining 1 tablespoon lemon juice to them as you mash. Set
aside.
2. In a large bowl, combine cake mix and baking soda. Stir to
combine. Add bananas, softened butter, milk mixture, eggs and
vanilla. Beat at low speed until moistened (about 30 seconds). Beat
at medium speed for 4 minutes. Pour into prepared pan.
3. Bake in the preheated oven for 30 to 35 minutes, or until
center of cake springs back when lightly tapped. A toothpick stuck
in the center may leave a slight crumb. Allow to cool on a wire rack.

SANDWICH

Tuna Sandwich

Ingredients

1 canTuna fish
2 tbsp Lemon juice
1 Onion
2 thin slices bread
1 Chili
Butter

Instructions:
1)Open a can of tuna and drain the water oil.
2)Put the tuna into a bowl
3)Add chopped onion,chili and lemon juice together.
4)Butter two slices of bread.
5)Spread the tuna mixture on to bread.
6)Close the sandwich by adding the other bread slice on top (butter slide
down)
7)Slice in half and serve
