Val di Non and Val di Sole Apples and Flavours Route


al di Non and Val di Sole steeped in history, culture and traditions, offer visitors an interesting opportunity to discover the territory through the key products of a developing rural, food and wine tourism. A huge orchard of about 7,000 hectares extends over this area of Trentino, where more than 5,000 farmers produce mainly three varieties of apples that since 2003 have been entitled to use the prestigious mark D.O.P. Mela Val di Non granted by the European Union. Dairy farming is widespread in the highest areas and the excellent milk is used to make delicious butter and various kinds of cheese like Trentingrana, Casolt, Montesn and several local cheeses. Not to be forgotten is Groppello di Rev, an excellent ruby red wine obtained from the ancient vine of the same name, and the smoked Mortandela, the typical salami of Val di Non. 7

This itinerary begins at the entrance to Val di Non. From the Rocchetta, the natural border between the Piana Rotaliana and Val di Non, you can quickly reach Segno di Taio where you can stop at Mondomelinda (19). The visitor centre welcomes everyone who wants to know more about the cultivation and production of apples that obtained the Protected Denomination of Origin (D.O.P.) recognition in 2003.

Continuing towards Cles you reach the village of Taio and then climb to the village of Tres, where it is possible to visit the only producer (18) in the valley of cider, a slightly fizzy drink with a low alcoholic content obtained by fermenting apple juice. From Tres you head towards Verv and then to the meadows and dense fir woods on the plateau of Predaia, an ideal spot for those who like tranquillity and

Adopt an apple tree!
Between April and May, Val di Non turns white! This is the period when the whole of the valley is covered in apple blossom. Mother Nature bestows this spectacular scene for a few days only; so make sure you dont miss the opportunity to immerse yourself in this sea of snow-white buds and delicate scent. Staying in an agritur you can get to know one of the families that devotedly cultivate the famous Val di Non apples, discover their secrets, listen to their stories, taste the many varieties and their by-products. In spring you can also take care of an apple tree! The initiative "Adopt an Apple Tree" allows you to go into the orchards with the farmer and choose a tree to "adopt" and put your nameplate on. In the following months the farmer will take care of the tree you have chosen and, in autumn, you can return with your family to receive a box of apples from your tree!

Going northwards you come to Smarano and Coredo where, in the local butchers shops (29, 30), you can see how the smoked Mortandela, a Listed Slow Food Product, is made. From Coredo you descend towards Cles and then make for Cagn where a visit to the Terrace of Flavours is a must. Here you can see, taste and buy the products of the associates of the Apple Route. From here you continue to the villages of Cagn, Rev, Romallo and Cloz where you can visit some wineries that produce Groppello di Rev (1, 2, 3, 4), a wine obtained from a native vine of the same name grown on the sides of Lake Santa Giustina. After passing the villages of Cloz and Brez, in few minutes you reach Fondo, in upper Val di Non, an area featuring broad meadows and rich pasturelands and the traditional place for the production of the famous Trentingrana cheese (25, 26, 27).

Brazedl
Dissolve the brewers yeast in a little lukewarm water and mix it with the flour, add the salt, softened pieces of butter, egg yolks, sugar and lukewarm milk. Knead the dough until it is a soft but compact consistency and then place it on a board and cover it with a cloth, leaving it to rise for about an hour at a temperature of 26 C. Then knead it again for a few minutes and divide the dough in half and with your hands form each one into a roll and then intertwine and join them to make a circle. Leave to rise for another 45 minutes, always at a temperature of 26 C. Then brush the surface with beaten egg and bake in the oven, at 220 C, for 15-20 minutes, until the ring is golden-brown. It will keep for two to three days in a dry place.

In lower Val di Sole there are also apple orchards that gradually thin out farther up the valley. Val di Sole is beyond question the home of the famous Casolt cheese (a Listed Slow Food Product) which you can buy in the local dairies (42, 43, 44). On this route Bozzana di Caldes contributes to the flavours of Val di Sole with berry fruits and jams (47). In the mid and upper Val di Sole it is certainly worth making a detour into the characteristic side valleys of Rabbi and Pejo, famous for their spa waters (109). The valley also has a fish farm (48) in Monclassico, where two types of freshwater fish are bred: trout and char. The fish farm is fed by a spring of pure fresh water ensures absolute quality. For those who are fond of honey, a visit to Pellizzano is a must. Here, besides the excellent honey, a beewax is produced that is ideal for protecting antique furniture and wood in general. (46).

Casolt cheese in the Val di Sole cuisine
The last week of August is dedicated to Casolt, the king of Val di Sole cheeses. The event includes theme meetings, tutored tasting, demonstrations of the dairy art and menus featuring this extraordinary Valle di Sole product. The main squares in Mal will be enlivened with re-enactments of life in the mountains. You can see milking, butter and cheese making and sample the many delicious specialities of Val di Sole.

D.O.P. Val di Non Apples
Tasty. juicy. variegated, healthy and nutritious: a symbol of local agriculture recognised throughout Italy and beyond. Since 2003 the Renetta Canada, Golden Delicious and Red Delicious varieties have displayed the D.O.P. Mela Val di Non mark of the European Community. In addition to these there are the new varieties, Gala and Fuji. A fundamental ingredient of the Trentino gastronomic tradition, the apples are used in the preparation of tasty dishes and local sweets including the famous apple strudel. Owing to their properties, flavours and aromas, the apples can also be used to obtain very palatable juices, vinegar, precious balsamic vinegar, cider, jams and spirits.

Trentingrana cheese
This is one of the top products of the Trentino gastronomic tradition, known for its unique flavour and nutritional properties. Trentingrana, marked DOP and produced in the Val di Non dairies, contains the typical flavours of the alpine pastures and meadows over a thousand metres, thanks to the particular forage that enables the farmers to obtain milk rich in natural aromas. This hard, cooked cheese requires a long maturing period lasting from 18 to 24 months. Perfect for first courses, fillings or quiches, it can be eaten by itself, as a starter, or with vegetable and cereal dishes. Excellent also as an aperitif paired with TRENTODOC.

Casolt cheese of Val di Sole


From the mountain pastures of Val di Sole, a cheese unique in flavour, soft on the palate and pleasant in taste. Casolt cheese, a Listed Slow Food Product, is a typical speciality of Val di Sole. It is produced with whole milk and has a soft uncooked texture and a flavour of alpine herbs. Its pale or slightly straw colour and smooth rind makes it easy to recognise. The name has a Latin origin that derives from caseolus meaning small cheese and, in fact, the most traditional cheeses even today have a curved lateral side of 7-12 cm, a diameter of 10-22 cm and a maximum weight of one kilo. It is generally eaten fresh or semi mature and it is ideal in the preparation of various dishes.

Smoked Mortandela of Val di Non


Among the cured salamis the Smoked Mortandela of Val di Non, a Listed Slow Food Product, produced only in Val di Non, definitely deserves a special word. It is a product that presents an optimum balance between meat and spices. The spiced minced pork is shaped into meatballs of various sizes, depending on the size of the butchers hands. The balls are then left to smoke gently over smouldering beech and juniper wood. After a maturing period of a few weeks it can be eaten either sliced raw, or better rapidly warmed on a high flame, making sure the fat does not brown. A popular country fare that goes well with potato cake, another speciality you can find on this route, all accompanied by a glass of good wine, preferably Groppello di Rev or cider.

From the Val di Non vineyards to the goblets of connoisseurs of good wine. Groppello di Rev, cultivated on the steep sides of Lake Santa Giustina in Cagn, Rev, Romallo and Cloz, has been recently upgraded and is now considered, with the apples, to be a typical product of Val di Non. A tradition carried on with enthusiasm by a group of local winegrowers. Still produced in limited quantities, Groppello is a medium bodied dark ruby red wine with a good degree of acidity and rich in tannin. Its marc is used to make an excellent grappa of intense fragrance and flavour, at the same time dry, fresh and pleasant.

n the shadow of the majestic Dolomites a UNESCO Natural World Heritage - it is possible to go on a journey of the senses around the almost 90 enterprises that, in compliance with specific quality standards, are committed to enhancing the dairy products and other excellent specialities in this magnificent territory. In the Ladin Val di Fassa the best cheese is Spretz Tsaor, better known as Puzzone di Moena, and also the tasty Chr de Fasha, which, as its name suggests, is produced in the heart of Val di Fassa. The gastronomic pride of the nearby Val di Fiemme are Dolomiti, Fontl, Valfiemme, the renowned goat ricotta, but especially the famous Caprino di Cavalese, which is also delicious with the honey of these valleys, or, for those who prefer savoury food, accompanied by various kinds of local salami and cold meats. Another territory rich in flavours is Valle di Primiero. Here, as in bygone times, tasty local cheeses, fresh and smoked ricotta, the characteristic Tosla and Botro di Primiero di Malga are made. 17

A land of ancient traditions in a natural setting of rare beauty and the seat of the Magnifica Comunit, Val di Fiemme conserves gastronomic products with origins lost in the mists of time. This itinerary begins in Cavalese, where you can sample traditional pies, like the Fiemme Beer pie (11). Travelling along the state road towards Predazzo you pass small characteristic villages where you can enjoy the numerous specialities produced in this territory.

For instance in Carano, where the Cavalese Cooperative Dairy (2) produces the fresh and mature goats milk cheese and the local Valfiemme cheese. In Daiano and Varena you can discover the secrets of traditional speck (13) and taste various kinds of lucanica (14). And with these tasty cheeses and salamis you should not miss the opportunity to drink a glass of Fiemme beer produced in Daiano (10).

Between one desmontegada and another
In September, there are three mouth-watering weekends not to be missed. The Desmontegade in Cavalese, Predazzo and Primiero revive the ancient tradition of the return of the goats and cows to the valley after the summer spent in the mountain pastures. A joyful festivity of simplicity and colour held in a world brimming with beauty, traditions, and most of all knowledge and deep respect for the rites and secrets of the mountains.

Another destination is Castello di Fiemme, where you will notice dozens of beehives in the fields surrounding the village. In these little coloured houses the bees produce the excellent wild flower honey sold by many local beekeepers (6, 7, 8, 9, 12) or in the shops of local valley products. In this area you can also find delicious raspberries (23) and tasty goats milk cheeses (24). Also recommended is a possible detour to Valfloriana to taste the organic cheeses produced exclusively with the milk of the Alpine Grey breed of cows, a listed Slow Food (22). In Tesero you can stop for a meal of rabbit, which is bred in Val di Fiemme (5). The last stage in our itinerary is Predazzo, the country of origin of the Felicetti pasta (15) since 1908, which owes its quality to the pure water of Val di Fiemme. Not to be missed in Predazzo is a stop at the Predazzo and Moena Cooperative Dairy to discover the secrets and aromas of the famous Puzzone di Moena (1), the main ingredient in the menus of restaurants, hotels and agriturs associated with the Route.

Ingredients for 4 people - 200 g stale bread - 150 g ricotta (or 100 g local cheese: Puzzone di Moena, Cuor di Fassa, Nostrano di Primiero, Nostrano Valfiemme) - 1 egg - 1 dl milk - 1 bunch of chives - 150 g leek - 50 g butter - 100 g Trentino speck - 250 g fresh salad - extra virgin olive oil of Garda Trentino - salt and pepper

Second itinerary

Slice the leek in small cubes and allow it to sweat in a saucepan with the butter. Add the diced bread and leave to cool. Mix the ricotta with the milk, add the finely chopped chives and season with salt and pepper. Grease single portion moulds and fill them with alternate layers of bread and leek and the ricotta mixture and cook in the oven at 160C for 20 minutes. Take the flans out of the moulds, place them on dishes and serve with thinly sliced speck and salad dressed with a little oil.

Cheese is the main feature of the gastronomic offer at the foot of the famous Val di Fassa Dolomites, a setting of incomparable beauty. In the heart of the Ladin land, at Campitello di Fassa, in the Cooperative Dairy of the same name (3) is produced the cheese that is a symbol of the Fassa tradition, expressed also by its Ladin name: Chr de Fasha, Cuor di Fassa. A cheese that goes well with wild flower honey (16, 17). In Vigo di Fassa, apart from a visit to an ancient Ladin kitchen reconstructed in the Ladin de Fascia Museum, you can taste the salamis and sausages smoked in an old oven (18).

You can find and enjoy the local gastronomic specialities in many shops and in the Osterie Tipiche Trentine that exist in every centre: Canazei, Vigo di Fassa, Soraga, Moena. The latter centre, called the Fairy of the Dolomites, is the centre of Fassa gastronomy. In the attractive Osterie Tipiche Trentine restaurants, the mountain dairies and refuges, the offer ranges from simple dishes to more elaborate ones, but always with local and seasonal produce. Climbing from the valley floor you reach Passo San Pellegrino, the ideal place for a mountain snack in the alpine refuges and a walk in the Fuchiade basin.

The itinerary to discover the flavours continues, over Passo Valles, in the heart of the Paneveggio - Pale di San Martino Nature Park, but not without having made a detour to Val Venegia, where you can go around the Mountain Dairies: Malga Venegia, Malga Juribello and Malga Rolle (28, 29, 30). In these places you can discover the secrets in the production of cheeses unique in tradition and wholesomeness. From Passo Rolle you can descend to San Martino di Castrozza, a renowned tourist resort, where food and hospitality of quality awaits you. Here a tasty ski circuit called Around the Mountain Dairies is ready to welcome ski lovers.

High altitude flavours


At sunset, when the Pale di San Martino are tinged with pink, at 2,200 m on the Tognola Alps and the snowwhite ski pistes, the High Altitude Flavours event takes place; a tasting of cheeses and products of the Primiero, Fiemme and Fassa valleys served with Trentino wines and for the youngest with apple juice and wild fruits. A magical atmosphere, sweet melodies and a thrilling torchlight descent on the piste Uno with the ski instructors provide a unique experience. This journey, in Primiero, in the shadow of the Pale di San Martino, starts from Siror, the first of the 7 communes that, like a mosaic, form the inhabited part of this Dolomite valley. In this centre the delicious carne fumada di Siror (20) has been produced for over 40 years and is excellent eaten either by itself, or with fresh cheeses, or local ricotta. On the way to Tonadico, it is worth stopping at Villa Welsperg to see the caretakers garden and the laboratory for the recuperation of the traditional seeds of the past. Starting from Tonadico the didactic Tonadico-Cimerlo path leads, past the old Apiary of Don Fuganti, to Val Canali, renowned as the Valle Bio-

diversa for the important ecosustainable projects started by the Paneveggio Pale di San Martino Nature Park. Nature and flavours are the subject of many walks, also beneath the stars, visits to the mountain dairies (27), tasting and workshops organised by the Park. And for the youngest, entertaining activities to discover the berry fruits in the highest located cultivations in Trentino, at the foot of Passo Cereda (26). On the state road leading to Mezzano, a stop at the Primiero Cooperative Dairy (4) is a must. Here you can find the Tosla cheese and various maturations of the Nostrano di Primiero to enjoy with the

local honey (19). If you order it beforehand, you can also find the Botro di Primiero di Malga butter produced only in the summer months. To discover where and how Botro butter is made you have to go to Malga Fossernica in Valle del Vanoi, on the edge of the Tour of the Ethnographic Path dedicated to the mountain dairies, their use and a number of activities combining traditions and flavours organised by the Vanoi Eco-museum. The last mouthwatering stop is above Zortea, on the road leading to the splendid Lake Calaita, where you can find not only strawberries and bilberries, but also herbal teas of mint, pot marigold, cornflower and nettle (31).

Puzzone di Moena
A strong and definite flavour and pervasive aroma to delight the palates of real connoisseurs. This is Puzzone di Moena, a traditional Trentino cheese that never ceases to appeal to enthusiasts and experts. A product with a sharp flavour and notes of pastures, alpine herbs and ripe fruit with a hint of tasted hazelnut. A mature cheese produced in the Predazzo and Moena Cooperative Dairy and in the mountain dairies of the Fiemme and Fassa valleys, where, today as in the past, the cheese is sponged with lukewarm water or brine. A process that favours the formation of an impermeable rind promoting fermentation. The maturing process lasts from a minimum 80 days up to 6-7 months, which gives the cheese the typical smell and aroma which makes it unique.

Caprino di Cavalese
When tradition is coupled with the fine and elaborate tastes of today, Caprino di Cavalese cheese takes pride of place on the table. A characteristic product of Val di Fiemme, where it was made with goats milk up until the 1970s. Today the Cavalese Cooperative Dairy in particular has revived the tradition and makes fresh and mature goats milk cheese with a distinct flavour heightened by the maturing period. Excellent served with honey and local jams.

Cuor di Fassa | Chr de Fasha


A traditional Fassa cheese called Cuor di Fassa, produced by the Campitello Cooperative Dairy, belongs to the family of sponged rind cheeses and, following fermentation processes, releases intense fragrances and aromas. Produced with the whole raw milk of bovine breeds, like the Brown and Alpine Grey, it is left to mature for a period lasting from 3 to 6-7 months. For people who like stronger flavours, it is also available after a longer maturing period of up to 12 months. It can also be refined with Teroldego marc: an authentic rarity of the dairy art.

Fiemme Beer
Who says only German beer is best? This common clich is a fallacy. In fact, until the last century, there were two breweries in Cavalese that produced beer exclusively for consumption in Val di Fiemme and Val di Fassa and only closed down in the post-war period, when beer was imported from abroad and invaded the market. The beer making tradition was revived in Val di Femme in 2000. Trentino beer is unique, homemade with hops grown in the valley and malt extracts, and includes a classic light (Fleimbier), a red (Larixbier), a weizen and, for the more curious, an Anterivo coffee beer.

Tosla di Primiero
This is a characteristic fresh cheese (or more precisely a curd) of Primiero, which should be eaten within a few days of production. It is made with fresh cows milk so that all the fragrance of the grass in the mountain pastures is conserved in the aroma of the milk. Traditionally it is cut in slices about a finger thick, sauted in butter and served with polenta and Trentino lucanica.

Honey
The genuine essence of the perfumes and flora. of a territory featuring a generous and enchanting nature. The honey produced in these valleys has unmistakeable qualities and the quantities available vary according to the climatic and environmental conditions. Among the main varieties produced at these altitudes you will find wild flower honey and the rarer rhododendron and silver fir honeys.

A treasure hidden in Trentino gastronomy is the Botro di Primiero di Malga. This is a butter made of raw cream that comes naturally to the surface of the milk produced in the mountain dairy during the summer in the alpine pastures. At the time of the Serenissima it was considered the best in the Rialto di Venezia market and was often present on the Doges table. Today, as then, the quality of the product derives from the richness and variety of the flowers in the fields, which give it a dark golden colour, and from the careful processing of the cream. This traditional product had almost disappeared, but now it has been re-launched as a Listed Slow Food Product for the main purpose of recuperating the work in the mountain dairies and promoting their know-how and the role they play in the local community. Because it is a genuine product it is available only from June to September in limited quantities, with a drop in production in August. This proves it is a product that follows the rhythms of nature and not the market trends. Those who would like to take a block home are advised to order it, if possible in good time, from the producer, the Primiero Cooperative Dairy.

The Wine and Flavours Route from Lake Garda to the Brenta Dolomites
fascinating itinerary that goes from a Mediterranean environment to a typically alpine one. Only thirty-five kilometres as the crow flies. Actually, in an altitude gain of almost four thousand metres, this part of the territory encompasses one of the richest and most varied agricultural and food worlds of Trentino. The journey along the Wine and Flavours Route from Lake Garda to the Brenta Dolomites begins in the Mediterranean microclimate of Garda where a precious extra virgin olive oil is produced. A little farther north, in the Valle dei Laghi, Vino Santo, Rebo and Nosiola wines and traditionally distilled grappa are made. A taste of Carne Salada, a speciality of the area between Arco, Tenno and Varone, and the characteristic Ciuga in Valle Giudicarie should not be missed. The Storo maize flour and Spressa cheese are two other good reasons for exploring this attractive area of Trentino.

Since ancient times Lake Garda has been a strategic crossroads for people and cultures. Its position at the foot of the Alps and the mild climate have always favoured human settlements. Probably our ancestors realised this was a generous territory for fruits of the earth. The gentle slopes of the Busa, between Riva del Garda, Arco and Torbole, are ideal places for the cultivation of olives which produce an excellent and light extra virgin olive oil (1, 3, 15, 41). The olive-presses of the oil producers squeeze the precious oil from the olives that boasts the DOP del Garda Trentino mark.

From Riva del Garda climb to Lake Tenno to taste the characteristic Carne Salada (33). In this area between Arco, Tenno and the hamlet of Varone, very lean beef undergoes a special process that makes it particularly aromatic and suitable to eat either cooked or raw.

Valle del Sarca is generous also with regard to farm produce. Dont forget to taste the broccoli of S. Massenza and Torbole in winter and the Dro plums in summer. Vegetables and fruit that due to the particular composition of the soil in this area, have properties that make them worth trying.

The itinerary continues in Valle dei Laghi where, between gigantic marocche, enormous boulders that fell down to the valley in distant times, and enchanting lakes, like the renowned Lake Toblino, you arrive in an area almost entirely devoted to the cultivation of grapevines. Here you can visit many wineries (4, 5, 6, 7, 8, 9, 10) that produce Vino Santo, Rebo and Nosiola, typical wines of this valley. Not to be missed, a visit to the traditional distilleries (6, 7, 8, 9) where young grappas and distillates are created.

Lomaso potato tortelli with mountain dairy cheese and Bleggio walnut filling
Boil the potatoes in salted water, peel them while still warm and then put them through a sieve. On a rolling board, mix the mashed potatoes with white flour, add the egg and salt. Mix well and then leave to rest. With a rolling-pin, roll out a layer 4-5 mm thick . Cut into circles of 6-8 cm diameter each. For the filling, grind the kernels of 10 walnuts and mix them with the diced mountain dairy cheese and mushrooms sweated in a little butter. Put a spoon of the filling on each pasta circle. Cover with another circle, close the edges well with your fingers. Drop the tortelli into plenty of boiling salted water. As they come to the surface, take them out with a perforated spoon and place them on the individual plates. Coat with melted butter, minced chives, walnuts and diced fresh cherry tomatoes. Sprinkle with grated cheese and serve at once.

Its called Ciuga and it is a particular salami with turnips; a manifestation of the extreme poverty in the past of the local population who, to eke out the small amount of meat available, had the brilliant idea of mixing it with boiled white turnips. We are in the area of San Lorenzo in Banale (46), Bleggio and Lomaso. When smoked this sausage has a highly aromatic flavour. Continuing our journey, when you arrive in Tione, you have two options; to turn left towards Storo, or go in the opposite direction towards Val Rendena.

Storo, in the Valle del Chiese, on the border with the province of Brescia, is known for its production of local maize which yields a yellow flour (29) particularly appreciated in the classic recipe of this area: the carbonera polenta. Val Rendena welcomes us in scenery that assumes more and more the contours of the alpine landscape as you climb towards the Brenta Dolomites. The first flavour we meet is the typical Spressa delle Giudicarie D.O.P. (22). This is a table cheese that, in the past, was made only in the alpine pastures using skimmed

milk; in fact it has a low fat content and sometimes a sweet flavour or, at other times, a strong or spicy taste depending on the maturing period. This is the kingdom of the Razza Rendena, indigenous bovines that are taken to the summer pastures at the beginning of June and return to valley in late September. Other interesting productions in this valley are the result of meat processing, which, in bygone times, corresponded to a real need to preserve it. Not to be missed a visit to the sausage factories situated in Val Rendena (35, 36).

Extra virgin olive oil of Garda Trentino
Its hard to find another place in the world where olive oil is produced at this latitude. A production that has origins in the distant past and today has led the European Union to award D.O.P. status to this product. Evidence and scene of this tradition are the terraces and slopes covered by many different types of native olive trees that, with other more common ones, prosper here in the favourable microclimate. A corner of the Mediterranean that produces an oil of great merit, with a golden green colour due to the high chlorophyll content, a delicate bouquet with notes of almond and a light and fruity, sapid and harmonious fragrance.

Trentino D.O.C. Nosiola and Vino Santo


In the Valle dei Laghi, slightly north of Lake Garda, grows an ancient, unique and precious grapevine: Vino Santo. A genuine nectar produced from the native Nosiola variety, which must meet precise requisites to guarantee the quality of the product. The process begins, after the autumn harvest, when the grapes are left to dry on racks called arle, in high and well aired rooms, where they dehydrate and become covered with noble rot, increasing the sugar concentration and producing a distinctive bouquet. The raisin process lasts 5 or 6 months and ends with the pressing, which takes place during the Holy Week, hence the name Vino Santo (Holy Wine). The last step is the fermentation in small oak barrels, which may take up to two or three years. Nosiola white wine has a delicately fruity fragrance with a faint note of hazelnuts.

Spressa delle Giudicarie D.O.P.


Considered to be one of the oldest dairy products in the entire Alpine chain, the Spressa is a cheese produced only in the Giudicarie, in Val Rendena. Made with raw cows milk, the process is carried out using the natural precipitation process: the milk of the previous day is added to the fresh milk produced in the morning and transferred to a heating vat, where natural inoculent milk and calf rennet is added. It is then shaped and pressed: hence its name Spressa. The result is a cheese with a compact and elastic consistency, a sweet flavour that develops intensity with maturation and the typical aromas of mountain cheeses. Best eaten relatively young, it is an excellent accompaniment to traditional Trentino specialities.

Maize flour of Storo


Not without reason also called the gold of Storo. The maize produced in this area of Trentino, the farthest from the capital, is a corn cultivated strictly observing the cycles of nature, without agronomic forcing, thus ensuring a genuine product that is naturally protected from external contaminations by its leaves and grows healthily in the soil and pure air of this mountain area. It is a combination of a unique product and the dogged determination of the farmers. The maize harvested in early October, is dried in the mountain winds and then slowly milled to preserve its distinctive nutritional properties, aroma and flavour. The flour, easily digestible, is then ready for making a fragrant polenta, an indispensable element of every Trentino dish.

Carne salada
Records of carne salada date back to the dawn of the eighteenth century. The origins of this product derive from the necessity of preserving meat. At one time pieces of beef were cured so they could be kept to eat during the winter. Every single piece of meat is covered with a mixture of salt and spices and then left in large containers for about twenty days. The liquid the meat loses during this time, eventually covering it completely, is just brine. Carne salada can be eaten raw, thinly sliced and dressed with extra virgin olive oil. It is excellent seared on the griddle and served with a piping hot dish of boiled borlotti beans called en bronzom.

A very important element of the gastronomic heritage of Valle Giudicarie, the ciuga is a product of extraordinary character and the expression of the extreme poverty that once existed in these areas. The sausage was made using the poorest cuts of pork meat and boiled white turnips. The result was and still is today a highly aromatic product with a distinctive seasoned meat flavour that can be eaten fresh if cooked, or sliced after a maturing period of ten days.

The Wine and Flavours Route of Vallagarina


allagarina, the southern door of Trentino, has always been known for its remarkable cultural vivacity, as it combines a Mediterranean and mid-European atmosphere. The Wine and Flavours Route covers a vast territory along the valley of the river Adige and climbs to the Brentonico, Folgaria, Lavarone and Luserna plateaus, Lessinia and Val di Gresta. The rich soil and microclimates have in time influenced the variety of food and wine products: apart from the wines of which over 40% of the Trentino provincial production is made here, you can also find horsemeat, Vezzena cheese, Monte Baldo cheeses, Castione chestnuts and the organic vegetables of Val di Gresta. 35

Our itinerary to discover the flavours of Vallagarina begins on the right of the river Adige. A land rich in history, culture and traditions that over the centuries has developed its own identity through the institution of the Comun Comunale, which, in olden times, joined all the communes on this side of the river. The first stop is Isera, a production zone par excellence of the symbolic wine of Vallagarina: Marzemino. The territory is

widespread with tidy vineyards, where the grapes for this wine, praised by Mozart, are picked in autumn (6, 13, 15, 18). Going along the provincial road on the right side of the Adige, you reach Nomi and Aldeno devoted to the cultivation of grapevines. Well established in this geographic area is Merlot, a vine that is producing excellent international results (8, 12, 14, 19, 21).

After Aldeno, climbing towards Cimone and Garniga Terme, you come to the enchanting Lake Cei and from there easily reach Val di Gresta, where very good organically grown vegetables are produced. In particular mountain potatoes, carrots, celeriac, white cabbage used to make sauerkraut, chicory and also cauliflowers, Savoy cabbage, leaks, onions, lettuces, courgettes, cucumbers and beans (25, 32).

In Nomi do not miss a visit to the Basilica del Vino at the Azienda Agricola Grigoletti. This is an old recently renovated wine cellar where thousands of bottles of fine wines are kept, in particular Merlot. Braised Beef in Marzemino


Peel, wash and slice the vegetables and put them in the wine with the brisket of beef and herbs. Leave to marinate for 48 hours, turning the meat over occasionally. Drain the vegetables and dry them in a pan with a few drops of extra virgin olive oil. Add the meat, brown it and pour the marinade wine over it. Now add the tomato pulp and cook on a low heat for about an hour and a half. When ready sieve the vegetables to make a sauce. Serve with Storo polenta.
Ingredients for 4 people - 1000 g brisket of beef - 500 g tomato pulp - 1 celery stalk - 1 carrot - 2 onions - rosemary, bay leaf, sage - 4 dl Marzemino - extra virgin olive oil - salt and pepper

The territory of Vallagarina is an enormous carpet strewn with vineyards, where many types of vines are cultivated (1, 2, 4, 5, 9, 11, 17, 20). Certainly worth mentioning is Enantio, recently rediscovered as a result of genetic studies that attest its affinity with the wild vine growing in the Lagarina woods. This itinerary therefore begins in the southernmost part of Vallagarina to discover this vine, mentioned by Pliny the Younger, produced in some wineries in the area (3, 7, 10). From Avio you climb up along the ancient Via dei Mulini to reach the Altipiano di Brentonico. This is an uncontaminated area where the cows are reared for meat and milk. Here Nostrano del Monte Baldo cheese is produced with milk of the animals grazing in the mountain pastures during the summer (26, 27). On the way down the hairpin bends towards Mori, a little detour takes you to Castione, a small village famous for the production of Marrone Chestnuts of excellent quality (22).

The huge expanse of vineyards can also be admired along the northbound route from Rovereto. In olden times the Via Claudia Augusta passed through the valley. The clayey soil in the area of Volano is ideal for producing Marzemino Superiore dei Ziresi (18) Not much farther on, at the foot of the impressive Castel Beseno, you will see rows of Moscato giallo, a vine that is well suited to the Lagarina terrain (12, 14, 18, 21). Now we climb to the plateau of Folgaria and Lavarone. Here among the peaks and pastures you can gain a deeper insight into the land where the mountain dairies produce the Vezzena cheese, the pride of the products in this zone (36).

Trentino D.O.C. Marzemino
The most representative wine of Vallagarina. It was probably brought to this area in the early 15th century during the Venetian domination of Rovereto. According to tradition the soldiers of the Serenissima Republic brought a few vine plants from a village called Marzimin, in Carinthia. Thanks to the excellent position, temperature and quality of the Lagarina soil, the vines immediately produced good results. Made famous by the mention of it in Mozarts opera Don Giovanni, the wine has a brilliant and lively ruby red colour and a distinctive fruity and floral bouquet.

Vezzena
There is all the flavour of the mountains in the Vezzena cheese produced for centuries in the alpine pastures on the plateaus of Folgaria, Lavarone and Luserna. It is a semi-cooked cheese and can be left to mature for up to 24 months. Tasty and slightly spicy, it can be used in first courses and with various recipes of white meat. Its delicious flavour and the possibility of using it as a table cheese or grated have made it a traditional cheese of long standing. Before the First World War in Trentino, Vezzena was practically the only cheese used as a condiment. For several years now, the cheese, produced with milk exclusively from the mountain pastures and marked with an M, has been included in the listed Slow Food products.

Val di Gresta vegetables


Val di Gresta is known as the organic vegetable garden of Trentino. The configuration of the land, between an altitude of 250 and 1400 metres, and the southerly exposure favours the use of integrated and organic farming methods for the cultivation of vegetables. The environment, free from industrial installations and densely wooded, contributes to the growth of high quality produce in the terraced plots. A wide variety of vegetables of excellent taste and flavour are grown in this valley.

Castione chestnuts
The production of Marroni di Castione chestnuts is very limited, but of high quality, due to the care, seriousness and passion the Tutela Marroni di Castione Association has always demonstrated in this sector. It involves, in fact, 2500 chestnut trees, some of which 300 years old, cultivated with organic and modern farming methods, which produce an average 20 kg of chestnuts per tree (about 500 quintals a year); a small quantity, which, however, amounts to 25% of the Trentino production and therefore occupies a significant place in this sector. These large heart-shaped chestnuts have a sweet flavour and a very fine-grained consistency. Some beekeepers put their beehives close to the chestnut trees when they are in blossom to produce a delicious Chestnut Honey.

Entire generations have been enjoying horsemeat since the smokehouse was opened in Rovereto in the fifties. A Lagarina tradition still carried on today. The salted leg of horsemeat has a strong and penetrating flavour after it has been smoked and it is a real gastronomic delicacy. The horsemeat processed in Rovereto is listed among the Arca del Gusto Slow Food Porducts. It is excellent eaten cold with homemade bread, or rye bread lightly spread with fresh butter, or dressed with oil, lemon and chives, or served with fresh cows or goats milk cheese.

The Wine and Flavours Route of Trento and Valsugana


very interesting itinerary from Trento to Valsugana, passes the Altopiano della Vigolana and Valle dei Mcheni. A route featuring wine and food products closely associated with the historical, cultural and traditional wealth of this territory. The supreme product here is TRENTODOC Classic Method, a sparkling wine that has made Trento and the surrounding hillsides the select zone of national spumante. Fine still wines and smooth Trentino grappa complete the offer of this area. Too good to miss are the berry fruits, salamis like lucanica, just to mention one, and the Lagorai mountain dairy cheeses. First itinerary

Ravina and the hills of Trento: the kingdom of TRENTODOC

The splendid Rennaisance palazzos lining the streets in the historic centre of the city of Trento are steeped in history, art and culture. A precious casket with an offshoot just as precious: TRENTODOC Classic Method, the finest product of this region. Ravina, a suburb to the south of the city, is the real production zone of TRENTODOC. Here you can visit the large and well-known spumante producers to see how the precious bubbles originate. (3, 4, 5). There are also many small wineries in the hills dominating the city of Trento where TRENTODOC (1, 6, 10, 11) is produced. The precious Chardonnay grapes, essential for the production of this sparkling wine, ripen on the pleasant slopes of the hamlets of Meano, Martignano and Cognola. Important still wines, like the fine Pinot Nero and the seductive Moscato Rosa (8, 9) are also produced in the hills around Trento.

On Monte Bondone, the mountain overlooking Trento, you can find traditional alpine flavours. In the attractive setting of mountain pastures the characteristic lucanica, a Listed Slow Food Product, (14) is produced. This pork sausage is a classic ingredient of many local dishes.

At the end of the journey around wineries and producers, you must not fail to stop at the Provincial Wine House of Trentino in Palazzo Roccabruna, in the heart of the historic centre. Trento: the capital of Bubbles


TRENTODOC is produced over a large area of Trentino. However, the story of this extraordinary product actually began in the city of Trento, where, in the last century, Giulio Ferrari, an enterprising winemaker, experimented with the French classic method in his own vineyard. Today about thirty producers belong to the Trento D.O.C. Institute grouped under one logo shown on the neck of every single bottle. Seriousness in cultivation and production bring to the tables in Italy and throughout the world products of the highest quality. Risotto with bilberries, marigold petals and creamed Vezzena cheese


Fry the finely chopped onion in oil and butter in a large saucepan. When it is golden add the rice and stir it around until slightly toasted. Next add the wine and allow it to evaporate. Then add part of the bilberries and boiling vegetable stock and simmer gently. When the rice is cooked remove it from the heat and delicately stir in the Vezzena, the rest of the bilberries and the marigold petals. Serve with a knob of fresh butter.
Ingredients for 4 people - 380 g rice - 150 g SantOrsola bilberries - 80 g Vezzena cheese - 50 g butter - 50 g marigold petals - 1 glass of red wine - half an onion - vegetable stock

Second itinerary

Travelling along the Valsugana dual carriageway you reach Pergine in a few minutes, where, among other things, you can visit the impressive castle that dominates the whole valley and regularly hosts contemporary art exhibitions (43). Pergine is a good departure point to explore a corner of Trentino that in many ways has remained intact until today. It is the Valle dei Mocheni. A territory off the beaten track for decades that has preserved a distinct identity noticeable in every aspect of the valley and in its productions (26). In this valley the SantOrsola cooperative, a leader in Italy for the cultivation and marketing of berry fruits, has its centre (27). The Path of the Berry Fruits provides a pleasant relaxing walk to discover how the strawberries, wild strawberries, raspberries, blackberries, bilberries and redcurrants grow and ripen. From the Valle dei Mocheni, along the shores of Lake Caldonazzo, you reach another territory, the Altopiano della Vigolana, which offers visitors an admirable production of fruit and vegetables (12, 17). Here nature is generous. Fields and woods, impressive mountains and breathtaking scenery allow the visitor an unforgettable moment of relaxation.

In Valsugana among dairies and flavours of the past

There is a place in Trentino where man does not seem to have arrived yet. It is the Lagorai chain. an uncontaminated natural gem, easy to reach along the Valsugana dual carriageway. The itinerary begins in Roncegno Terme where you can go on a pleasant walk in the woods and look for wild herbs that abound in this area (24). Higher up the journey becomes even more interesting and... tasty! In this area there are many mountain dairies that come to life with the presence of herdsmen and their animals in the summer months. Here you can find out how cheese is made, a genuine product and the result of manual skill handed down from father to son (22).

Moving on towards the Conca del Tesino, it is worth stopping in one of the many refuges, where you can enjoy the locally produced salamis and a burning hot Parampampoli, a drink with a flavour that will surprise you (20, 45).

In Tesino, before continuing to the high altitude of Passo Brocon in search of other delicious mountain dairy cheeses, you can stop in Bieno to sample the Verde del Tesino, a variation of sauerkraut (16).

TRENTODOC
Top quality grapes, strict production specifications, rigorous control in all phases of the process are the ingredients of a success that is a source of pride for the producers of TRENTODOC. Produced in a hillside zone between an altitude of 200 and 800 metres, it originates in vineyards situated in particularly suitable ground for the cultivation of vines and in environments with a climate characterised by wide ranges of temperature that give the wines delicate and persistent fragrances. This great success is based on a complex process: two fermentations, a resting phase that varies from two to ten years, the removal of the sediment and addition of the liqueur dexpdition, the secret recipe of every producer that gives the Trentino Classic Method the final touch.

Berry fruits

The berry fruits find an ideal habitat in the Trentino woods, and particularly in Valsugana and the neighbouring Valle dei Mocheni, for producing fragrant coloured fruit thanks to the soil, water and favourable climate. Wild fruits have been gathered for centuries in the zones sheltered by the Lagorai mountain range. This activity, together with the hard work of the mountain people and the use of innovative production techniques, has led to the cultivation of strawberries, wild strawberries, blackberries, gooseberries, bilberries and raspberries. Excellences that can be enjoyed fresh, or in jam, or preserved in syrup.

Trentino lucanica
The traditional salami of every Trentino family of farmers. Nowadays it is produced in a basic and fairly simple way, but every butcher has his own secret touch. It is a matured salami with a delicate spicy flavour and note of pepper and garlic and a pleasant characteristic fragrance. Its variant made with horsemeat in Val dei Mocheni is not to be missed. If not mature, it is used in many classical recipes, in particular canederli, tonco de pontesel and smacafam.

Valsugana flour
The exact name is Mais Spin Caldonazzo, a species brought to Valsugana in the 1800s from the neighbouring valleys of Veneto and Adige. It was widely grown in Valsugana until the early 1960s and then almost entirely abandoned. Today this old maize quality has been recuperated and is now grown by some small producers. The bright orange coloured cob is long and heavy and unlike other corn each kernel is pointed. The cobs are harvested at the beginning of October, dried in warm air, or in the mountain winds, and then milled slowly to preserve the nutritious properties and flavour intact.

The Originale Malghe del Lagorai cheese is one of the most genuine Trentino cheeses, produced with traditional methods in the Alpine pastures and little known to the general public. It is a semi-fat cheese obtained from raw milk processed in the Lagorai dairies between June and September. Every dairyman manages to create his own unique cheese, thus maintaining its variety. The product owes its excellent quality to the rich bio-diversity of the flora in the pastures, the abundance of particularly cold water and the know-how and millenary skill of the dairymen in this sub-alpine area.

A splendid garden of vineyards welcomes the visitor to Valle di Cembra. The steep terraces built by man in this valley permit a better use of the ground and prevent the rain from carrying the soil away. Here Mller Thurgau wine is produced. There are many wineries in the valley where you can taste Mller Thurgau and other excellent wines like Pinot Nero and Nosiola (Giovo: 36, 43; Cembra: 38, 39, 42; Segonzano: 37). The next stop is dedicated to salamis. Skilled producers will be only too pleased to offer you a taste of the Val di Cembra carne fumada and also the Trentino lucanica and carne salada (Cembra: 59; Faver: 58; Segonzano: 57).

If you are fond of Trentino grappa, stop and visit a distillery, where fragrant grappa is produced today as long ago; a skill handed down from one generation to another (40, 41). We move on now to Piscine di Sover, where you will find beehives immersed in the uncontaminated nature of this territory (56).

From Segonzano continue towards the Altopiano di Pin, which runs parallel to Valle di Cembra. Here you can find typically mountain products: dairy cheeses, wild berry fruits, tasty salamis (44) delicious sweets (45). A visit to Baselga di Pin and Bedollo, with their splendid lakes, will lead you to the discovery of the flavours of this valley.

Torta di fregoloti with grappa and wild fruits


Second itinerary
The torta de fregoloti is a typical mountain sweet that is very filling and has a strong buttery flavour. Beat the butter with the sugar and then add the egg yolk, honey, salt and grappa mixing well. Sift the flour and bicarbonate together and add this with the ground almonds. Using your fingertips rub together until the mixture become crumbly. Spread half of it in a greased flan tin, cover with jam and arrange the rest of the mixture on top. Bake in a preheated oven at 190 for 25-30 minutes. Cut the cake as soon as you take it out of the oven and serve it with a glass of Trentino Grappa. Variation: instead of using the Altopiano di Pin wild fruit jam, you can use two Piana Rotaliana diced apples.

The irredentist Trentino martyr Cesare Battisti described the Piana Rotaliana as the most beautiful garden of vines in Europe. Here Teroldego Rotaliano, the prince of Trentino wines, is made. The visit can begin in the numerous wineries of Mezzocorona, Mezzolombardo and San Michele allAdige (16, 17, 18, 19, 20, 21, 22, 23, 24, 25, 26, 28, 31, 32, 33) that produce this symbol of Trentino viticulture, together with other wines including TRENTODOC. In these three villages it is also possible to visit the excellent small distilleries (29, 30, 35, 98). From Mezzocorona you can go by cable car up to Monte di Mezzocorona to taste the torta di patate, a typical local dish served with salami, cheese and vegetables (90). Then we recommend a splendid walk of about an hour and a half in the beech and fir woods going towards Malga Kraun (95). After descending to the valley, you come to Rover della Luna, the last village on the border between Trentino and Alto Adige, where you can taste another traditional Trentino wine: Pinot Grigio (27, 34). Turning back you reach San Michele allAdige, a centre famous for its Agrarian Institute and the Museum of Uses and Customs of the Trentino People. (v. box not to be missed p. 56). Then you climb to Faedo, the centre of important wineries (13, 14, 15) and also an organic factory that produces apple juice (51) made with the fruit from the apple orchards you will have noticed in the Piana Rotaliana (55). A visit to an organic winery in Sorni is a must (2); this small village gives its name to two DOC wines: Trentino DOC Rosso and Bianco dei Sorni. To enjoy the flavours of this territory you should climb to Pressano, where there are splendid wineries (4, 11, 13) and also many farmsteads that, in recent years, have been turned into charming agriturs nestling in the green vineyards (60, 61, 62). Now you descend to Lavis that features not only excellent wineries (1, 3, 5, 6, 8, 9, 10) but also producers of fish (46) salamis (47, 50) and sweets (48, 49). Here you are spoilt for choice! If you are in Trentino during the period between April and May, you must not miss a visit to Nave San Rocco or Zambana, where white asparagus is produced (52). If, instead, you like the mountains, you can climb from Zambana to Rifugio La Roda on Paganella; a strenuous walk, but well worth the effort (96)!

The legend of Teroldego Rotaliano
The legend narrates that, in the Middle Ages, in a cave on the steep mountainside overlooking the village of Mezzocorona, there were ruins of an ancient castle where, one day, a monstrous being found shelter from the bad weather: a basilisk that spread terror among the population. Many of the poor houses of the peasants were destroyed and the vineyards reduced to ashes by the monster. Terror took hold of the poor people of the villages in the Piana Rotaliana that was no longer a safe place to live and farm the land. When everything seemed lost and the peasants were planning to leave their homeland to find a safer place, a proud voice rose above the crowd: it was Count Firmian, a brave knight who offered to go and look for the dragon and kill it, provided the peasants would not leave the Piana Rotaliana until the outcome of his mission was known. Count Firmian found the cave where the basilisk was sleeping. He dealt a mortal blow in the belly of the monster, which let out a cry heard throughout the valley and then fell dead. To show the peasants they had no further reason to leave the Piana Rotaliana, Count Firmian had the dragons body brought down to the valley and he cut off its head in front of the people. According to the legend, on the very spot where the basilisks blood flowed, the first stumps of Teroldego Rotaliano sprouted.

Trentino D.O.C. Mller Thurgau
The cross between the Riesling and Chasselas varieties was first obtained in 1881 by the Swiss researcher Hermann Mller di Thurgau. The vine has found its ideal habitat in Valle di Cembra, where it chieves the maximum freshness and fragrance for which it is known. It is cultivated throughout the valley in an area known as the classic zone, where the vineyards are situated above 500 metres a.s.l. The fruit tastes particularly sweet, while the wine is a pale yellow colour with notable golden reflections and hints of greenness. This vine and its wine have become one of the symbols of Valle di Cembra, where the International Exhibition of the Mller Thurgau Wines is held in July every year.

Trentino Grappa
The presence of grappa in Trentino is lost in the mists of time. Traces of the ancient familiarity with the stills and a centuries-old experience, which has made distillation an art, remain in the small distilleries where the presence and skill of man are of primary importance. The principles of traditional distillation have remained the same and the old rules are handed down from generation to generation. At the same time, however, more modern production techniques have been introduced. The production zones of grappa are: Pressano in the Avisio hills, Mezzocorona and Mezzolombardo in the Piana Rotaliana and Faver and Segonzano in Valle di Cembra.

Carne salmistrada and carne fumada of Valle di Cembra


The cured meat of Valle di Cembra is fresh, fragrant and aromatic, a nice dark red colour and tender to cut. When it is smoked it is called carne fumada and is a nice dark colour outside and a bright red colour inside and it has the flavour and fragrance of smoked products. It is obtained using the rump of various animals, such as bullock, pig, horse, donkey, mutton, goat or deer. The pieces of meat are placed in specific containers and sprinkled with a dry mixture of salt, black pepper, juniper berries, bay leaf, cinnamon and cloves, all dampened with white wine. Left to rest for at least 20 days, it is then put in special rooms for a brief maturing period.

Teroldego rotaliano D.O.C.


Without doubt the star of Trentino winemaking, Teroldego is a native vine that produces what has always justly been considered the "prince" of Trentino wines, Teroldego rotaliano D.O.C. This vine expresses its maximum quality only in the Piana Rotaliana soil. In fact, the composition of the terrain, formed by the alluvial deposits of the river Noce, and the particular summer insulation are fundamental for its characteristics. Tradition and seriousness in cultivation and winemaking have established the name of this wine over the centuries and, indeed, its indisputable quality was awarded the mark of Controlled Denomination of Origin Teroldego rotaliano in 1971, the first D.O.C. in Trentino.

The Asparagus of Zambana is a completely white asparagus that derives its specific characteristics (delicacy, tenderness and absence of fibre) from the particular conditions of the ground and climate and the method of cultivation. The first references to the cultivation of this particular vegetable date back to the early 19th century. Today, as then, the asparagus is picked by hand, or using traditional tools, in the months of April and May. The vegetable is produced in small quantities and so the producers are able to preserve only a few thousand jars of it in sweet and sour sauce. Zambana has had the De.Co. mark (Communal Denomination) for its asparagus for some years. The Asparagus of Zambana is the first white asparagus to be listed among the Arca Products of Slow Food and in the Atlas of traditional products of Trentino. In the months of April and May the Wine and Flavours Route organises a gastronomic event featuring the Asparagus of Zambana and in many Trentino restaurants you can find tasty menus presenting this vegetable.

Our journey to find TRENTODOC begins on the shores of Lake Garda. Travelling towards Trento, you reach the zone of Toblino, with its romantic lake, famous for the production of the prized Vino Santo and Nosiola. Here the Cantina Toblino produces a TRENTODOC obtained with the excellent Chardonnay grapes of Valle dei Laghi. Close by, in Pergolese, is the Azienda Agricola Fratelli Pisoni, one of the first wineries to intuit Trentino was especially suitable for producing the TRENTODOC sparkling wine. We return to the shores of Lake Garda to discover the TRENTODOC produced by the Agraria Riva del Garda, made with Chardonnay grapes, scrupulously following the classic method. Continuing our journey by Lake Garda to the slopes of Maza and Monte Brione, we come to the vineyards of the Cantina Madonna delle Vittorie. TRENTODOC Brut is one of the gems of the diversified productions of this winery.

...in Vallagarina

Leaving Lake Garda we head towards Vallagarina. In Mori we are introduced to the bubbles produced by the Cantina Mori Colli Zugna. The vineyards tended by the winery extend into the territory joining Valle dellAdige to Lake Garda; an area benefiting from the Ora wind, ideal for producing Chardonnay grapes, the base of spumante. In Isera, the land of Marzemino, the Cantina di Isera offers a TRENTODOC that is attracting considerable interest. Continuing northwards, we reach Nogaredo, where the Cantina VIVALLIS has always included a fine TRENTODOC among its products. In the same area, on the right of the river Adige, in Nomi, we find a cathedral dug in the rock, which enables the Pedrotti winery to produce a TRENTODOC full of character. A few kilometres farther north, in Aldeno, there are two winemaking estates that produce Trentino sparkling wine. The first is Rev, a small family enterprise that aims for quality in its production. Not far from here is the Cantina di Aldeno. Its vineyards, situated at the foot of Monte Bondone, are a guarantee of quality TRENTODOC.

Now we reach Trento. To the south of the town, in the suburb of Ravina, there is the real district of the Trentino spumante production. The Cantina Ferrari needs no special presentation as it is the Italian trademark of the most prestigious classic method. Not far from here is the CAVIT, the largest winemaking firm in the Trentino cooperative world. Three TRENTODOCs are produced by this spumante house. Our last visit, before leaving Ravina, is to the Cesarini Sforza Spumanti, a winery that has been using quality vineyards for its production since 1974, with emphasis on three fundamental words: quality, image, tradition. We leave Ravina for the next leg of our journey in the hills of Trento. The word leg is applicable in this case because, in Gardolo di Mezzo, there is the Azienda Agricola Francesco Moser. The former cycling champion also produces a fine TRENTODOC, besides many other types of wine. We climb towards Martignano to make the acquaintance of the Conti Wallenburg wine estate that bears the name of the counts of the Imperial Court of Vienna. Also in Martignano, we must not fail to visit the Azienda Agricola Maso Martis, a winery that has always produced TRENTODOC. Lastly, in Civezzano, on the borders of Valsugana, the small Accademia del Vino Cadelaghet produces a first class TRENTODOC.

Our itinerary ends in the territories north of the capital city. Between Gardolo and Lavis you can find Abate Nero, one of the most celebrated TRENTODOC producers. Continuing northwards, after a couple of kilometres we reach Lavis, where the Cantine Monfort testify to the passion of three generations that since 1945 have had a particular love for the classic method tradition. Passing through the vineyards and orchards of the Piana Rotaliana, in San Michele allAdige we reach the Endrizzi winery founded in 1885. In Mezzocorona it is impossible to miss the Cittadella Vino where the famous Rotari is produced, a TRENTODOC made in several versions. Lastly, in the hamlet of Grumo, the last stop in our exclusive itinerary, the Azienda Agricola Zeni Roberto produces a TRENTODOC called Maso Nero.

MARZEMINO
In Vallagarina our visit is centred on Marzemino. There are many vineyards that produce this wine. We begin our itinerary in the south, on the border with the province of Verona, where, in Ala and Avio, there are the wineries of Vallarom, Bongiovanni, Martinelli, Secchi and La Cadalora. Climbing to Isera, we find the most suitable terrain for producing the wine praised also by Mozart. Here the wine production has been labelled Superiore. This excellent Trentino wine is produced in the Cantina di Isera, the Azienda Agricola de Tarczal, the Cantina Mori Colli Zugna and VIVALLIS. Marzemino is of course also produced in other zones of Vallagarina. Going northwards on the right of the river Adige, we cannot forget to mention the Azienda Agricola Vilar in Villa Lagarina, the Grigoletti and Battistotti wineries and the Cantina Sociale in Nomi, and then, at the foot of Monte Bondone, in Aldeno, the Cantina di Aldeno and the Azienda Agricola Maso ai Dossi. Lastly, returning southwards we should mention a microproduction that has gained the title of Marzemino superiore dei Ziresi: in fact the deep clayey alluvial terrain here produces a red wine that recalls the fragrance of red fruits. The only winery that produces it among those associated with Wine Route is VIVALLIS.

MLLER THURGAU
The Valle di Cembra is the natural habitat of Mller Thurgau. The right altitude, a dry climate, kissed by the rays of the sun during the day and caressed by the cold air at night: these are the ingredients that make this territory ideal for producing Mller Thurgau. You can find this wine first of all in Faedo, where there are three vineyards that produce it: Fontana Graziano, Pojer e Sandri and Sandri Arcangelo. The visit continues in Valle di Cembra. The first place you come to is Giovo. Here it is possible to visit the Devigili Elio and Villa Corniole vineyards. In Cembra, instead, there are the Valle di Cembra Cantina di Montagna, Cantina Pelz Piffer and Societ Agricola Zanotelli. Proceeding towards Segonzano you must not miss a visit to the Barone a Prato vineyard where you can taste other wines of the territory. On the way back to Lavis you come to the centres of Sorni and Pressano. Here the vineyards producing Mller Thurgau are Vindimian Rudi, Bolognani, Cantina LaVis, Cantine Monfort and Maso Poli. If you are interested in discovering other wines besides Mller Thurgau, you can visit Molino dei Lessi, Brugnara, Cesconi, Maso Furli, Vignaiolo Fanti and Maso Poli in Lavis.

TEROLDEGO ROTALIANO
In the Piana Rotaliana area there is a vine that is unique in the world. The alluvial plain sheltered by high mountains is the casket containing Teroldego Rotaliano. Many wine producers will be delighted to give you a taste of this wine. In San Michele allAdige it is possible to visit two vineyards: the Cantina Endrizzi and the Azienda Agricola Zeni Roberto. Continuing towards Val di Non, in a couple of kilometres you reach Mezzocorona. Here the wineries are Vescovi-Ulzbach, Donati Marco, Endrizzi Elio e fratelli, Betta Luigino, Cantine Mezzacorona and Dorigati. The next commune, Mezzolombardo, is no less important. Here you can visit Barone de Cles, Fedrizzi Cipriano, Redondl, Zanini Luigi, Cantina Rotaliana and Foradori. Continuing northwards, after crossing an expanse of vines, you arrive in Rover della Luna, where you will find the last two wineries of Trentino. The Cantina Sociale Rover della Luna and Gaierhof Azienda Vinicola are both well worth a stop.

Vino Santo and Nosiola: two wines produced in the enchanting scenery of the Valle dei Laghi, a highly suitable territory for the cultivation of the vine. The influence of Lake Garda and the climate in this area favours a wine production that is very special and considered a niche product. In this territory you can visit many wineries that produce Vino Santo and Nosiola, typical wine of this valley. Not to be missed is also a visit to the small distilleries where young grappas and distillates are made: Cantina di Toblino, Giovanni Poli, Francesco Poli, Gino Pedrotti, Pisoni.
