Chicken Tortilla Soup

INGREDIENTS1 medium onion, chopped1 clove garlic, chopped1 Tbsp butter1 can beef broth1 can chicken broth1 can cream of chicken soup1 1/2 cups water1 can chopped green chilies...not sure what the size is, but it's the little can!1 can RoTel...I puree this so there aren't any chunks of tomatoes...for those who won't eat chunky 'maters!1 Tbsp Steak Sauce (I used A1)2 tsp Worchestershire sauce1 tsp cumin1 tsp chili powder1/8 tsp paprika1/8 tsp pepper3 chicken breasts4 cups cheddar cheese12 corn torillas cut into thin, short strips...more like squares. DIRECTIONSSautee the onion, garlic, and butter.Put all ingredients EXCEPT cheese and tortillas in a crock pot. I'm not sure of the exact cooking time, but I'll estimate about 6-8 hours on low or 4-6 hours on high. Halfway through the cooking time, I pull out each breast and shred it...then put it back in. Once it's cooked, dump in the cheese and tortilla strips! Once they are melted in, dish up and ENJOY!

Crock Pot Peanut Clusters

1 - Bakers Sweet German Chocolate Bar 1 - 12 oz. package of milk chocolate chips (any brand)1 - 24 oz Chocolate Almond Bark1 - 24 oz. White Chocolate (Vanilla) Almond Bark1 - 16 oz. dry roasted unsalted peanuts (any brand)1 - 16 oz. dry roasted salted peanuts (any brand)Layer in crock pot starting with Bakers Sweet Chocolate in the bottom, then add remaining ingredients going down the list. The peanuts should be on top when you put on the lid. Turn on LOW heat for 3 hours. DO NOT lift the lid during the 3 hours. It may look like it is not melting, but it will be very soft. After 3 hours, stir the mixture thoroughly (a long handled wooden spoon works great!). Drop by spoonful onto aluminum foil and let cool. Stir after every 25 or so clusters.Recipe makes about 120 clusters. This is great at the holidays, in goody bags for teachers, teacher/staff appreciation, etc.TIPS/HINTS:1. If you have an older model crock pot (one with only 3 settings: OFF/LOW/HIGH) the recipe will work great.2. It may look like it wont all fit in the crock pot (especially the older models), but it does. You can jiggle the crock pot around so that all the ingredients settle.3. The newer crock pots with the OFF/WARM/LOW/HIGH settings arent as reliable. It seems as though Warm is too low, and Low is too hot. If you must use this newer model, put on low and check it after 1 hours, then check every 15 minutes until you can mix all ingredients together.
